Thank you all for the warm wishes regarding my shingles shot reaction. A miserable 24 hours but worth it. I had shingles when I was 29 (!) And wouldn't want a repeat of that.❤️

Welcome @rischaller! Must try the salmon and lentil combo.

Roasted chicken thighs, skin on and bone in, last night and baked sweet potatoes that had to be finished in the microwave.

Tonight will be stuffed peppers. Then tomorrow morning we head to Jacksonville.

Who knows what I’m having tonight. Probably will be leftover chili.

Carole, Have a safe trip to Jacksonville.

Dinner tonight was curried salmon and spinach in cream sauce on rice.

Hi Rlschaller! I will have to try that lentil-salmon recipe. We have some salmon in the freezer and I have lentils, both green and red, in the pantry.

My mom had shingles and, to me, the SEs from "the shot" would be worth it to avoid the actual "disease". Mom was miserable for quite a long time.

I am home. It took about 12 hours longer than usual and I was wondering if I was going to turn Odyssey into a 25 "books".

Reader - hope the side effects from the shot are fading. Luckily I got both of my "new" shingrex shots a couple of years ago.

Eric - welcome home. Do you have snow?

Carole - safe trip. Will you come back with the rush or stay until Monday?

Dinner was 1/2 of a pulled pork sandwich that I had previously frozen. Acceptable. Served with a salad of cucumber, onion & dill marinated in sour cream. I need to plan Laurie's Salsa Chicken now that it's getting cooler.

I reread my last post and thought it sounded a bit "odd"...my apologies…..Reader, I hope the shot's bad effects are gone now.

Carole, I'm sure you are on your way to Jacksonville by now…safe travels.

We did have several inches of snow back on November 3, but now it's dry, clear and cold.

Last night was some spaghetti and homemade (by Sharon) sauce. It was amazing to have something more than the simplest of meals. Still, after coming home, I need to re lose a few pounds, but with Thanksgiving coming up….. :-)

who knows and at this point, I really don’t care. Birthday dinner was a total bust. Instead of my hubby giving me the night off and doing something nice for dinner, it was leftovers.

We are going out for a pizza lunch with friends so dinner is undecided. Maybe I'll make a big salad to offset the 'za.

Safe travels to all who are embarking. Happy Thanksgiving.

mOmmy - sorry your B-day was such a disappointment. Even your family!!! Seems like you should break the budget and buy something you're really been wanting (gift card plus WAY more). And when you're ready to forgive your DH, schedule a bang up dinner out on his credit card.

Wally - Yum, but darn it - I just got back from the store & had Naan bread on my list so I could make pizza. It didn't make it into the basket. I'm certainly not going back

yeah. At least Thursday won’t see me cooking, my aunt is hosting Thanksgiving this year. Gonna propose that I host next year.

Eric, I laughed at the reference. I’m glad you survived Cyclops as well as Scylla and Charybdis. Would the challenge in book 25 be the airport junk food monster? It's so annoying when you gain a few pounds eating meals that don't taste that great. You can cook the same dish which tastes better and is much healthier if you control the ingredients.

m0mmy, Sorry you didn't get the nice dinner you hoped for. Pick someplace you would like to dine out at and celebrate on a different date. Enjoy the Thanksgiving dinner you don’t have to cook.

Wally, I like the idea of a light dinner after lunch out.

Minus, The week of Thanksgiving is the worst time in the year to go to the grocery store other than when a bad weather event is predicted.

Dinner tonight was leftover salmon for DH and doctored Snow’s clam chowder for me.

Ended up with a can of chili; walmart brand.

We'll have leftover 'za tomorrow. NO idea what the t-day meals will be.

Editing to add, Maggie, almonds are all I am aware of for oral allergy syndrome with nuts. I've even cashews, walnuts, pistachios, brazil nuts, Macadamias, and the legume-peanut without issues.

:-) I think you are correct about the monster being airport junk food….either that, or the junk food is a modern day lotus equivalent.

"Another healthy and nutritious airport meal." is what I commented to another traveler that was also looking somewhat disappointed at their meal. They chuckled and agreed, adding that they were a RD (registered dietitian).

The meal had four of the five basic food groups, salt, sugar, caffeine and cholesterol. The only missing one was alcohol,

We went to an afternoon movie (Bonhoeffer - I loved it, having read his works and knowing his story); may be slow for those less familiar. Then dinner at an Italian place. Spinach salad with apples, walnut and blue cheese, Block Pinot Noir (new to me, tasty) and gnocchi with marinara. I used to always call them "little pillows of love" but I've renamed them "little pillows of calories." I had no lunch to save WW points for it.

Eric i took no offense to any part of your post about having shingles. Having had them, I prefer to try to avoid that in the future!

Hubby took me out last night for delayed birthday dinner last night. Tonight will be hot dogs and beans.

M0mm…. Was DH reading this thread? :-)

I suppose I should think about the shingles shot, even if I'm 14 years past the "get it when" date.

For last night's dinner Sharon "shopped the freezer, refrigerator and pantry" and put together a very nice stew put on a bed of noodles with corn-on-the-cob.

Tonight will be some more spaghetti with the homemade sauce.

Unfortunately MIL won't be here for Thanksgiving, nor will Fred and Sandy. MIL says she's not feeling well enough to tolerate the hour ride here, and Fred and Sandy both have health issues that make driving difficult, so it will be just five of us instead of the usual eight people. We decided to have our dinner on Friday since I got home so close to Thanksgiving Day.

no. He hadn’t been feeling too well on Monday night. So he had felt bad about that but was feeling better last night, so I forgave him for it.

Had to make a double batch of my Grams Crnberry Relish for tomorrow. Waited until after my eyes settle back down to where I could see better as at my eye exam today to check for any sign of diabetes they dilated them. Was very hard to focus even on my phone!

m0mmy, I’m glad you got your birthday dinner. Dilated eyes make the rest of the day a bit more difficult.

Reader, That salad sounds delicious, something I’ll have to try. I had never heard the name Block Pinot Noir but saw small “blocks” of grapes planted where fruit trees grew well on a winery tour near Santa Rosa CA. Does the wine have a fruity taste? Movie theaters are off limits so I’ll have to wait until Bonhoeffer is available for streaming.

Eric, Before my lungs got injured I always cooked Thanksgiving dinner on Saturday so my kids who celebrated with their in-laws on the actual holiday could visit. I’ve always regarded the day as flexible since there was no Thanksgiving in Scotland and the Canadian holiday is in October. It will be turkey for two tomorrow.

Dinner tonight was meatloaf Cockaigne, sautéed yellow squash and mashed potatoes.

This is the first time we had Thanksgiving dinner on other than the Thursday but the occasion is more important than the date. I'm guessing this was the case in 1621.

Tomorrow will be the turkey and all the stuff that goes with it. I found the rest of the formal tableware and I have enough stuff to put on at least a 13 course meal for 8, but……..NO!!!!!!!!!!! :-)

Oh, Cathi and Jerry's 21 year old son is home from university and is also coming, so there will be six at the table.

Happy Thanksgiving! I hope all made it to their destinations safely, enjoyed good food and pleasant company. There is a “wintry mix” falling outside but that doesn’t matter since nobody is coming or going.

Eric, Six makes a nice number at the table. The everyday dishes can go right into the dishwasher so it makes sense to use them.

Dinner tonight was roast turkey, baked butternut squash cubes, creamed onions and mashed potatoes. I made no dessert but didn’t miss it.

Had a blast at my aunt’s for Thanksgiving. She sent home some turkey to the dog and kitties.

I made mahi-mahi coconut curry that turned out very well. For dessert, I melted some dark chocolate and mixed in some crunchy peanut butter. YUM.

The turkey is in the oven. Both dogs are laying in the corner of the kitchen and are closely guarding the oven.

Eric, I hope you enjoyed your turkey dinner. Were the dogs rewarded for oven guard duty?

Wally, That sounds like a delicious and easy dessert.

m0mmy, It was nice of your aunt to send home treats for your dog and cats.

    Dinner tonight was Thanksgiving leftovers.

My "progressive" Thanksgiving dinner over 3 days was perfect. Not too much food any one day to end up stuffed, but enjoyed most of the Thanksgiving treats. Tip - don't add sauteed onion & celery to Stove Top Stuffing. WAY too moist to fluff with a fork. Although I still did enjoy it with my 1/2 a chicken breast yesterday. I was too full to try the Sister Shubert's frozen dinner rolls so those are still to come.

Wally - I just clipped a recipe for Mahi-Mahi - baked on top of lemon slices with Garlic-herb butter topping. The author says it works with other fish too - like salmon, cod or hailbut. I have some cod in the freezer. I'll report if it's any good.

Dinner tonight was cashew nuts & black olives. Accompanied by the last of the Hawaiian POG (Passion Fruit, Orange & Guava juices) mixed with Gentleman Jim bourbon.

Planning ahead for this week - Kinoko Gohan (Japanese mushroom rice), Korean Gochujang Brussels sprout, possibly a Spinach & Mushroom quiche. If it stays cool enough - maybe Laurie's Salsa Chicken. Maybe Naan pizzas if I decide to brave the store next week.

A friend got four tickets for a small theater play on Saturday night & included me in the group. It's an all volunteer cast and not far from home AND only $15.00. Their plays that I've seen before had been enjoyable.

Hope everyone had a wonderful Thanksgiving and safe travels if you're out of town.

Minus, I add raw onion and celery to the chicken stock I boil in the microwave before adding Pepperidge farm herb stuffing. It gets cooked just right that way. Have an enjoyable evening at the theater.

Dinner tonight was turkey and vegetable “casserole” (Joy of Cooking name but more like turkey and vegetables in sauce) on rice. The rest of the leftovers are in the freezer since we’re off to Boston tomorrow.

  • minustwo
    minustwo Member Posts: 13,397

Maggie - yup I add raw onion & celery to my Pepperidge Farm stuffing also. And sage. It just didn't turn out to be a good idea with StoveTop stuffing. But I'll still enjoy the leftovers. In fact - I think I'll have a bowl before I go to bed since I missed dinner.

The play was not what any of us thought. We expected a light, comedy with the young man bringing his girlfriend home for Christmas to meet the family. The parents seriously follow the Catholic religion. The girlfriend/fiance is Jewish. It turned out to be some heavy discussion about family & belief and god. And there was a second 25 yr old son who had never spoken - so some discussion of his "disabilities" and that retarded was no longer a correct term. Still - it was well done & interesting.
