Sounds like everyone has been having some fun and eating lots of great food! I am trying to get caught up after a few days off. What a crazy bust weekend! We went to the Old Home Day parade Saturday morning and after that headed to the lake to stay at our friends cottage. It ended up being a huge get together with lots of great food. I made a pan of lasagna and a salad fo cucumber, tomato, red onion and feta salad with some oil and vinegar for dressing. We all had an amazing time and headed back today to go to our neighbors sons birthday party. We were there close to 5 hours! My youngest fell asleep while eating and was carried to bed We are about to put the other boy to bed and have left overs. I made a pulled chicken the other night on the stove top which came out awesome and I am getting ready to wat whats left of it!
I don't remember who asked about my pulled pork? But all I do is put the pork loin in the crock pot with a can of diced tomatoes, a can of water, salt, pepper and garlic and let it cook on low for the day. I shred it and add some of my favorite BBQ sauce to it. Pu tit on rolls and toast in the oven and add pickles!
So- I am exhausted from all the fun we had, I will write more tomorrow, I am so glad I don't have to go to work!!

Sooo, I just got home from the weekend in Maine with my son and his SO. She did the "Olympic Marathon" version of the triathlon today and unfortunately, was so dehydrated that she had to go by ambulance to the ER for treatment. I was at the finish line (volunteering-handing out medals to the finishers) when she came through and it was obvious she was in a little trouble. I handed her over to my son and they tried sitting in the shade and she drank a bottle of water. But she had nausea, pain in her left flank and some other symptoms that made it look like she might be suffering an acute renal problem. So I got my first ever ambulance ride. Fortunately, after three bags of saline and a few blood tests, she started to feel better and they didn't find anything seriously wrong. They released her about 4:15 and we headed home. I'm exhausted...four hours of volunteer and four hours of medical stuff. Phew!
Kay - your SF trip sounds fantastic! I've been a couple times and had some really good food, but you seem to have discovered some real gems!
I have to go in tomorrow morning for blood work to be sure all the CAT scan contrast has cleared out of my system and my kidneys are good. Not anticipating any problems at all. Looking forward to starting the clinical trial on Friday, and looking forward to a couple days in Atlantic City.

Laurie - Thanks for the pulled pork recipe. I was the one that asked. I ended up putting the pork loin in the crockpot with rub of sage, garlic, pepper, salt. Cooked on high 1 hour then turned down to low. DH said as he took it out of pot "Isn't this pulled pork?" which it sure could have been. No buns though. Made a sauce of balsamic vinegar, brown sugar, soy sauce, water, cornstarch and rice as a side. The sauce is really good, not too vinegary. Will have some grapes or plums for dessert.
Love the tit on rolls and bust weekend. Feel like I know each of you personally. Everyone have a good week. Here's to good test results and minor if any SE's.
I forgot to say thanks too to Chabba. Sounds like I did a combo of both recipes.

Luvmygoats, Pork recipies sound so good. Michelle, what a weekend for you. I am glad your sons SO is ok, dehydration is scary. Seaside and Laurie, I love the typos, and auto corrects, always makes it fun to try to guess what was really meant!
My husband had to go in to work yesterday, hour and a half commute each way. I told him he didn't have to come back but he wanted to. So ER went to Chinese, loved my chicken curry. Today we ate leftovers for lunch, but before he went back to his apartment, he brought me Culvers chicken tenders. Also good I feel like he took good care of me. We also went shopping, ad I couldn't drive last week, so I can cook this week. I ended the day today with my treat of chocolate mug cake. Much love.0 -

luvrving - glad your son's SO is OK - my DH used to run marathons and I remember being at the Marine Corps Marathon at the finish line. A runner collapsed - his name was on his shirt in big letters - so we were all yelling "come on Bryan" but it was clear he was not going to cross the finish line which was about 10 feet away. A group of Army guys ran past him, crossed the finish line, ran back and picked him up and carried him across so his chip would register that he was a finisher and then put him in the ambulance. It was awesome, we were all cheering! It would be sad to run 26 miles and not make the last 10 feet! He needed some fluids and he was OK.
We are waiting for the hurricane - DH has delayed work tomorrow at MacDill AFB, DD has no school at Univ of S. FL. I have a dermatologist appt. in the afternoon for a check of skin cancer on my chest. Have not grocery shopped since if we lose power we will be firing up the gas grill and cooking everything in the freezer, lol!

Michelle- Oh my gosh what a scary thing to happen! I am glad she is ok now though, probably quick thinking on your part to get her to shade and some water. Hope you get a good nites sleep. And I had no idea that the blood test would show weather or not the contrast was still in your system.

Stayed on the lake too long yesterday and didnt get in till 8:30 last night, so it was a quick tossed salad. Feeling like something grilled tonight, maybe some pork chops...got some peaches to grill with them. Also have some eggplant that was given to me that I must use up. Was reading about eggplant cut up in sspaghetti sauce...anyone here ever use it that way? I only know how to make eggplant parm, otherwise dont know what to do with it.

carberry - maybe make vegetable lasagna by thinly slicing the eggplant, grilling it so it loses some of its moisture, then use the slices in place of noodles? You could even make it non-veg by adding some meat to your sauce.
So far so good with the storm - we have had wind and rain but nothing major (yet) has happened. I slept better last night than I thought I would - I have a hard time falling asleep if it is super windy. I have an appt. today with the dermatologist to check my skin cancer area that was treated - hope that goes well, and that I don't blow away. The good news - they have a covered parking garage! It is funny, a year ago I wouldn't have had to worry about my hair blowing around, now I do!

SpecialK - when I make vegetable lasagna or moussaka using eggplant, I slice it thin, salt it, place it is the colander and then place a bowl on top of it with weight in the bowl to press out the liquid. Before using it, I rinse it to get off the salt, pat it dry and then use it like really wide noodles.
Take care with the storm. I've been thinking of all the people in the path of the storm.

Specialk....I make lasagna with eggplant too, also zuchinni, especially this time of year when we have so many.
LuvRVing: same thing happened to my son in a race several years ago, he started acting silly & incoherent...they thought he was on drugs because of his actions.....turned out he was dehydrated & was taken to hospital. Amazing what the lack of water can do to our bodies.

Whew, busy day so far! First, went to the local Dana Farber and had the required lab test. I got a call later - my kidneys are fine after having the contrast. I think they are actually testing the creatinine level. Anyways, mine was perfect as I suspected it would be. Then took DH to the airport so he could pick up a rental car for the rest of the week. He had to drive to Worcester today and then we'll be driving to Atlantic City tomorow morning. He called a while ago and he's already on his way home. Then I went to my mom's, she's still a mess, and I took her to visit her sisters. We had a good visit then went for ice cream before I brought her back to the place she "hates." The doctor is doubling her anti-depressant med. Good thing because this is wearing me out and I feel guilty every time I leave her, even though I know in my heart she's in exactly the right place.
Now I need to get a few loads of laundry done so I have some of my favorites to wear in AC.

special K- I made my first veggie lasagna this past weekend, I always do meat lasagna. I went on line looking for tips to keep it from being watery. I cubed the eggplant and cooked it in the micro wave for 10 minutes. I put a bunch of paper towels under it to absorb all the water. I also sauteed the zucchini and squash to get most of the water out. It seemed to help alot.
I did laundry and cleaned a bit this morning and then headed to the park for a few hours and met some friends with their kids. The boys are exhausted from the weekend. I am going to have to go wake one of them up from nap soon as DS#2 seems to not be getting up on his own! I am thinking a quiet afternoon swimming and playing in the back yard will be good.
Dinner tonight is going to be grilled steak tips, left over lasagna and salad.

Luv- I missed your post as I was typing. I am so sorry your mom is having a hard time. I hope they figure out her meds so she feels better...happier. Have fun in AC!! I know you will! I hope you get some good sleep before you go because I doubt you will stop for a second once you are out there!

Carrie- try going to allrecipes.com and putting in the ingredient eggplant. My only other option is the one I posted here once before, grill it with fresh tomato and basil and top with fresh mozzarella cheese. Love eggplant!

Thanks everyone for the eggplant tips...I sauteed it with onion and then added to my fresh tomatos (peeled and chopped) and cooked all day...lots of garlic and herbs and ready for some pasta.
Today was 12 quarts of bread and butter pickles...the pickle factory is officially closed!
Laurie I love 'allrecipes' thats where I saw that people were making sauce with the eggplant I like the vege lasagna idea...may do that and freeze it for when the kids are here.
Jo-5 My son is in east ohio and was supposed to break ground today for his new house....maybe the rain postponed that? We are finally getting a few drops of rain, but not much.

Speaking of meeting for dinner, it's time for us to plan our Pickity Place lunch. Last weekend in September - would that work? And is Saturday better than Sunday? I like Allrecipes site too....I find they have great ideas although most of their recipes need tweaking...but then I never could leave a recipe alone.
Okay so now, I hope no one minds (in case you see this on another discussion board) but I have to brag: this is my 8 year old grandaughter Lacey who donated 13`of her beautiful hair to Kids with Cancer.

Thanks for all the concern. It looks like Isaac may head straight to my area of Louisiana, near New Orleans. I talked to my mother and two sisters today. Everybody is planning to stay home at this point. Isaac isn't a powerful storm but it's very large in area and slow-moving, which can mean it could go ashore and stick around for more than 24 hours. Even though we're not there, we're experiencing quite a bit of anxiety.

DH got home and had his own plans for dinner. It seems his mind had been thinking about the left over pot roast in the fridge. We had open faced pot roast sandwiches for dinner and he made it. I will admit, I was reluctant and they were very yummy.

Michelle, I do hope the staff can get your mom on a regimen that helps her feel more settled. Poor thing....and the worry for you. You are smart to remind yourself that she is in the best place for her. Enjoy a little distraction in AC, and have a great time with Kay!
Am home trying to figure out what I want to do with boneless chicken breasts, which I will buy tomorrow, cut in smaller pieces, and freeze, then take to NH to use in some form of casserole for a main dish for our beach party. I'd probably like to do something different than a tomato based sauce dish just because everyone uses tomatoes for this party dinner...and everyone's banner crop this year assures that! Any easy, not terribly expensive ideas but reasonably healthy ideas.
Speaking of recipes, my neighbor in NH told me about a healthy finger food her DD gives her DGS....cooked quinoa mixed with cottage cheese, an egg, and spinach, baked in a pan and sliced for him to eat. It is super healthy and tasty with a fun texture. I scouted around and found a Martha Stewart adult version of this with interesting spices in it...almost decided to use this for my beach entree, but not sure most of the people there have even heard of quinoa, so we'd be eating it ourselves for weeks.
After the dinner, my DH will DJ a dance party for the whole association on the beach. It was a great time last year, and the kids (we have many on our beach these days) are giddy with anticipation of his playing their favorite songs so they can dance the night away...including the very hotly requested chicken dance!! Hysterical!0
