My daughter called and needs help with cooking chicken and is worried!  I never taught her how to do this.

She is worried and says that she put it in the pan and browned it and then put it in the oven for 20 minutes with ba ba cun ush ? and white beans.  After that when she cut into the chicken breast it was white but "chewy" She is worried that it was not cooked and will get sick. I told her that if it was white and chewy it was probably over cooked and not to worry about it.  Any thoughts? I am a bad Mom and she was vegetarian until about 1 1/2 years ago since 16  and I was vegetarian until 1 1/2 years ago when I started eating fish so I never taught her, as I ate separate meals and and am not good with this.

I think she is just making me worried for no reason

    Thanks!

If its white its probably cooked, uncooked chicken is usually pink. And browing it and 20 minutes in the oven should have been enough. Of course, she'll know by tomorrow if it wasn't.

YAY, I have a clean drain, he pulled out a lot of sludge and little fibers of tree roots. $377.00.

I had a cupin for $40.00 so $337.00.  I get a stomach ache with something goes wrong with the plumbing, I think of the worst senario.

Had a hot dog and chips for suppa, DH finished up his cheese steak sub from last night.  Still have leftover pizza too.

I love it when my DD calls for advice on cooking things.

I remember her coming over one Easter Sunday with colored eggs.  She forgot to boil them LOLOL.  What a mess.

Bedo - I agree with Moonflwr, the chicken was definitely done!  My kids weren't big into cooking when they were younger but have definitely improved over the years.  LOL at the "ba ba cun ush"!!!

My feet are a little better.  So I was on the way to the hospital to see this little guy:

Photo: It gives me great pleasure to introduce my new great-grandson, Braden James dos Santos, born this morning at 8:21 a.m., weighing in at 7 lbs, 7 oz, and 18 1/2 inches long. Congratulations to mom and dad Britney and Bruno, and first-time grandparents Christine and Ron! Mommy and baby are doing fine! He is one handsome little dude!!!

Braden James is the newborn son of my "almost" daughter-in-law's daughter.  That make Braden my "almost" great-grandson!  He was born at 8:21 this morning and he is just precious.

Anyways, as I gingerly crossed the street from the hospital parking garage, the blister on my right foot broke open, relieving the pressure and it immediately felt better.  So tonight I "helped" the left foot by draining that blister and then bandaging it with along with some antibiotic cream.  I'm hoping I'll feel a whole lot better tomorrow morning.

Kaara - chicken with artichokes...I need to make that.  I used to order a dish called chicken carciofi at a little Italian cafe in Independence, MO.  It was sauteed in olive oil, and besides artichokes, it had a few mushrooms, kalamata olives, capers and sun-dried tomatoes.  I have often added a can of cannellini beans rather than serving it with pasta.  It makes it more of a ragout.

Lacey - we didn't even get a drop of rain from those storms.  But it did clear the air and it's a pleasant evening.  I think I'll open the windows when we go to bed.

Tazzy, I picked up San Francisco Blend at Whole Foods (aka W"hole" in your pocket!) recently. If you want I can check to see all the spice ingredients in it.

They recommend it for chicken and fish. DH really loves it...I'm only fine with it.

Laurie- That's great you got your little guy's to pitch in and help. Sounds like you have a great weekend planned. Your so lucky to have a pool. I love the Ocean but not as easy as walking out your back door and jumping in a nice refreshing pool. Glad you have liked that dish, likewise, I love your chx salsa!

Tazzy- I will raise you one piece of toast for 1 egg lol!

Deb- Yippe on the plumber finally getting there. That must of been a pain in the arse not having your disposal working. LOL@ DD bringing eggs for easter uncooked.

Michelle- He is such a cutie! Congrats on your AMDGS. (almost dear grand son) ha! Glad you got some relief after the blister popped.

I forgot to mention that since DH plays golf on Wednesdays I decided to go to the new deli I found a couple of weeks ago. they have the best sandwifches and soups salads all made fresh including the bread. They have a little gift shop area and a lounge area where you can drink wine or beer but in one cornor they had tasting with little spoons to try their evoo's and balsamic vinegars OMG! They had a chocolate balsamic vinegar that was to die for and a fig infused balsamic equally as good. And loved there lemon infused BV. Each one was 20 apiece so will buy one at a time just to spendy all at once and have to figure out what i will do with them once I buy them but, boy were they all good.

Lacey - would really appreciate it if you could check the spice ingredients... nearest Whole Foods to me is Vancouver which is 4 and half hours away Smile  Only liked the sound of it as San Fran was one of my fav places to visit.

I never had kids to teach cooking to but when Dh & I were first married my Brother left home and came to live near us in Seattle. For the first few months he would call almost every night while I was fixing supper, tell me what kind of meat he had and either ask how to cook it or what to do with it.  Sometimes he had an idea of what he wanted to fix, sometimes not.  Or sometimes he might know a couple of things he could do with it but wanted something different.  It got to be a fun routine but how I wish we had had cordless phones back then.

i find it difficult to believe that we shipped our bread into our restaurant from San Francisco.. oh.. it was absolutely delish.. that is the bread i need to replicate.   chewy, but not too crusty.

I had the brilliant idea to split open a couple chickens and have son#2 grill them with bricks.  total failure.  i actually put them back on the grill for 20 minutes after dinner.  but basically good and i have dinner ready to go for tonite with some to be made quacamole,  tortillas and salsa.

Michelle, he is so cute! He looks like he's saying " Everything's OK" with his right hand and "I am strong" with his left.  Even his little belly button cord and clamp are cute. boy is he young!  Congratulations!

Michelle  Congratulations!  He is so precious.  Glad your feet are feeling better...now that the blisters are popped, do a nice foot soak in warm water and then prop your feet up and keep them open to the air for awhile, they should dry up fairly quickly.

No dinner last night, went to see "the Little River Band"  Had a blast.

tonight chicken cacciatore over egg noodles.  Gonna use zucchini instead of green peppers (they now give me heartburn)

No rain here either, our yard is brown, but the weeds keep growing.  I mowed some yesterday, just to get the tall ones.

My daughter bought some interesting spices while at the wine festival, but of course could not take them home on her plane, so she left them here till she comes home with a vehicle. they are packed with her 3 cases of wine she purchased.  Everytime I walk in the dining rm where they are packed, I swear it smells like marijuana in there!

I just returned from having my eye injection from the new specialist in NC.  It went far better than the ones I've had in Florida and this doctor is sooo nice!  He gave me an injection of lidocaine prior to injecting the drug and I haven't had nearly as much burning after.  It was almost a non event!  Now it's behind me for another month...whew!

I baked mahi mahi for dinner last night with asian slaw and sweet potato fries.  Today I will make my okra and tomatoes for sure, along with some grilled eggplant and a side of brown rice mixed with back eyed peas, black beans, corn, and red peppers.  It's called cowboy caviar and I buy it at Costco.  It can be used as a dip or mixed with other things for added flavor...delicious!

Michelle:  Your great grandbaby is just precious.  He reminds me of my DGD when she was born with so much hair!

I have some friends coming formdinner and decided to make a cold dinner. So there is a potato salad with dill, spring onions and mustard vinaigrette, tomato slad with mint, small meat balls also with mint, a huge broccoli and mushroom quiche, eggplant baked with onion and tomato, tzatziki and red peeper/ walnut dip.

Yeaaaa, Kaara. So glad the new doc was worth waiting for! And, by the way, can I stop in for dinner tonight!? ;)

Carrie, I hope your local police aren't doing any door to door fundraisers! ;)

Here is the much less exciting spice blend I used last night (from Whole Foods):

San Francisco Bay Blend....for seafood or poultry (I never understand why such spices have to be limited to just a few protein groups). So it includes these organic spices:paprika and mustard, sea salt, organic dehydrated garlic and onion, citrus oils (lemon and orange), and citric acid.

Momine have fun with your friends tonight and your dinner sounds delish!

Kaara- So glad the eye appointment went well!  Sounds like quite the difference!  Your slaw made me remember a thing I saw on tv the other night.  They had a thing for Americas best sandwich and it looked amazing.  Pulled pork topped with a slaw that had poppy seeds, mustard, pineapple all sorts of strange things in it.  It looked amazing!!  Very different but you could see how the flavors would work together.

I have no idea what dinner will be.  I bought chicken today 1.77 a pound!  So I am thinking some kind of chicken dish.  I usually would have gone grocery shopping today but am holding off until tomorrow so I can be prepared for company.  Did I say we are having a group of friends to the house for the weekend?  We will be 12 adults and 9 kids!!

Kaara - I love that texas caviar from Costco! That's what I had for lunch today.  :)

I have no clue what we're having for dinner tonight.  I worked until after 9:00 PM last night (hit a snag with an upgrade) and we ended up having dinner at 10:30.  I was 'zausted, so made scrambled eggs with zucchini, onions, cream cheese and bacon from a local meat market.  And a glass of white wine.  Hopefully tonight will be an earlier dinner - almost undoubtedly it'll be something that includes both zucchini and salmon.  Maybe a crustless quiche.

Has anyone had any luck making a pie crust out of something that doesn't include wheat?

Laurie - I'm having a backyard full of people on Sunday, too.  I think it will be a very nice weekend, either day!  We're going to have bbq chicken and sausages, and cold salads.  I am going to make another trifle...banana cream, I think.

Momine - cold quiche, that's interesting.  I will have to give it a try.  I do love potato salad with dill.

Kaara - glad your injection went well, although I must admit that just thinking about it makes me squint.  Did you mention why you get the injections?  I can't imagine a monthly eye stick...eeek!

Lunch at A&W's today following a round of golf.  I had the Coney dog (chili & melted cheese, no onions) and an icy mug of diet root beer.  It was good-d-d-d.  We're going into town in a little while for a free concert.  Dinner will probably be ice cream.

Carole:  That sounds like a fun day..you are having a really nice vacation.  So much to do when you are willing to just go with the flow.

Michelle:  The injections are for wet macular degeneration that I have in my left eye.  This is my fourth injection.  I took a short nap and when I got up my BF almost freaked out because there was a huge blood blister in the side of my eye where I had the injection.  I've never had this before, but when I called the office the tech said that it happens when they hit a blood vessel...oh well.  Hopefully it will go away...it isn't painful at all.  The shot really doesn't hurt that much..it's just the thought of a needle going in your eye that gives you the creeps!

Michelle- Have fun with your get together!  By then your feet should be feeling much better, I'll keep my fingers crossed for you.  Market Basket has lobsters on sale this week for 3.99 a pound, just an FYI if you like lobster.  We are planning on doing a lobster bake Saturday night along with haddock for the adults who don't like lobster (me) and burgers for kids who don't like it.  Of course steamers, corn, baked potatoes etc.  I have been debating on pickin gup shirts and a tie die kit for the kids to do a project....it would probably just make a huge mess and be a PITA.  Ages are my youngest- 2- to age 11....

Laurie - tie dye - yes, big mess and lots of work!  My daughter did about 10 of them last Friday and she said it was one big project.  And I'm wondering if I need to wash ours separately from everything else except maybe jeans.  I have visions of blue and pink on everything...lol.  She also bought a face-painting kit and I saw the results today - she's pretty good!  Here's one example:

Thats it Laurie "steamers"  you are in charge of steamers!!  LOL  How can you not like lobster?  9 kids? YIKES They will probably swim the whole time and be good and tired at the end of the day.  You could probably have a nice game of kickball with that many people.

Momine That sounds like a yummy feast.

Carole  Now I am craving a rootbeer float in a frosty glass....mmmmmm
