Out of wine- augh! this sounds like an emergency situation. My condolences.

Oh jenjenl - Out of wine is the pits. I'm never out of wine. I have a giant jug of somebody's sangria under the cabinet. Sangria and sprite yum. Sorry you're in a funk. I remember you said (I think it was you) you'd printed off recipes and then couldn't find them. That is me TO a T!!! I buy stuff for something then can't find the recipe. I've spent the last couple of hours surfing around Taste of Home looking for a BBQ ribs recipe. I bought baby back ribs and thought we could put them on the Weber. I think they need indirect heat and the Weber is too small so into the oven they're about to go. Found several recipes for Root Beer sauced ribs that we will have to try but no root beer. Real beer and cream soda but no root beer. T of Home and Relish are 2 of my favorite places. I'm inspired by pictures. Also like Pioneer Woman - Ree Drummond.
Hope the motivation improves. I like to cook but absolutely hate to clean up.
It poured last night and again early afternoon. We desperately need the rain. The lake that supplies most of our water is 17 feet down.

Adding my hugs and caring thoughts to the others' Deb.
My DH's cousin's wife finally joined Apple yesterday after a many year fight with her Stage IV BC. We are heading to NJ for the services which are happening over three days. She was an active educator and administrator in inner city schools in northern NJ, so I suspect they anticipate a crowd. I feel for her DH who is totally depleted after keeping his promise to never leave her alone in the hospital or the hospice. Commuted hours thru city traffic daily to honor this. I worry for him now......he's exhausted and so grief stricken.
Will finally stop in CT to see my stepmother with the frozen food I've been stockpiling for her. She, fortunately, has recovered from her kidney cancer surgery amazingly for an 86 year old.
Eager to see and stay in NJ with DS1, DDIL, and grand babies! It's been too long!
We race back home Wed night in time for me to attend my "retirement" dinner on Thursday. Still thinking what thoughtful but authentic words to choose for my goodbye after the system just pulled a fast one on the person who did such a great job subbing for me this year. Changed the job description to put a local favorite in. So my sub, who was superlative in everyway but self- promotion, can now start a job search!
Our weather is abominable today!! Glad I had to spend the day doing clothes management and packing.
Dinner was a quick heat up of the barbecued pork I had made to bring to NH, which we rolled up in tortillas with melted pepper jack cheese...accompanied by my quick cuke salad and side of kalamata olives.
Please, Mother Nature, turn off your faucet before we head onto the highway....and for everyone trying to enjoy the long weekend. Maybe cold....or rain....but both?!?! It's the end of May!0 -
Deb: You're in my thoughts too.

Lacey, too many thoughts to put into words. Thoughts are with you as you head to NJ.
Deb, I am just so very sorry. Our thoughts are with you.

Deb - may your DH's passing be peaceful.
Lacey - safe travels to NJ for the services. But do enjoy your visit with the family.
I wonder how Laurie and her family are doing with their camping...cold and rainy is not fun camping weather.

Deb Thinking of you...stay strong.
Lacey Prayers for you also, so tough to see people hurting so.
Going to the Castle today for their super brunch with mimosas. Having all the kids home has been such a blast, lots of laughter and good times. Making the best of the cold. cold weather.

Last night I made a roasted leek and potato soup with some mushroom stock I had frozen last month. Lovely and light "first course" soup. Served with a grilled piece of steak and some roasted asparagus with parmesan slivers on top. Since I only ate 1 oz of meat, I am mighty hungry this morning!
I have started some foccaccia dough which will be a side for our composed dinner salad. I carmelized 10 lbs of onions a month ago so the foccaccia will be topped with those onions, perhaps some cheese, and fresh thyme. The salad will have lots of lettuces, veggies, more asparagus, locally grown radishes, and a bit of sliced steak. Lunch? It is a mystery.

Susan (my idol), how long did it take you to caramelize 10 pounds of onions??!
0 -
Nancy, since I like you, I will tell you the secret! Oven!
I carmelize onions in a roasting pan in a 350°F oven. For 10lbs of onions, I throw in about 1/2 stick of butter and some thyme sprigs. Takes between 2 and three hours. I stir them with a wooden spoon every half hour or so. Sometimes, I need to add a bit of water after the first hour if some onions start to brown before the bulk of them truly carmelize.
The results are stellar and have so much less butter than if I do them on the stove top. At the end, I package them up into ziplocks [maybe a half cup per] and freeze flat.

Deb and Lacey
I am thinking of you both

Dear Deb and Lacey:
Sending you both big HUGS. {{{{deb and lacey}}}}
Susan, I will be carmelizing onions.
Today: DLLP threw frozen chicken in the crockpot -- pieces -- with BBQ. I made delicious avo smoothie in Vitamix. Leftover vegan calzone. We're going to a friend's house for early dinner with the kids -- I am bringing a wild blueberry cobbler. Eric, so happy you are back!

Deb - My prayers are with you and your daughter. May you feel God's arms around you and find peace.
Lacey - Prayers for DH's family. Have a safe trip. Enjoy the time with DS and grands.
Bedo - How are you doing sweet sister?
Susan - 10# of onions. Amazing and what or how many skillets did you have to use? What do you freeze those in? I have 8-9 peppers I need to roast. I put the last in either lunch or quart bags and break off what I need. I had 2 full cookie sheets with 2-3 onions too.
The baby back ribs were quite good in the oven. Found a sauce with no ketchup - used honey, soy sauce, lemon juice, oregano, olive oil, garlic. Was yummy and the ribs were quite meaty. I found lots of rib slow cooker recipes. My grocery always has pork ribs in the clearance meat which I promptly freeze. Now I have something to try other than just oven baking them slow/low with BBQ sauce.
Today watching Indy/Nascar so jump ups and nibbles.
Sciencegal - I have Nigerian Dwarf dairy goats most of which are registered. I used to show them but mine are not competitive and no money/desire to upgrade. They are just expensive backyard pets and pretty sure I've seen the last babies born here earlier this year. I think I have 18 but I need to move 4 of the neutered boys out. Herd is kiling me on hay prices. thank goodness we have had some rain. Praying hay prices come down. We have had such drought and few are turning lose of much hay. And we use the square bales which cost more to bale and not as popular to bale as the round ones.
OK Nancy tell me again about the Eng. muffin recipes. Got my rings last week. The recipe on them says to cut them with the rings but I've seen recipes that you spoon in. I also splurged on a tortilla warmer. Found a container of Spanish rice from early April frozen. Maybe fajitas this week?

The aebleskiver turned out well. I'm going to have to figure out a better heating arrangement. The pan is set up for being put on a griddle or a wood stove. The kitchen stove is electric and my gas stove is the Coleman camp stove. Either way, the heat in each hole isn't even. The first batch was OK..the 2nd and 3rd and 4th batches were progressively better as I learned how each "hole" cooked. Otherwise, the pan performed flawlessly...no sticking at all.
May 26, 1984. I was in Rocky Point, Mexico. The original plan was to go down to the beach at sunset with a priest and some friends and exchange wedding vows with Mickey. Instead, I went down to the beach at sunset, alone, and scattered her ashes.

Eric I am so sorry. your post brought tears to my eyes.

Oh Eric, that's rough. I've been to Puerto Penasco many times.
Luv, it's Alton Brown's recipe only a little thinner and I let it rise a lot longer. Nearly 3 hours.

Eric... Your story made me cry too. Hoping the happy memories will ease the pain, even if just a small bit.

Since we are being personal. May 26th, 1995, Denali State Park, Alaska, Andrew S. Txxxxx, my brother, was killed in a car accident 15 miles from his new job as a park ranger. He was 29 years old. Miss him with all my heart.
Eric, I am so sorry.

To make the onions, I use my largest dutch oven in the oven. It is an 8qt oval.

Susan, brilliant strategy with the onions. I am so sorry about your brother. I really don't think time heals all wounds.

Carberry... The "castle"? Sounds interesting
Susan... 10 lbs of onions? Oh my! How long does it take to peel that many and how many tissues from all the crying from cutting them up?
Eric... Good success for 1st try on the aebleskiver, you'll have it mastered in no time!
Dinners for me have been inconsistent. Thursday, DH wanted an easy dinner: scrambled eggs and biscuits (canned). Friday was 2 kinds of pork made in the oven: oven-grilled baby back ribs (only 1 slab) and Chinese-style char siu using a jar sauce marinade and country style ribs; with assorted fresh stir-fry veggies and rice. Glad I marinated both (started Thursday night for Friday dinner, DD came home unexpectedly and the baby backs wouldn't have been enough). Last night was leftovers. Today, marinated flank steak, hopefully DH will start BBQ otherwise made on stove-top grill. For next time, does anyone have a favorite flank steak marinade? Not sure I'll like the one I pulled from Pinterest. Thanks.0 -
Second, how was the char siu? I saw that recipe and was curious.
0 -
Nancy... I found some Lee Kum Kee jarred char siu sauce in the pantry so I used that. Cut the country style ribs in half so they would marinate better, started the marinating the night before (zip-locks, turning often). Foil-lined a baking sheet with slightly-raised sides and a rack across, baked 350 degrees for about half hour I think. DD hates any meat pink in the middle so I cut pieces in half to test as meat thermometer wasn't accurate (said it was done but red in the middle). Turned out pretty decent. Next time, will use a recipe from Pinterest (there are many interesting-looking ones there).

kids are having breakfast, I'm having baked honey mustard/rosemary chicken with zucchini, onions, peas and corn. My DH is a chef but he works most nights When he doesn't work I have ridiculous meals!
