Today was pretty quiet. DS #1 had school this morning and I took DS #2 to story hour. They are both fighting colds (and winning ) so naps were mandatory today. We have started working on Christmas ornaments for the boys to give as presents. We are mixing it up this year in all different ways, feathers, shredded paper, paint, glitter stickers and glass bulbs. I am trying not to be obsessive with how they turn out and just let them choose what to do. They are very proud to give them as presents and feel that they contribute to Christmas that way.
Dinner last night was homemade chicken tenders and baked potatoes, yum. Tonight is spaghetti pie- DH will not be thrilled when he comes home, it is not his favorite but hey- I need to go grocery shopping and It's hot food ;P Bless him though, I know he won't bitch.

Carole - yes, the best steak ever! TripAdvisor lists 2180 restaurants in Vegas...there are probably more. The top-rated steakhouse, #6 out of the 2180, was Vic & Anthony's in the Golden Nugget downtown on Fremont St. We ate there and it was the best steak either of us have ever had. Then we trield lunch at Todd English's Olives Restaurant. Rick had a burger and it was good. I ordered brick oven-roasted free range chicken and let me tell you, they could take a lesson from Lacey on how to prepare a tasty chicken dish. It was dry and unseasoned, and I told the waiter. At least they comp'd my meal, I didn't eat 1/4 of it. I had high hopes so that meal was seriously disappointing.

tonite, I made feta and spinach casserole, chicken noodle soup, and whipped cream to go on the frozen berry jello salad. i'll just eat whipped cream i think.

Laurie, a little more detail on your spaghetti pie? I think I had that once at a restaurant in Holland, MI, and it was good.
Nice veggies from the CSA farm today. A bag of tatsoi greens that are now cooked along with the turnip greens attached to some lovely little white turnips. A bunch of small carrots. Napa cabbage. Salad greens. Satsuma oranges. Green onions. Fresh oregano. Peppers. The carrot tops were very pretty. Does anybody cook/eat the carrot greens? There seems to be some controversy about eating them.

I did a turkey pot pie filling tonight which I just served in bowls with some buttermilk biscuits. To assemble, I dry sauteed the mushrooms and pearl onions, simmered the carrots and then dry sauteed those. A few celery leaves and frozen peas with a bunch of turkey. The veloute sauce is what makes this special. Sadly, the onions were a bit undercooked, but I will throw the leftovers into the oven and they will finish cooking.
I am delighted to say, that is the end of the turkey.

Hey all! Glad to hear that everyone had a good holiday!
We visited my sister and brother and their families for the holiday and I posted before we left that the downside of being a guest was no leftovers...
Soooooooo, even though I know most people are sick of turkey by the end of the weekend, I actually cooked a small one on Monday!! We enjoyed it as a meal and then I at least got a sandwich out of it before DS and DD polished of the rest of it....
Last night was a really bad wild rice casserole (aka hot dish) that sounded way better than it tasted. On the upside, the wild rice was still somewhat crunchy so I may not need to have my teeth cleaned for awhile...lol!
Tonight was a twist on a Cuban dish called Ropa Vieja (using a pork shoulder that I got buy one/get one rather than the more traditional flank steak at $7.99/lb) and black beans and rice. I thought it tasted really good but my Mom, no doubt, would frown on the meat substitution!! Better yet... I did it in the crockpot. Something I always thought about doing but due to the expense of the meat I was scared to try...

Today is our 42nd Anniversary so on the way home from the eye doctor's I stopped at our favorite take out place in Billerica and I had a scallop basket and DH had a shrimp basket.
Boy was it a challenge driving home with eyes dilated and cataracts, the cars headlights and traffic lights were painful, not fun.

Happy Anniversary Deb! That drive home sounded scary tho.....
My neighbors "tea" was a very full gathering and lots of food was collected. I went back tonight and helped sort and distribute all the items. We have 70 bags to bring to the church center in Boston tomorrow morning for the seniors to pick up. I enjoyed a few appetizers at the tea and DH, home alone, made (aka warmed it up!)himself a full turkey leftover dinner....glad to see all that leave the refridge. I was very happy that the roasted tomato and basil mini-quiches I made last night for the tea were really tasty! I would be tempted to make them crustless next time to reduce the work, (and the calories) but the crust was so delicious.

Michelle- Glad you had a good time in Vegas DH and I wanted to try that restaurant last time we were in Vegas but somehow didn't make it. Next trip I will make sure we do since you said it was good. Did you win any money? How was the balloon ride?

Seaside- Happy your got your turkey sandwich! lol! And thanks, we went to Portland for my dads and DH app. We scheduled DH app the same time as my dads so we could show him where the hospital was, Portlamd is a big city and lots of traffic I knew he wouldn't be able to find it because there is so much construction going on, and didn't want him stressed so we got his and our motel room at the same place, stayed for a couple of nights just got back a couple hours ago. My dads surgeon told him he didn't think he was a candidate for surgery so he and all of us are pretty bummed and upset. My dad said he is ok with this decision but won't give up.
Last night we went to dinner at a place called shari's we ordered pie to take back to our room to eat, I had put it in the back seat and forgot to take it in to the motel room, this morning DH had an app at the hospital, we did valet service when we got back to our car our pies were gone! I can not believe someone stole our pies!! Nothing else was missing just our chocolate pies LOL! What a bunch of turds. I should of reported it but DH didn't want to complain our pies were missing. Haha! I was not leaving until I got my choc pie so we went back to sharis to get some to go to eat when we got back home tonight and told the lady in there the story and she gave me a whole pie for free thought that was so sweet.

I'm home....last night around 6:30pm and I've already used the dutch oven...eggs and bacon...it feels good to be back with my family, sleep in a bed instead of a cot and to actually cook..
Everything, and I mean everything that can be fit into the washing machine is being washed in hot water, and where I'm handling the dirty clothes, I'm washing the floors with Clorox/water solution....Norovirus was going crazy where we were working. It's not fatal to healthy folks, but certainly uncomfortable and I don't want to pass it around.....

Last night's dinner was mahi mahi grilled blackened with butter and lemon, brown rice, and a raw broccoli slaw. The fish was done just right. We put it on foil with a layer of garlic under it, and grill for about 15 minutes. Delicious! Trying to stay healthy during the holidays...it won't be easy I know.

Happy anniversary, Deb! Glad you got a celebratory dinner although driving with dilated pupils is no fun at all.
Debbie - we had a great time but didn't win any money. I hit for a few bucks on Saturday night but then we had no luck at all for the rest of the time. The casinos were not very busy for a weekend - I think Vegas is feeling the brunt of the economic woes in every way. And oh, not nice that the valets took your pie!
Eric - welcome home! I'm sure your girls were happy to have you home, safe and sound. And cooking for them
My cold has turned into a nasty sinus infection and I'm getting really tired of it. I have a full course of keflex on hand, so I started it this morning and hopefully I'll feel better tomorrow. And while I was in Vegas, I used a Clarins face cream that I must be allergic to. I don't usually stray from Moisturel because I have sensitive skin and I've used the stuff for 20 years without incident. But I couldn't find my little jar that I use for traveling so I found this little bottle of Clarins day cream. Big mistake - my face has an itchy red rash, not nice. So, I'm bald, my face looks like hell and I feel and look rather pathetic today. LOL!

Last nights dinner was orange chicken with brown rice and spring rolls. It was pretty good but next time I'll give it a shot of siracha for a little more heat. I think tonights dinner will be penne pasta with vodka sauce and asparagus. Maybe I'll make some garlic bread sticks to go with it.0 -

Debbie, I can't believe somebody would steal your pies! Your dad has such a fighting spirit. That had to be a blow for him that he isn't a candidate for surgery. What a heartbreak for you, too. My thoughts are with you.
Michelle, there's no fairness in this world! You have enough to cope with without sinusitus and rash. Hope both of those go away quickly and that you feel better soon.
It's a sunny day here with a forecast for highs in the 60's. I have plans for spending most of the day with my mother. She has a hair apptment and a dr. apptment after that, and I'm her chauffeur. I get a mini workout handling her wheelchair, getting it into and out of the trunk of my car, pushing her, etc. She'll have her 90th birthday in Dec.
Could I have a refresher on making lamb patties? Laurie, I remember that you make lamb burgers. And anyone else?

Carole, the lamb burgers we make are just ground lamb mixed with minced garlic and rosemary (I use rosemary powder to avoid anyone getting pierced with a rosemary leave;), salt and pepper. We grill them and they are delish on a roll with lettuce, tomato, red onion, and feta cheese.
I just returned from distributing our food bags to the Haitian seniors in Mattapan (Boston). We decided to have lunch in the neighborhood and I was horrified to see how few eating establishments exist forthe folks in that section of the inner city. We finally found a cafeteria style place that had southern type food (my description) and the amount of collard greens the guy put on my plate could have fed all the seniors we'd just left! That was a side with my really good barbecued chicken, black eyed peas, mac and cheese (an indulgence I rarely allow myself) and corn bread. I made a small dent in the meal and will have some more of it for dinner tonight. That makes life easy! And the bonus is that DH looks forward to polishing off the turkey (yes there is still some meat left....I have ignored it for several days while DH chipped away at it) tonight. Yay, I think we can say good-bye turkey lurkey tonight!

Debbie- I am so sorry about the news on your dad. He does seem to have the right kind of fighting spirit though. I'm glad he is determined to get better, I think it makes a huge difference. How was Chucks appt? I can't believe the valets stole your pies!! I don't think I could have not complained....
Michelle- I hope you wake up tomorrow feeling rested, with out the red itchy face and find the sinus infection clearing up. This was the first time I beat a sinus infection with just one round of antibiotics. I took airborn which is just loads of vitamins and I took LOTS of D and C (like Kaara told me I am still taking 1000 C and 2000 D twice a day along with my multi and I get a little better everyday.
Carol- For my lamb patties I use ground lamb and sprinkle both sides with oregano and cook in a pan on the stove or on the grill. When they are pretty much done I top with a slice of tomato and a slice of fresh mozzarella cheese and let the cheese melt- I love them. The spaghetti pie is a pound of ground beef with green peppers and onion to taste salt and pepper. Cook it in a pan until beef is browned and drain fat, add enough spaghetti sauce to make it look like a thick meat sauce. Add a pinch of sugar and simmer to bubbling. Cook 1/2 box of spaghetti- drain and pour into a pyrex dish top with a container of cottage cheese, top that with your meat mixture. Cover and bake about 20 minutes, top with shredded mozzarella cheese and put back in oven until melted. Ours last night was good, even DH had seconds and that is not his favorite.
We went grocery shopping today so I have lots to choose from for dinner. I am thinking I am going to make a ham steak with cheese and rice. We had cheese and rice for Thanksgiving but no left over as as it was all eaten.
Next Friday my youngest son is turning 3 and we are planning a whole weekend for him and I am so excited about it! We asked him what he wanted for his birthday, unlike most kids he doesn't care too much about presents. He asked if he could have Christmas for his birthday. When we asked him what he meant he said " I want Santa and reindeer and Christmas music and Christmas trees and pretty lights" So....we are taking the boys to a place called Santa's village that has all of those things plus rides for the kids etc. We found an inexpensive hotel room that has an indoor pool for them to take a swim at night. This will be their first time in a hotel or doing anything like this, we always camp. Friends of ours that we always camp with are going with their kids as well. He should be over the moon with the whole thing. It should be lots of fun! I booked the hotel today.

What a cool weekend for DS2, Laurie! Hope it is as special as it sounds!! He should love it and so will you with the help of all those vitamins keeping the infections at bay.

Michelle- Oh man, last thing you need is a stupid rash! Must be somthing different in that lotion that your skin is sensitive too. And on top of that a stupid cold too! ((hugs)) My sister and her DH just got back from Vegas and they didn't do well either she said the same thing as you. The machines are tightning up.
Eric-Good to see you home again and with your family. Sweet story about you waking up the exact same time as your dear first wife. She was probably letting you know she was around and proud of you!

Laurie-What a great BD surprise for you DS. And he gets his BD wish all rolled in one like he wanted. ;-)) Your spegghiti pie sounds yummy I will try that next time I do spegg. Chuck is not getting any better, his balance is worse, but the therapist gave him new exercises to do and told him his cane was too short so he will get have to get a new cane. He was walking kind of scruntched over he said because he had to watch his feet because he didn't know where they were going to end up. Poor guy! But I think the PT will help him. I told DH next time we go to the hospital we are NOT using the Valet, we have a problem every time we use them. ha! They also have a sign that says they are not allowed to take tips but when DH gives them some money they take it and walk away quickly, so thats gotta tell you somthing about there character.
Tonights dinner is pork and cabbage casserole that is baked in the oven been awhile since I made it but it was pretty good.

Laurie, My parents live very close to Santa's Village and as the local reporter, my mother is often there taking pictures. The owners are the nicest family and all of their employees are local. Your boys will LOVE their day there very very much. Oh, and their Santa is a really nice man in real life too!
Michelle, well I think that is enough already! No more mets, no more rashes, no more infections. You have now done "three" so deserve a break from here on out.
Love lamb burgers! I crush some Turkish oregano and fresh rosemary in a mortar pestle with some salt to make the patties. Then I put the feta cheese in the center of the burger so that is oozes from the inside. My husband prefers when I make lamb samosas so we have a small disagreement about ground lamb.
Tonight is more turkey pot pie filling. Thank goodness. Horrid and long day at the hospital and a client's office. I am totally exhausted and still have about three more hours of work to do tonight. I might pout when it is all done.

Tonight's dinner is warmed up chili, which was delicious last night, and a slaw made with napa cabbage and yellow bell pepper. I didn't get home until 5 pm and we're watching news and sipping bourbon old-fashioneds.
Michelle, I hope you're feeling better. Eric, what are you cooking tonight? Lacie, sounds like you had a big plate of soul food! Truthfully, it sounded pretty good to me. Cornbread is always a treat, as is mac and cheese. Wish I could eat fattening foods without getting fat, but it doesn't work that way.

Lacey- Thats good you have no knowlege on the casino thing, you are better off! LOL! Well, I think they have these technical slot guys that change the machines. I saw that once on tv but DH disagrees with me, but they can change it to go off at a certain time so if its slow and does not get a lot of play it may be "cold" But here is a Kind of funny story- When we lived in Hawaii we used to take a plane called jackies travel you payed $199 per person which was air fare, 3 meals a day w/ 3 nights and 4 days hotel. You couldn't beat that any where. We used to take it quite a bit. Once we were there DH played a machine for hours on end it kept hitting but just enough to keep playing he didn't want to go eat or anything just knew it was going to go off. I finally came over and made him go get something to eat as soon as he walked away a little old chinese womem came over and put a quarter in and it hit $125,000. Oh boy was I ever in trouble he was upset the whole week we were there and kept saying, one hundred and twenty five thousand dollars. Nothing like having your fun ruined. I told him it was just not meant to be. LOL!
