    Michelle- that is awesome that the grandkids had the taco eating contest!  And the vision in my head of 6 and 8 year old kids wrestling is hysterical.  I hope you had a great night, and you family is so lucky to have you to help out.

    (((((Deb))))) Sounds like a pretty rough night.  I am so sorry your father is having a hard time. 

    ((((Carrie))))) you get a hug too...I hope this works for your mom and she starts to do better.  It seems like it has been quite a rough road for her.  I truly hope this works.

    Carol-I am so glad youliked the recipe!  I never thought to do it with pork?  Did you cook it for the same amount of time etc?

    Seaside- If the kids ate it is is SUCCESS!  Especially if you enjoyed it too :)

    Lacey- The salsa chicken is really easy- the ladies here have made variations of it with success, mango salsa, done in the crock pot and now Carol with pork!

    here is the recipe-

    2-3 chicken breasts

    1 container of salsa

    1 can of black beans

    put the chicken in a pyrex dish, pour salsa over it, drain and pour the black beans over that cover and cook at 350 for about an hour and a half (works like a fast slow cooker)

    make some brown rice

    top chicken dish with shredded cheddar cheese and let melt, serve over brown rice with some sour cream.

    Tonight we had grilled chicken sandwiches with lettuce and tomato.  I was feeling a little green today but am doing better now. I was bringing the boys to my in laws so I could go get some hours in book keeping and my youngest declared he was sick.  So I dropped the 4 year old off and came back home with the two year old.  Turns out he had been constipated and soon felt much better, but we had the best day!!  I have never been alone with him for a whole day before and we had a great time together, we watched a movie and played with his farm and had lunch together picnic style and took a nap together.  My older son had fin being the only one with my in laws and it was a win win.  Only tomorrow I have to take them both with me to get some work done.....3rd time in 5 weeks!!  More than I have had to do in 4 years!  Ohwell-I think today was worth it!  I am now actually looking forward to DS#1 going to preschool next year and having alone time with DS#2.  Can't believe he is 2 and I have never been alone with him for a day?

    I rarely make dinner so I am jumping in because I have made plans for dinner three nights in a row this week.  okay superbowl sunday was pizza but still, it had cheese sticks and salad.

    Monday was Lasagne soup boring ~ but salad and bread too.

    Tuesday will be a whole turkey, stuffing, cauliflower, and sweetpotato casserole. Will be sharing with another family.  

    Then I'm putting away my chef hat and waiting for my hubby to take back over. Back to chemo so hope I can eat what he makes...   Kelly

    Kelly  Welcome,  I am so envious of anyone who has a husand that can cook!   In my next life I will be getting myself a wife.

    Thanks everyone on the thoughts and prayers for my mom.  The docs said it was going to be bumpy for awhile...she is just very impatient and wants to better....we all understand that right?

    Last night I used the leftover chicken fingers and made a stirfry with asian veges (frozen) lo mein noodles and an asian sweet sauce....all one pan and quick. Good way to use up leftovers, can use steak strips also and any veges you have on hand, peppers, red onion, mushrooms.

    Laurie  When my daughter entered pre-school, I loved the time alone with my son.  My daughter was always very energetic and attention seeking, taking up alot of my time, so it was great when my son and I got some "quiet" time. Funny story...when I went back to work after having her, I put her in a day care program..they actually called me at work to come get her because she would not sleep and cried constantly disrupting all the other kids.  LOL  I went on the night shift and kept her home with me.

    Carrie- that is funny!  My boys couldn't be more different, my older son is always looking to cause some trouble, he never stops talking and has ants in his pants 24/7.  My younger son climbs everything but in general is easier to please and much more easy going.  He aims to please wher as my older son just wants to see what he can get away with.  The next 20 + years should be interesting!

    I joke that the women in plural marriages might have the right idea.  You have female companionship, help with kids, cooking, errands, cleaning etc.  And on  the nights that you "aren't in the mood" he can leave you the heck alone;P  There are some days where I would love to just spend the day cleaning- have someone else watch the boys, or just be with the boys and not have to worry about the grocery shopping and cooking.  You know what I mean?  Though I am not sure if I would really want to share my DH....but the rest sounds good:)  Maybe I just want a sister?

    Tonite we are having my awesome black bean soup.. I'm making a ton to share with a family who is rather unsettled at the moment.. in the process of moving and building... the family of my piano students.

    The next few years will definitely be an adventure with 2 boy that close in age!! Our next door neighbor has 2 little ones just a bit ahead of yours (5 and 4). They are just 18 months apart in age! I'm exhausted just watching them!



    The oldest one just started Kindergarten and looks sooooo tiny getting on that giant bus!! Seems like just yesterday, my 2 were that little..... sigh!

    We had spaghetti and meatballs tonight, too.  Well, actually macaroni as picked by the youngest.  Two of them eat pasta with olive oil and parmesan, the third eats the sauce, none of them eat the meatballs...lol.  Tonight was not an eating extravaganza like last night.  They are all occupied with popcorn at the moment - it's becoming an expectation when I am watching them.  And since it's my favorite snack, it works!  Tomorrow will be nutsy, with gymnastics, ski lessons and basketball practice.  The other set of grandparents are picking up the two youngest ones after gymnastics so I can focus on the skiing and basketball.  And somewhere I need to get him some time to do homework and feed him dinner. ]

    Oh goodness Michelle! You have a full schedule for sure.... No wonder our bodies were designed to have children when we are young! I know, speaking only for myself... I do not have what it would take to do what is required daily when you have little ones! But the Grandkids.... best of all worlds!! You can enjoy them while you have them and then... it's time for them to go home! Perfect!

    The lasagne soup had italian sausage, peppers, onions, mushrooms, rotini noodles, tomato, spinich, all mixed together.  It was from supper solutions, a place where I order meals and just cook them at home. Without it we would not have as many dinners together. Good variety too.

    Last night I made thanksgiving dinner again. Turkey, mashed pot, sweet pot casserole, gravy, rolls, stuffing and cranberry sauce.  Whew.  I am not cooking tonight and I am going out to lunch so I will have my leftovers for later.  The rest of the gang is on their own!  :)

    Kelly- Turkey dinner sounds good!  Maybe I will defrost the turkey I have in the freezer and do that this weekend. 

    Michelle- I hope you make it through your whirl wond day!!  Sounds VERY busy!!

    For the first time that I can remember I have nothing planned for dinner.  I really don't feel like cooking for some reason and I never went grocery shopping this week.  It was a strange week with my youngest not feeling well on Tuesday and then had to take the boys with me to book keeping on Wednesday and today when I suggested we go to the grocery store they didn't;t want to go, to be honest neither did I- so we didn't.  I don't have much in the freezer for meat, I need to stock up.  So maybe a can of soup and grilled cheese?  We'll see what ideas DH has when he gets home.  I have left over sauce form spaghetti the other night- left over pork chops and gravy from last night.  Everyone will survive.  I bet DH will be shocked though :)

    Whew!  What a day from he$$!!!  It got off to a bad start when I went out to start the van and the battery was dead...my bad...after ten years of automatic headlights, I forgot to turn off the lights last night when we got home from the bowling alley.  DH jumped the van and all was good until... Speaking of bowling alley, when I took the kids to McDonald's today, I had no wallet in my purse.  Not a good thing, although I had a credit card from my mom's account, which saved the day.  Apparently I left my wallet at the bowling alley yesterday evening as we were leaving.  I remember looking for the keys (another thing I don't have to do with my car - they just need to be within 3 feet of the ignition so the only time I use them is at the grocery store for the discount card) and setting my wallet on a bench while I was digging around.    My DH went and picked up the wallet and brought to the gymnastics place the tennis shoes that the grandson forgot to wear so he could do basketball after skiiing.  Then Grandson remembered that he was supposed to have a  bag with basketball stuff that hadn't made it with us.  So DH met us at the ski area restaurant and brought the bb stuff and had a Bloody Mary.  Then grandson asks if he can skip basketball practice cuz "he's tired"...LOL!!!  Sure thing! I've had enough for one day!!!  We're home and not going anywhere for the rest of the night!  I had a bowl of clam chowder at the ski place, any other "intake" this evening will involve alcohol  Tongue out

    OHHH Michelle   I feel your pain! I think your poor husband does too! Drink up...you have earned it.

    Took mom for pre op appt today, the sun was shining and it was a beautiful day to travel, all of her medical docs are an hour away, as well as the hsopital. She did great walking through the building, and we all (my dad too) went to Olive Garden afterwards for lunch.  this was the most activity she has seen in a long time, I bet she sleeps good tonight.  Surgery is set for next Thursday.

    My DH will have to fend for himself tonight, since I had such a great lunch.

    Wow everyone has been busy! Carrie, I am sorry your mom has to have another surgery. I hope everything goes well and she is good as new after. I will keep you both in mt thoughts. Michelle, what a day you had! The kids' activities are enough without the extra excitement. Hope you're enjoying your alcohol.



    Laurie, I didn't feel like or have any time to cook today either. Had tuna fish, although I did cook some asparagus and broccoli with it.



    For those asking about the chicken Marbella, it is from the silver palet cookbook. The thing I like about it is that you can cook it ahead of time and then eat it later just at room temperature. I have a hard time getting everything to be done at the same time. I will post the recipe tomorrow. I can't copy and paste on the iPad.

    So DH called the house on his way home and claimed "he was starving, whats for dinner?"  I told him nothing, I didn't cook.  He skipped a beat and said, ok, Be home in 20----showed up with a bag of McDonalds!?  Really?  He said he couldn't wait to figure it out, so he just grabbed what was easy and no waiting. Ohwell- once in a blue moon won't kill me right?

    salmon patties tonite.. i actually love them, particularly as leftovers.. i kind of make them like meatloaf with high end canned salmon and serve them with plain rice and a home made tartar sauce with basically mayo, capers and caper liquid... to thin it out so my family doesn't ingest a lot of mayo.  i have some lovely asparagus.

    Here is the chicken marbella recipe.  I used to make that several years ago and stopped for awhile.  Now I think it will become one of my staples again.  I like that it can be served room temperature, doesn't have to be right from the oven and leftovers are very good too.  Just because I'm trying to cut down on sugar and fat, I only sprinkled brown sugar on, maybe a tablespoon, maybe not even that much.  And I only used half the olive oil.  And I added a cup of dried apricots too.  And I only used breasts because my kids aren't big on thighs or legs.  Other than that I followed the recipe exactly.

    4 chickens, 2 1/2 pounds each, quartered
    1 head of garlic, peeled and finely pureed
    1/4 cup dried oregano
    coarse salt and freshly ground black pepper to taste
    1/2 cup red wine vinegar
    1/2 cup olive oil
    1 cup pitted prunes
    1/2 cup pitted Spanish green olives
    1/2 cup capers with a bit of juice
    6 bay leaves
    1 cup brown sugar
    1 cup white wine
    1/4 cup Italian parsley or fresh coriander (cilantro), finely chopped

    Preparation

    Preheat oven to 350 degrees.

    In a large bowl combine chicken quarters, garlic, oregano, pepper and coarse salt to taste, vinegar, olive oil, prunes, olives, capers and juice, and bay leaves. Cover and let marinate, refrigerated, overnight.

    Arrange chicken in a single layer in one or two large, shallow baking pans and spoon marinade over it evenly. Sprinkle chicken pieces with brown sugar and pour white wine around them.

    Bake for 50 minutes to 1 hour, basting frequently with pan juices. Chicken is done when thigh pieces, pricked with a fork at their thickest, yield clear yellow (rather than pink) juice.

    With a slotted spoon transfer chicken, prunes, olives and capers to a serving platter. Moisten with a few spoonfuls of pan juices and sprinkle generously with parsley or cilantro. Pass remaining pan juices in a sauceboat.

    To serve Chicken Marbella cold, cool to room temperature in cooking juices before transferring to a serving platter. If chicken has been covered and refrigerated, allow it to return to room temperature before serving. Spoon some of the reserved juices over chicken.

    Dh cooked a big pot of mock turtle soup today.  We got the recipe when we attended a cooking demonstration by a local chef.  We had to take notes.  The chef did not give a hand out.  He used ground beef and pork which he browned in the oven.  Dh used a good grade of lean stew meat, which he cut into small pieces. 

    We'll also have leftover mushroom risotto and home-made bread.  The latter is my first effort at baking Italian peasant bread.  It came out pretty good.  I'll slice several pieces, dribble olive oil on one side and sprinkle some parm-reg.  Heat the bread in the toaster oven.  I've been having it for breakfast the past two mornings!

    Essa, tell us about cooking quinoa.  I have a box in my pantry but have not yet cooked any.

    Laurie and Carrie I bought myself a wife!!!!! Well, actually three, Peopod for grocery delivery, The Soapbox to do my laundery, and the Cleaning Authority to clean my  very small place. They are green. I couldn't keep up with the dust from kitties, fireplace oldness of house etc. 

    Now, I just used my crockpot to make split pea soup yesterday and will go to the  Winter's Farmer's Market tomorrow for veggies and fruit

    I hope that everyone's family is doing better, especially those with health problems and that they are all tucked in for the evening.

    Vivirasselena,  please post some of your Vegan recipes.  I have a hard time finding things without soy and get hungry, so I try to find eggs and milk from local farms where the animals are treated kindly.

    PS if this cat doesn't stop walking on the computer and waiving his tail in my eyes I may have to break my rule and have roasted "kitteh" for dinner.

    PPS has anyone seen "Big Miracle" with Drew Barrymore about the whales saved in Barrow AK?

    I used to live/work up there and can't wait to see it.  I hope they showed some of the local culture and people  (Eskimo) instead of just movie stars.  :)

    Carol- I missed the word mock when I first read your post and thought maybe you were actually eating turtle?!  The mushroom risotto sounds wonderful, I love mushrooms.  What else is in the mock turtle soup?

    Kay thanks for sharing the recipe,  I think I might give it a try next week.

    Bedo- lol at the cat comment!  Mine do the same thing and drive me a little nutty.  I don't know how many times it has happened where the cat walks across the key board and deletes what I have written.  Love the kitties though :)  I wish I could hire someone to be my wife!  Today I was bust with groceries etc and kept telling myself I needed to wash the floors- I never did.  Ohwell, there is always tomorrow...

    Apple- I am not a huge salmon fan but your dinner made my mouth water...maybe I should try again.  Do they sell the canned salmon by all the other seafood at the counter?

    Dh is helping out at a local ice hockey tournament tonight so he won't be home until later.  I fed the kids Annie's mac n cheese and just got them to bed.  I am going to make myself an open faced tuna melt on an English muffin for dinner.  I haven't had one in the longest time and it just sounds good for tonight.  I'll catch up on American Idol while I eat it.

    i buy my canned salmon, skinless and boneless at Costco.. 6 cans for 10 bucks.

    Kay that chicken marbella sounds really interesting espcially with the sugar.. I think I'll try it.

    Laurie - you can usually find canned salmon with the canned tuna.  We used to eat that when we were kids, and I used canned salmon to make salmon pie.  Haven't made that in decades.

    Tonight's dinner was at Outback.  Dinner was meh but the mai tais (yup, more than one) were yummy. 

    We are home and I am done!

    Had tacos tonight. I guess I'm just a big kid. Had beef for the kids and DH and I substituted black beans with salsa for the beef. I really do love tacos. The tuna melt on the English muffin sounds good too. So does split pea soup. So does mushroom risotto. And homemade bread. I guess I like everything. LOL

    Left over pork loin roast sandwich on pumpernickel for dinner with coleslaw on the side.  Wonderful new crispy cookies for dessert - Newton's Fruit Thins w/whole grain, cranberry, oats & citrus. Yum - and even better if you like to dip your cookies in coffee.

    Laurie - there were some posts about your chicken salsa w/pork instead.  That is what I will do with the rest of the pork roast and cut the cook time since the meat is already cooked.  I've done this before and it's good.  With the chicken I add whatever I have on hand - like black olives or green chilies.   It's my "go to" recipe. Thanks again.

    Looked for pumpernickel bread and only found a very dense, dry thin sliced, it was a little bitter, I could not find a regular loaf at Whole Foods, this is suppose to be good for heart issues, for DH.  What store do you find pumpernickel?  And what is the difference between pumpernickel and rye bread?  Anyone?
