So...whats for dinner?

This is the one holiday I cook. DB#2 and I did all the prep work yesterday at my Dad's house. It's a lot of work, but I enjoy it. The 2 of us getting to spend time together in my mom's kitchen, making her recipes. He's in charge of roasting the turkey and my sous chef for everything else. It's an "off" year for us, so there are only 6 for dinner. Everyone else is with their in-laws. Otherwise, we'd have 18.
I made the sausage stuffing yesterday, cooked the butternut squash and we prepped all the veggies. I'll be going over there pretty soon to make the mushroom casserole, candied sweets, mashed potatoes and gravy. I don't usually bake for Thanksgiving, but I'm making my Dad a little strawberry and whipped cream cake. He turns 93 later this week. I should go finish that up, so I can get over there.
Have a great Thanksgiving everyone.

Happy Thanksgiving everyone! I am stuffed, the kids are tired and everything went great. Almost time to put them to bed and try to get hungry for a left over turkey sandwich!
Debbie- lol!

I hope everyone had a nice day today. I had 8 people over.
I know one thing, I won't be able to pick up my Dad for the Holidays anymore, it is too much for him to get around, he has a hard time walking and our house is not equipped for the handicap. Taking him to the bathroom was a big chore and of course he announces he has to go just as I started to eat. My DD and I had to help him on and off the commode twice.
But I am glad I had him over, the next time we will go to his place and eat in the dining room.

Hope everyone had a happy thanksgiving. We had a great one at my sister's house. My mother lives with her and it is like you say Deborye, it is easier for her there. She is in a wheel chair and it's pretty hard to get her into and out of a car. My son's plane made it in on time last night, and his GF is a very nice girl. I hope he doesn't tell me he is going to spend Christmas with her family though, but I really shouldn't get ahead of myself.

Hi everyone! We'll be leaving in a little while to go to our daughter's for leftovers. I am making Emeril's Roasted Pear Salad with Pomegranate Vinaigrette for something "not leftover." I've roasted the pairs and made the dressing - this is going to be really yummy!
I hope everyone is having a great Friday and getting some relaxation, shopping or whatever makes you happy! It is going to be a spectacular weekend here in NH - temps in the 60's. It's extremely unusual, but we'll certainly take it!
Funny, I've never made pot pie from leftover turkey. I think I'll have to try that next time I cook a turkey. I guess I never thought about it, which makes no sense at all!!!

WOW everyone must be exhausted from all that cooking!!! I will be cookig tomorrow, we went to my husbands side of the family...everything was delicious. His sister and aunt are both dieticians and make the most amazing food.
Michelle that pear salad sounds amazing, gonna have to write that down and try it.
My DS had the bright idea of black Friday shopping. Never done it beofre and really not interested, but after thanksgiving dinner we headed out at 11:30 to the outlet mall and shopped till we dropped. some stores had good deals, others not. but we got to walk off all that dinner.
Today is beautiful outside so I am going to use my children (slave labor) to help me put christmas lights outside. I didnt do any lights last year because of being in the middle of chemo...so this year we will do it up big.....Yahoo to putting treatment behind me!!

Michelle Have fun at your daughters the salad does sound really good!
Carrie- Good luck with your Christmas lights, and you're right YAHOO for putting treatment behind you!
So last night my husband got a call from some of his friends that they are going to drive to Conn. to visit another of their friends. My DH is still friends with same group of "boys" that he grew up with, since first grade. (cute huh?) My in laws offered to take the boys and give me some quiet time....so We dropped the boys off this morning for the night and my DH just left for Conn. I however plan on doing NOTHING! I just did a pick up of the house and plan on laying on the couch with the kittens and reading a book. Thats about it. I might get a burst of energy later but for now.....

Going to have leftovers for supper, went and had my bloodwork done, now I am doing some laundry. Maybe I will have a piece of Pumpkin Pie. Starting to put away my Fall decorations, I will have to go outside to finish, put away scarecrow and fall garland. Some fall fake flowers also.

Well, Duh, this is friday, we are going out to eat and drink with friends tonght so won't be making my turkery pot pie after all, not until tomorrow, I completely lost track of what day it was. I just had a grilled turkey and bacon and tomatoe sandwich it was excellent!

Debbie- I wish I had some bacon! That sounds perfect right now. I'm getting ready to make a turkey sandwich of some sort now too.
Joyce- How do you do your pot pie with bisquick? I'de like to try it.
0 -
Laurie- Even without bacon if you have sourdough bread, turkey or chicken, tomoatoes, and jack cheese, butter the bread and grill it, its best i think with bacon but still good without it- Hope you enjoyed your alone time.
Joyce- Your leftovers sound good, i will be eating them for a week plus freezing some too.
We had a great time out tonight, it was weird though, a lot of different people out that we had never seen before and they seemed like they were from a different planet, (maybe a full moon) at least me and my friend dianne thought so. but it was fun anyway! Came home and finished off the fudge pie!

We ended up going shopping at 6 p.m. last night. There are good deals to be had in every store, and you don't have to join the frenzy of early birds to save money. Christine and I hit the local mall and I got all my Christmas jammy shopping done! And by that time all the early bird shoppers have flown the coop, so there were no lines/no waiting. I'm guessing that Cyber-Monday will bring some good electronic deals, maybe as good as yesterday's. We need a smaller LCD for our bedroom and I will order one if the price is right. Then I have the challenge of getting rid of the 47" LCD that weighs 140 lbs (yes, that's right...it has a glass overlay to protect the screen and it's insanely heavy). I'd like to get that thing out of the room -- it's way too big.
That roasted pear salad was a hit, really really good and I'll be making that one again! We had leftovers for dinner and everything was yummy. Christine had made peas with shallots and pancetta - now that was a nice twist. And she makes an onion, raisin and almond relish that is excellent.
In a couple of hours, we'll be off with our friends to the mountains on our Christmas tree excursion. I am looking forward to stopping at some little shops along the way and finding some unique things, including maybe another collectible coffee mug. We have reservations at a hotel right in the Presidential Range of the White Mountains and they've had snow, so it will be lovely. My camera batteries are charging so I'll bring back picture. We'll have a nice dinner somewhere tonight, then tomorrow morning we'll drive the rest of the way to the tree farm, cut our trees and pick up some wreaths and other greenery, then head back home. I rearranged the living room yesterday morning so I think we have room for a nice, tall tree. I like mine big!!!
Enjoy the weekend!!!

Michelle, OH that sounds like a great weekend to get in the holiday spirit. We will be doing the tree hunt on the 3rd with friends and some tailgating, funny how we make everything a party.LOL
We did thanksgiving dinner and then me and the kids hit the stores till 2am, never done it before, and the crowds werent bad, we did the outlet mall, and it was just fun being with my kids and talking as we walked. I dont like to get into the trap of buying things just because its a deal.
We are doing another Thanksgiving today, since we went to relatives, and now my kids will have leftovers to take home. Tom is in the oven and smelling devine

Just reading these posts are getting me in the holiday spirit! Sometimes i can be pretty grinch like around the holidays. I do hate the commercial ness and the shopping, but I love the decorations and music! Enjoy your second tgiving dinner Carrie. My son took his GF downtown yesterday, and I think today we may take a ride to valley forge or long wood gardens. Going to an old Italian restaurant in south Philly tonight where the waiters sing opera! Looking forward to it!

Michelle your plans sound wonderful. It sounds relaxing and that it will get you in the holiday spirit, though it sounds like you already are. Have fun and I hope you find the perfect BIG tree!
Kay- MMMM a nice Italian restaurant, you made me crave Italian food! I agree with Carrie, give us the skinny on the girlfriend!
Carrie- I'm glad you had fun with your kids shopping for Black Friday. It is the random moments that turn out to be wonderful, great memories. Enjoy your second Thanksgiving today.
My house is back to normal again, my DH is back from his overnight trip and so are the boys. I had a nice quiet night snuggling with the kittens and watching a movie. I am about to make hot open faced turkey sandwiches for lunch. After Kay's post I am thinking chicken parm for dinner

I may be overly confident, but, because I am going to be off work for three weeks + between Thanksgiving and Christmas, I have decided to enroll in an online cooking academy that is self paced. I'm going out today to buy all of my supplies!
My BMX is tomorrow. I get bored easily. It's hard to keep me down.
So, ina week or two when I am up to it, I'll start cooking, and posting "what's for dinner".

Shechirple- What a great idea for online cooking! Best wishes tomorrow!
Carrie- Now that sounds good, I think it would be very tasty, maybe flash fry it after breading and then put your melted jack or mozz and marinara sauce on it.!!

Shechirple- Good luck tomorrow!

SheChirple - Good luck tomorrow. As soon as you're feeling up to it, let us know how you're doing.
I have the first cookie sheet of another one of my traditional gift giving cookies in the oven - Oatmeal Cranberry Chocolate chip. These are one of my favorites and another cookie that freezes well.
Here's the recipe
Oatmeal Chocolate Chip Cranberry Cookies
2 sticks butter or margarine, softened
1 1/4 c packed brown sugar
1/2 c granulated sugar
2 eggs
2 tbl milk
2 tsp vanilla
1 3/4 c flour
1 tsp baking soda
1/2 tsp salt
2 1/2 cup oats (quick or old fashioned)
2 cups semi-sweet chocolate chips ( I use mini chips)
1 cup dried cranberries
Preheat oven to 375
Beat together butter and sugars until creamy. Add eggs, milk, and vanilla; beat well.
Stir flour, baking soda and salt together. Add to batter, mix well.
Stir in oats, chocolate chips and cranberries.
Drop by rounded tablespoonfuls onto an ungreased cookie sheet. (I use a 1 or 1 1/2 inch cookie scoop.) Bake 8-10 minutes until edges are lightly browned. Cool on sheet 1-2 minutes. Then move to wire rack to cool completely. Makes 4-5 dozen.
These are quick and easy cookies to make. In the time it took me to type this. I've baked 2 more sheets and the last one is in the oven. Using a cookie scoop really speeds up the process of getting the batter onto the cookie sheet and you end up with uniform size cookies.
