    We had a rotisserie chicken from Costco. It was very good. Had broccoli, salad, mashed potatoes and challah bread with it.



    Congrats to the Pats fans! Are they the only favorite that won this weekend?

    I like Farro.. bought it at Costco. 

    I ended up cooking cause we had FIVE kids come over and spend the nite.. 2 for my daughter, 1 for one son and 2 for another..

    I didn't want to shop so i made a huge pot of macaroni and cheese, infused with the flavors of chopped tomato, onion and ham.  I had already made a huge breakfast with lots of leftovers which are gone of course.. the chocolate chip pancakes my DD made, the sausages, even the fried eggs... LOL with tater tots on the side.


    (i ate mostly pears which were absolutely excellent.. Bosc)

     i am soooooo not cooking tonite.

    I made a good anti-cancer lunch. I sauteed a chopped onion, chopped clove garlic, a bit of fresh chili, a handful of cut up green beans in a little oil. Then I added two artichokes that I had stripped down to the bottoms and cut in bites and 3 tomatoes, chopped. Added some turmeric for good measure and a drained and rinsed can of chickpeas. Let simmer 15 minutes or so. It was good and very easy.

    Apple, your house sounds like the party house! That breakfast sounds good, no wonder you get so many guests! We just joined Costco yesterday, any advice on what we should buy there?

    Carrie, I don't like the giants! Being 90 miles from NYC, it is a big rivalry. The only team I dislike more is the cowboys. I guess of whose left, I will pull for the 49ers. Would have loved to see Detroit advance last week.

    Kay  yeah its all about location, location, location!  At this point I usually just root for the underdog.

    Apple  such an undertaking on trying to keep the kids and friends fed.....rest now.  Do you have a good recipe for mac n cheese  cause for some reason I just cant get it ooooey and goooey.  I am not too fussy and like mine but husband doesnt care for it.

    tonight we are having cornish game hens with stuffing and some vege...maybe a salad   getting low on the groceries and too cold to go out.  Sometimes I like to see how long I can go without groceries and still pull something together,  challenges me to use every scrap of food I've got.

    OK, second week of work and I got out of the house on time! Here's what I did.  For breakfast: make coffee in the evening and put it in the fridge, drink it as iced coffee in the am. Put and blend frozen blueberries, 1% milk, bananas, ( I use frozen ones if I have too many I just freeze them) and yogurt.  Then in the am I drink the coffee, zip the smoothie and grab a hard boiled egg to go..

    For lunch I have made 100,000 burritos and frozen them to add to fresh fruit and baby carrots, celery and cherry tomatoes for lunch.( with a little container of dressing) They're in there ready to go.

    For dinner, soup, bread and salad.  As usual!

    I am a very boring person.

    We're having chicken pot pie for dinner - one that we bought at Idylewilde's near my daughter's house - they have really good pre-made stuff.  DH and I have been slugs today.  I think the stress of everything, along with a busy weekend, warranted a "do-nothing" kind of day.  I will pop that pie in the oven in a few minutes and decide if we need anything else to go with it.  Probably not, though.

    Bedo - you have quite the routine!  I don't think I could trade a cup of hot coffee for iced coffee, just not the same on these chilly mornings! 

    Carrie - some people swear by Velveeta for a creamy mac&cheese.  I can't make myself buy the stuff - I think it's one of those foods we had too often when I was growing up.  And I am a bit of a cheese snob...lol.  And yet, every now and then, the Kraft stuff tastes pretty good.  Must be the butter!

    Chicken pot pie.  I remember that from my childhood.  When it's good it's very, very good and when it's bad it's horrid!  My Mom used to buy the really cheap stuff.  Couldn't tell if it was chicken or beef or whatever.  Sounds yummie.  I haven't eaten chicken in a long time, but I remember it in a pie. :)

    I love do nothing days.

    We had tacos for dinner. We had beef for my DS, DD and DH. I just made mine with black beans mixed with salsa, lettuce, tomatoe, jalapeños and cheese. First time I had it that way. It was good. Had salad and Spanish rice with it. Nice, quick, easy meal that everyone liked.



    Gee, I agree Bedo,you are quite organized, but ice coffee does not sub well for hot coffee in these cold days. We got a keurig maker for Christmas, so can make a cup really quickly in the morning. Before that, we would set the timer and have everything set at night and it would be made when we got up.



    We never had chicken pot pies in my house, so never got a taste for them, but I bet like Bedo says, when they're good thet're very good.



    Saw the girl with the dragon tattoo today. It was good, long though.

    Hi ladies, we had a busy weekend and I have been reading when I pop in the house here and there, it's hard to catch up!  But you ladies have inspired me to make some pea soup this week :)

    DH had a long weekend and I have been trying to keep up with him.  We dropped the kids at my inlaws and went up tp the mountains for him to work for a few hours and for me to have an appetizer and a glass of wine and take a break.  It was nice to get away for a few hours.  We have been having left overs and make shift dinners, tonight was left over lasagna.  Boys are pooped from being on the go and are already in bed, I don't think we are far behind them.

    Well the pot pie was a bust...definitely fell into the "horrid" category.  I think my piece might have had 3 cubes of chicken - the pie was all crust, potatoes and gravy, with barely a sprinkle of chicken, peas and carrots.  I don't usually even eat something like this because it's too carby.  So I'm sitting here eating raw veggies and a dill dip that I made from Greek yogurt - so much better!!!  Meanwhile, DH is asking why I didn't make brownies.  I think he's lost his marbles, I've made brownies about 3 times in the past 10 years, and it's when there was someone else here to help eat them.

    I made Manicotti stuffed with ricotta, spinach, shrimp, mozzarella and parmesian

    with  tomato sauce..it is smelling good...

    SoCalLisa.... Nope... No such thing as too late!  Welcome...Love Italian and that Manicotti sounds delicious... Wish I could smell it, too...lol

     To all... Tonight I used the rest of the beef roast I made last week and did a beef and broccoli stir fry... It was really good... Tomorrow I'm thinking a small pan of lasagna.... We'll see!

    I make a pot pie once in awhile that I think is really very tasty... I think it is a Barefoot Contessa recipe but, will double check and post when I check to be sure!!!

    You are 100% right... Pot Pie done well is a beautiful thing.... Pot Pie done badly, well, as you said, it's horrid! 

     I am not a huge coffee drinker but I do enjoy a cup or two in the morning.. Never thought I would be an ice coffee fan but, my sister made me one when we were there New Year's weekend and, I must say it was really good... It was basically coffee over ice with one of the flavored, refrigerated creamers...

    Wouldn't want it to replace my morning coffee but, for a pick me up in the afternoon... it was good!

    Finished the The Girl With The Dragon Tatoo book and it's on my list (a very long list) of movies to see... Reading The Help now and will most likely watch that movie first... So many movies... So little time...lol

    Michelle~The Dinty Moore beef stew was something like your Chicken Pot Pie.  DH was squawking about not enough meat, LOL.  I'll make my own Beef Stew from now on, it is real fast and tasty in my pressure cooker.  I never made a homemade Chicken Pot Pie.

    Yesterday I got a friend message from Keith Grimes, the chef/owner of Pickity Place.  Of course I accepted.

    Luv, I make greek yogurt into all kinds of dipping sauces and toppings. You can add almost any herb to it, garlic, spices etc. If you use the 0% fat one, it is really a lot of flavor for very few calories.

    I saw the help and then read the book. Both were very good. I tried to read the girl with the dragon tattoo, but couldn't get ino it. I kept losing my place and not knowing who everyone was. Maybe i'll try it again since now I know the story.

    I was reading the girl with the dragon tattoo...my daughter bought for me back in July for my birthday...and I finally said the heck with it...went to the movie with her over Christmas break, the book was very difficult to get into. I have the next book also and cant get into that either.

    The cornish game hens were good last night  My DH and I shared one, will use the other one for soup

    tonight maybe meatball subs, I think I have just enough meatballs in the freezer to do this.

    Hi Ladies..............thought I would drop buy and say hello.................Just got done putting on a pot of homemade soup,...............I live alone, so ask me why I just did a pot of soup big enough to feed an small army...........guess you never get out of the "big cooking" habit, after having 6 kids.

    Las week I was very busy .........my grandson had shoulder surgery, so I sent him homemade Wedding soup, and made him a B lueberry pound cake............made cucuzza (squash) for my grandaughter (his sister).  She loves it......its done with garlic, and fresh tomatoes......

    Then another grandson had surgery on his foot something called a LisFranc fracture, pins, rods, the whole thing.....................so he loves homemade soup too, so I made him that, and he also loves my homemade "hoagies", so I bought all the fixins and sent him 6.............and a big bag of "string cheese".

    Now I have another pot of soup on, and made homemade chicken salad from a Rotissere chicken I bought from BJ's and only ate the wings and legs...........the whole breast was left over..so I did chicken salad with that..............I don't like chicken salad, so someone will get that too.

    I love to cook, and bake.  I do miss  the big family meals, but "life goes on, with or without you"....

    The soup smells so good, and I'm thinking of making some cookies later today ...............it is rainy, and miserable here, one of those days when you should stay in bed...............or cook......................so I chose the later.....................hahahaha...............have a great day ladies................hugs.

    Manicotti with shrimp reminds me of one of my favorite "inspirations" - crepes stuffed with shrimp newburg and drizzled with some of the newberg sauce.  I use the large shrimp cut into bite sized pieces.  It has always been a big hit at dinner parties.

    Ducky- it sounds like you have been doing a lot of cooking, the soups sound great!  I really should make a soup this week.

    I loved the Help and trudged my way through all three books of The Girl With the Dragon Tattoo.  I felt like I had to finish once I started, but found them quite boring.  I think you either love them or hate them.  They are hard to get into, I am willing to bet that they will make a movie of all three too.  I haven't seen either movie.  I always just wait for them to come on HBO or Showtime.  Meaning I have to wait awhile!

    LuvRving I laughed at your husband's request for brownies.  Sometimes we wonder where they are coming from!   As far as your chicken pie recipe goes.  My Mom used to say to me. "There was a little girl, with a little curl, right in the middle of her forehead.  And when she was good, she was very Very good and when she was bad she was horrid "  I think she meant me.  I'm sure you are very very good and I'm sure your haircut looks good, even if it has a little curl. 

    Good luck with the chicken pie next time. 

    I am still looking for a recipe I made a long time ago that was a vegetable pie with a beautiful crust..  It had big chucks of fresh mushrooms, winter squash, I think butternut, carrots, onions, maybe rosemary??   It made me sad that I lost it, and I've been looking for it for years.  Any ideas of something similair?

    PS, my car died today. The timing belt shot the engine. The car was worth maybe $1200. So I had it towed to my favorite mechanic ever and bought a new (old) Volvo for $4,000.  and put it on my overused credit card.  Why does nothing bother me anymore?  Maybe I've lost my mind.  

    Deborye, you're not using it in addition to your own, are you?  If so send it home please.

    Hi all

    I've been off line for a few days. Just did a quick run through of the postings.

    Congrats Michele - wooo hooo, you're done.

    I sympathize with all who posted about relatives with dementia. My mother died from Alzheimer's. It was horrible. They don't call it the long good bye for nothing. My dad also has dementia, not sure what kind, but it seems different than my mom's.

     My cousin and I went to visit another cousin in Maine over the long weekend. She lives near Rockland. It was freezing. We spent 3 days there and never went outside. Mostly we ate. I brought homemade clam chowder and a homemade lemon ice box pie.

    My cousin picked up some eggplant parm from a good italian take out place AND she brought 3 lbs of lobster tails. She just had a big win at Foxwoods and she likes to "share the wealth." She sauteed butter and onions, then added Ritz cracker crumbs. She layered the crumbs with the lobster tails in a casserole. It was decadent.

    The cousin we visited welcomed us from our 3 1/2 hour ride with a big pot of italian wedding soup. She made us breakfast every morning and Sunday night made a crown roast of pork with apple and sausage stuffing.

    My cousin's husband did all the dishes and kept the firewood box filled.

    It was a weekend of feasting, chatting and sitting by the wood stove.

    Had potabello burgers with onion, roasted peppers, tomato and lettuce. Had broccoli, sweet potato fries and a salad with it. It was good, but now I am thinking about lobster and soup. Hmmmm.. Don't think lobster is in my near future. Maybe some soup. I have only tried making my own soup a handful of times, i need some practice.



    This is cracking me up. My DH is watching Dance Moms. He is hooked on that show. LOL

    Laurie, Carberry & Kay: here's another vote - I didn't care for the Dragon Tatoo & am not going to read the other two.  Interesting that I've talked to several men who've seen the movie this month & they think it's great - but think it's too graphic for their wives (who already read the book)???

    Desserts - Have any of you noticed we rarely talk about or post dessert recipes?  Personally I no longer make desserts since I live alone & would have to eat the whole thing.  Besides I'd rather eat salt than sweet.  But still...  we could dream about those useless calories.  Thought this was an easy one from one of Gail Frazier's Lumby Lines books (yup it's a cozy).

    Peach Mousse Pie

    1  -  8" store bought graham cracker pie crust
    1     Box sugar-free Peach Jello
    1 C  hot water
    4-5  Ripe peaches
    2  - 8 oz containers low-fat peach yogurt
    1    8 oz container Cool Whip

    In large bowl, dissolve Jello completely using one cup hot water.
    Allow to cool (but not set) in fridge or freezer for a few minutes.
    Skin & dice 4 or 5 ripe peaches into bite-size pieces.
    Stir yogurt & cool whip int the cooled bowl of jello.
    Fold in peach pieces.
    Pour into pie pan & let set a few hours.

    Adaptable always using 1 box Jello, 2 yogurt & 1 cool whip

    Key Lime Pie
    Use lime Jello & key lime yogurt w/no fruit

    Raspberry Pie
    Use raspberry jello, raspberry yogurt & few cups fresh raspberries.
