    In between mom's doctor appointments, I worked from home today.  My mom had her new brain stimulator (to stop her hands from shaking) turned on and adjusted. Later, a nurse practitioner checked her INR to see if her Warfarin dose was correct. Right now her INR is low, but it is right where they expected it to be, so all is good there.   I have always been amazed when mom's hands stop their wild gyrations and become almost rock steady. Today was just as amazing.

    Dinner was simple; fish, a 'baked in a microwave oven' potato and a salad.  To put on the fish (and the potato) I mixed up some plain yogurt, dill and lemon juice.  I think it took me about 15 minutes to do the whole thing.... I'm sure it's WW approved and it tasted good.

    Love this thread! Tired of the "what's for dinner tonite?" feeling. Don't mind cooking, it's thinking of new, easy, nutritious things every night. So I decide on fajitas: made a bit of beef, chicken, and shrimp with sauteed red bell peppers and onions. Sounded yummy to me. Figure hubby and I can choose the fillings. He took 2 bites and then said he wasn't hungry (maybe the chips before dinner didn't help?).  As soon as I finished cleaning up, he had a bowl of cereal. So going to keep it easy for a while. (Leftovers to be frozen for easy dinners after surgery in a couple weeks).  I like the baked potato idea..... Thanks for the suggestion!

    Leftover pasta with Italian sausage/tomato sauce and a salad.

    Tomorrow afternoon a cookout/potluck with dh's workworkers' guild club.  He requested that I make mac and cheese for our dish.  I looked up a simple recipe on Cooking Light that calls for making a bechamel sauce and adding shredded cheese, then combine the sauce with the cooked macaroni and bake for about 35 min.  I bought some good cheddar (Tillamook) to shred and have fontina for the 2nd cheese.  The meats will be chicken and sausage cooked on a grill.

    I played a good (for me) round of golf this morning and had lunch with a couple of the women.  A hamburger and sweet potato fries.  Every now and then, I really get hungry for a good hamburger and this one hit the spot.

    Feeling like spring here for a change. To celebrate I'm grilling country style ribs basted with huli huli sauce (pineapple and lime juice based bbq sauce), potato salad and the first corn on the cob of the season. Ahhhh, spring!

    It was spring like here today too. I think it almost got to 70. 2nd time around, I know how you feel. Went over my sister's after work today, my niece was going to the junior prom. Once all the dates left, my DD asked what was for dinner and proceeded to tell my sister that i don't make anything she likes for dinner, all I make is veggie chilli and microwaveable beans. I don't even know what she's talking about with the microwaveable beans. Not sure what would please her, she doesn't eat redmeat (says it gives her a stomach ache), doesn't eat much fish, eats almost no veggies and complains she gets tired of chicken. What else is there?

    Yum on Fajitas but hate it when i cook and either no one is here to eat it (I have a 23 yo and a 20 yo so never sure what their plans are) or no one is liking what I made.... Soooooo frustrating!

    Kay_G: my daughter gave up red meat since Thanksgiving 2008 - and she's stuck to it! She used to complain about the lack of variety and grew tired of chicken until... she moved out on her own! Now almost anything meatless and homemade works for her. My newest thing is soups (more like Rachael Ray stoups).. so many options on Pinterest.  

    Seaside Memories: hear you on that issue. Was single until 37, no one to complain about meals! Same when the kids were little: if their activity wasn't on the calendar, counted on them being home for meals.  When this didn't work - they weren't home for meals - started cooking just for me and the hubby... too bad on them if there wasn't enough for them (there's always food in my house even tho they complained there wasnt'). Worked for a while. 

    Tonight was steak sandwiches (cube steaks, breaded, pan fried) - my red-meat limit for the week has been reached.

    Did something really bad today. Went to Cheesecake factory. Ate. Yes, finished with cheesecake. All because the ultrasound for the lump was "unremarkable" so treated myself to it. Was a very bad day yesterday, onc found lump, DFIL passed. So relieved today.

    Moon, why is cheesecake bad?  Is it possible to get enough cheesecake?

    Welcome 2nd_time... Are you sure you haven't been spying in our house? All you describe is so familiar.... :-)

    It's spring here in Arizona, but probably would seem like summer to anyone else...mid 90F temperatures today.  The evenings are beautiful (mid 80F range), so we grilled hamburgers and ate on the back porch.  Unfortunately the corn isn't ready here yet.  In about 6 more weeks, the local "corn stands" will be brimming with corn that was picked earlier in the day.  I can't wait!

    Hi Eric,

    I think anyone with growing teens goes through these things. Just another stage. My new easy fav dish is chicken tikka masala, rice and Indian-style veggies, thanks to Pinterest. My parents are visiting next week, which is cool, but Dad is diabetic so have to plan meals carefully.



    Your weather sounds wonderful! Who says it doesn't rain in California? Sprinkled this morning in OC (enough to use the wipers for a while). Brightened up by afternoon, and somewhat humid.



    Can hardly wait for the corn stands to open here. Just strawberry stands (and more are disappearing yearly).

    OC and Strawberries...southern Orange County?????

    As a kid, when my parents would go to Camp Pendelton, we'd stop at one (or more) of the strawberry stands so my mom could get fresh strawberries.  I was in that area a couple of years ago and most of the Strawberry "patches" had been replaced by blacktop, cement and houses.

    Yup, that's the popularity of the "OC" (never heard that called that before when I was growing up there). Most strawberry patches are gone now, hard to find them any more. Actually, found a couple in northern OC.  

    We used to camp in the Trabucco Canyon area when I was a teen -- kind of where the news story has been of late.

    Hello everyone and welcome to 2nd time. We were in NC for a short time looking at homes for retirement...busy time to say the least! I seemed to have developed a slight cold while there and have been coughing ever since...really scaring me...I cough up a lung I swear. Well, I went to my mom's to paint her living room and dining room for her and she heard me coughing and said "here, try one of my allegra" so I did and and never coughed the rest of the day!  I have never had allergies...and I know they say its going to be a bad year, but really? we still have snow! Going to buy some Allegra.

    Having a pizza party tonight, to watch the SU game!  Go 'cuse'

    Sounds like everyone is doing well and getting ready for some outdoor time.  Oh What to do with the bunny when I plant my garden?

    Carrie, welcome back. I feel your pain about the cough. I'm allergic to mold, so I have it all year round. In addition to claritin, I also take two different nasal sprays and a decongestant. Sometimes I wonder if I'm not developing asthma.



    2nd, tikka masala is one of my faves too. Last nights corn was not local by any means. Won't get that till summer. It wasn't that great, more like a promise of things to come :-)



    Monica, cheesecake seems like the perfect treat after a week like yours. Glad your lump turned out to be nothing.

    Monica, great news on the "unremarkable" finding!  Every now and then we have to indulge and celebrate.

    Carrie, did you see anything promising in retirement homes? 

    This morning I have time to make some artisan bread.  The biga (starter) is in the refrigerator.

    Lacey, I'm still using my old blender for the healthy smoothies.  I have enough Capital One rewards points to buy a Vitamix but haven't sprung for it yet.  The old blender does pretty well now that I've learned the best procedure.  The chia seeds are supposed to keep me from getting hungry but my digestive system must be super efficient.  The only food that keeps me satisfied a little longer is fat, which is why peanut butter on a slice of toast is one of my breakfast choices. 

    It amuses me that so many Americans in all sections of the country are crazy about corn!  Gift of the native Americans.  I grew corn in my garden some years ago when I had a big garden.  The best time to eat corn is as soon as possible after it's picked off the stalk.  I used to eat it raw.  Shuck an ear and take a big bite!  DH likes his corn best cut off the cob. 

    Sunny today with high temp. in the 70's.  Good day for the cookout/potluck picnic.  All the trees except the pecan trees are in full leaf, that pretty spring shade of green.  The pecan trees are the last to leaf out.

    White corn raw. Yum!  Dinner has been food from India Restaurant delivered from Foodler 3 times this week.  I can't help it. I'm addicted.

    Bobo, I think you had your surgery yesterday.  Now, sit!  Lie down!  Stay!  Good Bobo.  Gooooood Giiiirrrlll!  That's a Good Bobo.  SO please take good care of her, I know you will.  My thoughts are with you and I am praying for healing for you.

    Tonight is enchiladas verdes with Spanish rice and refried black beans. I also have a ripe avocado that I'll dress with some lime juice and salt just for me. DH doesn't do avocados (lucky me!)

    Moon, I am very sorry about your FIL. Sorry you had the scare too, but so happy for you that all is well.



    Bought some ahi tuna steaks at Costco today, will be grilling them for dinner. Hope they come out.

    Kay, sounds like you are in the suffering stages of adolescent daughterdom. Do stick it out (like you have much of a choice...LOL;) as all of my friends who went through that rough stage have wonderful adult relationships with their grown daughters....just takes time for the daughters to realize they don't have to "annihilate" mom to establish their own secure identity. At that later point they can acknowledge how wonderful you are, and how much they want/need you in their lives. (((((HUGS))))) to help you navigate through it! Boys can be much easier during that phase, but we mothers of only boys don't get that "pot of daughter gold" later. You can! Something to look forward to....:)



    Attended a baby shower of a friend's daughter today...totally delicious vegetarian sandwiches and spanikopita, (her wedding had also been totally vegetarian much to her carnivore mom's distress)... and wonderful desserts, of which I totally partook ( a wonderul lemon mousse, rughala cookies, iced rolled cookies, and to top it off a red velvet cupcake with cream cheese icing. Needless to say I took a long walk after the shower luncheon. But enjoy the desserts, I did! :) And if there had been cheesecake, I bet I would have tried a small piece of that too! Hope you totally enjoyed yours Monica.



    I could have skipped dinner easily, but DH was hoping for fish so I picked up some salmon and we had that, baked, along with steamed broccoli, a shared microwaved sweet potato and cuke salad.



    Carrie, we're perched in front of the TV watching your team. Good luck to 'cuse'! Enjoy the party and the game!! Glad your allergy is better with the Allegra.



    Big conflict tomorrow evening.....as far as we can tell, the ND women are playing UCONN at the same time Mad Men is starting their new season. Hmmm, which one gets taped....probably Mad Men. Go Irish! :)

    Am back on Tamoxifen and having some very strange debilitating hand symptoms. Trying hard to suck it up along with crappy sleep and the renewed fatigue. Oy! I think I can...I think I can...I think I can....:)

    Bedo, it's good to hear from you.  I've missed you. 

    Lacey, I indulged in dessert yesterday, too, at the barbecue cookout.  A couple of women had made brownies and they were moist and delicious.  Plus there was a frozen pie with whipped cream and chocolate that tasted good.

    I cooked a Boston butt roast in the slow cooker overnight and have sweet potatoes in the oven for a noon meal at my mother's house today.  She and I are looking after my niece's two older children (7 and 9) today.  Their mom was in a psychiatric hospital for two weeks.  Out a week.  And is back in another psychiatric hospital now.  This one is near my home.  I'm so hoping somebody will come up with a medley of drugs that will allow her to function on a near-normal level.  She also has a darling 3-yr-old daughter with a different father.  I believe he is taking care of her.

    The 9 yr. old boy has a project to turn in tomorrow and I'm supposed to help him with that.  I, who chose not to have kids!  I wish all the women who aren't suited to be mothers would make my same decision.  OK.  I vented.

    Kay, I have two words for you.  Exchange Student.  I sent mine to Belgium.

    She acted like it was a miracle I found my way to work each day, because I was so dumb.

    but, it's amazing how much smarter you will become as she grows up! We're hanging out today

    For Breakfast cold India Restaurant left overs. I wish I had a recipe for vegetable paneer  with chick peas or channa curry with indian farmer cheese and veggie samosas.  This is becoming expensive.

    Carole, I feel for your family as you all cope with your niece's struggle. I also hope she can get her meds regulated (and parenting support) for a favorable outcome to be able to care for herself and her children. They are fortunate to have a devoted family "net" in you. As a social worker who worked with children and families in schools for many years, I always appreciated the extended family "angels" who supported these kids, who through no fault of their own lived with parental mental illness that left them frightened and uncertain. Helping that 9 year old get his report done is huge(!), so he can at least feel successful at school during this latest crisis. Then you can go home and enjoy that such tasks are not frequent! ;) You are a wise woman who obviously made thoughtful life decisions. I hope today goes well and feels satisfying for you.



    Carrie, sorry about Syracuse's loss. That must have been hard to watch at the end.

    Will JB stay in that coach job forever?



    My basketball interest has shifted to the women's final four.



    Tomorrow I go for a Strength and Movement eval at the Cancer Center. I feel fine about my walking regimen for exercise, and am hoping that I can get some help with these wretched hands, and whatever else they discover is not strong or moving well!



    Having shrimp for dinner tonight.

    Feeling spring-y this morning so made a Maine pancake with macerated strawberries and blueberries.  Boy, that was good.  

    Thinking today is potato planting day. I think the beds are dry enough. My beloved Cardinals are playing this afternoon so I have to get it done before then.

    Tonight's dinner will be tenderloin tips in a mushroom cream sauce with papperdelle and roasted snap peas.

    I hope the day is as beautiful where you are as it is here (finally!)

    Nancy... Reading your post, tummy is growling. Just finished breakfast, dd's choice of orange creamsicle smoothie & (premaid) blueberry muffins, easy Sunday. What are Maine pancakes? Your dinner sounds yummy! How do roast snap peas? Am hooked on roasted beets (they're in the oven now).

    2nd, it's kind of a cross between a Popover and a pancake. I think it's also called a Dutch baby. Anyway, it's a thin batter cooked in a cast iron skillet in a hot oven. It puffs up and gets brown and is very light and tender. Really pretty sprinkled with powdered sugar and fresh fruit.



    I've never roasted snap peas before. I've just read about it. It calls for tossing then in olive oil then broiling them just until they get brown spots. I'll let you know how it turns out.

Please let me know about roasted snap peas. Just got into roasting veggies. Have always hated Brussel sprouts but love them roasted!

    Maine pancake



    2 large eggs, slightly beaten

    1/2 cup milk (I use skim)

    1/2 cup flour

    Pinch of salt

    Freshly grated nutmeg

    1 tablespoon butter



    Use a skillet that can go in the oven, preferably cast iron. I use a 10 inch.



    Preheat oven to 425 degrees.



    Whisk eggs and milk together. Sift, flour, salt, and nutmeg into the liquids. Whisk just until mixed. Batter may be slightly lumpy. (You can mix this the night before and refrigerate. Let come to room temp and whisk before using) Set mixture aside.



    Melt butter in skillet in oven. When butter is melted pour egg mixture into skillet. Place skillet into oven and bake for 12-14 minutes until puffy and golden.



    Serve immediately. Pancake will deflate shortly after baking.



    Optional toppings: fresh cut up fruit, maple syrup,

    2nd, another great way to fix Brussels sprouts that I like as well as roasted, is to shred them then saute them with bacon. Since you are on pinterest, I have a recipe on one of my boards (Nancy Yonker) if you're interested.
