Leftover Italian shredded beef. DH is still eating cake :-)
Doc said a different type of Morphine formulation may prevent side effects (that would be amazing if it were that simple) and adding Ritalin could give him some energy (vs. using testosterone, as I'd suggested)….willing to try anything. He's so sad this is happening and he can't wrap his sweet brain around it all. Sigh. Wine, wine and more wine. Maybe some ice cream too.

Wally, What a wonderful friend to do all that weeding! It’s good that the doctor is willing to try things which might help but tough on you dealing with it all. Have that wine and ice cream. Hugs.
Carole, Your standard of easy cleanup is a good one. After all, you are in MN to enjoy the cooler weather and rural lifestyle.

Dinner tonight was chicken, asparagus, red bell pepper in a mustard cream sauce with mashed potatoes.

The dinner plan was frozen pizza cooked on a stone in the gas grill and salad. By dinner time it had changed to hot dogs and Bush's baked beans and coleslaw. More to dh's taste than mine. I need to come up with more variety in meals. Maybe tonight will be the pizza and salad.
We had a downpour last night after we had gone to bed. Should help with washing the pollen out of the trees.

Last night was ham and beans. Instead of skillet cornbread I made hoe cakes. We ate them but I prefer the skillet version.
Tonight It’s normally pizza night but I’m not in the mood for takeout. Maybe I’ll make flat bread pizza. I could use some inspiration too.

Some ideas for when I'm lazy: egg salad sandwiches; tuna melts; if you have veg you need to use up, chicken broth + veg plus stir in an egg or two (like egg drop soup); refried beans w/ scrambled eggs; refried beans spread over corn chips with shredded cheese and salsa (my version of vegetarian nachos); Frozen fish can be poached from frozen and add veg; stuffed baked potatoes (and yes, I microwave mine); on hot days, I make slaw and flesh it out with canned tuna or canned salmon and carb of your choosing; Grilled cheese sandwiches……

Sometimes I just google “recipe for …” putting in the ingredients in the fridge I want to use. If the recipe is really good I’ll save it to use again (last night’s meal was fine but not awesome so not saved.) Of course that doesn’t take into account a limited cooking setup or feeling tired. If I didn’t have to cook for DH I’d live on chicken salad like Minus sometimes does.
Nance, Skillet cornbread is always more moist than corn cakes but not as portable.

Wally, That's a good list of easy meals when you don't feel like cooking. Pan fried fish, pre peeled shrimp, and pasta with sauce (maybe including ground beef) are other ideas.

Had an awesome dinner tonight out at an Asian restaurant, my meal Japanese style. Teriyaki salmon, delicious and ginormous amounts of stir fried vegetables ( Could not finish them), a little rice, with a ginger dressed green salad to start. Oh and a great Pinot Noir. Very satisfying.

We had the frozen pizza cooked on/in the grill and big tossed salad last night. The best result to date with the pizza.

The farmers market presented us with some frustration, totally unexpected. Our site is on an outside row that allows us to back up and access our setup from the back of our truck. That access was blocked by the long animal trailer and attached pickup truck of a goat farm. The owners of the farm come to the market and serve as an attraction to people who seem fascinated by little goats. I am still totally baffled that Linda, the woman who is in charge of the farmers market, thought parking the goat attraction in front of our row of vendors was a good idea. The other vendors were equally upset about the situation. We were assured the goat trailer will be parked elsewhere next Saturday. The farther the better.
We did not have good sales, which may have been the case anyway. We did sell a large walnut bowl, our most expensive item, to an elderly lady accompanied by a younger woman who was probably her daughter and urged her to buy the bowl.
One really successful vendor is a sour dough baker. I bought a bread loaf from her that includes Einhorn flour. I am looking forward to having a slice of it for breakfast.
After the market, we had lunch at Dairy Queen and went to visit former farmers market vendor friends who were set up in a location out of town. Neither of us was hungry at dinner time so we each had a snack of choice.

Yesterday Sharon and I went to the White Mountain Symphony and listened to their classical pops program. It was quite enjoyable. I'm guessing 250-300 people were in attendance.
Afterward…a switch…."Tipsy Hippy" restaurant for dinner…Sharon had fish tacos and I had a mushroom burger. The food was good and made even better by being able to eat outside on the patio.
When we have vegetables that need to be used soon, I will cut them up and make a vegetable hash. The ingredients and amounts are "whatever needs to be used" and "chef's choice" for spices. If I don't have any hot peppers to put into the mix, I'll use a medium "heat" salsa to spice things up. One large skillet of this will last for 2-3 breakfasts.
Speaking of sourdough…I need to make some more. t's a bit late in the day to get it done today, so I'll start it tonight. There is, however, time to make an apple pie. :-)

Carole, It makes no sense to have an “attraction” like the goats in the way of vendors. If the purpose is to increase traffic they should be well out of the way. Even those who come to see the goats would not want them interfering with their market browsing. It’s great that there is a vendor who makes good sourdough bread since you have no oven during the summer.
In AL someone kept goats in the horse pastures. Every Fourth of July he would host a big gathering featuring goat stew.. That day it was impossible to catch any of the horses who seemed to know what was cooking in the picnic area.
Eric, Your veggie hash sounds delicious. Salsa is a versatile ingredient that can be added to so many things. It’s great you and Sharon got to attend the concert. Keep up with your apple pie practice,🥧

We had the enormous ribeye last night, perfectly cooked to medium rare on the rare side. The side was a large salad with favorite ingredients, including blue cheese. Leftover steak, since it was too large for two.
Today is dh's birthday. Nature is not giving him a nice day for Monday golf. It will be raining all day. We will go to Clancy's for meatball Monday tonight. A couple from southern MN are in town and we will meet up with them. I will have one of the walleye options on the menu.

We will hit 80s next week but nice and cool now. 16 California quail babies are thriving with mom and dad birds. SO cute. Super windy today.
Ups and downs with my sweet DH and most of it, down. Sigh. Dentist for him today if we can get out the door.
I'm thinking of yakisoba noodles for dinner but nothing is set ….maybe we can stop at the store enroute.

Wally - you'll appreciate that our LOW temperature was 80 last night. Sending you strength and approving all the wine you need. Do you have regular hospice people that you & DH like now?
I have been w/o my phone for a week. Today is day 8. No one at ATT can tell me when they will repair this landline - or IF they will repair since they're trying to dump all that service. I have kept the landline since in hurricane country, people line up to use my phone when the electricity goes out. But it looks like I'll have to give up & switch to fiber.
Went out for mid day dinner with my nephew's family yesterday. I had a bowl of egg drop soup and "Special Lo Mein", which included beef, chicken, pork and shrimp. I have enough leftovers for two more dinners. Tonight will be an avocado topped with tuna salad and a bowl of fresh strawberries with heavy cream.

Minus, no, I do not have hospice I like yet. The actual doctor and a resident came in last week….he was ok but won't be regular.

Mickey was in an inpatient hospice and she and I was their first young adults, so they were having to figure support stuff out as they went. The nurses were amazingly great but the doctor was a miserable piece of …….

Last night was breaded pork chops cooked in an aluminum foil pan, using the outdoor gas grill as an oven. They were so-so. On the plus side, I didn't overcook them. Side was steamed broccoli with lemon juice and butter.
Probably chicken tonight.
