    hugs to everyone!!!!

    this thread always makes me happy.  I made stuffed peppers tonite.  The kids loved it.  They are old enough now to not be called kiddies.. the youngest is 12. and this is the first time i have not called them 'kiddies'.

    Minus-two- Thanks for letting us know about getting to the pages faster, i bet a lot of us didnt know that, i know i never did! You are funny, staying up and reading all the pages when you had to get up early, but then again, i did that the other night too LOL!

    Hauntie- Sorry you are not feeling good, I know it is going around- Hope you feel better soon and dont feel guilty about the kids, just take care of yourself.

    Seaside- I wonder what made the bars moldy? I had mine for about 3 days and they were fine, but I did see on Kaths site ( original recipe) where she said too wrap them up individually and freeze them if not eating real soon. I make a oatmeal bar with apricots ( like them better, but has sugar in them)  they are good for about a week, so im wondering if its the nuts in the other bars that makes them go bad. hmmm interesting,. Love the chicken salsa have made it at least 4 times.

    Kay- Your dinner sounds good, i love salmon especially blackened.

    Deb- I saw the pic of your DD and the lobsters earlier, wow, they are ginormous!!

    Apple- Stuffed peppers Yum!!!

    Im pretty much ready for every one to go home now, i never thought i would say this, but I'm partyed out LOL!

    Laurie  how precious your boys are!  i have to live through your pictures as my children are grown and I miss them sooo much!  My son called last night and the discussion was, him getting a fast GTO!!!!  AAAAHHH   why cant he just get a sensible car and not scare his mother? Enjoy them while they are little and you can still make the decisions for them.

    I love salmon. but my husband wont touch it, so i only get it when we go out.  I probably wouldnt cook it right anyways. 

    My DH finally put up the new lights and mirror in the bathroom I am re-doing so propbably should cook him a nice dinner.  Lasagna is his favorite, so its off to the store I go to get the stuff.

    Debbie  shopping?  My favorite sport also...need to find a new job so that I can resume this avtivity.

    Good Morning from "not so sunny" Florida!  Well, actually, it looks a little more like tropical storm weather out there, so there will be no basking in sunshine today.  Instead we are heading to the Hard Rock Casino for a little "indoor" fun.  What else does one do on a rainy vacation day Cool

    We had such a great time with Joyce and her DH last night.  First we toasted NED with some lovely champagne, then we went to a great restaurant for ribs, which were delish!  After dinner we went back to their fabulous winter home for cheesecake and coffee.  It was a perfect night with dear friends! 

    Laurie - that is a darling picture of your boys hunting leaves! 

    Apple - stuffed peppers, mmmm!!!  When I was a "kid" I would eat only the filling, didn't like the cooked pepper at all.  Now I make them with any color except green, and I love them. 

    Kay - I like salmon but DH won't go near the stuff so I only eat it in restaurants.  When it comes in season (spring time I think) try Copper River salmon.  It has a short season and is a bit pricey, but it's the only one DH ever tasted and said he "might" be able to eat it.

    Apple, would you share your recipe for french onion soup?  I have a lot of onions in my pantry too.

    Laurie, I agree, those days go so fast.  Your boys are just too cute!  My DD is 14.  I love her to death, but some aspects of these teenage years are just plain tough.  Miss the younger ages. 

    Shopping was never one of my favorite things.,  I like to go, get what I need and leave.  My DD now makes it an all day affair.  It is fun when I'm with her though.

    Debbie, sorry you're getting tired.  That has been a lot of entertaining you've been doing.  Take a nice long rest when everyone goes.

    Michelle, thanks for the salmon recomendation.  I will try to remember that name.  It is all fairly pricey, although it is a little cheaper now than the beginning of the summer.  Only like to buy it at hte fish store, have not liked the fish I got at the supermarket.  Anyone have any thoughts on the farm raised vs. wild caught?  I've been sticking with the wild caught, right now the price is not that different any ways.

    french onion soup.. if you have a good beef stock.. have a quart on hand.. if not use a tablespoon or so of higher quality beef base available in your soup section at the grocers.

    I chop about 10 onions and sautee them in a big pot.  You have to cook them forever.  I used to add a teaspoon of sugar to help in the browning.. that's very french.  You want the onions to take on a deep brown color without burning.. however, they can be pretty 'burnt' and it will tasted just fine.. it's just the sugars caramelizing and the brown ness is dissipated thru the soup.  I cook them at a fairly high heat stirring often.. i add about a cup of water occasionally to aid in the cooking.. this water will evaporate.  I sometimes add garlic, thyme or bay leaf.. but rarely.  I then add stock (i don't have any handy today, but might find a beef bone at the store and will boil it for 4 hours if so)... about 6 - 10 cups. if you add to much, you can reduce it.  add salt if necessary.

    for the croutons i cut french bread into slices... dice some fresh garlic and microwave it with 2 or 3 tblspoons of olive oil with i brush on the bread.. then i toast these in the oven till lightly brown.. i actually like them kind of crunchy.. I make mine in a casserole dish because we moved and i cannot find my individual soup bowls.. i think they are buried in the basement.  I top the croutons (bread slices) with a good quality swiss or ementhal cheese and bake for 5 minutes to melt the cheese.

    kay - I like to make french onion soup for lunch at the Senior Center.  I like to use a sweet onion like Walla Walla or Vidallia.  The secret to french onion soup is to have a good stock and properly caramelize the onions. 

    For the stock I like Knorr Beef Base.  It is a paste that comes in a tub and can be found at most stores in the section with the bullion.  It has far less salt then billion and better flavor.  I use the suggested amounts on the label and then simmer it with a celery stalk or two to "freshen" the flavor, then adjust the stock to taste with a little more base. Remove the celery.  At this point I add my secret ingredient, what I call my Knox Bone.  Since homemade stock includes gelatin from the bones I add gelatin, about one envelope per 6 to 8 cups of stock.  Just soften in cold water and stir in.  A tiny bit of dry sherry also helps.

    Don't try to hurry the carmelization process with the onions.  I use butter and a low temp.  If the onions sizzle the heat is to high and you can wind up with a bitter taste.  It is  slow process but well worth the time and effort.  Just cook slowly until your onions are almost the color of your stock.  Add to stock and serve with crouton rounds topped with melted cheese.

    Apple great picture of your son and his girlfriend they are a beautiful couple!  The french onion soup sounds amazing, I haven't had it in soooo long!

    I am way behind in my stuff for the day, I stopped in and read a few times and now can't remember what is what!  Hope everyone had a good day- I am going to go put a roast in the oven.

    I make French Onion Soup every Christmas Eve party I have, but not this year, we are going to visit DD in Bermuda.

    Mmmmmmm.... French onion soup is a favorite of mine.... All that gooey cheese! Even though I make many different soups, I've never made French Onion myself! Time to rectify that! Thanks for the recipes!

    What a handsome young man your son is! His girlfriend is a real cutie, too.... Love it when the girls have beauty AND brains!! Homecoming is this weekend here. My son Graduated in June but, his girlfriend is a Senior this year so they are going to the dance.... So fun to see them all dressed up!

    I don't think the oat bars going moldy had anything to do with the recipe, which I thought was delicious!



    I think it was my mistake... I cut them and put them in the same container with

    ome banana muffins that I had made for the kids... I think the extra moisture from the muffins is what did it.... They did last almost a week, even under those conditions!



    I will definitely make them again!



    Hope your company departs soon!! It's fun to have visitors and party it up but, it's also nice when you get your home back to yourself!!

    Making french onion soup is a labor of love!  If you have a mandolin slicer, it can be a huge timesaver!  But caramelizing the onions just takes time.  I follow the Julia Child recipe and we love it.

    We had a great time at the casino with JoyceK and our DHs.  We got stuck in a huge traffic jam on the way back, but we were so busy chatting that the time flew by.  They came up for drinks and snacks, then they went home.  We walked across the street and had dinner - I had a crabcake with asparagus and DH had ziti with meatballs.  A guitarist was playing Spanish guitar-style music and the tropical breezes were quite strong.  It started to rain as we were finishing, so we waited a few minutes for it to let up before we darted back across the street to the hotel.

    Tomorrow's plan is golf for the guys and beach/pool for Joyce and I.  Hopefully, the weather will cooperate and the sunshine state will live up to its name.

    No beach weather again today, but the weather folks have promised sun for tomorrow and the ocean has definitely calmed down.  The DHs played golf today, Joyce and I walked and shopped, ate lunch at a little lobster place, then we met the guys for drinks in the hotel lobby and went out for dinner afterwards in a French restaurant.  I had a beef risotto with mushrooms and cognac sauce that was excellent, Joyce had salmon and the guys had beef burgundy. I've made it many times and my DH said my version is better.  Of course, this one was better than any I've made in the last few years...lol.  I guess I'll have to dig up the recipe and make it in the next few weeks.  I bought a sweatshirt, a cute ball cap and a kitchen towel that says to my DH " To save time, let's just assume I'm never wrong." 

    On another note, my DD will graduate in December with her degree in accounting. She has had three interviews and got an extremely generous job offer from the CPA firm she was hoping for, with the job she wanted!  With this economy, it's a miracle!

    Ok - I've never posted on this topic before (with good reason, too embarrassed).  I normally eat very low carb for my diabetes.  Because of this I don't have to take any medicine.  However, currently on a business trip and lost all focus (using company credit card):  2 ribs, 1 piece fried chicken, 1 piece sausage, 1/2 order fries, green beans, coffee and an Otis Spunkmeyer chocolate chip cookie.

    I've got an onco appointment on Friday and decided to treat myself just in case.

    StillKicking - welcome!  I, too, am diabetic and was pretty good about eating low carb until I got breast cancer!  I do take metformin (thankfully as it is showing to have anti-breast-cancer properties) so it allows me some dietary leeway.  My last two a1c's have been 5.3, so I am pretty happy with that part of my health management.  Sounds like you allowed yourself a splurge, totally understandable!  That risotto I had for dinner was not exactly low carb, either.  As usual, I ate just half the meal so I didn't inflict too much damage!  We are on vacation and I am not even testing this week!

    Yes we are, in spite of the less than perfect weather.  Tomorrow, though, and for the rest of the time we are here, the forecast is for sun and temps in the upper 70's.  I am ready for some beach and pool time!

    We just got back a bit ago from out food show in portland, i ate so much, i had to undo my belt as soon as we got in the car. I ate lobster, crab, prime rib, different steaks and fish, sandwiches, pastas crab quesidillas, desserts, OMG! I was in heaven. they had about 15 long rows of food and each isle had food on both sides, took us about 5 hours to go through the whole thing.I filled up a bag with lots of food to go too. One thing i wanted to share was a cottage cheese pancake that was out of this world. they gave me the recipe. served with a orange buttermilk surup. MICHELLE- you could use a sweetner of some kind. instead of the sugar?

    COTTAGE CHEESE PANCAKES WITH AN ORANGE BUTTERMILK SURUP

    4-EGGS

    1-CUP OF DAIRGOLD SMALL CURD COTTAGE CHEESE

    1/2-CUP OF FLOUR

    1-TABLESPOON SUGAR

    6-TABLESPOONS DAIRYGOLD BUTTER (3/4 STICK) MELTED, PLUS MORE FOR GREASING THE SKILLET

    1-TEASPOON OF VANILLA EXTRACT

    LIGHTLY GREASE A OVEN PROOF PLATTER AND SET ASIDE. BEAT EGGS IN A MIDIUM SIZE BOWL, STIR IN COTTAGE CHEESE, FLOUR AND SUGAR, MIX UNTIL JUST BLENDED BUT STILL LUMPY, GENTLY STIR IN MELTED BUTTER AND VANILLA TO COMBINE.

    HEAT A LARGE NONSTICK GRIDDLE OR SKILLET OVER MED HIGH HEAT-SWIRL A PAT OF BUTTER OVER THE BOTTOM OF THE PAN, POUR BATTER INTO THE SKILLET IN 1/4 CUP PORTIONS, ALLOWING FOR SPACE BETWEEN EACH PANCAKE. COOK UNTIL EDGES ARE LIGHT GOLDEN BROWN AND BUBBLES FORM ON THE TOPS, TURN PANCAKES OVER AND COOK UNTIL LIGHT GOLDEN BROWN  (PANCAKES SHOULD BE CRISPY OUTSIDE AND CREAMY INSIDE)  PLACE COOKED PANCAKES ON GREASED PLATTER AND KEEP WARM IN 200% OVEN WHILE COOKING REST OF PANCAKES MAKES ABOUT 16- 4 INCH PANCAKES.  SERVE WITH BUTTER AND WARM MAPLE SURUP OR ORANGE BUTTERMILK SURUP- RECIPE FOLLOWS.

    1 1/4- CUPS OF SUGAR

    3/4 - CUPS OF DAIRYGOLD BUTTERMILK

    1/2 CUP ( 1 STICK) OF DAIRYGOLD BUTTER

    2- TABLESPOONS OF CORN SURUP

    1- TEASPOON OF BAKING SODA

    1- TEASPOON OF VANILLA EXTRACT

    1- TEASPOON OF GRATED ORANGE PEEL

    COMBINE FIRST 5 INGREDIENTS IN A SAUCEPAN AND BRING TO A ROLLING BOIL- REDUCE HEAT TO MEDIUM AND COOK FOR 7 MINUTES OR UNTIL GOLDEN IN COLOR, STIRING AS NEEDED.. REMOVE FROM HEAT AND STIR IN VANILLA AND ORANGE PEEL. SERVE WARM.

    I don't.  i use it fairly regularly tho.

    It reminds me of my mother who had a small jar of pompeian olive oil in the medicine cabinet for 30 years.  I don't know why she had it.. maybe for cleaning out ears.
