    Carole, I like rice of all kinds, white, brown and everything in between. It's kind of like ice cream to me -- it's all good, just some are better than others lol.



    Spicy grilled chicken legs tonight with I don't know what. I need to go veggie shopping.



    It's 63 degrees and not raining for a change. It's nice to have the door open and hear all the birds singing.

    same here auntie...fruits and veges are the first to go in this house and I need to replenish more frequently than I do.

    Susan I agree...those kids are in for living in food heaven at your house....be careful... they may never leave again, but maybe thats a good thing?

    Got all of the yard work done yesterday so today is a free day to play, but it is somewhat cooler and had a little rain. Oh what to do?  Definitely gonna grill tonight though.

    It's 10:30am and it is 101F degrees. The humidity is low enough that it's not as bad as it sounds.



    I made omeletes this morning....eggs, a little milk, cook, add cilantro, some finely chopped serrano pepper and some goat cheese...and then fold the omelet over to finish cooking.



    Since she's "on" WeightWatchers, Sharon appreciated the omelete bit more than the aebelskiver I made yesterday.

    Susan, ditto on the comments about your lucky DD and co. who will benefit from gourmet meals without ever leaving home. ;) I do not envy them moving in this heat!



    About to head into the cool of the basement to exercise and then off to our Farmer's Market opening. Hoping for rain soon since the tree pollen is so bad that we can't even open our windows without the yellow film coating everything in the house. I thought that only happened with the pine pollen, which has yet to emerge. Oy!

    Nancy, I have been worried about you and tornadoes!  Glad you are okay.  I know the new eating plan is good for you, but bad for us!  No more onion roll talk for us!  :(

    Susan, you are really rockin' this thread!  Your dinners sound delicious.  Delicious spicy squid!  Naan bread!  Yum.  And is it you who has DD moving in?  I may not know everything, but from here it sounds fun!

    Carole, jazz in the Vineyard sounds like the best date.  I have been too tired for that kind of thing lately.  I hope you are feeling better with your 'shiner'!  Thinking of you.

    Tonight was a simple dinner. Pulled out two packages of lamb loin chops from this year's animal. Baked some potatoes, the thick-skinned kind and made a salad. My rosemary is now outside and needs some trimming. In a moment of brilliance I remembered something I read about.... soaking rosemary in water and then using it to smoke meat. Oh my goodness. What a wonderful and subtle flavor this gave the lamb. So much better than chopped and rubbed since it doesn't add a burnt flavor. We will do this again. I then took the chive clippings [also needed to be trimmed] and mixed it with butter for the tater. Another home run.

    This will be my last night of cooking until we get to Georgia. Cooking in her kitchen will be a challenge. I don't think she even owned a salad spinner since the salads in her house usually included jello or iceburg lettuce. I have packed knives, tumeric, freshly ground cumin and coriander, kosher salt, French thyme, paprika, dry mustard and garam masala. I have found Mexican and Indian grocery stores on the web. Maybe they will have some interesting ingredients. What am I missing?

    Susan, I always take a whisk and a microplane grater.

    Side dishes tonight ended up being curried lentils, sauteed yellow squash with onions, tomatoes and peppers and some Naan. Like Susan, sometimes I make it, sometimes I buy it. This was bought.

    Susan, I'm assuming your knives include a sharpening steel. If I'm going to my nieces house in Galveston, I take a wooden spoon or two. For some reason, there are never any wooden spoons . .

    So I asked a few days ago about snacks and I am still curious.  I have little ones so they are still in the cheese it's, granola bar and milk phase.  My problem is that I eat my good 3 meals a day but at night all I want to do is snack.  So I was hoping to get some better snack ideas.

    We are making the shift from store bought to home made.  So far I haven't eaten any sides out of a box or a sprite in almost 2 months.    We have transitioned to brown rice and whole wheat pasta, bread with flax seed in it.  I also do a smoothie every morning of blueberries, strawberries, bananas, yogurt and OJ. I am now transitioning the kids to homemade meatballs and chicken nuggets but this is taking sometime for them to adjust.  I will never give up chocolate. 

    What do you guys do for snacks or are you not snackers?

    Susan,



    We spend a week at a rental beach house along with my sister's family (although not always the same one) each year. (Edited to clarify that it's the beach house that changes and not my sister's family...lol) We usually cook in rather than going out each night.



    Things I bring because you just don't know what they'll have... Cutting board, knives (or at least 1 all-purpose), spices for the meals we're making (we plan these in advance)

    , a few large pots that, if they have nothing else useable we could make all planned meals, microplane for zesting, garlic press and any recipes that are not readily available online. A whisk is a great idea, too!

    Susan, what are her pots and pans like?  I once shipped one of my favorite saute pans clear accross the country when I was going on a three week business trip!

    I am not a huge snacker, but sometimes, I need a snack at night. I especially need one the night before treatment, and it has to be salty so that my veins are plump the next day. My favorite snack is popcorn. I pop mine in the wok and it is perfect everytime. Doesn't take much butter, but I have to have real butter for this.

    My pre-dinner snack as I am cooking is raw carrots and radishes. Or even a cucumber. Also helps me eat a more reasonable amount at dinnertime. Final one I can think of is cut up a whole pineapple and eat the chunks [in moderation.]

    I made "healthy tacos" tonight- ground buffalo and ground turkey cooked with onion and taco spices, then throw in cilantro and veggies from the fridge - chopped kale, purple cabbage, grated zucchini and yellow squash, and shredded carrots.

    When cooked and dumped into tortillas with cheese, lettuce and fresh salsa- tastes like tacos! Even my DH will eat it, he is not a big lover of veggies...

    (I am not counting salt content tonight)

    Snacks: mozzarella sticks, Graham crackers, celery, baby carrots, cucumbers, peppers, pretzel sticks, cheese cubes, olives, avocado, whole grain or multi grain crackers. For some reason, I love carrots dipped in salsa.

    Lovely ideas on the pans, but we are flying so I do have to remain reasonable. This woman cooked dinner every single night of her life practically. We just ate differently. Did you know that pork chops should be baked between 7 and 8 hours? I will find someway to cook. I have rented houses all over Europe that had very poorly equipped kitchens, so I can't imagine what she has is worse. If I am really lucky, I might find old cast iron out in the toolshed. I am hopeful.

    We are driving back, so if I find black gold, I can bring those back. Will also bring some of the regional pickles and Lily's flour.

    For snacks I like pretzels with a bit of horseradish cheese spread, vegetables with a small bit of blue cheese dressing, popcorn... I guess I favor things with a bold flavor so a little goes a long way! I've been eyeing a recipe for roasted chickpeas but haven't tried it yet... Not sure if you were looking for ideas for you or for the kids... For the kids... Yogurt, lower sugar cereals, string cheese, fruit, veggies...



    And, while I try to be reasonable, I will not part with my chocolate!

    Snacks - I won't give up chocolate either.  But I do like radishes & English cukes, black olives, cheese.  Popcorn is always good & I cook it in a plain paper lunch bag in the micro w/no fat.  Then it HAS to have melted butter. Agree that pretzels are good.  Found some small crackers I like at Trader Joe's - Roasted Gorgonzola Flavored Oven Crisp Crackers.  And oh dear - I still like Ruffles w/ridges - and I know this is the wrong thread - but once I start on Cheetos I can eat the whole bag  So much for healthy.  Guess I got carried away.

    Services tomorrow, then I will bring him home and will figure what we want to do with the ashes.  In due time, not ready to let go yet.  He loved Lake Winnipesaukee.

    Re: snacks....am not a huge snacker, especially lately,(always amazes me how I am not hungry for snacks when I am in a healthy eating mode) but some favorites are fresh cherries, red grapes, watermelon chunks, and a fun new item at Traders, pretzel thins....really tasty!



    Susan.....corkscrew, and a recork top for half-full bottle? Definitely garlic press, and a favorite spatula.



    Got some nice lettuces at the Farmers' Market, and delish sea scallops, which I marinated briefly and DH grilled with red peppers, vidalia onion and mushrooms. Had it with red rice and a Greek salad. Maybe I was exceptionally hungry, but this meal so hit the spot!!

    Deb.  I'm glad you checked in.  Again, I'm thinking of you.  And, if you're thinking what I think you might be thinking......the lake sounds nice.

    Tonight was a "go out" to eat night.  It was around 110F/40C today and I spent 5 hours on the roof at my mom's house. She noticed the air conditioner wasn't working right, but didn't want to bother me.  I wish she had called because the problem went from an easy 45 minute fix to one of those "nightmares on the roof" that I hate.

    I used to do this for college money and I hated those all day rooftop jobs..both because of the uninterrupted heat and because I didn't like delivering "the money news".

    At least the inside of mom's house is no longer in the 90F range.

    About snacks: most of mine have already been listed. I lived on snacks and dinners of wheat pretzels with a small amount of peanut butter in a small Tupperware when I was in grad school. I could take with me without refrigeration. At home, I like ants on a log (celery with peanut butter and raisins) or celery with cream cheese (my mom's snack for us when we were younger). DD likes apple sauce. For home also jello jigglers, flavored yogurt frozen in dots on foiled-lined pans (like dippin dots), used to like frozen grapes. We made our our frozen pops with pudding, imagine yogurt would work too, made in Dixie cups with popsicle sticks.

    Jenjenl - I am not much of a snacker except for my daily dose of ice cream. I would eat whole grain crackers with cheese or sliced apples with peanut butter if I could handle it.  Just can't take the dryness of crackers right now.Those little individual pudding cups are pretty good, especially if you need a chocolate fix.  And Greek yogurt work for me.

    I have had to back off berries as they seem to trigger a nausea attack.  I think there is a little too much acid.  Watermelon and bananas are ok.

    I can't eat salty snacks - chips, nuts, popcorn - all my favorites.

    Jen, no small kids--or kids of any age!--in this house.  We eat dinner late, about 7 pm, after having a cocktail or glass of wine.  So no snacking after dinner.  If I were to snack, I would have fruit or melon.  Right now, I have apples, bananas, purple seedless grapes, cherries, and melon on hand. 

    My snacks are during the day and are fruit.  Or Laughing Cow spreadable cheese on a Wasa cracker or Triscuit or celery.  There's a yummy new flavor of Laughing Cow--white cheddar.  I buy it at Sam's in 3 packs.  Your kids might like opening the little triangle packs.  You could make your own crispy tortilla chips out by cutting up tortillas and crisping them in the oven.  Home-made salsa is good.  You could make it mild for the kids. 

    Popcorn is one of my favorite snacks.  The Orville Redenbacker butter flavored.  I pop it and spray it with some butter spray.  You can also sprinkle with celery salt or onion salt.  I skip the salt.  DH uses the celery salt.

    Crudites are delicious with home-made dips.  You can use Greek yogurt and sour cream and other additions.  Maybe a way to get kids to eat raw veggies.  I go through stages when I keep cut up carrots and celery in the refrigerator for snacking with hummus.  Hummus!  Another great home-made snack.

    I guess I know more about snacks than I realized!

    Dinner last night was warmed-up brown rice and broccoli casserole (I love that dish!) and crispy catfish.  I had one large filet, no more than about 4 oz for each of us.  I cut it into strips and seasoned with my own cajun mixture, then lightly sprinkled it with cornmeal.  Panfried it crispy in a little grapeseed oil and a pat of butter.  Mixed up a quick tartar sauce of mayo, horseradish, and dill relish.  Da-dah!  Dinner.

    Tonight I must make a carrot pineapple salad for dh.  He happened to see Ina making this salad and announced that he liked carrot salad.  I asked whether he wanted canned or fresh pineapple and he replied, "Ina says she always uses fresh."  So fresh it will be!

    Today starts a series of dr. apptments before we depart on June 18th for vagabond summer.  I have an ultrasound of ovaries and an exam. by the  gyn NP.  Yippee.  Tomorrow stitches removed from incision on face at PS's office  and ultra sound of armpits and chest at my BC dr.'s office.  No mammograms any more, thank goodness, since we got rid of the breast tissue.

    DH has requested meatloaf. Sounds boring to me but that's what we'll have while it's cool enough to use the oven. It's more of a winter dish to me.
