    Store bought tomato basil soup, home made buttermilk cornbread and home made cheesecake.



    The cornbread is the real stuff. There is no sugar in it. It's not the overly sweet corn flavored cake that seems to be the norm in the restaurants here.

    Lacey, your ricotta pancakes sound really good. I'm going to remember that when I get around to making ricotta. Carole, your dinner sounds great. Eric, I prefer the unsweet cornbread too with whole grain cornmeal, when I can find it. It's what cast iron skillets were made for!

    Oh geez SpecialK, that would have been the plane ride from hell...



    Had a somewhat similar experience on, of all times, our honeymoon! We went to Aruba and all was well until we decided to 'get off the beaten path' and eat at a local place in town... Wellllllll... thank goodness it was toward the end of the week because Montezuma definitely got his revenge and he was reeeeeallly ticked off! I couldn't get more than 5 feet from the bathroom for 2 solid days... I was in a bit better shape on the flight home but, it was still touch and go.... Wouldn't wish that on anyone.....

    Eric - so far I've made 3 calls and worked on setting up the v-mail and a few apps.  I'm going to like it, I'm sure, especially the Face Time app.  Learning which button to push to do things - I know the function is there from having the Android, just figuring out how to get at it on the iPhone.

    It's really hard when people stop posting and no one knows what's really happening.  It's not that we're nosey, I know we are all just concerned.  There is a gal on the TN thread who was having a rough go, and she has just disappeared for about 3 months.  At this point, I can only assume the worst.  My daughter will post for me if ever I can't.  I should probably give her a list of all my blogging IDs and passwords.

    Oh.... One more thing!!! Happy 50th Birthday, Kay!!! I celebrated my 50th in June!



    Funny thing but I used to dread the big 'milestone' birthdays because I thought I was just getting older and older... One thing that this whole crazy breast cancer experience has given me is a total and absolute appreciation that growing old is a privilege and not a given... Something to be embraced and not dreaded or feared... Just wish that message could have been delivered in a more attractive package!

    This makes an enormous amount and I halved the recipe, as there was only the two of us. I believe there are several other recipes out there, I know epicurious had one.

    So, Nance and others who will make your own ricotta....you end up with yummy cheese and a lot of whey, so unless Miss Muffett lives at your house, you should decide how you want to use that....and some sites say that pouring it down the drain is not so safe for septic systems or pipes. Oy! Anyone know anything about that?



    I might use it to bake some bread tomorrow....and make Lydia's version of Italian lemon ricotta cookies with that last cup of cheese.



    Michelle, that is a very important and thoughtful point about all of us asking/designating someone to communicate with everyone who is mutually concerned. It was extremely helpful to hear from your daughter when she communicated for you. Thanks!

    Debbie  Now that I know what you actually packed in that suitcase, I know yo will have a good time!!  Have one for me please.

    I feel a Dr. appt coming on tomorrow,  dont like it when it settles in my lungs and I have so much fluid in my ears I cant hear a thing (ha ha not even my DH) Decongestent not working...I swear I have taken everything I can find in the medication cabinet..not all together though.

    My girlfriend who lost her husband to cancer this past year is having such a difficult time because apparently he had several computer accounts and such with passwords that he never shared with her and she cant figure anything out. She keeps getting mail notifications and things showing up that she cant do anything about...it makes her so angry that he didnt share these things, she calls me crying out of frustration.

    So lessen learned...share those passwords and account infor.

    I think those ricotta lemon cookies would be devine.

    Sharon learned the art of light packing in the Navy and from backpacking.... For me, backpacking and then Dept of Health & Human Services.  I'm limited to 70 pounds for *ALL* of my stuff for a 2-3 week deployment.  It's a challenge sometimes and most everything except the uniforms have multiple uses.

    Like Tazzy, I do read all the posts and they mostly (the worry about Apple is one exception) make me smile...  But I don't always have time to respond....

    Have fun on your trip Debbie.  Hopefully some dishonest TSA luggage person doesn't decide you can't have the flammable liquid in your checked bags. :-)

    Carole, hope they get the crowns worked out.  When I had one, I cheated sometimes, but was very careful and I got away with it....no gooey candy (sugar daddies) or gum though... 

    I've never noticed fryers vs hens, and it hasn't bit me (at least that i've noticed)...but I'll remember the difference.  I always just selected things based on amounts.

    Happy  birthday Kay.  Your's is right next to DD's..except she'll be 15.

    The first time I met Mickey, it was at a bike rack outside of the physics building at college.  She accidentally locked up my bike instead of hers in the crowded bike racks.  I was really annoyed because I was starved but couldn't move my bike.  When she came out, I was fuming because I had been waiting forever (probably 5 minutes).  She looked embarrassed when she realized what she had done and then when she saw me, she looked horrified.  She apologized and smiled....and when I saw that smile...my annoyance...just evaporated..........

    I don't know what I'm going to do for dinner tonight....

    I got DH a nifty little password notebook for his stocking and also got one for myself. It's like a little address book but has lines for the URL, username and password, in addition to any other notes you want to make. It's small enough to take with you but I lock mine in the safe when we leave. Very useful.



    We had a late Chinese lunch today (ugh, still full), so I think a chef salad is in order for dinner.

    Funny thing about accounts and passwords...when we moved, I set up every utility because DH was driving from MO.  We get no paper bills, everything is set up in my name with a user id and password that I selected.  This will be a problem for DH sometime in the future (hopefully the very distant future!)  The good news is that I use the same user id and password for almost everything, so it won't be too hard  for him to figure out...lol

    Speaking of packing, DH took out two suitcases for us to pack for ten days.  He has provided my carryon rollerboard.  Has he learned nothing in 32 years...lol?  There is no way that I am packing for ten days in that little thing!  We get one each free checked bag; so even if it were feasible, there's no reason to even try!!!

    Is it only in the south that whole chickens fall into two categories?  Fryers and baking hens.  I've heard of capons, which I think are roosters but have not seen a capon in the poultry case.  Before the popularity of boxed chicken broth, many cooks used baking hens for making chicken gumbo and chicken and dumplings. Word had it that the older bird made a better broth.   I have gone this route in the past.  But the meat isn't as tasty as a fryer.  So now I use a fryer and substitute chicken broth (either home-made or bought) for the water.

    I assume some people bake baking hens!  Just for the heck of it, take a look in the poultry section and let me know whether you discover any baking hens.

    Auntie, I checked out that recipe for the unspellable pasta cabbage potato dish, and it sounds delicious.  Did you come up with buckwheat lasagne noodles?  Yesterday I watched Mary Ann Esposito make traditional pastas by hand and I am "almost" lured into giving it a try.

    I've had my first smart phone, an Android, for a couple of months now and am getting used to it.  I just downloaded a free app that lets me hover the phone above a photo in Cooking Light mag and the recipe appears in full on the phone!  I also have a new Kindle Fire and will download another app that will allow me to receive the entire magazine on the Kindle in addition to receiving the print copy.  Amazing, technology.

    Has anyone made gnocchi?  Lidia made it with her grandchildren on a recent tv show and it looked really easy. 

    My pseudonym is Carole Halston.  My romances were all paperbacks and are out of print, but I think Amazon has some used copies. 

    Even though it's not recommended to use the same usernames and passwords on multiple accounts, dh and I both do it and we know each other's favorites.  However, I just quizzed him on my username for my Vanguard retirement acct. and he flunked the quiz!

    Carole, I did not find buckwheat noodles, I used dried papperdelle and they were delicious. The next time I make the dish, I will use my own fresh noodles because my new pasta maker will be here this week, yay! My sister in law makes gnocchi. In fact I gave her a gnocchi board one Christmas. I'm not wild about potato gnocchi, but she makes a ricotta one that I like very much.



    I used to see frying chickens and stewing hens around here. Now I only see "young chickens" and very large "roasting" or "baking" chickens. There is an Amish farmer here that sells fresh chickens. I may check out that source.

    I have a word document on the computer with the passwords and a printed hardcopy that is in the file drawer behind a non-related file so it is sort of hidden.  In that document are all the passwords to every account for DH and I, and some of the ones for our adult children's accounts.  During chemo I thought I had lost the hand-written hard copy (this was before I created the word document - you will see why I did it) and blamed chemo-brain and felt terrible.  DH was mad thinking all our passwords were now floating around in the world somewhere.  I looked everywhere, in every file in the big 4 drawer cabinet that I could have touched.  I changed the passwords for the user names I could remember and started a new list.  This was winter of 2011.  DH just put his innaugural year (1996) BMW Z3 up for sale - guess where the password list was?  In HIS car file that I have NEVER touched!  He picked it up off the desk (where I had last seen the list) and somehow mixed up the papers with car stuff and put it in the file cabinet.

    Yes, the cross-country flight that I spent in the tiny airplane bathroom was pretty horrendous, but now makes a funny story 6 years later!

    There are services that you can sign up with that will notify a person of your choice, of online friends and groups of anything unexpected that may happen.  Many families and friends may not be aware of your online friends.  I am not the best person to research this. So maybe someone can help?

    I played violin at a church today.  :O and :O  I am not used to playing in public without other violinists.  There was a Nun on organ, one on flute and a singer.  Well, I did it. I am not Catholic so I was kind of nervous.

    Specialk, so does that faux pas by your DH qualify to be termed "chemo brain by proxy"? LOL!

    So glad for you both that the paper finally turned up! What a worry....and too bad for all the extra work in the meantime.



    When food shopping today, I couldn't decide whether to get chicken breasts or thighs since they were both on sale at the local grocery store. So I bought both, and made chicken marsala in the crockpot with some of each and cooked up some more of each to later be added to soup. The Marsala was pretty good, tho I'm never crazy about all of the fat that is in the sauces from a crock pot meal.

    I grew up with a gnocchi making family, and used to love to run those little pieces of dough over the grater to get the right shape and texture. Interestingly, I have never made them myself in my adult life. Have fun making them! I think I like making them better than eating them.

    Here are the terms for poultry that I grew up with (both in ND and WA) and whichare still used in many stores around here

    Capons:  castrated roosters, largest of the chickens, fat, tender, roaster

    Stewing Hens:  an old hen but could be a rooster too, used for stocks and stewing, makes wonderful old fashioned chicken and dumplings

    Roaster:  an older, larger fryer, tenderest when roasted

    Fryer:  slaughtered by age, can be of any size, best for short, quick cooking

    It has gotten hard to find any chickens but the roasters and fryers anymore.   I've only cooked a couple of capons in my life.  Back when you could often find them they were always much more expensive than any other form of chicken.  They were very much a special occasion bird.

    Carole - you are correct, capons are castrated roosters.  Castration supposedly makes the meat more tender.  I remember seeing them on occasion around Thanksgiving, but I've never tried to cook one.

    The chickens in our Shaw's are either piece parts (not even halves) or the whole bird vacuum sealed - about 4 or 5 pounds, and labeled whole young chicken.

    lacey - DH is often doing one thing but thinking about something else, and is completely incapable of retracing his steps.  It is missing from his DNA - you can imagine how this may complicate trying to find a lost item, like keys/wallet/sunglasses!  Once, while he was still active duty military, he misplaced his flightline badge.  You have no idea how we tore apart the house looking for that thing - serious security investigation if it is lost because it gave the holder access to nuclear weapon equipped aircraft!  We finally found it in the pocket of a regular jacket - not in military clothing.  He never even thought to look there because he did not remember putting it there at all!  He was sure that he left his glasses in a restaurant on Dec. 23, 2011.  We spent a whole evening going to the restaurant, and every store we had shopped in that night.  No glasses.  Turns out they were on the windowsill in our own dining room, he put them there on Dec. 24th during dinner, then found them there a week later by accident!  I just laugh at this point!

    there is also the smallest of all, the Cornish hen. These are very young chickens weighing a little over a pound, and serve one (extremely hungry) or two persons per bird.

    I've eaten quite a few of them!  I didn't include them in the list because they are a breed of chicken if my memory serves me right.  The birds I listed can be of almost any breed, the classification depends on factors such as age, size or gender (or former gender).

    On the bird discussion...I need to ask my DH because with us owning a feed store ( make our own feed for different animals) I know there are formulas for feeding different kinds of chickens that helps to make them what they are and how they are used. There are special formulas for laying chickens called laying mash, but thats all I know.  Our neighbor was raising ducks for the high end restaurants in NYC and came to us for special feed that would plump them up and make them more meaty and flavorful.  Every breeder likes to adjust their own formula based on their thoughts on what grows a good chicken.  It truly is a science.

    Had a filet last night with spicey rice and green beans sauteed with garlic, lemon pepper and cherry tomatos.  My grill is snowed in so had to get out the george foreman grill for the filets, good but would be better on the real grill.

    Nancy - I love the idea of a password notebook. Mind sharing where you got it? Behind my monitor is covered with passwords most of which are just stupid things like onto magazines and such. The more sensitive ones are in another place. I have thought of putting them on notecards like we used for research projects. Not like I have a fancy new I-phone like Michelle has, so no need to carry them with me.

    I would love to find fresh chickens at a reasonable price, like from your Amish farmer. I have been too afraid to try poultry, even just for the eggs. Too many great horned owls and red tailed hawks. I am certainly a meat eater but could not eat one of my own. I have had calls when I have advertised my goats for sale wanting to know how much they weighed. My standard answer is "not enough" which is true only the really old ones might be big enough and they are NOT going anywhere.

    Michelle - enjoy your FL trip. We are in for 2-3 days of RAIN, a pour down. Not that with our drought we don't need it but I am craving me some sun which has sadly gone for the duration. Watched some of the bowl games over New Years just to see people in shirt sleeves and then had to check out the temps.

    Debbie - Enjoy your trip. I would love one day to get back to Hawaii but alas I think it will have to be a virtual trip.
