So...whats for dinner?

Michelle- My dad had those cortizone shots in his knees and said they were very helpful. The main thing is you will hopefully be able to get around with no pain and enjoy your trip. You alsways have such great advice for everyone Michelle even when you are going through so much, i agree with Apple, you are Amazing!!
Chabba- Thats what the server said, the reason why they use that instead of the real hollandaise was that it held better. I will try to find the base in the store if not maybe my brother could order it from his food supplier. Thanks!
Kaara-Aw, sorry your daughter was in so much pain. i really, really dislike dentist more than anything. still putting off having my upper teeth pulled and getting dentures. I know what you mean on ex-husband's, I get along with him because of DD but he was very abusive in our marriage thats why i dumped his butt. His wife is not a nice person she treats my DD so mean so i guess they deserve each other lol! I got lucky this time around my DH is the greatest, in the 23 years we have been together he has never even called me the B word, even though i probably deserved it sometimes lol!
Carol- Hope your implants go well with no pain or problems.
Lacey- Your dinner's always sound good and healthy, the cookie sounds even better though. I had a chocolate pie from burger king tonight they are small thankfully but ohh so good.

Carole, I love braised lamb shanks. In NY there was a Greek diner that was famous for this dish. Here in Greece I never have it, because they slaughter the lamb so small that the shanks are itty-bitty.

Speaking of ex-husbands and marriage, today is our 32nd anniversary! I have to say love has been much better the second time around! When I got home yesterday, my hubby had roses, chocolate covered strawberries and apple slices, a card, and a little adapter so I can transfer pictures from my camera through my iPad to the Apple cloud. LOL, yes, I am OK with "tekkie" gifts, just don't get me a kitchen appliance!
I was worried about my blood sugar being high after the cortisone shots, but it has stayed in a good range. So I'll be eating those strawberries and apple slices for breakfast, along with some Greek yogurt for good measure. It was so nice to sleep last night without knee pain waking me up! Woohoo!
Later today I'm getting a hot stone massage, mani and pedi. My kids got me a gift certificate to a local spa so I could get pampered before our trip. Then DH and I will go out for a nice dinner. Maybe I can convince him to take me to La Morra. He's not saying no to me very often these days but he really does love Italian food, so this shouldn't take too much arm-twisting.

Dang! I wanna go to al Morra too now (looked up the menu and it looks GOOD!).

ok guys.. no offense, but Knorr's hollandaise is the absolutely worst product ever. One can easily make Hollandaise for two
just put two egg yolk and a one juice of a lemon in a heavy saucepan and whisk melted butter into it slowly, never letting the pan get hot.. just remove it from the heat.. add salt and voila. it the egg yokes are hot you can add cold butter.. it is so good .. It it separates, just add a few drops of lemon juice or vinegar and rewhisk... the egg yolks are emulsigying a butter and lemon blend. it would be better to just use butter and lemon juice rather than messing with a sauce mix. People think hollandaise is so much harder to make than it is.. you just don't want the egg yolk to cook.

Hi ladies just reading all the yummy stuff on the last few pages carnt wait to have some decant time in my kitchen .
Had my bone scan today and I'm doing the happy dance all clear ,isn't it funny how we give way to fear sometimes only to find out that we have waisted soo much energy on worrying
Jojo0 -
Apple, anything is simple when you know how to do it! And you know a lot about cooking. I didn't participate in the hollandaise discussion, but I'm skeptical that the mix is as good as scratch.
Momine, how funny that you live in Greece and don't eat lamb shanks there!
Michelle, it's amazing that you eat out so much and don't have a weight problem. Do you eat a very small portion?
My weight was up 2 1/2 lbs this morning and last night's dinner wasn't salty.

Michelle Happy Anniversary You hit the jackpot the second time around.
Last night was the funeral for our dear friend. They did a reception afterwards at a local hotel, and I had helped the wife and friends to decide the menu, just finger foods, appetizers. Was so disappointed in what they put out for the price, they had substituted the chicken cordon blue with little egg roll thingies without asking or telling us....cost was like 700$ for 1 hr.! We complained and they took 100$ off the bill. Lesson learned, will not use them again.
I have used the Knorrs also. very good. I have a recipe for a crab dip (hot) that uses knorrs vegetable soup mix in it thats yummy.
Carole crab cakes benedict does sound sinful
Lacey I agree, I would eat that way all the time if it was just me, I like to pick and just eat a little bit of everything that sounds good in the moment.

Oh, apple is totally correct about the Knorrs for my taste. Look at the ingredient list to start with. But if someone has enjoyed it, no harm in helping them make it a bit better.
I make a bernaise sauce the night before I have a PET scan. The list of forbidden foods is long, so in exchange for the anxiety that is a PET scan, I make a bacon wrapped tenderloin steak with bernaise sauce for dinner the night before. As I leave for the hospital I throw a frozen cheddar cheese & scallion scone [FLOUR cookbook recipe] so the minute the scan is over, I can run to get a cup of coffee and eat my scone along the banks of the Charles River.
Sitting there, overlooking the river with sailboats and sculls, always restores my spirits.

Carole - yes, I don't usually eat more than half of my meal and the rest becomes lunch. And until recently, I ate about 60-100 carbs a day, so that kept my weight stable. I purposely gained about eight pounds because I was going to have my DIEP surgery and I had gone down to 122 by the time I finished rads...I wanted to make sure there was something to work with. I'll probably try to get rid of a couple pounds after we get back from Paris, although I've read that Xeloda may be an appetite-killer (Apple might know), in which case it may just happen automatically. And we'll eat more at home once we can start grilling and I can eat more watermelon...lol!
Susan - I don't remember, do you go to Dana Farber for treatment?
And woohoo, we ARE going to La Morra for dinner!

Michelle...a very happy anniversary to you! Enjoy that pampering and dinner out!
The graduation went off without a hitch this early AM...over 650 graduates from Jupiter High School in Florida! It was very well coordinated and we were out in an hour and a half...time to go have breakfast with DGD, DS#2 and family. We repeat the same thing at the same location when DGS graduates on Thursday. I came home and took a two hour nap! I think it was carb overload from breakfast.

Michelle- Happy Anniversary!!! What a wonderful sweet DH and children you have. I'm glad you are in such good hands and know that you are being taken care of with so much love and support!! Glad you are not having any pain since the shots with no SE. Enjoy your day and evening out you deserve it.
Apple- You are so right it is better and really not that hard to make. great tip on adding drops of lemon juice or vinegar if it seperates. But remember, you are the real chef we are just cooks. lol! Hope you are feeling ok and getting your appetite back. ((((hugs)))

Michelle Happy Anniversary! Enjoy your dinner tonight. I'm so glad your knee shots went well and you will be able to enjoy Paris pain free.
Kaara contests on the graduations! You must be proud. I live how involved you are with your grandkids. I can't imagine you going to your summer place and being away from them. But your summer place sounds wonderful.
I'm sorry I am missing a bunch of you. I'm still on my phone, no internet. I've been bad and read what everyone says and then when I get a minute to type I forget half of what I wanted to say!
The boys are finally feeling better. Last night we made party melts with ground turkey which was so yummy. Kids ate fruit and toast with peanut butter. So tonight is the chicken with avocado salsa, despite the pouring rain.
I need to get my food planned for camping this weekend. Thanks Michelle for the camp site tips, I'm going to check them out.
I hope everyone had a great day.0 -
Enjoy all my dumb typos and auto corrects. This is why I haven't been posting

Tired tonight, dinner is some leftover spaghetti from the fridge, some Gardein Chipotle Lime Crispy Tenders, and a quick salad. Simple and easy, but it hit the spot.

Steak Tips with Rice Pilaf. Brought my chili into work, it was gone before noon. Everyone liked it, except one guy said it was not hot enough. He likes it when beads of sweat appears on his forehead when he is eating it. LOL MEN.
Michelle~the shower is going to be June 23rd at Parker's Maple Barn, LOL. She thinks she is going for a brunch with some of her friends. SURPRISE!!!!

I ordered 1.7oz body lotion from my neighbor, she is a retired Avon rep and she gets 50% off. Now I will look for nylon organza bags to put them in along with a pretty decorated basket from Michael's.

Debbie swiss meatballs? Is that like sweedish meatballs? I thought you might like all the typos! Lol!
Deb I hope your daughters party goes well and you all have a blast!
Eric hope your wife is feeling well tonight. You're doing a great job being a loving DH.
Jojo great news on the scans!
finally have the boys in bed, time for American idol. Which makes me think has anyone but me kept up with the big c?0 -
Debbie, swiss meatballs? are they like Swedish meatballs? That's what I picture over buttered noodles....
Michelle, HAPPY 32nd!! I hope you guys had a great meal at LaMorra....but what a nasty night to drive that far. If you went, hope it was worth it! And DH definitely gets points for that drive! We have a gift certificate to use there so will also be heading over...probably once I'm done with work.
Susan, I love your PET scan regimen ending with the scone and sailboats and sculls on our no longer "dirty water". Very soothing indeed! You are a wise self-nurturer.
Was tired and not feeling great by the time I left work tonight, (17 more days!!) so was hoping for take-out.....but wait, my newly minted sweet "faux chef" had a great meal planned....grilled tamari/sesame salmon fillets, grilled asparagus with lemon, olive oil, and pepper, quinoa, and chunk salad of tomato and cucumber with balsamic vinegar. I could really get used to this! Maybe a nice Father's Day gift would be cooking classes...:)...last year it was a gift certificate to a local brewery where he could make his own beer. His very cute label had our recently gone pooch, Lacey, featured on his Lacey Brew. If I ever get to using my computer, I can post a pic of it. I've turned into such a lazy IPAD lady.0 -
Laurie, I swear I did not copy and paste your first line!! Great minds......

Michelle,
Happy Anniversary!!! Hope your day was great and that dinner was every bit as delicious as their menu sounds! I tend to save quotes that really speak to me in a file and the one that you referenced was originally attributed to Michael J Fox when discussing his diagnosis with Parkinson's....
"Don’t spend a lot of time imagining the worst-case scenario. It rarely goes down as you imagine it will, and if by some fluke it does, you will have lived it twice. When things do go bad, don’t run, don’t hide. It will take time, but you’ll find that even the gravest problems are finite, and your choices are infinite."
For those looking for a Hollandaise Sauce recipe, my DH makes one in the microwave that is quick, delicious and fool-proof.... Will try to find it and post if anyone is interested!0 -
Laurie and Lacey- I knew when i wrote that it just didnt sound right, LOL! Hmm wonder if there is such a thing, will have to Dr google it.hehe!
Laurie- Yes i watch it, getting a little risque with the brother LOL! but it cracks me up. who do you want to win on idol? Im thinking Jessica but can't make up my mind still.
Lacey- Hope you get some rest and feel better, the cooking school sounds like a great gift. Post the pic when you can would love to see it.
Jo-jo- missed your post some how, but woo-hoo doing the happy dance for you too.
Deb- Have you posted the recipe for your pumkin chili yet? I like spicey but not so much that you cant' taste any of the ingredients.
Seaside- Always loved that quote but did not know it was for Micheal J fox. So awesome! Always up for new recipe's they can always be improved even when you have one you like. I would like it please. How are you doing? Did you get all of your test results back? Not sure but thought you were waiting?

Debbie: Will you send the Swiss (swedish) meatball recipe?
Dinner at a lovely, upscale Italian restaurant downtown tonight before a concert. Linguine con vongole - white sauce of course. I've been hungry for clams for a week with all the various recipe postings. My SIL had a special salad with marinated artichoke hearts, cross cut celery, tons of fresh mushrooms & italian dressing. Yum. Also a grilled portobello mushroom with shrimp on top. Lots of soft focaccia filled w/herbs & garlic. We'll definitely be going back there when we have a fall concert in the same area.
Michelle: Looking forward to your dinner review. And the hot stone massage.
Laurie: Good to hear from you - typos or not.
