    @wallycat great initiative! Food and coffee is always appreciated by medical staff, and more importantly the gesture. Early December or early January might be a good time so they are less overwhelmed, and some offices do appreciate healthier snacks too so there tend to be a lot of sugary treats. Whatever you choose it will be special, it's a lovely idea ♥️ The Mods

    I'm making a stuffed pepper…rice, hamburger and onion put into a bell pepper.

    The rice is already in progress on the stove. I'm planning cooking the onion in the microwave oven until it's soft, then the hamburger will be cooked in the microwave oven . Finally I'll combine everything into the bell pepper and cook the whole thing in the microwave oven until the bell pepper is soft.

    I'm hoping it will work. :-)

    Eric, Sounds a bit like dorm cooking but I made some decent meals using a hot plate and electric frying pan in the pre microwave days. I hope the pepper tastes good.

    Dinner tonight was chicken parmigiana on ziti.

    DH had a woodworkers' guild meeting and needed to eat early. We had our separate meals with leftover meatloaf out of the freezer. He had Bob's mashed potatoes and I had leftover butternut squash. As suspected Bob's potatoes and mac and cheese are very pricey in WW points. Supposedly there are no forbidden foods in WW but you "pay" dearly in your allotted points for high calorie high carb selections.

    Hope you enjoyed your stuffed pepper, Eric. That's on my To Make list.

    I made the Ina Garten Dutch Oven potatoes last night. Good & very easy. Petite or fingerling potatoes tossed with to 2-3 T melted butter & salt in a single layer in the bottom of a Dutch Oven. No need to peel. One version says add herbs then - one says add when done. I used Dill. Will try rosemary or tarragon next time. Cover tightly. Cook on low. Shake every 5-10 min so potatoes don't stick. Don't lift lid until testing for doneness - I cooked mine 20 minutes (petite potatoes cut in half) but it depends on the size. Re-cover & let sit for 10 minutes.

    I have some friends coming over for a mid week, pre-dinner cocktail at 4:30. Everyone brings their own drink of choice. I've discovered Simple Mills Almond Flour crackers. I'll set those out with some Triscuits and a spinach-artichoke dip. My dinner after that will likely be leftover egg salad or tuna salad.

    The stuffed pepper was good. This is the first time while in a hotel that I've tried anything more complicated than a salad, or baked potato and hamburger or boxed mac & cheese or something similar. I get a per diem amount for my meals so I could eat out at restaurants, but I hate eating out all the time.

    WW does tend to encourage the high volume low calorie foods. I joke about candy bars…15 minutes to undo what took only a minute to eat is yet another example of life not being fair.

    I'll be heading home on Saturday. The travel folks put me on a flight schedule with a 27 minute "layover". It is with the same airline, so I'm hoping that will be enough time. The government rate seats tend to be "back of the plane, middle seat" ones, so it may be a "interesting". Sometimes the flight crew, if asked, will have everyone stay seated until the people with "tight connections" can get off the plane with a minimum delay.

    Carole, When I make peppers I add the filling to mine first then add cooked rice to what's left in the pan, cook that a little longer and then stuff DH’s peppers. That cuts my carbs and lets him eat the recipe as written.

    Minus, Providing snacks and everyone bringing their drink of choice is a great way to host a get together.

    Eric, I hope your arrival and departure gates are close to each other.

    Dinner tonight was homemade pizza with sausage, mushrooms, green pepper, black olives and scallions.

    Glad your stuffed pepper was a success, Eric. I probably wouldn't go to that much trouble in a motel room but then I have never been in your situation with eating out for a period of time. I would probably resort to take out.

    Maggie, I like the brown rice component of pepper stuffing. Also beans.

    We'll start new with dinner food tonight. I'm thinking oven barbecued pork chops. And cauliflower and broccoli with the cheese sauce I made recently. DH has other options for sides provided by Bob. As mentioned, Bob and I have parted company.

    I'm happy to share that the wicked bathroom scale grudgingly shows me down 5.5 lbs this morning. It weighs 4 lbs more than the scale at the gym and at two different doctors' offices. Today I'm meeting two women friends for lunch and I've already reviewed the menu for WW friendly options. The real reward will be fitting into clothes that I outgrew.

    I used canned hunts tomato sauce for my pasta sauce, doctored it very lightly with oregano and one chopped clove of garlic. I added about 1/2 tbs of Harissa paste. DH raved about the meal.

    Eric, when DH and I cross-country traveled to "find our new home," I often made meals in the motel rooms. Driving in unknown areas with unknown restaurants, odd hours, blah, blah. I learned to be very creative. I always made sure there was at least a microwave in the room. Now they are very common.

    Carole, Well done with moving the scale in the right direction. Doing this during the holidays is actually a good idea since the goodies of the season cause many of us to gain weight. Come January you’ll be way ahead . Cauliflower with cheese sauce is a good substitute for mac ‘n cheese.

    Wally, Never thought about adding harissa paste to pasta sauce but it sounds delicious.

    It took almost as long to get to the hospital as it did to drive to the parking garage on the outskirts of Boston. It was windy and pouring much needed rain, the T line was closed for track maintenance so shuttle buses were in use, and there was a traffic accident on the way. At least it was dry inside the bus. Dinner tonight was takeout hospital chicken soup (not much food left) and chocolate chip cookies.

    The broccoli and cauliflower side dish was scratched when I discovered there was no cauliflower and not enough broccoli on its own. Instead we had turnips, which were a delicious substitution. I peel the turnips and cut them into a dice about an inch, boil, drain, season with s & p and butter. I trimmed the edge fat off the pork chops, something I don't usually do. I warmed a little dish of extra barbecue sauce for dh to spread on his oven barbecued pork chop. After all, he's the condiment man. He has never met a food that couldn't be improved by the addition of something.

    My lunch with friends yesterday was enjoyable for the company but ho hum on the food. I ordered the house salad with grilled shrimp. The dressing for the salad, served on the side, was a balsamic vinaigrette, not my favorite. There's something wrong about brown dressing on a salad. And I could have skipped the grilled shrimp. Afterwards I wondered if they weren't imported. A lot of restaurants cut expenses by serving imported shrimp. On the plus side, I stuck with the WW program.

    I thought I had yellow peppers in the refrigerator for stuffed peppers but there is only one and a partial so I'll need to buy more of some color. The meat component for the stuffing will be a meatloaf mix with beef, veal and pork. I will make a "batch" and freeze some.

    Carole, It’s too bad you were served imported shrimp in your salad. They actually breed shrimp in HI and FL. It is farmed in MN, MO, IL, IA, and CA. The shrimp that comes from Asia is actually a different breed (interesting info picked up from living with a geneticist working in the agricultural world.)

    Today was another extra long commute but it was just raining rather than pouring and the shuttle bus was at a standstill due to a downed wire. Dinner was a packet of noodles in sauce since I wasn’t going to cook a meal at 9:30 PM and lunch had been soup.

    Last night's dinner was beef vegetable pasta soup. I was in the mood for soup. Tonight will be the stuffed peppers.

    Finally getting to the bottom of the leftovers - especially those that won't freeze well. I'll have the last of the Dutch Oven potatoes tonight, probably with an omelette. Tomorrow I'll polish off the last half of a pulled pork sandwich that has been in the freezer. Maybe I'll make cucumbers and onion in sour cream as a side.

    I went to the garage freezer to pull out a salmon steak, and oops….none. I couldn't remember when I was at Costco last week so I didn't buy more. My yen for salmon will have to wait, since I have no intention of going back to Costco again before Thanksgiving.

    For those of you who have a Trader Joe's, they have delicious Danish almond Kringles from Wisconsin. I've ordered by mail in the past so it's a treat to find them locally.

    Maggie that ravioli sounds beyond delicious 😋

    Dh fixed ravioli (meat and cheese) with marinara tonight. I have been under the weather today as I got the 2nd shingles shot yesterday. Kicked my butt, fever at one point of 101.2 with all the ache's. On the upswing now. Evening was spent curled up in the chair by the fireplace.

    Ohh food! So happy I found this group. Your meals sound amazing. Tonight is roasted salmon and lentils, with zucchini. I need a second vegetable though besides salad . Since the organic carrots recall I’m been afraid to buy them again, want to wait a bit. Just might just make potatoes with Dijon dressing.

    @reader425 curled up by the fireplace sounds like an awesome way to recover, hope you are feeling better.

    Reader, the shingles shot made my arm extremely sore but no other SEs.

    My bell pepper stuffing was/is delicious and colorful with diced tomatoes, black beans and corn along with the meatloaf mixture. Scooped into orange and yellow pepper halves. A little grated cheese on top. I did five peppers so eight halves left to freeze for future meals. My side was steamed cauliflower. DH had Bob's mashed potatoes.

    @carolehalston First make the lentil's ( with celery and onions, garlic, carrots mixed in), and then when they are done pour them into a baking dish and roast the piece of salmon on-top ( with a herb rub and olive oil) . It’s a nice savory combo. The steamed zucchini and boiled potatoes on the side add a good contrast with a touch of mustard dressing. Works really well with Halibut too. I took vegetarian which included fish … cooking classes and this was one of the chefs recipes I’ve made it now for 20 years and it’s really good. And easy.

    Maggie, I did not know that about shrimp. Love learning stuff.

    Reader, my shingles shots reactions were awful. I woke up in the middle of the night, chills/fever and teeth chattering so badly I thought I would crack teeth.

    Minus, I remember where they made those in WI; now, almonds would be a no-no. Stupid birch tree allergies.

    I made grass fed burgers in my air fryer last night. Roasted cauliflower and halved brussels sprouts along with a microwaved sweet potato.

    I'm brining turkey thighs for dinner tonight. Lots of veg leftovers to flesh out the meal.

    One of my favorite restaurants serves salmon with French Green Lentils - but the lentils are served on the side. I'll have to try roasting the salmon on top of the lentils.

    Yesterday's flying experience is almost done. Note that it is no longer yesterday :-)

    I am very much looking forward to a full kitchen and real meals.

    Reader, Those shingles shots have the worst SEs but having worked with someone who contracted shingles and suffered eye damage and chronic scalp nerve pain I decided the vaccine course was worth it. The ravioli came from Aldi and was extra delicious. I hope you are feeling a bit better today.

    Rischaller, That salmon dish sounds very tasty. You can substitute parsnips for carrots in most recipes, at least until the carrot recall is ancient history.

    Wally, Can you eat any type of nuts or are they all off limits?

    Eric, I hope you arrive home soon and are able to have a decent dinner tonight.

    Minus, I don't blame you for avoiding Costco right now. I was stuck grocery shopping on Saturday morning and was expecting large crowds but due to the rain and extra staff working it was a breeze. I got a 15 lb turkey for $5.50, way more than we need but I'll freeze the leftovers.

    Dinner tonight was beef Alfredo on spinach tagliatelle.
