So...whats for dinner?

Special - I too still have a landline. Great insurance in hurricane country. Since mine is hard wired to the wall, I always have lines of people outside my door begging to use my phone when the power goes out or the cell towers get knocked down.
Saw the bone endocrinologist today and got great detailed info about continuing Prolia shots, drug holidays, substitutes, ONJ, etc. - including all the ongoing European trials for Reclast. His published research has included ballet dancers & football players in addition to post menopausal bone loss & chemo effects. I'll write it up tomorrow & send you a PM.
Dinner was a Dole bagged Sunflower Crunch salad kit (unwashed) with added cold boiled shrimp. Side was the last two Thomas Cranberry English Muffins. They only have those at Christmas and never a wide distribution. Too bad since they're delicious.

Beef bourguinon tonight with two friends (the only two) in our “pod“. It's been a while since I made it and it turned out quite good. Dessert was cherry pie a la mode.
Minus - we're addicted to the cranberry muffins too and ate the last one today. Sad to have to wait another year for them. I bought them every time I saw them and had a freezer full but now they're gone. I didn't get to make harvest bread this year so they were a nice substitute.
I foun a sharpening service near me so am taking 4 knives tomorrow. Not as much fun as taking them to “The Hill" (Italian neighborhood and shopping district) but I need them sharpened.

Baked chicken in a bag tonight with a rice/lentil mixture, squash and orange peppers. Sprinkled Sunny Paris seasoning on it and mixed in broth. Not highly flavored but I liked it.

I'm not a produce scrubber but I am a rinser, using the sprayer; for salad greens I put them in the spinner, fill it to overflowing with water and pour out whatever floats to the top, then I drain, spray, spin--lather, rinse, repeat. I usually pare or peel "scrubbable" produce anyway.

Pan seared catfish fillets last night. Delicious. Side of romaine salad. Warmed up leftover veggies from the beef stew for dh.
Will thaw out a chicken breast for tonight.
I subscribed to the Hello Fresh Classic Meal Plan with two meals a week in the Vegetarian category. We'll see how that goes. I can cancel at any time.
The inauguration ceremonies were uplifting for me. I'm amazed that a man a year older than I is taking on such an overwhelming job. I'm impressed than he was up to the challenge of that long day without taking a nap! It will be refreshing to have a President who doesn't govern by Twitter.
It's overcast outside but warmer than the last week.

Landline here too. We are just far enough from the cell phone tower that sometimes the cell phone is fine, and sometimes not. Also we have a heat shield lining to our roof which does not help cell phone reception.
Dinner last evening was air fryer chicken breast, sweet potato, and sauteed apples.

I'm a very inconsistent lurker here but come sometimes for ideas. Mae, I made your creamy brussels sprouts last night--AMAZING! I was on Nerlynx for a year and among the many things I absolutely could not eat were brussels sprouts (spent a whole night on the potty--never again would I eat them until I finished, but now I'm enjoying with abandon). Thank you for sharing that recipe!
Also, unrelated, but Minus, did you know that Costco here in Houston opens up at 9 am for over 60 or people who are immunocompromised (think this is everywhere but the times may be different)? When the world turn upside down, I had just been told by my MO that my WBC's were in the tank and that I'd better be very careful. They're better now, but I still go at 9 am, and I'm there with about 25 other people, usually all older than me. Sure, you have the few men who have their noses sticking out of masks, but in that huge building, you can avoid them pretty easily.

Bessy, so glad you enjoyed the Brussels sprouts!
Carole, just a tip, if you do cancel hello fresh, it won’t be too long before they temp you back with another heavily discounted deal. I’ve taken advantage of that a couple of times. The food is great but it seems to taste better when it cheaper, lol
Tonight I’m making beef stroganoff. Traditional for me but using zucchini noodles for DH. Pics later.

Not a pretty dish but I sure tastes great!

Thanks Beesy. I tend to forget that early hour at Costco since I'm usually walking. I should make use of the senior benefit. I have discovered I can order at Total Wine on line and they will bring the box out to my trunk when I get there. That makes it WAY too easy to order wine. And spirits. Oh - and the Dot's Pretzels that Carole recommended from the North Country. They're at Kroger too now Carole.
LOVE beef stroganoff. Tonight I made shrimp scamp on top of angel hair pasta. Not a memorable photograph since I stirred it all up, but good. I have green lentils soaking. Tomorrow I finally plan to try the vegetarian Shepherd's Pie.

Tonight was leftovers. Not what I planned but I had to go to the grocery store. I did not know that a truck fire on the interstate had traffic backed up and apparently everyone was seeking alternate routes home. The usual 20 to 25 min drive home for me took 1.5 hours. It was too late to fix what I had planned but at least I have menu ideas for the next few days!

Last night was a chicken breast cut into strips and cooked in a skillet along with veggies cooked in stages, broccoli, yellow bell pepper, purple cabbage and finally some cooked brown rice. Not a proper stir fry since I don't do stir fry well. DH enjoys this type of dish more than I do. He goes heavy on the soy sauce. We also had a tasty romaine salad with additions and oil and vinegar dressing.

We had a leftover meal of chicken with wine & mushrooms, red peppers, cucumbers & carrots. We shared the leftover Sauvignon Blanc from the first go around with this meal. The curious thing is - I ate two (2) (II) (TWO) packets of individual vanilla wafers. They tasted so very good! I love Vanilla Wafers & these little individual packs go down so very easy.

Shepherd's Pie - vegetarian w/French Green Lentils instead of meat - carrots, celery, onions, garlic, rosemary, thyme, mushrooms, peas, vegetable broth, red wine. All sauteed &/or simmered then dumped into a Corning dish & covered with leftover mashed potatoes to bake for 20 minutes. The veggies were sort of 'al dente', and although I don't usually like crisp veggies these were a good addition. As usual, I can't figure out how to cook for two, let alone for one. I had a huge serving and there are three more servings left. I'll eat this again but will definitely be experimenting with how it freezes.

Making stuffed peppers for tonight

I stumbled on Costco’s geezer hour by accident by arriving early one week day, planning to wait it out in my car. I saw people going in so decided to go too. I wasn’t challenged but the younger person behind me was turned away until 10. I didn’t even remember that they had special hours. It was great, I was in and out before the regular opening time.
Last night was fish tacos with chipotle slaw and pinto beans. I’m making chicken stock for the first time in this kitchen destined to be the base for gumbo which will constitute dinner along with some garlic bread.
When we moved in here we immediately hung a small window feeder hoping to attract birds from the wooded area behind our villa. Much to our delight, in addition toothers, bluebirds (as many as four at a time) have been frequenting the feeder. DH immediately went out and bought some freeze dried mealworms and now the birds are a pretty constant presence. Makes me smile every day.

Nance, it makes my heart smile also to know that you have re-established your connection with your feathered friends!
I let my Costco membership expire a decade ago since I felt the volume of products were too much for just us two, but when I read about some of your finds, I am tempted to rejoin. Also may check them out for new glasses, since my ophthalmologist highly recommended the optician at our local branch.Tonight we will finish up the kale soup and have little eggplant pizzas on the side. Odd combo, but easy to do. Eric, as far as the counter standing problem, we’ve tried my using DH’s ergonomic computer “chair/stand/stool, but it’s stationery since it’s really heavy, so becomes an obstruction. A lab stool on wheels could be an option if that exists. My PT says I should be repeatedly doing pelvic tilts while standing at the counter to relieve the back pressure. Oy! The good news is that my PT treatments are dramatically reducing the ongoing pain, so I am a happy camper. Of course my worry about even going to the PT center has me sewing up more masks, now with two layers of chiffon on the inside to ward off any particles that I might encounter!
Carole, I was totally unaware of crocheted washcloths! Have I been under a rock? They look interesting. I hope you are successful if you sell your product! You could pair/display your cloths with DH’s bowls.:) I love hearing about people crafting things. I haven’t crocheted since the seventies, but now am tempted.
Now every evening as I wash our salad greens, I think of our group at this kitchen table.
Minus, Laurie seems great. Such a sweet gal. Her boys are double digit ages now and she works in the local elementary school and loves it. It’s been fun for me to learn about what all the younger moms are feeding their families these days, since many in the FB dinner group are her friends, neighbors, colleagues, etc.

The lab stool I used had wheels so it could be rolled around, but putting 5 or 6 pounds on the seat would make the (non slip) feet come to the floor. So, it would roll, but not slide around when I sat in it.

Lacey - Costco - I'm pretty sure you can go to the optical shop w/o a membership. I know that is true for the pharmacy & I believe for the hearing center. BTW - the best hearing test I ever had was at Costco w/the most comprehensive written report. Better than our world class Medical Center. It was free and I wasn't urged to purchase anything. She said the test was good for 6 months if I wanted to move forward. Otherwise they'd give me another free test whenever I was ready. She also let me know hearing aids were going to be OTC soon & she'd be happy to discuss those cheaper versions with me when they were available.
Disclaimer - I don't have Costco stock (unfortunately). I originally got a membership when I was still smoking because their cigarettes were so much cheaper. I've been tempted to drop it several times, but... Our Costco has great steaks. I buy my vitamins there. And I've always bought paper goods in bulk. Not to mention the Kirkland wines, many of which are brand names bottled for Costco, and the prices on the other wines too.
Thanks for the update on Laurie. She was always a lovely person. Edited since I forgot to say I'm glad your back is improving, even if too slow for your liking.

My son (who's not a member) went to Costco for the eye exam but then used Warby Parker online to order 5 pairs to try on, choose, and mail back for free.
Dinner last night was takeout, picked up from Indie Cafe, a combination Thai-sushi joint. Tom Kha soup (coconut broth, veggies, chicken breast), house salad (romaine, mesclun, avocado, red cabbage & carrots), and the "Omakase" sashimi platter: 2 pcs. ea of snapper, hamachi, halibut, tuna, salmon, shrimp, and spiralized daikon with mizuna leaves. Bob's entree was a salmon-papaya poke bowl with brown rice. We'll have the leftovers tomorrow night, since we're going out to Mon Ami Gabi for my 70th birthday dinner tonight. We have tented-heated-patio reservations, but the city started allowing limited indoor dining today. Still gonna request the tent--my nail tech went the other night and said it was warm enough.

Is today your actual birthday Sandy? It so, happy birthday and welcome to the 70s
0 -
Thanks! It is. Not often that my actual birthday coincides with Bob's night off and the good restaurants are open! Bittersweet was that last year we celebrated a night early at Everest, which is no more.

Happy Birthday, Sandy.

Tonight was the leftover 1/2 of my steak, seared scallops and mixed roasted veggies.

Thanks guys!
Dinner at Mon Ami Gabi: carrot-raisin appetizer with baguette, escargots, wild mushroom bisque, duck/sausage cassoulet, and chocolate mousse. I had a little of the baguette to soak up the garlic butter from the snails. And Bob's dessert was a lemon bar with raspberry coulis & whipped cream.
We were nice and toasty in the tent, equipped with a massive ventilation system (the nationwide Lettuce Entertain You group has the money for that). I'm glad we stuck to our guns and waited for our tent table to open up: today was the first day since early Nov. for indoor restaurant dining in Chicago, but it looked as if the dining room was at least 50% full, with far more than 25 patrons--perhaps the partitions created several "rooms" but that was still sorta fudging it. SpotHero parking was no problem: the lot was closed to all but pre-paid parkers (either SpotHero, the lot's own app, or building residents with parking permits). And being in the tent gave us a street view to see passerby (some of whom waved as they were walking their pooches).

Happy Birthday, Sandy! Sounds like you had a nice BD dinner! 🎂🎉

Sandy,
Again, congrats on your birthday. I do think you have the enthusiasm & positive outlook that if your birthday dinner was tomato soup & a sandwich in your garage you would find it to be perfect. That is the way to live!

Last night's dinner was white bean and lentil soup out of the freezer. It was good once again.
A pork butt roast is thawing to be roasted for dinner.

Have been experimenting with chicken recipes in the Instant Pot. Two nights ago, Chicken Toscana--loved having the veggies but will add more seasoning next time. Last evening Chicken Piccata, more flavor but think the capers had gone flat(have had them opened for a bit) so will try a freshly opened jar next time!I
Re Costco, we both have our eye exams at our opthalmologist-- I have very elongated eyeballs which has created macular degeneration (fortunately very stable without visual impairment so far) and DH has a corneal malformation and has had a retinal tear so we are more comfortable having our eyes checked by him. Then, DH gets his glasses from Costco and I get my cheater readers there at times. So we do the reverse...

auntie - "geezer hour", lol!
chisandy - Happy Birthday! Your dinner sounds like it was special!
Currently watching the Buccaneers/Packers game - well, kind of. DH is actually watching, I am occasionally checking in because if I watch the Bucs lose. Not sure what dinner will be but made some pasta salad for lunches this week with adds of salami and mozzarella to the tri-color fusilli and lots and lots of veggies. Also cooked some salmon to make some salade nicoise for DD and DH this week - I had a plethora of eggs from DD's backyard farm so hard-boiled quite a few, and also had the other ingredients on hand.
minus - good to now about the OTC hearing aids coming - DH has documented hearing loss - mainly caused by many years of flying combat aircraft exacerbated by some depressurization episodes, but it is not enough for the VA to provide aids for free - he just had a hearing test and falls into their "normal" category, which is hearing loss that is not too severe. That made me question why he can't "hear" me, and what is his excuse now, lol! He has ADD, although never tested for and confirmed - DD has it and they are exactly alike. I suspected that he could hear me but was focused elsewhere, or was so busy planning what he was going to say that he just wasn't listening, due to the ADD. It is somewhat amazing that he is able to get through the work day as superbly as he does because he is juggling many issues, but he is really tired when he gets home, and has been for years - this is why. In any event, I think he would benefit from hearing aids but if he can get them less expensively, that would be great.
