Bluebird's passing hit hard yesterday. That lovely lady was one of the first members to respond to my posts. Amazing strength of spirit while enduring so much. Reading her last post in 'inspirational stories' yesterday made me feel better. I can only hope, under the same circumstances that I would carry myself with the grace she did. She earned her angel wings, and more.

Sas, JunieB, Loveroflife, and anyone else interested - I've been working on the Paleo thread and there is A LOT of info I'm trying to trim down to a simple, easy to follow 'guide/FAQ' type deal. Who needs complicated? I sure don't! I appreciate your patience, please know I'm working to make it easy & fun (gots' ta' have me sum fun!) In the meantime I have seen a few of you post about wanting to end the tummy issues/lose weight, but are understandably unsure of being able to commit to the diet because it seems restrictive, especially in the wheat/pasta dept. I was too. I passed over Paleo for 3 years saying "are they crazy?? No bread, pasta??" "Those people are freaks! that's not healthy!!". It was out of sheer desperation to lose what seemed like 4 million extra pounds and having exhausted all other regimes that I said, "ok, I want to see my feet when I look down, I'd give this paleo thing a try". So yeah, I absolutely understand any commitment concerns. All I can tell you is that this isn't as hard as it appears, given time, it does get easier (especially if you see pounds drop and bowels heal). Give yourself, your weight and your bowels a small challenge, try it for the next week to 10 days, no need to commit, consider it a lark. Here's a few tips to get going and until the thread is done:
Short tips:
(See JunieB's awesomely comprehensive post above for more detail) If you're following closely to the food, don't count calories, count carbs and keep them between 50-100 gr per day max (complex carbs, no simple sugar).
Basic: No wheat (of any sort), white sugar, grains, legumes, processed foods, and keep dairy to an absolute minimum if you're casein or lactose sensitive. Those that aren't, use full fat dairy only and hard cheese is optimal if you indulge. Protein, with every meal. Healthy oils only, don't be afraid of them. Nuts.....stick to almonds for now, but go easy on em', they pack a helluva lot of calories and while we don't count calories, we still have to be somewhat mindful of how much we're putting away. Nut overindulgence is a large cause of paleo peeps not losing weight. Keep in mind they tend to flare bowel issues when eaten in large quantities (Walnuts are the worst for flares). A small handful per day is plenty as a snack. Snack on leftovers instead (even better). If you're hungry...eat. (real hunger, not bored hungry, you know the difference i'm sure) Veggies. You can't eat enough....well except for starchy tubers, easy on those but do enjoy in regulated quantity (you'll know by your carb count). Stay active! Your activity is vital. No you don't have to enter a marathon. Walking at a normal pace is just fine for now if it's all you can manage, just get moving! Weigh yourself daily (to test the waters).
Expect: Possible constipation. Yes I said constipation! Some of you will rejoice! I did! Bowel issues are no joke. I had no idea my ulcerative colitis would disappear along with my waistline, but that's a pretty awesome SE if you ask me!! If you don't rejoice in constipation add a couple of tablespoons of psyllium husk to your foods (salad dressings, soups, stews, anything you can get it added to) , or have 2-3 dates or figs as a treat (careful sweet toothers! figs and dates are easy to over-do) This isn't actually constipation in the real sense of the word, we'll get into the poo aspect once the thread is done. Ew.
Expect: A possible sluggish/kind-of-but-not-really yucky feeling, possible mild headache, possible huge cravings for the bad stuff....it's called the Carb Flu (I didn't get it, but a lot do). It should dissapate by weeks end, and you might suddenly realize you're not so hungry, and have more energy.
Seems like a lot...and it is at first. Like all good things, it takes time and adjustment. If you cheat/fail/flop, don't beat yourself up....pick up, dust off and continue on. No big deal.

Wow Coach, that was a great start. I love the puns. They are definitely better that the puns we made up on the constipation thread. But with poop it gave us a lot of material to work with.

Sas - I’m familiar with him, but don't waste your time with David Wolfe, the dude's a snake oil salesman with a crystal ball like 'medical practice’ at best. In my humble opinion people like him need taken out the back 40 and shot. (Sorry, I know that's rough, but profiting on people's desperation & fear makes me angry). He's sheer flaky pseudo science. Sas - Agreed! I get SO frustrated with tippy toeing, just come out with what you want to say. That is what I do, but it does get me into some hot water at times.

Haaahahah I get to eat the bad stuff until then. Not that I'm a real bad eater, just not a real great eater. That so many days of NO WHITE.........I lost 8 ibs so fast.
My reason was the last scan showed a mildly fat liver. Frankly, I was happy. Considering the wine, is empty calories and can lead to cirrohsis via a fatty liver. I was pleaseed with "mild fat" Mild fat can be associated with obesity of non alcohol origin. BUT mild fat of the liver is deleterious to the liver function. So, I read about it.
The reading told me to add Hard boiled eggs----Choline was the useful derivative. Bacon----useful fat to satiety(sic). Greens. Walnuts/almonds. Limited friuits. Now forget what else. It wasn't hard. *ibs went fast. Then forget why I broke off it.
But have a very specific reason to go on it. I have had a thyroidectomy b/c of Thyroid cancer. Docs varied on supllemental thyroid hormone. One doc said 175 mcg can go to 200mcg ,if I didn't fell well. He's at Moffitt two hours away in a nightmare highway system. Harrowing to get there. Local and hour away, less harrowing. But local thinks 150mcg is better, b/c it can avoid potential atrial fib.
Problem is the Moffit guy wrote the same thing in the medical record. i.e. he lied i.e. he covered his ass. THE reality is he wrote the script for 175mcg......So, if he was challenged he doesn't have a leg to stand on. DUH........
I just want to feel well. I did a very Very boring search on Sleep apnea. Weight is a chicken egg thing. Many details very boring.
But the weight is here and doing CPAP. In a danger area b/c I have a one sided chronic sinus drainage. The CPAP keeps the epiglottis open. The drainage is draining into the opening . How far it's going down -unknown. The drying secretions are a great risk.
SO______________loosing weight is important-----------just need a coach that's going to say-Girl listen to me ---Do this.

Update on Mags------Now has gotten Oxygen, Survived stress test, bx of the temporal artery. On Prednisone...SOUNDING good. We talk daily. They're will come a time we don't talk daily. That will be hard. Very hard. I will now longer be needed. But that is a great time too. What happens when someone is in crisis is they need a source that has a clue.
Mags and I have gone through so many weeks of stuff since the night that Loverly called and said Vasculitis. It's been weeks of stuff. Trying to get stuff done. Guiding and deciphering.. My sadness is for those that don't have a guide.

Junie - Atta' girl!! Congrats on a good start to day one! A little hint about burgers: I hate eating them with a fork and knife...burgers are a 'hand food' that all self respecting North Americans deserve, a birthright if sorts...that and chicken wings. Problem is wrapping the burger and toppings with lettuce ('lettuce buns') break up and it all gets too sloppy! If you enjoy raw kale or Swiss chard use those leaves to create a pick-upable 'bun'. Keeps eating tidier....plus you're getting nutrient packed leafy greens. Love the avacado addition! If your carb count for the day is in line next time make yourself up some oven baked sweet potato fries to go with the burger....1/2 medium sweet potato (or whole just don't eat all of them!) cut to fry size or wedges, tossed into olive oil, s&p, garlic powder, smoked paprika, little chilli powder, oregano, bake till they're to your liking. Viola! Burger n' fries! No need to suffer. Leftover fries or wedges are great with eggs the next day. Maintaining your way can be pleasant...and filling!
SAS - you will feel well again! Right after you get over the toe pain from me jumping on them! I've got your back and together we'll put you back in order. You want this badly, that's going to take you a long way! They found that I had a fatty liver during staging, it matched me...I was fatty right along with my liver, not a pretty pair! Good news is that it's reversible with lifestyle changes, which is exactly what you're doing with paleo. Fatty liver disease is a blight, upwards of 20% if the population and growing, thanks McDonald's! If you do your follow through on this you're going to see change, not just the liver either
Hard boiled eggs: I keep a dozen or so in the fridge most weeks, great for fast snacks, brekkie or lunches...they're a paleo staple. Bacon, well, no introduction needed there, bacon speaks delicious volumes! just don't go crazy if you're buying the regular type (nitrates, salt, sugar). Buy the best you can afford and read the nutritional info, you might be surprised to see how much sugar is added. That said it's another paleo staple. Looking for a spin on breakfast? Grease up a muffin tin (6 or 12 pan), line each well with 1 strip of bacon (like a collar) beat up one egg per well in a bowl. Chop up whatever you like in omelettes...peppers, onions, tomato etc and fry em' up until they're cooked down (don't skip frying or your breakfast muffins go soggy), stir veggies into eggs, then fill each bacon lined muffin well 3/4 full and bake 10-15 mins at 400 deg, watch them puff! If you greased the whole pan really good they'll pop right out and you have 6-12 breakfasts or lunch (with salad). Freezeable too! Can also be made in a loaf pan and sliced.
Weigh in - happens day you start...first thing in the morning ladies - naked, ohhhh sexy! Doesn't end there, you have to take the dreaded measurements, yup, gotta' be done. Measure: neck, arms (largest diameter), wrist (right behind wrist bones) bust (no bra, ohhh sexy!) waist (1" above belly button) tummy (across belly button) hips, thighs (largest diameter) calves (largest diameter). Ankles (joking! Lol). This is needed to work up your BMI, SBMI, etc... and track progress. The scale is just one tool.
Have you ladies had recent blood work? It would be great to have baselines.
Enjoy your long weekend ladies, and promise yourself to take at least one nice long walk somewhere pretty. Paleo gals gotta' move.

Egads - While I started out well today, I did NOT stay on that train. I volunteered today and was very tired this evening, so while I was talking to my sister on the phone I made (Please Don't Shoot!) a quick bowl of pasta with S&P, Garlic and Parmesan, then mixed in some sauteed baby bok choy. At least I got it half right. Unfortunately my tummy feels rather yucky now. But thankfully tomorrow is a new day. YAY!
What are the little quiche looking thingy's? I think I see bacon!
I have the fatty liver issue too. So that would be another benefit of this Paleo stuff.

Junie - I wouldn’t dream of shooting you for the pasta...I’m a firm believer in hanging. Joking!! Like I said in my earlier post, if you cheat/fail/flop, pick up, dust off, carry on, no big deal, no judgement, so yes, tomorrow is another day! Our little paleo group is all about support after all. That yucky feeling you had is a good way to gauge how you react to wheat, that’s the only prodding any of us need lol.
The little quiche things are called ‘breakfast muffins’ I put the recipe in my post with the pictures above (in the portion responding to Sas). Easy peasy to make, and great with salad/veggies if you get home tired and late.

Day 1 (yesterday): Did good until dinner time. I had half a cookie DD2 made 24 hours before . Then went back and finished the other half since I already contaminated myself with the sugar and wheat with the first half.
Day 2 (today): Had chestnut and purple yam for breakfast , but forgot to add a hard boiled egg. So far so good because I haven't eaten yet. Hah!
Egads, while I was having my breakfast this morning, I was reading your post and got to the part about weigh in. Had to stop eating and run upstairs to weigh and measure myself. Hah! Didn't like my measurements. Could 3 bites of my breakfast prior added a few inches to my midline? Wishful thinking! I too, have mild fatty liver (non-alcoholic). Have cut back on sweets since BC diagnose. Need to make more changes.

Loverly - Yes, I love white basmati rice and that is going to be challenging for me too. I especially like it with my baked salmon. But Thursday night I baked some salmon and had it with the first half of the baby bok choy. Pretty darn tasty!
Egads - Thanks for the encouragement! I had to go back and look real hard to find the recipe for the breakfast dealies. For future, could you possibly type a recipe like a list so it is easier to find? ;0)
Yesterday a lady I know gave me a small jar of her homemade rubarb/strawberry jam and I just couldn't decline, especially when she went to the effort to make it herself. Not sure what to do with it. Also, I threw out the remainder of the Bisquick I had in the cupboard. Now I need to purge the other non-Paleo items in my cupboard and fridge.
Ok, I am off to have an adventure in the laundry room. UGH!!!!

Good luck on your trying on Paleo diet girls! I give up after looking at the allowed items! I can’t do it!! I went through almost 1 1/2 years on gluten free diet to lessen the belly aches, thinking it was due to gluten intolerance, it turned out to abdominal mets! From that point on, i refused to deprive myself of carbs. I love noodles, steamed buns, or any Chinese flour-made pastries. Since I am stage 4, I eat any thing I want to. Fourtunately, I do eat mostly fresh original form offood, rarely any processed food, but I am not giving up on flour or rice related food. I will cheer for you brave girls from the side line!

Well I only managed to get 3 loads of laundry done today, but at least my linens & blankets are done. I am ready for a nap now.

Loveroflife - my hat goes off to you on having the strength to walk away, leaving half the cookie in the first place! I would have inhaled the whole thing right on the spot and have nothing to go back to lol! I laughed when I read you tore off from brekkie to measure and weigh, I've done the same thing after starting to drink my coffee....and yes it can make a difference. One coffee puts me up a pound! I thought I was imagining it until my DH noticed it too. Thought it was the scale, but we have 2 and both register higher weight which is crazy because the coffee AND the cup doesn't weigh a pound! By the way, that lady in the pic was Rachel Welch in the original Planet if the Apes movie...she'll be our poster girl...for now 'cause we're gonna put her to shame with our new looks! Ok, so I'm a wee bit delusional, sue me lol!
Junie - Sorry about the recipes, I should have listed it properly going forward. A lot of my recipes have become so second nature that I just blather them out like I was brushing my teeth! My bad! As for the jam, it was a gift, freeze it in small portions and use it as a topping (very occasional treat by the tablespoon on days you've been really low carb). Although sugar is a no-no, I really don't think a rare treat is going to kill you. Over time you'll probably find it way to sweet for your liking, paleo is good for that. I can't stand sugar anymore, and I was a sugar hog!! The sloppy joe recipe looks good, make plenty of it for freezing leftovers, it would be great over zucchini noodles or even steamed veggies for quick meals. Your 3 loads of laundry = workout, well done! Also want to high 5 you on getting the cupboards paleo friendly...we all need to do this to keep in track. I donated my non-Paleo foods to a woman’s shelter.
Eeoyre - Sidelines??? No way! Why not join us as a semi-Paleo gal? You're not eating processed foods, and mostly fresh so that makes you very much one of the crew! You can tease us on your rice/flour days and leave us drooly LOL!! We'd love if you'd join us!
Everyone- Rice substitute:
1 head of cauliflower (or half if you want)
Chop into 4-6 pcs
Blitz in food processor until rice size (might have to do in batches depending on size if cauliflower)
Heat 1 tbsp olive oil in large pan (med high) and plunk in the cauliflower rice. Cover and steam until tender (5 to 8 mins) stirring often to prevent browning. Uncover and stir until grains are dry-ish (another 5 mins) Add s&p, and any other seasonings/meat or veg additions you would with regular rice.
Notes:
1. This is NOT basmati or jasmine, not even close, so get that out of your head lol. It is however a decent and delish substitution especially if you spice it up. Green onion and cilantro. Curried is awesome.
2. The prep will probably be messy, I try hard every time I make it, but usually end up with cauliflower crumbs all over the place.
3. You can prep it, flat pack it in zip lock bags and freeze. Grab a pack and cook when ready, just takes a wee bit longer to get the water cooked out of it, so don’t cover, just fry the hell out if it.
4. If you store in the fridge raw seal tightly, it tends to be stinky....but doesn’t after cooking. I once prepped it and loosely bagged it raw for later. DH asked if I was storing dead bodies in the fridge LOL!
5. Eat as much if this as you please...by the truck load. It’s great for you, filling and LOW carb.
Don’t forget to keep moving ladies! Walks, laundry, whatever, just move!
