Good to hear from you, Eric! Hope you can get more restaurant take out meals!

MRE's must be awful given your creative cooking/eating habits.

Always nice to know your shower area is safe! ;)

    Be well...

Laurie- Hope you are not dragging any more. Hope you are not dragging any more. LOL! I had to laugh when I read you wrote it twice. haha! I hope you feel much better by tomorrow.

Eric- You sure have a lot going on there but it's so awesome you are helping out!

I got a new iphone4 today DH got the 5. I have been using a verizon Lg for the last couple of years and even though I couldn't d/l apps or didn't have a good camera on it i loved it, it was user friendly. I can not figure this thing out I will keep messing with it until I decide to ask DH for help. So far not sure I even need it but on the good side I will be able to d/l pictures finally once I figure it out.

We are suppose to have about 90mph winds tonight and tomorrow been really windy and rainy we went to safeway to go shopping tonight and there was a news crew outside and asked me and DH if we wouldn't mind being interviewed so we walked over there and they asked us what we thought of the weather, said we didn't like it windy it was pretty scarey also said we would rather be in Hawaii! I was kind of embarrassed being on tv I looked like a drowned rat lol! Watching the 10 oclock news now and havn't seen it yet maybe they will decide not to air us. LOL!

OK, here's the story on Gorton, Gorton Stuffing, French Canadian stuffing, etc.  The seasonings vary a little by family but it's essentially the same.  I take 5 pounds of ground pork butt (yes, it seems to matter that it's pork butt rather than any old ground pork.)  I usually ask my butcher to grind it for me so I know I'm getting pork butt.  I add my onions, salt, cinnamon and cloves and cook it on low heat for about 3 or 4 hours, until it's almost smooth.  You want it to really break down into fine granules of meat.  If I am making a tortiere (meat pie) I take out about a quart, then mix it with 3 or 4 potatoes mashed up, pour it in a pie crust and bake it.  The rest of the meat can be cooked a little longer, then beat it a few minutes to make it really smooth, pour into small containers and chill.  It freezes well, so it's nice to have on toast during those chilly winter mornings.  For stuffing, I take the meat that has been cooked for about 3 hours and mix it with potatoes that have been mashed.  Stuff it in the bird - it is already well-cooked and it will smell amazing while the turkey is roasting.

Joyce and Laurie may weigh in on their family's recipe differences.  We eat the tortieres for breakfast on Thanksgiving and Christmas so that allows for other stuffing recipes to take a place on the table without sacrificing room.  It's a pretty "heavy" pie so we find it better to have it separately.   You can buy tortieres around here in the French Canadian markets, especially in Mancester and Nashua..

Another way to eat pork!!! And for breakfast! I put on three pounds just reading about this dish. I suspect that I would love this dish. I seem to love all those calorie dense foods. Even though I lived in Manchester, I was working so many hours a week I don't think I went to a bakery even once. Clearly, an error in judgement.

Thanks Michelle. As always, you are a wealth of information. I thought it was a French Canadian dish.

Mine is very similar to yours Michelle.

I was proud of myself that despite not feeling great I went to the grocery store to do my Thanksgiving shopping.  I say WAS because as I unpacked my food I realized I forgot to buy pork!!!!  Yell

Love my DH :)  I told him I forgot the pork and being the sweetheart he is, he offered to stop on his way home and pick it up for me.

Making spaghetti with meatballs and will be thinking of you Michelle as I make your sauce.

Joyce- I hope you have safe travels home.

Debbie- Stay safe with the bad weather and keep in touch!

Oh my goodness...I laughed so hard reading Susan's post about Gorton the Fisherman.  He is the only one i know too!

Ohio was amazing...so proud of my son, 23 yrs old and built a new home, soo beautiful and now all moved in with a little help from his mom and dad:) He is a design engineer, just graduating from Akron U.  We ate out a lot and he took us to some fun places in Cleveland. One restaurant had the leg lamp from the movie "the Christmas Story"  I guess it was filmed in a suburb of Cleveland. I had a monte cristo sandwich witha a raspberry-cranberry dipping sauce...to die for. My Dh complained at every place we went to about his meal  arrgh...so frustrating. Also got my fix and got to see a soccer game,   So far Akron is #1 in the country!

Tonight is spaghetti for us too, quick and easy, as I have to unpack and get settled in.  Daughter comes home on Wed!

Debbie  Stay safe in the winds and congrats on your movie star status!  When you make the pages of "the people in Wal-Mart"  then you have to worry. LOL

Tonights dinner is western omelettes (with bacon instead of ham), fried potatoes with peppers and onions and sourdough toast. Call it lack of motivation.

Laurie, your DH is a sweetie pie. "It takes a mighty good husband to be better than none."

Michelle- That sounds so amazing I had never heard of this dish before I wont do it this TG but want to try it out some time soon.

Laurie- What a sweet DH for going to get the pork for you hope your feeling better today too. Spaghetti  with Michelles  sauce sounds good right now!

Carrie- Haha oh boy I know what you mean on the wal-mart pictures I hope I never make those ones. And I doubt I would make movie star status after watching us on tv DH said something like, Glad i have my cane so the wind doesn't knock me over and I was trying to say we will be getting lots of water and non perishables but stuttered on the word perishables Chuck and I kidded each other after watching it it was quite funny to us not to mention embarrasing. LOL!  Your trip to Ohio sounds like you had a great time with DS and getting him all settled, what a great mommy you are. Your DH is probably used to your good cooking and no one does it better!! ;-))

We just got our power back on, weather was clocked at 98mph here there is flooding and trees/lines down nothing like what everyone went through with Sandy but still a mess here, quieted down for now suppose to be getting hit again with it.

Not sure whats for dinner the plan was sandwiches since power was out but now i have to think of something.

We had a lovely dinner of butternut squash soup with pepitas, a salad with dijon vinaigrette, and a fabulous quiche with gruyere and smoked ham.  Thanks so much, Susan - it was all just delicious.   My DH ate more than his fair share Wink And I'm thinking tomorrow's breakfast will rock!

Laurie - I bet your DH wanted to make sure you had the pork for the stuffing. He was a good man for picking up the meat.

Michelle, thanks for the explanation of Gorton.  As Susan commented, it does sound calorie dense.  I'm waiting to hear from Joyce on her version.  It seems more like pate than dressing.

Debbie, I hope the winds aren't too fierce.  I love that Oregon coast.  It is magnificent.

Laurie, I hope you are feeling much better by Thanksgiving.

Home-made pizza tonight!  I have the crust mixed and in the refrigerator.  The recipe makes two crusts so I think I'll freeze the extra one.  Toppings will be Italian sausage and sauteed fresh mushrooms, fresh tomatoes, calamata olives and mozzarella cheese.

Cooked all the various greens in the refrigerator today.  Lemon-flavored olive oil, fresh garlic and pepper flakes in a skillet.  Then wilted down the greens and grated some nugmeg, added s & p.  The greens tasted bitter so I added some red pepper jelly for sweetness.  It was an improvement.  A side dish for tomorrow night's dinner, whatever that is!

Weighed in at WW meeting today.  Down another 1.8 lbs.  Supposed to be maintaining but I'm still in weight loss mode.  This moment I'm wearing a pair of jeans I couldn't squeeze into 6 weeks ago.  It feels good!  But some more lbs to go.

Michelle, I am glad that you enjoyed the quiche. It sure was rich and fluffy this time! Loved spending some time with you, though I worry that I stayed too long. She wasn't lying.... such a beautiful view from her chair.

Strangely enough, we too had quiche and a salad for dinner. I had made so much soup that I froze 3 quarts to serve as a first course at the Thanksgiving meal. I had to choose between making more soup or enjoying some tonight. I went the lazy person's route. Now I have to figure out what dishes to add to the mix for the soup.

Laurie, you have been sick for an awfully long time. I can't imagine you are ready to feel like yourself again.

Car, what a treat to have meals prepared in so many restaurants. Your pride in your son, and annoyance with Mr. Car is loud and clear!  :-)

Dinner tonight was a Beef Stew MRE. I have to be careful of those things. This one was 2900 calories in one meal.

OK folks - I have been up to D.C. for the last set of vaccine injections and have missed a LOT!!!  I have been reading for pages and pages, so here goes:

deb - sorry to hear about your vertigo - my boss had a fall a few months ago and seems to have some spontaneous episodes of vertigo - I know it can be really scary - and OMG I think you actually are Little Debbie!

michelle - glad to hear you are making popcorn and enjoying delicious food being brought to you by some of the lovelies here!

debbie - hope you are hanging in with all you have going on!  I second the idea of the portable oxygen cannister thing - my mom had one and it was fantastic!

carole - sorry to hear your gadget ended up in the potty - my DH's phone ended up there too, he managed to get it out and tried to dry it under a lamp where it promptly melted!  Not meant to be salvaged I guess!  Yay on the weight loss!

carberry - sorry to hear about your tummy and your DS struggle with rads - yay for retail therapy!

eric - thanks for all you are doing - be careful!  Armed guarded showers, interesting......

neomom - how are you doing? I know the wait is tough.

tazzy - yay on the rads finish!

auntie/susan - my DH can do a perfect imitation of Julia Child - don't ask me why, I have no idea!

gardengumby - have you tried brown rice pasta?  it is actually pretty good.

    bedo - arrggghhh matey!

lacey - how is your finger?  I keep a small pair of pliers in the kitchen as I have lost a lot of hand strength.

laurie - how are you feeling?  It is hard to be mom when you don't feel good because everything still need to get done, right?

inspired - yay for eating all the samples!

kaara - welcome back!  My DD is also one of those dictator of a small country types - she is a piece of work - I bet you had fun!

chabba, moon and anyone else I missed - hi!

turkey day side dish - I make twice baked sweet potatoes every year.  Same process as a regular potato, but I add brown sugar, cinnamon, nutmeg and cloves to the butter and cream and mashed sweet potato, then re-stuff into the jackets and top with pecans and maple syrup, then bake to heat up.

We just got back from the Glenview Pub with Rebekah and Nick, I had a Rueben sandwich with sweet potato fries.  Saved the other half of the sandwich and some fries for lunch tomorrow at work.

Nick leaves in the morning to go back to Bermuda but Bex is staying until the 27th.  Thanksgiving morning she and my niece are going to run in the 5K Turkey Trot in Ayer MA.  The proceeds go to cancer research.

Special K - Wow!!  Amazing post!  Hope you are well!

Susan O agree- I always seem to be sick.  The kids get colds and then I get a sinus infection that takes weeks to get rid of.  I get a week of feeling better and I get it again. grrrr.

Carol- Congrats on your continued weight loss!  I have to admit I smiled about you fluching your WW thingy.  I always take my phone out of my pocket when I go to the bathroom.  But, last winter as I was cleaning the bathroom I did answer the phone and dropped it in the toilet :(  Dumb. But I was able to dry it out.  Did you actually flush yours?

carole - Ha ha!  No, my memory is not that good! I made some notes as I was reading, then was confused by my own notes, lol!  I always miss you all and this thread when I go out of town, everyone is so encouraging and supportive of each other and has such great pictures and recipes and stories!  The twice baked sweet potatoes are my DH's fave T-day thing, although he insists on having at least one turkey sandwich before midnight.

laurie - I am doing fine - always feel a bit meh right after the injections, but I bounce back within 48 hours.  The good news is I am done - I am getting a little tired of the airport, have the skin tests first week of Dec., then I don't go back for 6 months.

Special K, you have totally WOWed (!!!!) all of us with your thorough responses....notes or not! I'm totally impressed. :) Glad to learn that you will soon have a six month treatment reprieve.

I love your idea of keeping a pliers in the kitchen....definitely on my to do list now! What has been really eye opening for me is how much I miss using that left hand....and now realize that I have relied on it much more due to the painful arthritis and weakness in my right, preferred hand.

Dinner tonight (leftover roasted pork sandwich) was not until 9:30 when I returned from the grocery stores. I went late after resisting the chore all day. So, all the food is here...just need to start cooking it!

Did I mention that yesterday I baked a sugar pumpkin to use for a pumpkin pie, and then went wild, defying all sensible internet cooking advice, and baked big portions of a large pumpkin I had on the front porch. I have it draining in the refridge before pureeing it....maybe will go into pumpkin bars rather than pie....or maybe soup. I just could not throw that whole puppy out while in my roasting frenzy! An experiment!

Susan your dinner sounded fabulous! And second day quiche, Michelle,....wonderful!!

Carrie, so happy that you had such a great visit with DS. He sounds like one talented guy!

Carole, congrats on your continued weight loss!

lacey - the pliers I use for the kitchen are not needle nose but just slightly larger - they are pretty handy.  I find I sometimes have trouble with things that have a pop-top type opening.  I finally had to have the pharmacy make a permanent note on my file not to use adult-proof tops on the bottles - right after a surgery I needed to open a medication and was home alone.  I tried saying bad words at it - didn't work!  Finally used the pliers!

SpecialK- Whew how in the heck did you do that? I can't remember from the previous page let alone all the others posts! Good job is all I can say! Do you mind me asking what the vaccinines were for you might of mentioned it but can't recall. Im thinking for your skin cancer? Hope everything is fine and that you are ok!

Deb- Sorry your DSL won't be able to join you on TG but glad you have your DD until after.

Carole- Woo-Hoo on more weight loss you will probably be glad you stuck with it since turkey day is coming up.

Laurie- Not only do I wish I lived closer so I could bring Michelle some food but wish I could come there and make you all better too! Hope you get through the holidays feeling better. Did I tell you about the stuff my DR. Recommends? He has been trying to get me to take this over the counter medicine for the last year and everytime I saw him I fibbed and said I had been taking it, but the last time me and DH was sick he gave me  antibiotics but not DH I asked why he was getting antibiotics but not DH he said because I was different and with all I have been through my immune system is so bad, probably the same with you too. Anyways, when we left his office we went straight to the Health food store and bout this stuff and DH started feeling better within 2 days and I have been feeling better that I had so maybe this really does work. He is a reg Dr not a natural path but really pushes this, Its called ACETYLCYSTEINE. It cost 10.00 for 120 tablets and 600mg. Might be worth a shot. Sorry for the long post!!

SpecialK- By the time I came back and finished this post you posted again, Great Idea on making notes! what I have been doing lately is when i come here and there are about 2 or more pages I haven't read yet, I post and then copy/paste what I wrote until I get to the last page. My long term memory is fine it's the short term i have problems with.

I made grilled chx and bacon/tomato sandwichs w/jack cheese on sourdough bread, green salad with a pear vineagrette dressing so good.

debbie - your sandwich/salad sounds yummy!  The vaccine thing is a clinical trial for Her2+ BC.  It is in phase II and based on the first phase results it is cutting the recurrance rate in half, so I just barely made the enrollment cutoff - had to be within 6 months of last Herceptin infusion.  I started in mid-summer and have been flying up to Washington, D.C. every 3 weeks - I chose that location because we lived there for 10 years so I am visiting lots of friends/neighbors and have been able to see my son as well.

  • debbie6122
    debbie6122 Member Posts: 2,935

SpecialK-Thats awesome that you qualified for the trial in time! Having friends there makes it easier to make the trip there when DS and friends live there. Hope you get good results on the trial. Quite a change from Washington DC to Florida! ;-))

  • specialk
    specialk Member Posts: 9,261

debbie - I was very happy to meet the study criteria so I could possibly benefit and also advance the science for those dx'ed with BC after me.  I was fortunate to benefit from the ladies who volunteered and helped Herceptin become a drug that was available to me, so I am trying to pay it forward.  It was cold this last trip, but it felt god since I am always HOT!  I have also noticed that the food seems more adventurous there - Tampa needs to bust a move on the food front!

    Morning everyone!

SpecialK:  Glad you were able to get into the trial.  I have a friend that is doing a trial through the NIH in Maryland...she also travels every other week.  Hers is for a form of lukemia CLL.

Laurie:  Sorry you are ill again.  Do you take vitamin D and C?  If not, I would buy some and double up on taking them...they build up your immune system.  Last year after my surgery I had Vit C infusions with other things to do just that.  My test came this year when I was exposed to a friend who had a major case of flu and I never got the first sniffle!  Hope you feel better before the big day!

I never heard of Gorton stuffing either...it sounds good!  We do cornbread stuffing here in the south.  Lately I've dressed it up with dried cranberries and walnuts and it's delicious.  My DD is doing the entire Thanksgiving dinner this year...she insisted...I didn't fight her.  I'm allowed to bring my corn putting and some pies...nothing else.  If anyone remembers, last year I had a major disaster on the big day when my DGD got appendicitis and my DIL's mother got stung by bees and had an allergic reaction.  Our dinner was seriously delayed, but came off ok in the end.  Hoping this year will be less hectic.

Eric:  It's good to hear that your employer supports you in your endeavor...I'm a verizon customer, and I like to hear things like that.

Our TV and surround sound installation was a major disaster...the store couldn't find the sub woofer that had supposedly been ordered ten days ago and was trying to reschedule the installation.  I got so angry that I just cancelled the SS installation and took only the TV and DVD player.  It's just fine and I saved myself over $1,000!  So much for customer service with hhGregg!  Now we're having a huge learning curve with the logtec remote that is supposed to work everything...eeeeek!  Nothing is easy these days.

Specialk  that is a good thing that you are doing the trial, do you know what target they are aiming for, and will they let you in on the progress of the trial once you are done?

I will make a traditional savory stuffing, but with some cranberries for a little sweetness to go with the savory.  I am anxiously awaiting the vege dishes, scalloped corn, green bean casserole and winter squash....and of course the gravy.  My mom used to ask me if I wanted some potato or just a bowl of gravy?

Eric  So cool on your mom being a Zip...I am so impressed with the school.

Forgot to add...that while in Ohio I had one of their great lakes beer, called Christmas ale, and they put sugar and cinnamon around the rim of the glass..why didnt I think of that?  Soo good

Kaara- Sometimes technology is not all its cracked up to be!  I hope you enjoy someone else cooking for you and you can relax and play with your grandkids!  (with no excitement!)

Debbie and Kaara- Thanks for the tips- Debbie I am going to check out the health food store tomorrow if I can and see if I can find it.  I have been doubling my vitamin C and D and I have been taking airborn which is basically just massive doses of vitamins.  I am feeling like I am pulling out of it today, yay!  At least I feel like I don't need to head back to bed :)

Carrie- Love the story about your son and his home, you must be so proud.

Carrie, too funny about the gravy. My DH is a gravy lover but he is forever mystified about how it's made and can come in so many flavors. As long as I can make gravy, I'll be an awesome cook in his eyes.

Debbie, what is the ACETYLCYSTEINE for?

Carole, big congratulations on the continued weight loss!

Laurie, I really hope you feel better soon. Seems like this stuff always happens around the holidays. Too much hugging and kissing I guess!

Eric, please tell us you're going to get something besides an mre for Thanksgiving.

Having a sleep study done tonight. So not looking forward to it. I can't sleep in my own bed under optimal conditions, can't think how I'll be able to wired for sound with strangers peering in at me all night long. Ugh!

The amount of ingredients is a bit hit or miss. I tend to make too much of the white sauce because making more at the last minute is impossible. If there is some left over, I add some cheese and make Macaroni and Cheese. I make the two components ahead of time, and store them separately. To heat on T-Day, warm in a double boiler.

    Creamed Onions

2 cups sauce to 1 bag pearl onions [give or take].

    Bechamel Sauce

    3 tablespoons butter

    3 tablespoons flour

    pinch of dry mustard

    2 cups scalded milk

    salt, white pepper

    bay leaf

Melt the butter is a heavy bottomed sauce pan. Add flour and stir together with a wooden spoon, stirring until the flour is cooked. About 5 minutes. Stir in the bit of dry mustard [or nutmeg which is more traditional.] Add the cool scalded milk, whisking to prevent lumps and the bay leaf. Stir or whisk until the mixture is thickened. You will know that it is thick enough when a wooden spoon covered in the sauce, when striped with your finger, leaves a line and doesn't run. Salt and pepper to taste.

Steam the onions. When they are cooked and then cool enough, pop each one of these suckers out of their casing. This is tedious work, but the rewards are wonderful!

    Sorry for the delay.
