    Debbie and Michelle,

Thanks!! I can't wait to get there!

It really is sooooo amazing how standing at the ocean's edge can be so humbling and, yet, so strengthening and empowering at the same time!

It is truly my heaven on Earth!

Debbie - just a little fluid pocket that might be slight truncal lymphedema...nothing serious and no pain involved.  But...more appointments over the next few weeks while avoiding the immediate post-chemo days.  Just what I need...lol.  Which reminds me, I'd better get those on my Google Calendar or I'll never remember to go!!!

That get together sounds like fun!  Wish I were closer.

Michelle, good to be taking care of that early.  I went to a lymphedema therapist today too.  Just pre-surgery because they are going to be removing lymph nodes.  I think it was a good thing.  She gave me a couple of  stretches to do now and after surgery.  She seemed very knowedgable.  Now I have to be good and actually do them.

Seaside, Have a great time!  I love the beach too.  My brother has a house there.  Going there this weekend.  Can't wait.  All my best memories are at the beach.

Had a Perdue chicken breast for dinner tonight.  It came in a bag and was all seasoned.  You just cook it for 90 minutes in the bag.  It was pretty good!  Also joined a CSA and cooked the green beans we got from them tonight.  Steamed them and then miixed in vinegar, oil, parmasan cheese and garlic.  Pretty good!  Not really a green bean fan, but I guess I'll be trying a lot of new veggies with this CSA.  Also got some beets, pea tendrils and summer squash.  Have no idea how to cook those.  Any suggestions?

Michelle- I have been meaning to ask you if you have had to have the nuelasta shots? I know you mentioned it before chemo but was wondering if you have had any bone pain with the shots? I know i did, it was severe for me. but you havnt mentioned bone pain so im hoping you havnt had them yet or you are not having the SE from it.

Kay- Your pea tendrils brought back some memories, i havnt had those in a long time, i used to cook them in a little garlic and evoo just untill wilted but not long if you still want the crunch- For beets i trim and clean them up real good, put on a baking pan lined with foil, put evoo and s&p on them, cover real tight with more foil and bake 1-2 hours at 400%  depending on the size of them when perced with a fork they should be tender, when cool enough to handle peel with hands or a small pearing knife, you can make a great salad with these maybe toss with the peas?? For my summer squash i slice lenght wise and cut in half  season with any herbs you like, thyme, or herbs de provence, s&p evoo bake @ 350% for 10 to 20 minutes depending how tender you like them. Hope this helps

Debbie - I do have Neulasta the day after treatment.  I guess it's a requirement with DD treatment.  I have not had any bone pain, which I am attributing to taking Claritin for a few days.  It seems to work so I am not suffering from the shot at all.  And apparently I am "sensitive" to the shot...my white counts were above the range so it's working very well for me.

Kay - you can also grill the summer squash.  Just cut into big chunks and brush with a little EVOO and balsamic vinegar, then grill to the desired tenderness (I like mine to keep some crispiness).  And sorry to hear you are having nodes removed.  I tried to avoid it, but I had 4 positive ones so they needed to go.  I knew it would put me at risk for LE so now I am just trying to be pro-active.  The good news is that there is no sign of trouble in my arm or hand.

Michelle- I'm glad the claritan is working for you, it didnt help me at all, infact i ended up in the er a couple of times the pain was so bad, and had to take pain pills. same way with tamoxifin and the other AL's weird how it effects some and not others. The grilled squash with the balsmic sounds good.

Any one ever have a peppadew? those things are so addicting, you can find them in the deli's at supermarkets where they have a olive bar, or in a jar on the shelf next to the pickles and peppers, they are a mild sweet and spicy pepper- they look kind of like a cherry tomotoe with the center hollowed out- anyway, made a grilled cheese sandwich for dinner and put some inside was great, i also put some in my corn bread the other day, they are good for pastas as well. made a homemade tomatoe soup which was tasty.

Hope every one is having a nice weekend!!

Oh Debbie, ouch, ouch, ouch!!!  I can't even imagine being in that much pain!  My husband loves those pepperdews and anything else from the grocery store olive bar.  I, on the other hand, am currently avoiding anything with any heat at all.  It's not that I don't like a little spice; but apparently this is one chemo SE that I'm not avoiding.  I can feel even mildly spicy things going all the way down!  So I'll just avoid those things for the time being.

We had a most fabulous Friday night and Saturday!  We drove to New London, CT, and had dinner at The Millstone which was lovely.  Before dinner we walked around a few art shops and I bought the most expensive coffee mug in my life.  But it just beckoned me to take it home.  It will always remind me of this weekend so it's now priceless.  Here's a link to the artist's website:

    www.wildpottery.com

My mug has the cute gecko patterns on it.

On Saturday we met up with our family members in Hanover, NH for The Prouty - a fundraiser for the Norris Cotton Cancer Center affiliated with Dartmouth-Mary Hitchcock Hospital.  It was a beautiful summer day and the event was just so well organized, just spectacular!  Most of my family biked 35 miles through the NH and VT hills.  There were riders of all ages and ability from 6-year-olds to mid-70's, including those who did the "Ultimate Prouty" - 100 miles a day for 2 days!  I have a group of pictures on Facebook that you can check out if you like:

    http://www.facebook.com/media/set/?set=a.1776582743808.2085102.1516543662&l=5ef0c245d2

I tried to change the name of this link to The Prouty 2011, but it didn't take...oh well at least it's clickable.

On the way home we stopped in New London again at The Millstone's sister restaurant The Flying Goose which is more of a bar and grill. The food was also excellent - I had some of the best fried clams I've eaten in a long time. They were cooked perfectly and worthy of every bite. And I got a hefty dose of iron to help out those red blood cells! LOL...I'm getting good at justifying anything I put in my mouth these days!    We ate breakfast before the race at the Mountain Creamery in Woodstock, VT and OMG, it was so good.  I am now officially "off" fake pancake syrup and eating real maple syrup from now on.  I figured out that dipping a bite of French toast into a little bowl of syrup gave me the flavor without using too much.  We bought a small bottle while we were in the Cabot Cheese Store in Quechee, along with some yummy XX sharp cheddar.

Today we need to get the guest bed set up as DH is going on a business trip and won't be here for Wednesday's treatment day. My daughter is coming Tuesday night to spend the night and take me on Wednesday for Chemo #3.

Hope you all are having a fabulous weekend and if you're in one of the "heatwave" areas, stay safe and cool!!!

I did pizza the other day on the grill, but I used my pizza stone inside--it was fabulous!  I made a bbg chicken pizza and added smoked gouda, red onions, and pineapple :)

I make my dough in the bread machine--I use a basic pizza dough recipe, but I add garlic, parmesan, and Italian seasoning to it.

DH did pizza on the grill again tonight.  We like the traditional Italian pizza so this one had pepperoni and sausage.  I gave my bread machine away a couple of years ago...this stuff in the specialty store is just so good and convenient.

We also had a spinach salad with red pears, cranberries (also good with dried cherries), blue cheese, bacon, candied pecans and an apple cider vinaigrette.  It was yummy!

Lago - that article is right on, especially about the speed at which the pizza cooks.  Just about 5 minutes does the whole thing.  You need to be ready to pop on the ingredients after cooking the first side.  I love the crispiness that we get from grilling.

Yum!! every ones pizza sounds and looks good!

Michelle- i used to live in norwich, ct and have been to the milestone, brought back some great memories, my husband was the F&B director at Mohegan sun casino and lived there for 2 years, miss some of my friends from there. Those pots are absolutley gorgous i bet there not cheap either! they look expensive. Sounds like you have such a great time, im so glad you are getting out and enjoying yourself and glad you are able to because of mile SE. Oh and your salad sounds good, thats how i make mine only with sliced strawberries and croutons but everything else is the same. Hope your feeling better. I cant belive im still up, but i finally finished a cook book that i have been trying to make for my daughter for the last 2 years and she keeps begging me for all my recipes so thats what i have done the last 2 days, i think i have carpoltunnel (sp) now  LOL!

Oops!   I just realized I typed New London, CT and meant to type New London, NH...duh!!!  But I think, by some coincidence, that there is at least one Millstone Restaurant in CT...lol.

So Debbie, I can now understand even better why you are a foodie, with DH as a F&B director!  I love Mohegan Sun and will go there early next year when I think I can tolerate the smell of cigarettes.  Unfortunately casinos are one of the few public places where smoking is still so prevalent.  And even the non-smoking areas are still polluted.   I think the smell would do me in right now.  I was a "way too frequent" visitor to Kansas City casinos because they were 20 minutes away.  Foxwoods and Mohegan Sun are both a little over two hours away, so I can't just hop in the car and go any time.

I love the idea of a cookbook for your daughter.  I remember my daughter asking me for "repeatable" recipes for a few things and I actually had to measure what I was doing...lol!

The spinach salad is so flexible.  I've made one that had strawberries, honeydew, smoked gouda, almonds and a citrus vinaigrette.  I'm on a spinach kick at the moment because of its high iron content (warding off the fatigue of anemia).  Hubby went to the store yesterday and brought home goat cheese, cucumber and kalamata olives.  I think there's a Mediterranean version in my immediate future!  I've also read that romaine is a good source of iron so I will indulge in my love of Caesar Salad.

    Happy Monday, everyone!!!

Debbie- I think it is GREAT that you put a cook book together for your daughter!  There are a handful of recipes that I don't know how my mother made it.  She never wrote anything down or measured either.  It has taken me years to recreate some of them.  My grandmother also made the best baked beans- we have never been able to recreate them.

The salads all sound sooo good! We had a busy weekend as usual and just did easy things on the grill, some chicken thighs one night, steak tips the other with pasta salad and a caesar one night and with some asparagus on the grill the other.  Tonight I am going to do the salsa chicken.  Nice and easy:)

Michelle- Thats funny, there is a place in New London, ct called the milestone or millstone cornor and it is a plaza with restaurants, shops etc,, we were close and yet so far away LOL! Being the wife of a F&B director does have its advantages, he brings home food and wine that the distributers want him to try so he will order there products from them, he is currently a F&B director at a casino here in oregon at chinook winds casino, we are only 3 minutes driving time from there and when DH is away i go there, but that is the disadvantage LOL im to close to it!  I quit smoking 4 years ago, and i know what you mean about casinos being smoky, a lot of casinos have put new air purifiers in now so you dont even smell it, unless of course you are sitting next to some one who is and being rude and blowing it in your face,  so i try to play a couple machines at a time so no one sits next to me LOL!

Laurie- Oh i know what you mean, when my mom passed there were so many recipes that i wanted to call her about but couldnt, luckily though she did right some down and having been raised with them owning restaurants and my brother being the chef, he makes a lot of my moms recipes, Thats why i have decided to do this, my daughter is always calling for recipes and she never writes them down, She has a lot of good qualitoes but being organized is NOT one of them LOL! But at least now i know if any thing did happen to me she will have them to cherish, sorry you cant duplicate your grandmas beans maybe if you can describe it somehow, we can all help??

teka- So true, wonder why that is that some woman will not share even with there familys, although we do have a family secret recipe that we serve at my dads restraunt called the R-Haus restaurant in grants pass oregon, which is on the rogue river , years ago, when john wayne was doing the movie "Rooster cogburn" he came in there for dinenr and had a soup that was and is still famous, even well known magazines have requested it, it is better than it sounds,ha! it is a cream of zucchini tomotato soup, but whenjohn wayne came in and had it, he loved it so much and took a gallon of it back to his room- We called it the Duke soup for a long time! LOL!- My mom just threw it together one night and it has been popular since then, my friends even tryed to get me drunk to get it out of me haha! Forgive my rambling, just thought it was an interresting story to share with you all!

Teka, I agree about those family recipes.  When I was in college and had my first apartment, I wisely wrote to my grandmother and got some of her recipes.  She was the "cook" in the family.  Years later, i surprised my mother and sister by baking "grandma's cookies" and making "grandma's stuffed cabbage."  The recipes were never given in accurate proportions. but once I started I could reproduce the recipes quite well ...I would measure the incredients as I added them.  I am so glad that I have those recipes which my daughters now use.  :-)

Hot Hot Hot describes the weather here!  Last night we were all sweating while we ate the salsa chicken so tonight I am going cold!  I baked some chicken breasts in a little garlic, oil and Italian seasonings earlier and chopped it up and threw it in the fridge.  I am going to just make a Caesar salad with some garlic bread and throw the chicken on top for dinner tonight.

    Keep cool everyone!

Hi all!  I haven't been on here in a while, but I just tried a veggie side dish I saw in this month's Health Magazine. It was easy and tasty.

2 medium zucchini, cut into 1 inch pieces and again in half

1/2 cup grape tomatoes, cut in half

Fresh corn kernals from one ear, cut off the cob

    1 clove garlic, minced

    2-3 basil leaves, shredded

Heat skillet and lightly coat with olive oil.  Add zucchini and garlic.  Season with salt and pepper, toss.  Whel slightly golden brown, add tomatoes and corn.  Cook until zucchini is tender.  Add basil.

I made it with flounder sauted in olive oil, and seasoned with garlic and lime juice.

    Hope everyone is doing well!

Sherrill - that dish sounds yummy.  Will have to try it in a few weeks when fresh zucchini and local corn hit the market.

Treatment #3 tomorrow, hoping I fare as well as I did the first 2.  I did go out with my daughters tonight and drank a little Prosecco and had tapas at a local Nashua restaurant. Everything was yummy, including the Prosecco that had muddled blackberries in it.  I've been drinking tons of liquid, now I'm hoping the little bit of alcohol doesn't mess with me tomorrow.

Michelle-Hope every thing goes good tomorrow- will be thinking of you! I havnt had prosecco in a long time it is so good, i use to have it with strawberries, but i would love to try it with blackberries. Im thinking the liquids might do you good so it flushes out all the toxins? I hope so.

I had the best macaroni and cheese with lobster tonight, it was only 11.00 dollars so didnt think it would be that good, but had a lot of lobster in it and was so delicious, it was a new place we checked out tonight that we didnt know exsisted, so it is our new fun place to go.

    Goood luck today Michelle.

    Laurie, love your new picture.

Mac and cheese and lobster sounds good.  Wish I had some around for breakfast.

I wonder if that zuccini recipe would work with squash?  I have another squash still.  I tried grilling it and the grilling and roasting suggestions, but didn't really like them  Maybe I just don't like squash.

  • tougherthanithought
    tougherthanithought Member Posts: 270

Kay, I think squash would be good too, as long as you don't over cook it and it becomes mushy.

    Good luck today, Michelle!

Debbie, lobster mac-n-cheese....yum!  I love lobster, but I don't tend to order it often, because years ago I had it poached in butter (soooo delicious.  you barely had to chew it, it was so tender), so I will always compare lobster to that time.  Last Friday, I met a few old friends for dinner and butter-poached lobster was on the menu, but I couldn't bring myself to order it!  It just seems so sinful!

Kay- a great way I cook squash/zucchini is to slice them up like thin sticks, eliminate the seed/pulp part so it just has the firmer white of the vegetable I add the same with carrots and saute with a little red onion, Italian seasoning and just a slight sprinkle of sugar.  It takes the bitterness/mushiness away.  It's a yummy summertime medley!

Kay- It was good for breakfast, i finished it up this morning LOL!

Sherrill- and Laurie- both zucchinis sounds good, i have a lot of fresh zuccs in the fridge right now from a friends garden.

One way i do my zucchini recipe is slice them lenght wise and then in 3 inch pieches, and take some baby red potatoes cut in half and par boil, in a saute pan i add a little evoo and butter a little rosemary, and thyme and garlic salt and pepper, then add the zucchini and red potatoes face down and cook untill they are both tender then flip over and generously add parmesan cheese on top and broil in broiler until the cheese is melted-you could also add squash with this recipe this is one of my favorites.

Hi everyone - I am home, doing ok except for a little heartburn that I am treating with some tums, so not too bad.  The really good news is that my white count was 20, with the high end of the range being at 10.  So that means I don't to go tomorrow for a Neulasta shot.  Woohoo!!!

My son is coming over tonight and bringing lobster salad.  Unless I have a sudden and unexpected downturn, I plan on enjoying a lobster roll for supper.

Debbie - that zucchini recipe sounds really good. I am going to give that a try real soon!

so much talk about lobster, I wish I liked it.  But it is too rich for me.  Michelle- I really like your new picture! Hope you had fun with your son.

Tonight was baked haddock and scallops with asparagus and couscous.  It all turned out pretty darn good and I am stuffed!  Waiting for the cool front to come through and take the humidity away.  Fingers crossed.

Sherrill- Nice to see you posting again- missed you.

Lago- Same goes for you!  I hope you are healed from the shingles and are feeling well, nice to see your face on here and thanks for the tips on grilling pizza, I really want to try it.

Oh laurie, your dinner sounds good did you roast it all together including the asparagus?

I made roasted beats tonight and roast broccoli with a  t-bone steak, dont eat red meat to often but these were on sale about half off so couldnt pass them up- really good!

Teka - your trip to PEI sounds delightful.  That's a trip we will need to make, maybe next year.  I've lived in the northeast for more than half my life and never seen a moose in the area.  While living in the Kansas City area, we went to Colorado (Estes Park) and saw moose in Rocky Mountain National Park.  They do seem to keep a low profile and be hard to spot.
