Minustwo- I agree, i have also been craving the clams linguini we get fresh clams here thats how i prefer to make them but gave out an easier one a few pages that use canned but much better prefer the fresh clams. ok, here is my recipe for the Swedish meatballs it was delicious tonight. Btw i also use this sauce for beef strogganoff too.
Meatballs: mix together, 3lbs of ground beef.- 1 white onion, (diced)- 2 eggs (lightly beaten) - 1 cup of seasoned bread crumbs- 1/2 cup of fresh flat leaf parsley. (chopped)- garlic powder- salt and pepper to taste. Form into about 3/4 to 1 inch balls and over med-high heat brown on all sides, remove and put on plate.
For gravey- In same pan with drippings, put about 4 tbsp of flour, whisk until combined and cook about 4 minutes or until golden brown. Slowly whisk in 2-10.5 oz cans of beef consomme (or beef broth) and 1 tbsp of worcestershire sauce, add 2 cups of milk, salt and pepper and a pinch of nutmeg (optional) stiring constantly to prevent lumps, cook about 6 minutes or until gravy starts to thicken. add a couple tbsp of sour cream- lower heat to medium add meatballs back into sauce(including juices from plate) and cook (uncovered) for 10-15 minutes until meatballs are cooked through. Put over buttered noodles or rice and top with more fresh parsley.
Tip- Beef consomme has a stronger flavor but still good with beef stock or broth if you cant find it.

Tonight we had 3 inch thick black angus steak on the Barbie ,cooked medium reare ,wedges cooked in the deep fryer, fryed eggs ,and mushrooms .it was sooo good but ,I'm not feeling to well at the moment ,must start my diet tomorrow ,I feel so much better when I cutout carbs but I'm a big sucker for fresh bread,specially home made bread and pasta I've never made my ownbut would love to get a pasta machine

Debbie those meatballs sound good, havent made those in awhile, You have a better gravy mixture than what I make so I am writing it down.

Last night was a pork loin on the grill, pasta and broccoli casserole and corn. This new med I am on is killing my appetite, which is good but wont be good for my DH as I have no desire to cook anything. Maybe I can drop these extra 15 pounds I have on.

Last evening was chicken sauteed with mushrooms and some of the gravy I had left from the pork done in the crockpot. It had garlic, onions, carrots, celery and some spices. I blended it in the vita mix and it made the most delicious gravy...didn't even need a thickener. I served that with green peas, cauliflower, and a green salad.
We may not get to go to DGS's graduation because my DIL's relatives are all flying in from Equador at the last minute to go (no advance warning so not enough tickets). They hardly ever see him, so I certainly don't mind giving up our seats so that they can go. We'll see him at the grad party on Saturday.

This is the recipe we use for Hollandaise Sauce... DH makes it right in one of those big 4 cup Pyrex measuring cups... The important part is the cooking for short intervals and stirring until it's thick. You don't want to take it too far and cook the egg yolks...

Carrie- Sorry your meds are leaving you with no appetite and no energy. Maybe make a casserole of some sort that you can reheat and not have to cook for a couple of days. Some people dont care for leftovers by DH does not mind infact they always get better the next days. Hope you feel better.
Kaara- Thats sweet of you to give up your tickets. What ever happened to just being able to go with out having tickets? I remember anyone could go and you didnt have to rsvp either.

I love eggs Benedict. DH used to make the sauce from scratch for us, before kids.
Busy day today ran errands and went to the park to meet friends. My sil called at lunch time and asked I'd the boys could have a sleep over. Well yes!! When DS #2 wakes up from nap ill drop them off and head to the grocery store to get loaded up for camping ill start my preping tonight for the weekend. I haven't even thought about what's for dinner.
I need to get my act together and go get a new modem and go buy a stove. Sounds like the surge protector company will only give us 500 dollars if we don't file a claim with our insurance company. Which we won't / can't do. For one its not worth it, two after what they covered last year with the lightning strike I'm pretty sure they would drop us. But 500 is better than nothing so I'm grateful.

Seaside- Never made it with whipping cream but will try it. and the casserole sounds yummy too. I don't have a problems with poaching eggs the trick is to dont let the water go over simmer and swirl barely with slotting spoon lol! The neat gadgets they come up with these days, love em!

I am baking a ham.. they were 6 dollars off, and found some fantastic artichokes for only 2 dollars.. they are ready to go, and will make cornbread which i will eat with butter and syrup. it's nice to eat again.

Hi everyone! First, thanks to all for the anniversary wishes! The day didn't go exactly as planned, but it was nice nonetheless. I went for my massage and mani/pedi but somehow they didn't have me listed for a hot stone massage. So the stones weren't ready. Instead I got a deep tissue massage, and when I say deep, I mean deep. OMG, she hurt me...LOL! But I had so many knots I wonder how I was walking around. They're gone now, I assure you! And I was supposed to be out of there by 5, but it was 6 before I got home. In the meantime DH tried to get reservations at La Morra and couldn't. It was either 5:45 or 8:30. Neither of those times would work, especially mid-week. So we ended up at a place in Nashua called Unum. It was very good, I had grilled tuna that was crusted with crushed black sesame seeds. The dish had grilled artichokes, grape tomatoes, and some crispy rice. DH had a filet and he was happy. So we still have to get to La Morra.
I just got home from today's running around that included going from here to my daughter's, then we picked up her wheelchair, then back to her place, then to my mom's, then out to Acton to meet my other daughter for lunch, then to DGD's pre-school for their end of year performance, then back to my mom's, then back home. Yeah, probably 175 miles...lol!!! I'll be glad when I get on that airplane Friday evening!!!
Everyone's food sounds yummy, especially since DH has decided we are having pizza...again, unless I can talk him out of it. We emptied the fridge this morning (it's trash day) so the only short-life perishables are some berries and a yogurt.
And Seaside - thanks for the whole Michael J. Fox quote, it's so true!

Looks like we're going to the graduation after all. DGS was able to find a couple more tickets from someone else who wasn't going, so we're back on the list. Another early morning for us, so early bedtime tonight.

Laurie Have a great camping trip. We used to camp when the kids were growing up and I remember how much work it was getting ready to go and then unpacking when you get home. We have some really great memories though of those days, when the kids were uncomplicated. We still have the camper, but it is only used to tailgate at Buffalo Bills games now.
Apple so glad you have your appetite back and enjoying food again. Love having leftover ham, there is so much you can do with it.
Seaside thanks for the recipes, that casserole sounds good. Would be good to take to a brunch.

Well, listen to this, woke up this morning with a very sore dark pink swollen left breast. Scared the living daylights out of me. It's the same breast I had surgery and rads 5 years ago. Thought I had IBC. Called my BS and the nurse said come in as soon as you can. I made it from Westford to Woburn in just a little over a half hour.
The nurse took my temp, 99.7 check out my tata, said it is an infection. WTH is with that, how did I get an infection? They said I was the second case today and only IV anti biotic will work so they were going to admit me for 48 hours. After a few other doctors looked at me and me not happy going into the hospital just for IV's they said we will try an oral anti biotic. I have to go back Friday afternoon and if there is no change I will be spending part of Memorial Day weekend in the hospital. I can't believe how hot and sore and swollen my breast is. They may take a biopsy Friday just to make sure. Keep your fingers crossed that the oral anti biotic works.

Oh Deb, I am so sorry to learn of your "condition" and do hope that the oral antibiotics clear up the infection. I sometimes feels like we are never out of the woods with this damn BC....even with you being so far along in treatment. I have been having a lot of stabbing pain in lumpectomied breast, and wonder how long that will be with me. A little overexhuberant 7 year old came running up to me at school and threw his arms around me and knocked his head against that side. Thought I'd pass out! By the way, I'm pretty sure that I got my little organza favor bags at either Michael's or Joanne's

Michelle- Sounds like a perfect day and night even though it changed. Those deep tissue mass do hurt but hoped it helped. I'm so excited for you to be leaving Friday and cant wait to hear all the fun you are having, hope you will post pictures and keep us updated.
Everyones dinner sounds so good. ham, salmon. pizza yummm! Its making me hungry, think im going to the golf course for dinner while hubby golfs and play some keno and have a hot cocoa. Its cold and rainy here.

Michelle, your birthday and your travels today have me exhausted! You really are the energizer bunny! Sounds like the birthday dinner was lovely albeit not LaMorra. If you ever want to try La Morra at a later date once I'm a free retiree, I'm sure my DH would love to join you both there. In the meantime, how wonderful that you are about to embark on the Parisian adventure!! Have a wonderful time!
So tonight I was getting ready to leave work, and feeling badly that I had no plan for dinner...called home to see if DH wanted me to pick up take out, and he said that he had some interesting items he already picked up (yea! I didn't bother to ask what). He'd had a meeting in the morning at a local coffee shop/middle eastern neighborhood restaurant in Cambridge and before he left saw one of his colleagues picking up these flatbread roll ups that looked interesting. So, never being one to miss out on interesting ethnic food, he did the same, and boy were they good.....one was like a pulled lamb with spices and mild cheese, and the other was spinach with three cheeses. The salad had the best lemon-mint dressing and I believe tarot slices (which I've only had in dried chip form in the past) with the romaine, cukes and I added grape tomatoes. It was really refreshing! I was so relieved not to have to deal with dinner that I offered to be the clean up detail... a great trade in my opinion!
Off to watch the Celtics..and hoping I can stay awake for the whole game.

One of my favorite guilty pleasures is a small bowl of vanilla ice cream with a drizzle of real maple syrup.... It was a favorite of my Dad's although his was a scoop of Maple Walnut with a drizzle of syrup....0 -

Speaking of corn bread, i make a very good corn bread, No not from scratch, (sorry) but i get so many compliments on it and everyone always ask me how do you do your cornbread i just love it.
2 boxes of jiffey corn bread, mix per directions. add 3 tablespoons of sugar let sit for half an hour, let it get a head on it, yes, i said head. lol after mixing then add 1cup of cheddar cheese put in 8x10 ( i think) inch pan buttered pan, cook according to directions on package take out when done punture holes in bread with fork and pour warm butter over about, ( 4 or 5 tablespoons) let sit and then cut into squares. dont know why i do it this way just did but always get lots of compliments. I have made from scratch but still prefer this over any of them.

Deb, cheese, even feta, in cornbread is very good, agreed. Although I never put sugar in it. My daughter and I both have an aversion to sugar in savory foods. We can't eat tomato sauce with sugar in it either, nor most sweet/sour things. So I use the recipe from Joy of Cooking for "northern cornbread" and leave out the sugar. After BC I also leave out the white flour and make it with all coarse corn meal.

You can put any sweet substitutes in your foods, like michelle does,since she is diabetic, in fact i have started doing that as well lately. I also just came across a tomatoe based sauce that is not made with tomatoes but made with beets and veggies that is suppose to be good and in place of tomaotes for people with acidic problems. have not tried it yet but if you want the recipe let me know.

Morning everyone! Early day for me...another one of those early morning graduations...we have to drive over an hour to get there! Same place as the other one, so I know the drill by now.
Debbie your cornbread recipe sounds great...I use Jiffy as well, last Thanksgiving I made a corn pudding using the mix and everyone raved about it. I wonder if it would hurt to leave out the two tbs of sugar...the mix tastes very sweet as it is. My DGM made cornbread and didn't use sugar, so I was used to that. We also make cornbread dressing at Thanksgiving, probably a healthier alternative to the bread stuffing for those on gluten free...just leave out the white flour.

DH likes Jiffy mix, too, but it's too sweet for me. I like the made-from-scratch with cornmeal. I have a seasoned iron skillet that I oil and preheat in a hot oven. The cornbread comes out crusty. I don't like cornbread to taste like cake! We don't have it often because we like it slathered with real butter.
Last night we had a good stovetop casserole that started with ground meat (from Fresh Market, no pink slime!), a small container of leftover Italian sausage, chopped green onions and chopped bell pepper from freezer, onion powder, garlic powder, generous sprinkling of cumin, coarse chopped squash (cute little round ones shaped like stars from CSA), and small amt of left-over home-made chicken broth. Too much meat for the squash so I added a can of tomato sauce and cooked half a box of Dreamfield penne pasta and added it. Oh, at the meat stage I sprinkled red pepper flakes. Tasted really good as though I had a recipe! LOL Half was left over so we'll have it tonight.
Yesterday's CSA veggie offering was green cabbage (now I have 2 in the refrig.), 3 green cucumbers, 2 round yellow cucumbers, tiny green beans (mixture of green, purple and yellow), Swiss chard, mixed lettuce, 3 Japanese eggplants, basil, and a small bouquet of cut flowers with zinnias. Last week's flower was a giant sunflower.
Anybody with great recipes for green cabbage and/or Japanese eggplant?
My jaw is still swollen from the dental surgery but today I have to venture out into the world again.
