Tonight was a girl's night out and I had a new to me dish, really an appetizer, called a "crab stack" served with tortilla chips. Crab, avocado, tomato, mango packed together with a champagne vinaigrette holding it together. Accompanied by a dry Riesling. Yum all around.
Tomorrow will be a repeat of a turkey stuffing casserole I made earlier. I could eat buckets of stuffing left to my own devices 😀 DH likes it too.

We had a favorite meal for dinner last night. Ribeye fajitas with orange bell pepper and onion. Refried beans, guacamole, sour cream, salsa, white corn tortillas.
Time to think about using up contents of freezer and not adding anything.

Dinner tonight was turkey tetrazzini from the hospital cafe. Broccoli replaced the usual peas in the recipe, a good substitution.

DH was complimentary about last night's simple meal. Oven fried chicken thighs, very crispy. Fresh green beans with new potatoes. A small ear of corn for him.

I end up going to Boston about twice a month. The local hospital has long wait times for appointments, old equipment and few specialists (two oncologists for everyone with cancer.) Some people travel the same distance north to the larger hospital with a medical school but it is also rural with the same problems to a lesser degree even though the drive is more scenic. My endocrinologist (local) orders my scans in Boston since the local hospital ultrasound machine is over 30 years old. I wish I didn’t have so many doctors but most are those my RO referred me to for radiation SEs. I don’t know anyone else who still sees their RO five years after finishing rads, lol.
Dinner tonight was beef stroganoff made using stew meat on egg noodles.

My contribution to the Labor Day potluck yesterday was a sheet cake from Hugo's Supermarket. Marbled and with butter cream frosting. And with Labor Day decoration. There were appreciative comments. I enjoyed a little square myself.
The meal was ok. Ham, a potato dish, baked beans, tossed salad, Cool Whip salad. I had lunch late after getting home from the farmers market, so I wasn't hungry. I'm not a fan of ham, but the boneless ham Mary bought was better than average. Our gathering was smaller than previous Labor Days because of various reasons. After Labor Day, people start winterizing their trailer units and the summer season ends. Boats come out of the water and the docks will be removed by a company the owners hire. At the same time, the lifts are removed.
Our last week or so here, it's very quiet in the campground, and our view from the deck features leaves turning fall colors, mostly yellow. We usually take some drives through areas with a mixture of red and yellow leaves.

Now that Labor Day is no longer the end of my summer vacation I look forward to the fall temperatures.. I don’t think there will be any local corn in the store this year. Some of the local farms have limited amounts available but it sells out early. There’s not much that can be done when the weather doesn’t cooperate.
Dinner tonight was salmon, cauliflower and tater tots for DH.

No cooking yesterday. For dinner, dh had baked beans and slices of ham from Labor Day potluck. Also tomatoes and onion salad. I had a ham and tomato sandwich on thin-sliced sourdough loaf bread. A repeat of my lunch.
Today is just Monday for us. DH will go to men's golf league. I will go to the gym and afterwards to Walmart's with a short list. Not sure about dinner. I have leftover country ribs in tomato sauce and leftover rice. Should probably do a leftovers dinner.
It's overcast and gloomy. Not a pretty day so far for the weekenders who took a long weekend.

I made a salmon-salad melt (vs tuna). Just weepy, weepy, sad and weepy.
A roofer was going to come but his granddaughter decided to visit him, so hopeful for tomorrow.

Eric - I’m so impressed by your stamina ! I run on my vibration plate lol… 15 min and I’m done.
Maggie - all of my sensitive data was stolen too off of two university hr depts data breaches. I put credit freezes and fraud alerts in place, ugh.. I lifted it for 2 days for a credit check on a house mortgage, and bam… my cc info was stolen. Not sure if it was related, but gosh such a headache . Freezes back in place, got the mortgage pre approval but offer not accepted. Life !

When we sold the house in Peoria, AZ, our information was stolen and used to open credit in Sharon's name.
I've had my information stolen so many times (eight, so far) I'm not sure if I'm me. :-) Two times with OPM (federal government), three times with medical insurance, once from a medical testing lab, two times with rental car agencies.
When I run, about a mile out, two dogs run to their fence and beg for pets. About 2-1/2 miles out four dogs walk to the edge of the road, sit down and wait for me to stop and call them over. in both cases, I gladly accommodate them. :-) The four dogs sometimes run with me for awhile and I don't mind, especially when it's warm enough for the snakes to be out.

Wally, Never thought of using salmon instead of tuna in a melt. What a good idea. I hope the roofer can do the repairs for a reasonable price.

I had gotten some fresh green beans, so I steamed them. I loved helping my mom's mother when she had beans to snap from her garden when we were here on visits. She'd let me sneak a few from the pile. She and Grampa had a good sized garden back before they gave it up due to Grampa getting Parkinson's. Loved when I having my small garden back East at our old house. Can't wait to have one again.
Going to dig around in the freezer to see what sparks my mood to cook tonight for dinner.

m0mmy, I also loved helping my grandma snap her fresh green beans because I got to eat some of them raw. It will be great when you have your own garden again.

I have fresh green beans to snap and cook tonight. Last night's dinner was beef stroganoff made with a ribeye steak. I had good ingredients and followed a recipe that seemed familiar, but I was a little disappointed with the result. Not as "Wow" as I expected. Enough leftovers for another meal.
September weather isn't as wonderful so far as August was. Mornings start out dreary with overcast skies before the sun eventually pops out. We had a little rain this morning. DH is dressed for golf at 10am, so he's optimistic about improving conditions. Mary and Lyman are leaving on Sunday, returning to their home in FL.

I miss my garden. Green beans, tomatoes and squash were the highlights.
We are finally expecting some rain. It’s been extremely hot and dry.
Tonight is stuffed peppers from the freezer.

A guy from NextDoor (the forum) replied to my plea for roof repair. He was quick, efficient, sounded like he knew what he was doing. Told me I had a 40 year shingle and whoever quoted to replace (25K) was insane. He used tar to seal 3 loose shingles and all nail holes…and he charged me NOTHING. I offered gas money and he wouldn't take it. I guess there are some very kind people still out there.

Wally, What a nice roof repair guy. It’s great that the loose shingles are repaired and you know your roof is in good condition.
Carole, I added both Worcestershire sauce and Dijon mustard (suggestions from two different recipes) to my beef stroganoff. I used stew meat rather than good beef so it all simmered for a couple of hours in a Dutch oven before I stirred in the sour cream.
Nance and m0mmy, Leftovers and meals from the freezer sure make dinner prep easier.
Dinner tonight was soba noodles with shrimp and veggies.

Maggie, my recipe called for both Dijon mustard and Worcestershire sauce. Also cream and sour cream. We'll probably have the leftovers tonight.
Last night was green beans with new potatoes and chicken fillets, breaded and browned in a skillet.
I'll have to make a batch of stuffed colored peppers for the freezer when I get home.
The heat pump is warming up the camper this morning. By late afternoon the high should be 79 or 80. We'll probably need to turn on the a/c.

I'm cooking up a tri-tip (tiny) to shred, in an Asian marinade. A neighbor (good ones) invited me to dinner on Saturday. I'm forcing myself to go grocery shopping tomorrow.
I found the title to DH's truck and plan to unload it on Carvana. I'll get less but worth it not to have to clean it and have people know where I am, test driving. Sorry if I am repeating. UGH…brain, don't fail me now!

Sharon had some soup about the time I went running…I wanted to get the running done before it got dark, so we ate separately. The running tends to just about eliminate my appetite, so tonight I had a little bit of rice and pinto beans with soy sauce.
I got the father of the bride suit (mail order) from the clothing store near where DD lives All is good EXCEPT the coat. I was measured and the suit coat is the correct size…it just doesn't fit. So it'll go back for the next size up.
That was nice of the neighbor to fix the roof and not charge anything. If you like to bake cookies…….. :-)
I agree about Carvana..probably not a "top dollar" sale amount, but it's quick and "hassle free". Don't forget to notify your motor vehicle department that you have sold the truck. A friend forgot this and the buyer managed to get a parking ticket before updating the title..which went to my friend. He was able to get the fine canceled, but he said it was not easy.
Temperatures here are 50s in the morning and low 90s (all F degrees) in the afternoon. We've been opening the windows at night and the house gets cool enough that the air conditioner doesn't come on until afternoon.

I'm not a great baker. The guy is not my neighbor, he answered an ad on my NextDoor post (a forum). If I knew where he lived, it was a great suggestion. I could buy cookies!
As mentioned, I'm forcing myself to go grocery shopping today. I may buy a bag of frozen mussels and have that.
