Hi everyone.  Just got back from an excursion - picked up my mom, then picked up one of her sisters (about 25 minutes away) then we all went to lunch (Chinese - mom loves it).  Afterwards we went to visit my uncle, and then we went back to my aunt's house and visited the other aunt.  These two sisters aren't speaking so of course we couldn't do everying at once.  LOL..stubbornness is a family trait!  And then I got mom home in time for bingo.  And for the first time since we moved her in May, she said she LIKES the place!!!  Woohoo!  Those anti-depressants are working!!!  On the down side, once again, they hadn't changed her sheets in two weeks.  So I left the clean sheets on the bed and talked to the manager in charge of housekeeping...again.  It's always something!

DH is on his way home from the jobsite in Massachusetts and we are going out for steak after he gets home.  I feel so much better than yesterday and I am up for it.

Apple - that is a funny story about your neighbor!!!  Thankfully, he went to a "safe" place and didn't wander off too far.

Kay - glad to hear the rads were faster last night.  Everyone has said that it's really quick once you are in there.  But if I end up having to drive to Boston for 33 treatments, it's going to be ugly, especially in Nov and Dec.

Hauntie- I am so sorry about your father.  Always come here and release, I am sure none of us mind listening, I know I don't.  I hope today was better.

Kay- I am so glad things went well last night.

Apple- I agree , that was a funny story about your neighbor.  It sounds like everyone took it in stride and like Michelle said, at least he wandered to a safe place.

Michelle- I couldn't imagine if you had to go to Boston for all thirty three rads!  But as I disclosed at our lunch, I am a country bumpkin, all that traffic!  I am glad your feeling better today, you must be feeling a lot better for all you did today.  I'm tired just reading what you did!  The sheets thing would make me pretty angry, I hope they get the hint this time.  But it's wonderful that your Mom is feeling happier about where she is.  It must make you feel good.

Carrie I hope your herceptin went ok, thinking of you.

Seaside- I'm sorry about your FIL, it sounds like a tough situation.  I hope you are able to find answers that makes everyone feel good about things.  As good as you can feel about such a sad situation.

Today I have been a woman on a mission.  We are going camping for the long weekend and I have been food prepping and loading the camper up.  This is our first fall trip and I decided to not grill too much and make things here that will just get popped in the oven.  I made pulled pork today that I can dump in the crock pot and heat up one night and I made a lasagna today too that I can pop in the oven the other night.  Besides that it's burgers and dogs in addition to the chili my DH is going to make tonight.  So not a lot of cooking once we get on site.  I made extra of the pulled pork so that will be dinner tonight too.

    Hi All!

Dinner tonight was roasted chicken, acorn squash and dressing...

Just received an e-mail from a friend about a movie that will be shown on Lifetime this weekend.... It's called Five and it sounds interesting.... Here's the synopsis.....

"The groundbreaking original movie “Five” is an anthology of five short films exploring the impact of breast cancer on people’s lives. “Five” highlights the shared experience each short film’s title character endures from the moment of diagnosis, through an interconnected story arc that uses humor and drama to focus on the effect breast cancer and its different stages of diagnosis have on relationships and the way women perceive themselves while searching for strength, comfort, medical breakthroughs and, ultimately, a cure. "

Hopefully it has a bit of reality to it and isn't just 'feel good fluff'.... I will probably give it a look....

We had a delicious and easy dinner tonight.  Pan-seared halibut filets we brought home from Alaska.  Mashed potatoes with Smart Balance, light sour cream, chopped parsley, and s & p.  A salad of sliced home-grown tomatos and cucumbers.  DH also had chopped sweet onions on his salad.  My dressing was squeezed lemon juice and a drizzle of EVOO.  I made a sauce of melted butter and lemon juice for the halibut.  I went light on the sauce and the mashed potatoes.  I am trying very hard to lose the extra pounds I packed on this summer.  Losing weight is so-o-o-o difficult since I no longer take HRT and have no estrogen.

Michelle, I'm sorry you felt bad yesterday.  We did drive around quite a bit in Alaska.  The truck with the camper can be parked in a parking lot as long as the spaces aren't too tight.  It was very convenient doing sightseeing and having our own bathroom!  And kitchen with sandwich makings,  There are many options in Class C rvs.  I think a small motorhome is an interesting choice.  We have a 38 ft. 5th wheel with 3 slides that we normally tow on our summer trips to get away from the 3 H's--heat, humidity and hurricanes.  This Alaska trip involved much more driving than we usually do.  Next summer we will probably go to northern MN for most of the summer.  We love Grand Marais and Ely.

New England is also a big favorite as a place to hang out during the summer.

Laurie - finally, you will have fabulous weather this weekend!  I remember camping up in the White Mountains one Columbus Day weekend and the night time temps were in the 20's...brrr.... and all the leaves were brown!  You will have a great time!  And yes, I couldn't believe my ears when my mom told her brother and sister that she liked the place and it had everything she needed.  While the place has some issues that I am not thrilled with, at least for now she is happy again.  I told my DH and he couldn't believe it, either.

Seaside - I saw an interview yesterday, I think, with Jennifer Aniston, Demi Moore, and Alicia Keyes about this movie.  It's on next Monday at 9:00 and I have it set to record.  I did see a clip that mentioned Stage IV, so I am guessing it will be at least somewhat realistic.

Apple - loved the music video!  And quite a gesture from that young man!

We went to dinner tonight at a nearby Texas Roadhouse and it was the most unpleasant dining experience we've had in quite a while.  The food was fine, but the place was like a meatlocker.  Everyone was cold, even my DH who is never cold.  Everyone was complaining but nothing was done.  My husband told our poor server, who was taking the brunt of everyone's complaints, that we wouldn't be back until the temperature was below 30, thus ensuring no air conditioning blowing on our heads!  Our steaks were cold before we could finish them.  Hundreds of other choices!

For my b-day dinner I had broiled haddock with zucchini & summer squash and sweet potato fries. I could not finish the fries.  Did share my b-day key lime pie with a candle in it.

Edit to add Sam Adams Octoberfest for a drink.

    Happy Birthday Deborye!!

    Debbie,

Hope your visit with your Dad and his wife is a good one! Lots of food is good but, I think eating out and gambling sounds good, as well....lol

When you get a free moment, I would love the recipe for the orange chocolate cake!

Michelle is right... the movie is not over the weekend. It is on Monday at 9.... i'm going to assume that's on the east coast.... If you miss it and want to see it, It will re-air Tues 10/11 at 1:00 am (well I have NO hope of seeing that one....lol) and then again on Sat 10/15 at 8:00 pm.....

I plan to record it and watch at my leisure.... They certainly have a lot of star power behind it....

    Hoping it's good!

Went to the store today and bought all the ingredients to make Michelle's chili so that and some corn bread is what's for dinner tomorrow.... I am starting with the sneezing and sniffles so I am afraid I may have the respiratory crud that has been going around here... Hoping I can just fight it off but we'll see....

    'night all!

     Seaside-I hope you feel better:-)))

Here is the recipe you requested it is called Mini orange chocolate chunk cake- You can find the original recipe at foodtv.com  it si ina garten's recipe there and can see the picture of it. I have the molds, but you can also use regular cupcake tins, tube pan or a regular cake pan with these, This turned out so good and will make it again, i hope you enjoy!

    ngredients

    For the syrup:

    • 1/4 cup sugar
    • 1/4 cup freshly squeezed orange juice

    For the ganache:

    • 4 ounces good semisweet chocolate chips
    • 1/4 cup heavy cream
    • 1/2 teaspoon instant coffee granules

    Directions

Preheat the oven to 350 degrees F. Grease and flour 6 individual serving baking molds, such as the flexible non stick 100 percent silicone molds.

Cream the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment for about 5 minutes, or until light and fluffy. Add the eggs, 1 at a time, then the orange zest.

Sift together 1 1/2 cups flour, the baking powder, baking soda, and salt in a large bowl. In another bowl, combine the orange juice, buttermilk, and vanilla. Add the flour and buttermilk mixtures alternately in thirds to the creamed butter, beginning and ending with the flour. Toss the chocolate chunks with 1 tablespoon flour and add to the batter. Pour into the pans, smooth the tops, and bake for 30 minutes, until a cake tester comes out clean. Let the cakes cool in the molds on a wire rack for 10 minutes.

Meanwhile, make the syrup. In a small saucepan over medium-low heat, cook the sugar with the orange juice until the sugar dissolves. Remove the cake from the pans, put them on a rack over a tray, and spoon the orange syrup over the cakes. Allow the cakes to cool completely.

For the ganache, melt the chocolate, heavy cream, and coffee in the top of a double boiler over simmering water until smooth and warm, stirring occasionally. Drizzle over the top of the cakes.

Debbie - that looks yummy!  I wouldn't want more than one piece of that in my house!  That's a diabetic coma waiting for a place to happen...LOL!

My goodness it's cold this morning - 38!  We haven't turned on the heat because we'll need the AC tomorrow when it gets close to 80.  But brrr...  I am sitting on the couch with a jacket and a blanket.  It will warm up as soon as the sun comes up.  The coffee is tasting particularly good at the moment.

Seaside - hope your crud is short-lived!

so I'm fixing a rather nice dinner tonite for one hearty eating son, and my DH.. my appetite is minimal.. I can't grill because there is a fire ban.. not enough rain and high winds... but what to have?

i don't know.  I'm thinking either salmon or stuffed cabbage.

There is a thread called Crissyb's adventure to the usa, (she is from Australia) and there is a link on pg 10  "king ranch chicken" and I made it last night, altering a few things I didnt have on hand, like the pablano pepper, and I used fresh tomatos instead of canned....it was amazing!!  My DH said "you've got another winner"  Its like a pan of chicken fahita (sp) lasagna...does that make sense?

Even without the pablano pepper it had a slight kick from the green chilis and seasonings....Laurie, may be a little spicey for your little ones.

We are doing a boat cruise tonight and then off to Ohio early in the morning...so no more cooking for me till Monday

    Enjoy this gorgeous weekend everyone!

We're having porkchops for dinner.  Breaded with Italian bread crumbs and panfried with a splash of EVOO.  Fresh green beans and halved small potatoes cooked in chicken broth.  Salad of halved cherry tomatoes, cucumbers, chopped yellow bell pepper.  Dh will have chopped onions on this salad.  My dressing will be oil and vinegar.

We're running the A/C down here in south Louisiana.  Summer is hanging on.

Carole - we'll be running the A/C here in NH this weekend - it's going to be in the low to mid-80's!  I actually resisted the urge to turn on the heat this morning and made use of my afgan and wore a sweater because it was just above freezing outside.  Talk about bizarre weather!    DH worked late and is now trying to get home via some back roads but has about a 2 hour drive.  There was a huge traffic jam on his normal route where people have been sitting for hours, so anything will be better.  I grabbed dinner from a little local restaurant near us called The Flaming Kabob.  It's mediterranean-based and my steak kabob and hand cut french fries were good, although I like my kabobs with some grilled veggies.  The salad was iceberg lettuce and tomato - pretty boring - but the dressing was a fresh tasting lemon vinaigrette.  And I splurged on a piece of baklava but I swear it had been out for days.  Not good at all and not worth eating.

Carrie - enjoy your cruise tonight and safe travels to Ohio.

Apple - hope your family appreciates your dinner tonight!

My boss and 2 other co workers took me out for a b-lated bday lunch.  Had a Maryland Crab Cake Burger with lettuce and tomato, fr fr and cole slaw with unsweetened ice tea.  No supper for me tonight.  We ate at Fishbones, again.  Tomorrow Rebekah and I with a BC buddy from work are going to hike Mount Monadnock.

debbie.. i helped care for my 'elderlys' in their final years and months... and they were all a chilly bunch.    gloves and a stocking hat really helped in keeping them warm.. Cold hands signify a chill.  I swear my mother in law was cold at 99 degrees.  i had to really protect her extremities and make her wear a hat.  sometimes just wrapping her head with a scarf while she was sleeping.

Happy Belated Birthday Deborye!!!  Sounds like the celebration is lasting a while!  That's always a good thing.  Enjoy!

Carrie, I also saw that recipe and thought it looked good.  My DD and DS are so picky.  I usually  cook so plain so they'll eat it, but I am going to try that too.  I hope it will come out as well for me.

Debbie, I do not suffer from the cold.  I work hard (or at least I did until I was on disability for BC) and refuse to be cold.  I turn the heat on whenever I'm cold.  I've turned it on a couple times already this fall.  It is going to be in the 80's today though.  I would not turn the AC on,  but hubby probably will.  He doesn't like to be warm.  What a pair we make!

Going over to my MIL's for break the fast for Yom Kippur tonight for dinner.  (DH is Jewish; I'm not; but I don't object to celebrating!  I found it interesting when I first learned about it.  Jews fast from sundown on Yom Kippur to sun down the next day to repent their wrongs for the entire previous year.  Then they eat breakfast foods at dinner time.  Bagels, eggs, lox, and some other stuff.  My theory is you just wouldn't be able to cook while your stomach is rumbling from not eating.)

Enjoy the weekend everyone!  Hope everyone is getting the nice weather like we're having here.

    Michelle,

Wanted to let you know that I made your chili recipe and it was really good!!

It worked out really well because I got it all put together early in the day when I was still feeling somewhat OK and let it simmer. Then all we had to do is eat later in the day when my cold really kicked up.... Still feel like crud today but, hopefully will be on the mend soon!

    Debbie,

Thanks for the recipe for the cake! Can't wait to try it.... I love chocolate with orange (or raspberry) but then, I like chocolate with darn near anthing....lol

    Carole,

I have been enjoying your travelogue especially the magnificent photos!! A trip to Alaska is dream of mine.... Someday.......

    Apple,

My son and daughter can be picky eaters at times but we all love the Chinese buffet... Something there for everyone's taste!

    Carrie,

Thanks for posting about the King Ranch Chicken... I somehow managed to miss that whole page over on Chrissy's thread.... It sounds really good!

    Deborye,

Glad to hear you enjoyed your birthday lunch!! Mmmmmmmmm..... Crab!

    Kay,

Have a good time tonight at your dinner! I don't think I've ever had lox...

I tried the WW dinners, had to be careful, a lot of sodium. I mentioned that to my leader and she agreed.

  • duckyb1
    duckyb1 Member Posts: 9,646

Deborye...........I'm on WW and the Points Plus..........your right they do have more sodium then I should eat, but honestly, it pay to keep them in the house.............it keeps you from doing something "stupid" when you haven't planned anything, or are in a pinch for what your going to eat............they are very good too, compared to some of the other stuff out there.

Just drink more water after eating one to flush your system of the sodium....that will help.............as I said they are good in a pinch.
