So...whats for dinner?

I haven't been to Katie's in Galveston either, but it looks delicious. I am so looking forward to seeing the ocean again. Almost any ocean at this point.
Tried a new recipe today for Caramelized Mushroom Pasta with vegetable stock & heavy cream. The flavor was excellent & I will make it again with some changes. I used angel hair pasta (the author recommended spaghetti), but I'll try something shorter & more compact next time (maybe gemelli). And I'll double the quantity of mushrooms to pasta. Can you tell I like mushrooms?

For anyone thinking of trying Katie’s, here’s a more thorough review.
The cocktails were tasty but pricy, my rum drink was delicious but at $12, two was my limit. DH has the Bloody Mary adorned with snacks, it was $25, just one for him.The crab cakes were good but best is Mr. B’s in NOLA so far, Katie’s ranked 5th place for me. The shrimp cocktail was pretty good according to DH but Mambo (several locations in HOU) is his favorite, hands down, and he’s had many across the US. But the Mac n cheese was worth the trip for sure, it’s ranks top or 2nd for both of us.
Knowing what I do now, if have the pelican punch rum drink, the Mac n cheese and I’d try the fish (not fried), which is caught each morning and sold in their little market next door and served in the restaurant.

auntie - Kitchenaid is marketed in both the US and Canada, so it has both languages and asks you to make a choice. I somehow said yes (oui) to French, which ended up in un probleme. I definitely didn't learn any microwave related words in the years of French I took, hell, there weren't even microwaves back then, lol! Makes me wonder if Bosch appliances can speak German?

Special, my Bosch dishwasher doesn't speak German to the best of my knowledge!.it was in the house when we moved here so all I've done is load and push buttons...

Last night was chili mac and cheese. It was so-o-o good. And there is so-o-o much left over. The side was a romaine salad with bottled Caesar dressing, much to my taste.
Our weather forecast is full of ominous warnings for today through Thursday. It looks ominous outside. I wish I were a daytime napping person because I did not have a whole night of restful sleep last night. The loud chiming of my wonderful Windsor wind chimes didn't help.
Not sure about tonight's menu.

beaver - so far the Kitchenaid dishwasher is the only one of the appliances that required no set-up, so mine hasn't said anything either, lol! The language below each button is English on the front. I haven't used the oven yet, but it has the shared control panel and digital screen with the microwave as it is a one unit built in wall situation. I am hoping that since I have the language set for the microwave the oven won't spontaneously speak French when I use it for the first time. These appliances are far more complicated than any I have had previously and I am finding it a bit challenging even in English!
On a not so great front - it appears that I have a case of shingles. I am suspicious that it is due to my vaccine a week ago, this is a pattern with cold sores for me when I get sick with any other virus, or my system is stressed in any way - like a sunburn, windburn, freezing temps, too much stress, etc., and I am amazed that a cold sore did not happen with this. The rash is on the opposite shoulder from my vaccine, and I initially thought something bit me or it was a contact thing. It is on my worse lymphedema arm and I can feel the tightness happening down the inner bicep. Roughly between the shoulders, slightly closer to the vaccine side, I have a four inch incision that still has stitches in it from a wide excision skin cancer removal. Those stitches come out Friday, with another surgery happening about two inches to the left on that day. I have anti-viral meds from my viral induced hearing loss, and I started taking them last night - and the area is itching and burning less. As long as it doesn't get too crazy I will just have my MOHS surgeon/derm look at it then. Bleh.

Oh no Special, that just sucks! Best wishes that it doesn’t get worse.
It’s a dark rainy day here. Carole’s chili sounds good. I voiced the possibility to DH who heartily approved so I guess it’s chill tonight.

Shingles.....uggh. Hopefully the anti-viral stuff does the job.
One of our cars would do French, Spanish and English, but so far the appliances "do" only English.
I've been doing a lot of catching up on home maintenance stuff and the dinners have been taking 2nd place to getting all the work done. Dinners have not been the most inspiring. :-)
We did make a braised chicken recipe with rice and it was one of those "Next time try...." results. The chicken was chalky dry, so I'm guessing we overcooked it. Normally we use a dutch oven in a regular oven, but this time we decided to use the crockpot. Our (very old and ugly) oven will regulate temperatures down to around 140F degrees. I checked the crockpot, unfortunately only after the overcooking, and found it keeps temperatures around 190F degrees. Oops.. :-)

Thanks to ideas from folks on here, tonight was pasta (small ridged tubes made with rice and white and red quinoa), homemade cheese sauce with multiple cheeses and leftover chili--kinda sorta mac and cheese. The pasta and cheese sauce cooled down the too hotly spiced chili just fine!

Special, for what it's worth, a neighbor got the Moderna vaccine eight days ago and, today, was diagnosed with shingles.
Will the anti-viral meds reduce the Covid vaccine effectiveness?
0 -
Thanks for the sympathies on the apparent shingles, appreciate it!
eric - it doesn’t appear from what I have looked at that this anti-viral will interfere. The caution seems to be linked more to anti-inflammatory meds and steroids with the vaccine. I’m glad I will be able to speak to my derm on Fri morning - I can always discontinue the med in plenty of time before my second vaccine. Interesting about the similar timing with your neighbor. I am wondering if this is confirmation that my immune system is not particularly strong, and has been part of my decision to isolate for the past year for the most part.
beaver - kind of like Cincinnati chili!

Last night was pork piccata made with a pork tenderloin and mashed potatoes. It was so good that I ate more than I should have.

Had celery & carrots in the fridge that really needed to be used. I cooked Anasazi beans and added both, in addition to onion & garlic. No meat but very delicious.
Saw my pulmonologist today. He told me 3 important things that are vital to good health as we age: walking, pasta and wine. I was really surprised by the pasta, but I won't argue with any of those.

Minus, I'm in good status on all three of those!
DH cooked a stir fry last night with the rest of the pork tenderloin and various veggies. He was supposed to use cabbage but left it out. My sister brought two huge cabbages someone had given her.

I've had the chance to be a 6 year old boy again. The lawn sprinkler piping was leaking in a couple of spots and to repair the leaks, I had to dig in the muddy lawn. It's 70F/21C and comfortable to be bare footed, wearing old clothes AND "PLAYING" IN THE MUD.
Dinner tonight will likely be some fish tacos.
Special, are the anti-viral meds muting the "revenge of the chicken pox"?
Wine, pasta and walking. Well, I do a lot of walking and running. Wine and pasta, not so much.

No planned dinner tonight, so I made a box of Annie’s white cheddar shells and cheese with a side salad, it was pretty good. DH was making some Italian sausage, so I had two small meatballs as an after dinner snack.

I recently found out Ninja foodi is wonderful thing. I make egg bites, beef jerkys, rib roast, ham and more. My food motivated beagle dog gets excited any time I turn the machine on. After dinner, I decided to cook multi grain rice in it. She got super excited I felt sorry that I inadvertently punked her.

minus - hope all your house things are going well, and I like the way your pulmonologist thinks!
Illimae - I'm a mac n cheese girl - your dinner sounds perfect to me!
eric - Benadryl oral and topical didn't touch the outbreak for itching or dissipating, I took the anti-viral meds for three days and it knocked down the itch very well although the rash looking area is still there. I decided to stop the meds since I'm going to the derm in the morning, and I'm the itchiness is making a return. I'm thankful I have not had nerve pain or too much discomfort. If this is indeed shingles I think it is a relatively mild case.
castigame - my dog thinks everything I cook is for him, lol! A girl my son was dating had a beagle, super food motivated! He got into my overnight bag, dug to the bottom and found my gummy vitamins, statin, and letrozole in my old lady pill case, opened all the days and ate it all. Fortunately my BIL is a veterinarian so I called him immediatelyand asked what to do, he said give him as many cc's of hydrogen peroxide as he weighs and wait for him to throw up. Then next day give him a Pepcid with breakfast and one with dinner. Worked like a charm.

Since I am getting my first round of the vaccine later today, I am planning omelets, homemade home fries and toast tonight for dinner.
0 -
Tonight's dinner will likely be a ribeye.

Mommy - good luck. I had no real reaction to the first round. The second round, I was just really tired for a couple of days.
Finished the leftover Caramelized Mushroom Pasta last night. It was just as good the 2nd time. Tonight will be the leftover Anasazi beans.
Special - just packing up floor to ceiling bookcases so far. The total re-pipe job starts Monday. Because of the demand due to the 'big freeze', it's likely I'll have a week or more wait surrounded by chaos before the painter can start the sheet rock repairs & ceiling replacements.

Shot done, hubby said what I planned for dinner can wait until tomorrow’s breakfast. He got burgers and fries tonight.

Dinner last night for DH was his lunch - penne with meat sauce - that he didn't have time to eat. Worked out perfect for me because I was cooking up camping food and snacks for DD. She is spending the weekend at the county fairgrounds at the overland and off-road expo she is hosting. I have found a new product in the grocery store - little individual cups of cauliflower based queso sauce. Dinner for me was home fries with queso, at about midnight. Not sure what dinner will be tonight - I am tired, and had my second skin cancer surgery this morning, as well as a stat biopsy on the suspected shingles area. I have a four inch incision on my back, and I am now fairly uncomfortable. It is only a couple of inches from the other similarly sized incision from two weeks ago - got those stitches out this morning as well. Derm prescribed an Rx topical, said that even though he felt the antiviral did not interfere with the vaccine, it had done the necessary work to stop the blistering. He also said to get the second shot in five days, and we should have the biopsy results by then also.
minus - glad you're making progress, but the stretched out thing makes it feel a bit of a slog, right? I'm still waiting for the fridge I ordered the first week of Jan., and I've paid for an oversized custom pocket slider, a French door, and a glass kitchen door that I won't see for a couple of months at the earliest. I replaced the solid shelves in the built in bookcases in the family room with glass and had lighting put in at the top. Didn't give enough thought to what to do with the gazillion books that are now too heavy for the glass. Still finding places to stash them, lol! Our books, and books from both sets of parents and a family friend whose estate we handled.

Hi Castigame. Our yellow lab gets all excited when the food blender is used. Pest, my college cat was electric can opener motivated. I'd use the electric can opener and she would instantly be in the kitchen, meowing loudly and wondering why I did not already have her food bowl filled! :-)
Special, hoping that the "uncomfortable" quickly goes away.

Thinking of bbq'd bonless pork ribs tonight. So far only side effect from the shot is a sore arm!

Wondering where everyone was and discovered, again, I'm not getting notifications. Checked the settings - everything right so idk. Weird.
Barbecued chicken, baked beans and coleslaw tonight. Supposed to get near a record high so summer-like for sure. I'll take it.

Today is the day of the window screen. I'm installing new screen into the window screen frames and screen doors. I've finished 5 and have 3 remaining.
Sharon is making peanut butter cookies and dinner tonight is chicken nuggets made from cauliflower and an orange-BBQ sauce.
I'm glad the SEs from the Covid shot are minimal. I'm in group 1A for the immunizations, but I have not been especially diligent at looking for an appointment. I'll check first thing in the morning for a slot and they're already all gone. I guess people are waking up at midnight to get the appointments.
We've always been hermits and that is working well for us. :-)

Packed up 3 floor to ceiling bookcases and moved the boxes into the TV room. Hopefully the plumbers will move the bookcases. I wonder where? Packed up all the stuff under 3 sinks. Hope I can find my tooth brush tomorrow. And the dish washing soap. I still have the primary closet to empty. That inside wall will be their access to the washing machine pipes.
I have no idea how long the water will be off, so here I am drawing containers of water again - right between he big freeze and the coming hurricane season. They originally said "a couple of days" to complete the job.
Today's meal was two fried eggs with sesame pave toast. I don't expect anything exciting for the next week. So I will vicariously enjoy reading about your meals - assuming I can still get on line.

Minus, I don't envy you this experience of home invasion. Hope everything goes well. We had carpet cleaners come one day and were so-o-o glad the next day that nothing was scheduled that involved people coming inside our house and interrupting our routines. I put off new countertops for 8 to 10 years. In the middle of the change, I wished I had continued to put it off.
Last night was a delicious shrimp and pasta dish with a romaine side salad. The pasta was a tagliatelle wound in little bundles in the package. The sauce was olive and butter with garlic, lemon zest, and lemon juice. Yum. The shrimp were large and succulent, cooked in the sauce.
Tonight may be a take out pizza. Too early to decide.

Oh Minus what a lot of trouble. I don't envy you either. We just had the flooring guy in to measure and I'm not looking forward to that project. I know they move the furniture from one side to the other as they lay the floor but I don't know how they're going to do the kitchen.
Carole, the shrimp pasta sounds delicious. I so wish DH liked shrimp. I would eat it much more often. Of course you are fortunate to have so much fresh available.
Eric, I don't envy you your screening task either. Replacing screens has been one of the more frustrating homeowner tasks of my life. Our upper deck is screened, thankfully. Just yesterday, my neighbor whose deck is not screened, told me she checked on prices for getting hers done and was shocked at how much it cost. If you want another retirement job with income, you could check into that lol.
Tonight is carry in/out night. It seems time for Chinese although there are new Vietnamese and Thai restaurants in the area that I'd like to try. I don't know how pho would travel.
Special - hope the biopsy results are unremarkable.
