    I am not a snacker either.  My friend found some packaged pretzel shells that were really good, had the salt, but no insides...very low in calories, can make a dip using yogurt.  i also munch on the veges when making a salad.

    Everyone talking about the naan breads...they are great for making pizza and go great on the grill

    I grilled asparagas and onion rings last night.  Just sprayed my grilling pizza pan and put the stuff on that. Just used the store bought onion rings and they came out nice and crispy. used lemon pepper and olive oil on the aspar...sooo good along with strip steaks.  Had strawberry shortcake for desert.

    Carole - the dill relish sounds yummy. Homemade or store brand?

    Nancy - the meatloaf sounds good. DD did not make it out this weekend. Called me Sat. pm about 3:30 and she had just awoke from nap. SOO - I had 2# of hamburger and made all into burgers and froze 1/2. Would have made meatloaf but hot/humid. I'm with you about not using oven so much in summer. I think I mentioned b4 that I had a huge micro. early in marriage that I cooked in almost exclusively to keep the heat down.

    Last night would have been a good oven night. Still need to make one of those pork loins stashed in freezer. Loving the lower humidity until it comes back tomorrow.

    Carberry - Yahoo Shine had a meal with "pocketless pitas" and I thought not pitas, naan.

    Jen - I remember feeding my DD wheat thins, cheese, cheerios in yogurt, applesauce, graham crackers. A snack for me might be anything but I have been eating more carrot sticks and fewer cookies. I buy popcorn and we never seem to eat it. Guess what's getting used up tomorrow on DH's day off?? Lacey - I'll have to try TJ's pretzel thins. I've sadly given up the almond windmill cookies - too addictive. Like their graham crackers also but I can't find my fav. Keeblers anymore.

    Carole - LOL. I think dill relish is dill pickle relish. Sounds fancier though. Well, maybe not the same. Several images of dill relish from Heinz, Mt. Olive. I don't think I've ever bought it. Guess what I buy is sweet pickle relish. Googled making homemade relish. Says keeps 2 months in refrig. without being canned. Might give a very small batch a try. Oh, that's the way I make tartar sauce though no horseradish.

    I've canned dill relish for years.  Hubby hates sweet relish, and I'm not fond of the purchased dill relish - it doesn't taste like dill to me, just tastes sour.  So I can my own Wink

    To make tartar sauce I use Best Foods mayo, homemade dill relish, a little horseradish (creamy) and a squirt of lime or lemon juice (I prefer lemon).

    Don't get me started on tartar sauce. THAT is a religion in these parts! Someday, I will post my recipe. It is so good, you could eat it with a spoon, if you could stand eating anything mayo-based with a spoon.

    I also make real dill pickles, but they don't last long enough to keep us going all winter. Sometimes I make quick pickles when I want a winter pickle, sometimes I buy Mt. Olive.

    Husband was surprised that I am bringing an extra bag on the plane for kitchen items. HELLO??? We have been married for 30 years and I have done this far more than once. He is however, delighted since I told him there is room for the coffee grinder. By the time we get to the house after 2+ hours in the rental car in hot Georgia, the car will smell like coffee. Nice.

    Susan, please post it, I have been looking for a good tartar sauce. I rarely eat it, since I prefer lemon on fish, but DH loves it and occasionally I want it too. Blechhhh on the jar stuff. Btw, DH will eat homemade thousand island dressing (mayonnaise based) with a spoon if I don't keep an eye on him.



    Luv, I bought another package of those horrible windmill cookies at trader Joe's. I put them in the freezer but I can hear them talking to me through the door. A word of advice, don't let them anywhere near the nutella jar.

    Carol and Carrie you both always seem to be doing something fun, love it.

    I am exhausted from the weekend.  We had people in and out all weekend with the hot weather where we have a pool.  Lots of fun.  We watched the Bruins by the pool and I didn't even make it through the whole game and headed to bed.  Too much sun and fun.  The boys and I did all our flowers this weekend and things are looking a lot prettier around here.  Tonight I have no idea what is for dinner, I am leaning toward chicken parm as everyone eats it happily but feel we have been having it too much lately.  I need to go grocery shopping, I don't have a lot on hand. Perhaps tomorrow.....

    I laughed, I think it was Carrie who made the vodka cranberry joke?  Margheritas were flowing like mad on Saturday- thus the early bed time :)

    Today was a quiet day.  Cartoons, cleaning the house and laundry.  Plus all three of us took a snuggle in the a/c and napped for an hour.  I am really going to miss DS1 next year when he does full day kindergarten.

    Minus... Interesting idea with the microwave popcorn in brown lunch bag. Do you have to fasten the top closed somehow? And it requires no oil? If it works, I could get rid of my hot air popper that I hang on to because I use it when I make carmel corn once every blue moon! Soooo not healthy but, soooooo good! PS... I can find those windmill cookies at Wegman's here but I think it is grocery chain confined to the NE. If you can find them they are really good!



    Laurie... Heat, pool time and margaritas! Sounds like a good time! I planted my flowers this weekend (well 90% of them) but it was slow going! Just too hot! Planted most of my veggies and will get to the rest of the flowers/veggies tomorrow with temps in the 70's rather than almost 90! So NOT complaining though! Beats the heck out of snow!

    Oh Minus Two. The almond windmill cookies are very addictive. LOL. I'm sure because the fat content is sky high. But almonds are good for you, right??? One of the clerks suggested I try the vanilla wafers but have not yet. The graham crackers have just a hint of something darker than just graham flour, almost spicy but not quite. Umm - Nutella.

    You have plumerias in Houston? Almost makes up for the humidity.

    Laurie - I could not move after reading about your weekend fun. I admire all your energy. You are making great memories for your boys.

    I always bought tartar sauce and let it go bad from never using it up. Years ago went to MIL's house and she made mayo/pickle relish/bits of minced onion tartar sauce and I had a revelation. We have been eating Duke's mayo but I bought a squeeze jar of Hellmans "real whipped tangy dressing". Pretty good and made good coleslaw.

    Dinner tonight is a frozen casserole from a couple of weeks ago. I think (of course no label because I knew we needed to eat it pronto, only foil over) its a chicken one almost shepherd's pie like.

    Seaside - I have tried several different kinds. Little Dutch Maid is one of them, not fond of them but I do like Archway which my local grocer stopped carrying. If you get to TJs and like almond windmills try a box. They will call to you like they call to Nancy and to me. I stop up my ears.

    Oh my... Didn't know there are different windmill cookie brands! I really like the ones that I buy but am intrigued by the TJ ones! I will now have to seek them out although I'm thinking this could be a bit like Pandora's box....lol! Never met a cookie I didn't like!

    Seaside - just put corn kernels in the bottom of a paper lunch sack & fold over twice.  No fastener needed & you're right - no oil.  Of course if you put in too much you'll have pop-snow.  My microwave has a 'popcorn' button, but in my old one I used to do approx 3 min on high.  Stop the micro when the popping stops.  Dress w/melted butter - or carmel - or not if you want to be really healthy.

    I use the brown paper bag trick also and it comes out great every time...no chemicals like the store bought microwave stuff.

    Used the cooler temps here to have some shells and sauce, very quick after working till 9 and knew husband would eat anything that has sauce on it.

    Laurie  margueritas by the pool?...mmmmm my kind of relaxing, even more fun watching all the kids swimming and having a good time.

    Not a big cookie fan unless they are soft and gooey, but got some pepperidge farm ones that have chocolate centers, for a friend that likes to have chocolate after his meals, and now I find I am kinda hooked on them (but not enough that they speak to me from the cupboard) My potato chips do that.

    Deb, my sincere condolences.  I cannot (do not want to) imagine losing my life partner. 

    Dinner last night was grilled lamb chops marinated in some olive oil and chopped fresh rosemary and black pepper.  They were delicious.   Sides were dh's requested carrot salad--grated carrot, fresh pineapple, golden raisins, mayo, s & p.  Also steamed yellow squash, grown locally and sold at Walmart.  

    We always mix up a tartar sauce.  Never buy the jarred.  It's easy and tastes good.  For those those like raw onion, some grated onion can be included with the good mayo, horseradish, dill pickle relish, lemon juice and a pinch of cayenne.  I leave out the onion even though dh would love it. 

    Mayo is one of my "most favorite" foods.  I can lick it off my finger.  My favorite is Hellman's Light.  Of course the very best is home-made but calories and refrigerator life are a problem.  All it takes is a mention of aioli to get my attention when I'm scanning a lunch menu!

    Tonight's dinner will probably be stuffed peppers.  I have red, yellow, orange and green in the refrigerator.

    Today's dr. apptments are in the vicinity of Fresh Market, which has chicken breasts and store-ground chuck on sale on Tuesdays.  So I will probably make a stop there.  After I check out Talbots.  Yesterday I checked out Steinmart's with some success.  If "success" equates pulling out the credit card!

    The only problem with popping corn with no oil is that the salt won't stay on. Guess that's where the butter comes in ;-)

    Taco Tuesday -- fish tacos tonight with an avocado salad.  I also splurged on a watermelon yesterday so that will be dessert.

    Nancy- My husband would kill for me to make fish tacos.  One night I will have to bite the bullit and make them.

    Tonight is steak on the grill, corn on the cob and baked potatoes.  Michelle will I ever eat a baked potato again with out thinking of you?  I just finished mowing the front yard.  It is beautiful out this afternoon.  Low 70's no humidity and a nice breeze.  DS 1 has a cold and so do I.  We all stayed up too late last night watching the Bruins game- but it was worth it.

    Nancy, I pop corn in microwave in the brown paper bag now. I have a refillable mister where I put in olive oil, pump it, and it comes out in a spray. While pop corn is hot, I spray with olive oil mist and salt sticks pretty well. Started doing it this way when I heard regular microwave pop corn isn't so great and that olive oil is great nutritionally. I think a Pam spray might work too.

    Nancy, your fish tacos sound good to me.  So does your steak on the grill, Laurie. 

    We're having rainbow stuffed peppers and a fresh veggie salad.  The stuffing tasted good.  I know because I sampled it several times!  Ground pork, onion, garlic, diced canned tomatoes, black beans, brown rice, fresh herbs, grated Chichuaha cheese.

    My medical apptments went well.  The ultrasound of underarms and chest was good.  I discussed not taking arimidex the 5th year and, not surprisingly, was advised to bite the bullet another year.  Especially since I tolerate the drug better than a lot of women do.  I went and had bloodwork this afternoon for tumor markers. 

    Tomorrow is golf!

    Did a sweet and sour sauce with smoked chicken sausage, peppers and onions, and pineapple over ramen noodles.  I am liking all this advice on how to pop corn in the microwave in the brown paper bag!  I make fish tacos a couple of times a month - DH likes them and they are fast.  I never know when he is coming home from work, and half the time he goes to the gym after that, it makes dinner planning a challenge, so fish tacos are a go-to fave! 

    carole - yay on the good med appts! And yay for golf!

    Tortilla crusted chili lime tilapia fish tacos



    Preheat oven to 375ºF.



    1 whole Jalapeno, Seeded And Deveined

    ¾ cups Cilantro

    ½ teaspoons Chili Powder

    ¼ teaspoons Cumin

    1 teaspoon Seasoning Salt

    18 whole Tortilla Chips

    1 whole Large Egg, Beaten

    2 whole Tilapia Fillets, cut into strips



    In a food processor mix the jalapeno, cilantro, chili powder, cumin and salt. Add the tortilla chips and mix until it comes out to be small chunks. Remove the mixture and place on a plate.



    Add the egg and lime juice to a small dish and dredge each tilapia strip into the egg wash and coat each side. Place the tilapia in the chip mixture and pat the crumbs to the mixture to adhere to each side.



    Spray a foil lined baking sheet with non stick spray. Place tilapia strips onto baking sheet and cook 10-12 minutes or until fish is flaky turning over after 5 minutes.



    This can be fairly spicy so adjust the jalapeno to your taste.



    Serve with tortillas, extra lime and spicy slaw.
