Eric, I hope your MIL progresses enough to return to her assisted living “home.” It sounds like Daisy is having a great time playing with Lucy. Country living is definitely more fun for dogs. We had temporary custody of an Alaskan husky for two years. Czar fit right in. He lived in the barn out back but would visit in the house. He was great with the kids and cats. He would accompany DH on his daily 12 mile horseback rides along dirt roads and through the fields. Eventually he was sold to a musher but in one way I was glad to see him go back to the job he was bred for.
Carole, I’m glad a tree didn’t fall on your camper. I’m not looking forward to the storms which are coming with the heat bubble.

There has been a heat advisory almost everyday for the last two weeks. Eating lots of fruit plates, salad and ice pops. I made miso, spinach and mushroom soup. The hubby thinks I'm crazy but it's one of my favorites and super easy.

We had one of my favorite meals last night, steak fajitas. The canned refried beans from Aldi's were not as good as name brands but sour cream and shredded cheese added flavor. Dh's home-made guacamole was delicious. This has become my favorite version of ribeye steak.

Thank you for keeping me in your thoughts. I'm venturing out of the house today….took out garbage, will have a routine PCP appointment, pick up DH's ashes/death certificate, and maybe stop at a grocery store. We/I have so much food in the freezer but the rib eye on sale for 7.99 are tempting.
Carole, which brand name of beans do you like? I've tried them all and am hard pressed to find "the one."
I made frozen pizza last night. UGH…there will be so much leftover now that DH is gone. Sob. Our weather is as if my DH is watching over me. 50 in the morning; high of 61 yesterday. 63 in the house. I know it is just July and things will change, but the week (can't believe it's been a week already) was weather-beautiful. I plugged in our favorite christmas night lights….double-sob.

I had enough rhubarb from tiny rhubarb patch to bake a rhubarb pie earlier in the week.
Family gobbled up.
I had 1 piece, but not crazy over sour rhubarb pie.

Wally, glad you are getting out, even if it's sort of a "must" kind of thing.
I've not made rhubarb pie. However, I do like sour..it matches my personality. :-)
I just bought enough Granny Smith apples for another pie making "practice session".
Brian (Lucy's "dad") is coming up tomorrow to reunite with her. I know she will be excited to see "dad", but probably somewhat disappointed that the walks won't happen as much. Brian says that even at 10pm, the sidewalks in Phoenix are still so hot that he can't hold his hand on the cement. The year we moved, we were in Phoenix getting some more stuff to bring up. The car thermometer-clock showed 110F degrees and the time was after 9pm

Roslyn, That soup sounds delicious. Even though it seems contradictory hot soup contributes to hydration.
Wally, Ribeye for that price is very tempting. It’s great that you are having comfortable weather.
Carole, Yum on the steak fajitas. The Aldi here sells Goya and Old El Paso so I go with the brand names. They have a Hispanic section so there are authentic tortillas, masa harina, carne deshebrada and plantains. I am amazed at the quantity of groceries some of the men can carry on a bicycle.
Teka, I usually add strawberries to reduce the tartness of rhubarb pie or make rhubarb crumble which has a sweet topping to balance out the flavor. I agree that rhubarb on its own is a bit sour but your pie must have been good if the family gobbled it up.
Eric, With pavement that hot Lucy will certainly miss your property. I’m glad that you are keeping up with your apple pie practice.
Dinner tonight was Neapolitan pizza using a frozen bakery crust.

Dinner was pork chops cooked in a skillet with a can of tomatoes and a side of brown basmati rice also cooked with diced tomatoes and chili powder. Also the leftover cooked sliced beets in vinegar.
Wally, glad you're getting out of the house, doing necessary errands.

I made a salad topped with a can of sardines. DH learned to love those things. *SOB* Not sure if I will cook the ribeye tonight or tomorrow….walking through a haze. Gorgeous, 49 this morning….house temp 62….so wish he could be here. I know, I'm not that special.

..not an easy time, Wally..don't feel guilty about "walking through a haze". I wish I knew some "magic words" to make things easier….sigh…..
We live in a high (elevation) desert, so like a typical desert, the temperature swings are huge, but unlike the lower elevation deserts, our temperatures are a bit less "obnoxious". This morning it was 44F degrees, it's currently 87F and is expected to be around 90F this afternoon.

Eric, The heat is bearable if it cools down at night. It's easier to sleep and there is a bit of time in the morning to do things before the temperature becomes oppressive. The bank was giving away free bottled water today.
Dinner tonight was Angus strip steak, cauliflower and potato salad.

Dinner was fresh green beans cooked with potatoes and chicken breast cutlets breaded with panko and browned in olive oil and butter. Canned cranberry sauce with berries. I saw the package of green beans at Aldi's and bought it, knowing how much dh loves fresh green beans. Not like fresh out of the garden, but good.

Carole, Aldi’s fresh green beans are pretty good here. Fresh out of the garden is always better but we won’t see them for another couple of months this year.
m0mmy, What a smart cooking strategy. The microwave won’t heat up the house later in the day.
Wally, I’m glad you’re having comfortable weather. Monday and Tuesday here should be in the low 80’s before it heats up again.
The official local fireworks (4th of July eve) have started. We can hear them but can't see them. The local dogs can hear them, too, and are howling.
Dinner tonight was meatballs in Rao's on spaghetti.

Reading about everyone's weather…. We had 2 days over 100 this week. That's from the North under my porch right next to the house. Scary to think what it might be in the middle of the back yard. Today was only 99 degrees. Nighttime temps 80-82 and lots of humidity. Needless to say I'm not working in the yard. Just sitting in the recliner and reading lots of books. Eric & Wally have it just about perfect.
I've been trying to prep things every Thursday since garbage pick up is Friday and I don't have to leave the skins & pits in the freezer. No way I can put them outside in the garbage can with these temperatures. Lovely watermelon chunks (Black Diamond melon which was new to me), still some cantaloupe pieces, cucumber & onions soaked in tarragon vinegar then marinated in sour cream & dill, coleslaw, strawberries quartered and dusted with powdered sugar, peeled Campari tomatoes, hard boiled eggs, etc.
Yesterday was Long Grain & Wild 'Rice A Roni' (since it was on sale at Kroger) with leftover rotisserie chicken and fresh asparagus sauteed with garlic. Asparagus was the super skinny kind which I don't find as tasty. Tonight was leftover rotisserie chicken on Hawaiian rolls as sliders with the marinated cukes. Tomorrow will be leftover pork loin roast - probably with Bob Evans mashed potatoes. Desert has been Nothing Bundt Cakes white chocolate raspberry bundlettes. Tomorrow I will move to the mini Boston Cream Doughnuts - purchased at Kroger bakery and delicious.
Wally - following your days and holding you close. 58 is an impossible dream. It's too long since I've been up your way and all of my friends up there have now moved back to Santa Fe, NM or back to places like Depoe Bay, Oregon.
Nance - good to see you posting. Still missing Special K. I did email her but no response.

I hope SpecialK is just too busy to post. She always has a lot going on with her family.
We're up early to get ready for the farmers market. Not sure if there will be the usual crowd. We're having 4th of July hot weather that will encourage people to get out on the lakes in their boats. The parade in Park Rapids is at 11 am. The forecast allows for a slight chance of showers.
No celebratory plans for us. I even neglected to buy holiday tee shirts. We're having to run the a/c in the afternoon and evening and slept with it running last night.
I took a beef roast out of the freezer last night and will cook it in the slow cooker with Italian beef seasoning. Last night was Nathan's wieners in Bush's baked beans and a side of coleslaw.

The fireworks part of the celebration here will be somewhat subdued due to the fire danger.
Lucy is back with dad and heading back to Phoenix. I think our dogs will miss her and she will miss our dogs.

Happy 4th of July ! Fireworks have been going on here since Wednesday in spite of ordinances prohibiting it. I expect it will continue through Sunday.
Dinner will be classic 4th.fare —- brats, baked beans and potato salad. Dark chocolate brownies for dessert.

I'm re-hydrating some porcini to make a mushroom sauce with leftover ribeye over a bed of arugula. I may open my potato chips. I can't stop sobbing…everything reminds me of him. Sorry for the whining.

Having a bad day of my own, niece and Sis-in-law are moving soon. Went to see them, crying off and on since we left there. It even affected my making dinner, threw a pizza in to cook for dinner and I burnt the pizza. Ended up eating the leftover stuffed shells.

The extent of my celebrating was wearing a red, white and blue tee shirt. We’ve had fireworks going off for several days now.. Not only are they legal here, they are manufactured in a town 20 miles down the road. That company also puts on hundreds of professional displays including Boston, NYC and those on the National Mall in Washington DC.
Minus, Your meal planning is so organized. Avoiding garbage sitting out in those temperatures is a necessity.
Dinner tonight was French onion meatballs and spinach on noodles.

Thank you, Nance, for introducing me to Louie's Italian seasoning. I was excited to see it in Hugo's Supermarket and bought a packet, which I used yesterday to cook a chuck roast in the slow cooker. The camper was filled with the aroma when we arrived home from the farmers market in the early afternoon. My dinner was two slices of bread spread with mayo and topped with beef and gravy. The bread was a loaf from the farmers market, made with Einkorn bread that the baker mills. It's delicious.
DH had beef and the leftover green beans and potatoes.
Wally, no apologies for grieving. I admire you for continuing to cook and have meals.
We had some fireworks explosive sounds in the neighborhood last night. I love great fireworks displays but we didn't go to the effort to watch the fireworks in Park Rapids. It gets dark so late and I was asleep last night by full darkness. Welcome to old age.

Carole I’m glad you found Louie’s at the grocer’s. Now you can stock up before you go home. I was just thinking that I should make some soon.
But tonight I promised DH a turkey dinner. So It’s a roasted turkey tenderloin, boxed dressing and leftover mashed potatoes and green beans. I’ll make some gravy as well. Sadly I forgot to get cranberry sauce.

DH and I are off the same mind as you about fireworks. Here we just have to walk to the end of our street to see the fireworks display set off less than a mile from us. Last night we watched them from our front bedroom window.

Zero fireworks here…nothing seen, nothing heard….In the forests, Smokey Bear would have whacked, with a pulaski, anyone setting off fireworks. The place is so dry that the trees are chasing after the male dogs.
Last night's dinner was "4th fare"; hot dogs on the grill, potato salad, and soda.

Didnt go to the fireworks in my area. Was too tired after going to see my niece and sis in law who are moving soon. Was kept awake for about 2 hours last night after I went to bed by neighbors sooting some off.
