    I am so happy to have found this thread!!!!  I have been here since March and don't know how I've missed this.  I would love to jump in because I love to cook and am obsessed with finding/exchanging recipes.  

    My admission recipe is a twist on simple pancakes.  Tried this for breakfast today for the first time.  Instead of cooking them on the griddle, I melted butter on the bottom of a pie pan, covered it with a chopped green apple, topped with cinnamon, chopped pecans, and butter pecan syrup.  Mixed up some Bisquick ( I know, not healthy) and poured it over the ingredients.  Baked at I think 350 for about a half an hour.  Delicious, and didn't have to clean a griddle (which I hate).

    Again, hope it's ok to hop on in the middle and look forward to all the delicious dinner ideas!  I've started reading at the beginning but haven't gotten far-----but looks like there are some good cooks here!

    Hi Beinghopefull, and welcome, Your pancakes sounds really good i make a baked pancake that is similar i use krustez but im sure its the same result will have to try yours with the apples next time thanks!

    Up late cant sleep i should just stay up so i dont miss breakfast!

    Hi Beinghopefull!   Glad you could join us!  Your baked apple pancake is similar to mine, which resembles one served at Bickford's Restaurant here in New England. 

    2 apples, peeled, cored and sliced

    2 tablespoons butter

    3/4 teaspoon cinnamon

    1/3 cup flour

    4 eggs

    2/3 cup milk

    1/2 teaspoon salt

    Preheat oven to 400 degrees

    Melt the butter in a large ovenproof skillet.  Combine 3 tablespoons of the sugar (brown sugar works great in this recipe) and cinnamon, and sprinkle over the butter.  Add the apples and saute for 3-4 minutes.  Remove from heat while you make the batter.

    Blend the eggs, milk, remaining sugar and salt until smooth.  Pour evenly over the apples.  Bake until brown and puffy, about 15 minutes.   Serve at once!

    This is my hubby's favorite breakfast, and I think he was hoping he'd get it this morning.  But alas,  we have no flour...lol!  I buy a small bag and keep it in the freezer because I don't use it very often and it keeps the little buggies away.  I guess when he packed up the house, he gave the neighbors the stuff like that.  I do have some pancake batter and I might just try to use that and see how it goes.

    Debbie - that story is hilarious! I've already copied, pasted and emailed to my daughters!  Hope you get some rest sometime today!  And yes, I used a regular cuke, just a thin one with small seeds.  You could scoop out the seeds if yours is too fat.

    Hi everyone!  Welcome Beinghopeful!  I like the sound of both of those pancake recipes.  Will have to try it.  Debbie, I love that story!

    Went out to celebrate DH's 50th B-Day last night (it's not until 4th of July, but my son has to go back to school on Tuesday in Minneapolis).  Had a great dinner at Ruth Chris Steak House.  I think it may be a chain?  Had crab cakes, not steak, but did taste my DH's steak and they were both wonderful.  They used Basset ice cream there and my DD had some.  I tasted it, and it was delicious, maybe the best ice cream I ever had.  My MIL said she's had it before and it is known to be really good.  I never heard of it.  But it was good!

    I have been to the Ruth Chris Steak House in Minneapolis and, yes, it is a chain BUT there are chains and then, there ARE chains!!!



    I am not typically a steak person BUT, one bite of the steak from there and you will TRULY be converted! Hands down, bar NONE, the best steak (and service) I have EVER had! That was probably 15 years ago and I STILL remember it!

    Never too late to join in here! I am with you... I love to cook (when I can) and can sit and read through a cookbook as though it is a novel!! My husband also likes cooking so it is something we sometimes do together!!

    Debbie:  Thanks for the dough boy story, very cute!  The baked pancakes sounds great.

    Tonight we are grilling flank steak.  I like to also grill red peppers and zucchini. 

    This month's issue of Real Simple magazine has an article on 3 ingredient recipes.  Sounds good for summer.  Some of the recipes are at realsimple.com/threeingredients, if you are interested.  I have not tried any yet.

    Glad everyone liked the story, when i copy/pasted it, it left out the heading "Death of a pillsbury doughboy" Hope it didnt start out scaring anyone, if it did (sorry) didnt mean it to start that way.

    Michelle- Your pancakes sound really good too, we are having family and some younger kids staying with us in a couple of weeks, that will be perfect for them especially a big crowd.

    Kay- There is a ruth chris's restaruant in hawaii when we lived there we ate there at least twice a month loved there steaks as SEASIDE said, they are so tender. dont remember the ice cream maybe somthing new.

    Lynn-I havnt heard of that magazine before, i will head over there now to check it out, thanks!

    Edited to add: I also keep my flour in the freezer, and all my stuff in the fridge like sugar, and any opened boxes of food. I put my flour, sugar, cereal, ectt,, in the freezer as soon as i get it home for an hour to kill any thing that might have gotton through.

    Michelle I like the idea of sauteeing the apples, I will do that next time! 

    Debbie I've never thought of freezing the flour and sugar first, that's a great idea!  

    Lynn your dinner sounds delicious....I especially LOVE grilled veggies.  Do you find it hard to find flank steak?  For some strange reason, the markets around here don't seem to regularly stock it.  Too bad b/c it's one of my favorites. 

    Tonight for dinner I had chicken breasts stuffed with pepper jack cheese and bacon.  Not homeade, frozen, but delicious!  The corn on the cob was fresh though, along with a garden salad.  Dessert was a homemade cherry crisp, made by my Mom.  Haven't had any yet but it looks good!

    Beinghopeful - try looking for hanger steak.  I think it's a similar cut, and these days it's showing up regularly on restaurant menus.  I think it's the same thing. 

    We are finally having a beautiful day on the pond, and the grandkids will be here this afternoon and stay for dinner.  They are such fussy eaters, but my daughter has confirmed they will eat grilled chicken breast.  I am going to marinate the chicken in a teriyaki sauce.  They love Chinese beef teriyaki so hopefully I can get this chicken close enough that they'll like it.  Actually, now that I think about it, I've got some skewers.  I'll soak them and we'll make it look just like the restaurant stuff.  Familiarity breeds contentment!!!

    BeingHopeful1:  I usually get my flank steaks from Costco, they come in a pack of 2 or 3.  I marinate them with olive oil, pineapple juice and/or soy sauce.  I sometimes freeze them like that and just pull them out the night before.  I have also found them at my local butcher.  

    Fresh corn on the cob sounds great--

    Used to be flank steak was kind of a tough, sort of throw away piece of meat, that you could pick up for a song at the market... More recently, with the popularity of tex-mex food (think fajitas) it is now a popular cut, hard to find and expensive when you do find it! We did fajitas a couple of weeks ago and flank steak was $8.99/lb.... Luckily, because we like the peppers, onions and all the fixin's you don't need that much meat!



    I have heard of hanger or skirt steak as being a good substitute but, couldn't tell you what it costs per lb!

    Hope your day with the grandkids was a good one! You are right in that being familiar with what is being served is half the battle when it comes to kids!



    When my Mom had my nephews for a week, my sister-in-law brought some of the foods that she usually buys and that my nephews were used to. One item was hot dogs.... My Mom cooked them and one of my nephews said after taking a bite.... 'Hate to tell you Grandma but, this is NOT what we're used to'...... To which my Mom replied, 'Hate to tell you Joshua, but your Mom brought these and they are EXACTLY what you ad used to!'.....



    They ate the hot dogs! LOL

    Seaside - funny story about the hotdogs!   The younger grandson walked in the house once we started cooking tonight and asked, "what are we having...hot dogs?"  And yes, they are fussy about their brand.  Apparently it has to be  Ballpark Beef Hot Dogs.  My daughter gets her meat from a local CSA (community supported agriculture) farm.  They always have hot dogs in the box, and the kids won't touch them with a ten foot pole!  I cooked plain white rice so they could have it with soy sauce and one of them said it didn't taste like the usual stuff, another one said it tasted exactly like what mom makes, and the third said it didn't taste like the rice you get with Chinese food...LOL!  They certainly have their opinions!

    We had a fun afternoon and evening, the kids played well together and with the next door neighbors, and I am sure they were all asleep before they got home!

    Flank steak - $8.99/lb - that is just crazy!

    I marinate my flank steak for at least 4 overs or overnight in a mix of, soy sauce, brown sugar, evoo, garlic minced, honey and a little red wine vinegar, mix and taste untill you get the right sweetness before putting flank steak in bag cut slits on top but dont go all the way through, One way to insure tenderness is not over cook it, only about 4 minutes per side, let rest for 5 minutes and slice thin on the diagnol. (against the grain)   I find that there are pretty inexpensive compared to reg steak.

    Funny stories about the hot dogs @michelle and seaside! Im the same way can only eat hotdogs if they are 100% all beef by ( cant remember the name) but they are Kosher?

    Michelle- I am so glad things are going well and that you are enjoying so much time with your family and having fun at your new home.  It looks like we might even luck out and have good weather for the holiday weekend!

    Beinghopeful- Welcome!!  So glad you found us!

    Things have been so busy around here lately.  This past weekend we went to Boston for the day and the next day spent it at the lake.  Boston was fun but very busy and the lake was just the right thing for the day after.  Very relaxing and the kids had a blast and both fell asleep on the way home.

    It looks like it is going to rain so I am doing to cook inside.  I am going to make a thing called Bulogi, my Mom used to make it and created the recipe after a dish she used to like to eat at a certain restaurant. 

    take a 1 lb unseasoned pork roast and slice into thin medallions.  Heat oil and butter in a pan and saute until golden.  Add about 2-3 cups (sorry I never measure!) chicken stock and I can of pineapple chunks, drained.  Add a few dashed of soy sauce until the color of the sauce is caramel colored, let simmer for about 10 minutes and serve over white rice.

    VERY random meal, but I grew up eating it all the time and the kids and husband both like it too. From start to finish it is about a half hour prep/cook time.

    oops- forgot a step to dinner!  Mix corn starch and water to make a roux to thicken- about a 1/2 cup stir it in bits at a time.  Sorry!

    Ladies...............speaking of Hot Dogs...............we all know they are loaded with "nitrates", and I honestly love a hot dog now and then......................well my daughter found "nitrate free" all beef hot dogs at Trader Joe's.............................they are a little more pricey, but they are great, they don't repeat on you,......................and they are not bad as far as "nitrates" go for us, and for out grandchildren...............................try them if your near a Trader Joes.

    If only the grandkids would eat those hotdogs!  My daughter gives away most of the nitrate-free hot dogs that come in her meat box because the kids just won't eat them.

    Finally all of the graduation weekend leftovers are done!



    Tonight I'm going with simple.... Picked up a couple of rotisserie chickens that were on sale. We'll have those, corn on the cob and a gigantic fruit salad of watermelon, strawberries, blueberries and pineapple!



    Was weeding landscaping all afternoon and am exhausted!

    Seaside- You'll have to let me know what you think if you try it.  Whenever I describe it to anyone, they wrinkle thier nose and say huh.  However, it did make me happy that when my hubby came home from work, took one look at what was on the stove and said "cool!".:D

    Laurie, I think I will try your pork recipe...my husband is always looking for me to make pork, and yours sounds different and easy!  I hate those pre-marinated pork tenderloins...they are so salty!  Yours sounds good, though!

    Lately I have made a few favorite, easy summertime dinners.  Two nights ago it was tilapia with mango salsa, last night was omlets (onion, tomato, spinach, black olives and feta), and tonight was fish tacos.

    The other day I logged on and typed a big long post, and I lost it!!!!!!  But now I can't remember what I wrote!  So, I hear ya, Debbie about not remembering!  Am I too far out (almost 2 years) toblame it on chemo brain?  I do remember commenting on the Pilsbury Dough Boy;s obituary.  Loved that!  So cute!

    Sherrill- I read your post after reading an e mail from a good friend of mine and thought maybe it was a sign?  She e mailed me a new recipe for pulled pork wraps.  I haven't tried it yet but it sounds godd and thought I'de try it this week.

    Seaside- it also used a pork loin!

    Pulled pork wraps:Season 2   1 lb pork tenderloins with salt and pepper and place   in crock pot.  Mix 1 C bbq sauce, 1/2 C apricot jam/spreadable fruit, and   3/4 C chopped onion;  Pour over pork.  Add 1 C assorted-color sweet   peppers cut into strips. Cover and cook on low heat for 4 hrs or high heat for 2 hrs.  (pork   should be 160 degrees)Remove pork and shred with forks.  Stir back into mixture in   cooker.  Serve on whole-wheat tortillas with assort. toppings (shred.ched.cheese,   salsa, guacamole, sour cream)

    Sherrill- Nice to see you here again, hey, i still say i have chemo brainLOL! actually i think i read somewhere that we do have it forever after chemo, dont know if its true, but im sticking to that story ha!- Your fish with salsa sounds really great too!

I read your last blog, and i wanted to say, i just love that new wig you had on, it was so very cute!! and love, love the toe polish looks like you all had a great fun day- Also loved the picture of the sunset at your house it looks like a painting its so beautifful- Would you mind if i used it as my screen saver?  Hope your feeling well.

    Love omelets....Hate those posts that go POOF!! I think we all suffer from a case of the 'Can't Quite Remembers'! I think it comes from having been through so much! Whether it be different treatments or just the stress of the whole darn thing! We ALL get it! Now if I could just get my kids to understand that sometimes, I just forget things, I'd be all set! lol

    Chemo tomorrow morning, so I have been drinking like crazy and ate some watermelon.  My son and his lady came tonight for supper - we had burgers, potato salad, baked beans, and salad.  And we're hanging out watching The Voice.  My daughter went to her senior prom with Javier Colone, so we have more than a casual interest!

    Michelle your menu tonight sounds like the perfect cook-out meal!  Thanks for the hanger steak idea, btw, I'll have to keep my eye out for that.

    Laurie your recipe sounds so good!  I need to start cooking pork more often.....I'm cooking chicken way too much lately....I need to add something to my menu mix besides chicken, beef, fish and pasta.  

    Seaside, rotisserie chicken is always delish....I just shredded one into a greek-style pasta last Friday. I will share the recipe tomorrow when I am not too lazy to go upstairs and get my cookbook Embarassed

    Sherill you're omelet recipe made me hungry!!!!!!!!  I LOVE making breakfast for dinner...I do that quite often!!  You can do so much with an omelet, and they are filling.

    Tonight was a "want something quick, don't feel like cooking tonight" meal--and very unhealthy to top it off.  Line a 13" X 9" with chilli-cheese fritos, top with canned chilli, more fritos.  Bake at 350 for about 20 minutes.  Top with cheese, bake another 5 minutes.  I'm sure it's a heart-attack waiting to happen but oh so yummy.  

    BEWARE!!  it's rich, so anyone suffering acid reflux should stay away! :)   

    Hopefully I'll have something healthier to share tomorrow night!
