So...whats for dinner?

Carole, It’s good the leak was found and repaired. I hope fixing the floor goes smoothly and is not too expensive,
m0mmy, I was happy to see the Brewers beat a team with a salary expenditure more than double what they spent.
Dinner tonight was strip steak, oven baked butternut squash pieces and tater tots for DH.

Our deductible is $1000. I'm hoping that's all we have to pay.
Lunch yesterday with my younger sister and her older daughter was very enjoyable. It was so good to visit with them, especially since they're both doing well. I had a chicken quesadilla lunch with Mexican rice and refried beans. I ordered a take-out meal for dh's dinner. I knew I wouldn't be hungry for dinner. His meal was a burrito and rice and beans. He seemed to enjoy it at dinner time. I warmed it in the oven.
Today we're invited to an outdoor fish fry and pot luck at noon. The invitation is from a member of the Woodworkers Guild, and the location is his camp on a bayou. Just on time a front came through last night, lowering today's high temperature to low 70's. Dh made a pasta salad yesterday, so we're all set. Neither of us will want a meal tonight.

Today is the wedding. It was im the mid 70F range a dew days ago. Today it was near freezing and it might get as warm as 50F today. No rain though.
There isn't much for me to do before getting ready around 2pm (10:20am now) so I'm in the camper with the dogs. The ladies are all busy.

I'm sure we are all looking forward to some photos of the happy day and joyous participants.
I ended up eating a can of lentil soup last night. I went shopping after my labs yesterday….stressed waiting for lab results to trickle in. I so wish my sweet DH were here to hold me through this. ugh….
I bought a whole chicken and I think I will try to poach it similar to Milk Street's recipe…then break it apart and use it for different things; freeze what I can't eat in a few days. *SOB* So wish DH could try my new cooking experiment 😭

My very I best wishes to your daughter, Eric. I hope her wedding is everything she hoped it would be.
It turnedcool here too so last night I made chili. Tonight will be a rerun with the . addition of macaroni noodles.
Carole, I hope the floor repair goes smoothly. And is not too costly.
I broke up a rotisserie chicken yesterday to freeze for future meals. Today I have half of a Mastercarve ham from Costco to slice up to add to the freezer. It’s nice to be able to pull things out that are prepared. I have a trip to Trader Joe’s this week so I’ll hopefully add some more easy to prepare meals. My back just doesn’t allow me to stand for long periods for prep work.
More hugs to you, Wally.1 -
Carole, It’s fortuitous that you’ll be dining out for a couple of days while you’re waiting for the kitchen floor to be repaired.
Eric, All the best to your daughter for a wonderful day.
Nance, The time spent prepping for meals will be well worth it when dinners can be made quickly. I have a stainless steel topped table with wooden legs that I can sit at instead of standing at the counter. Originally it was a place for the kids and then my elderly mother to “help” cook but now I’m the one using it.
Wally, I hope your new cooking experiment works out well. Hugs.
Dinner tonight was chicken and rice casserole with mushrooms, celery and onions.

The chicken was incredible. I can't wait to hear on Carole's floor repair and Eric's daughter's wedding.

The fish fry was very enjoyable. Pleasant, friendly people, delicious food, comfortable weather and a peaceful location on a bayou. Amusing that we were finding spots of sunshine to place our chairs rather than shade.
The restoration work should take place this week. I'm hopeful it can be accomplished in a day, but wouldn't be surprised if it takes longer.
Today I'm planning to make a pot of chicken and sausage gumbo, using a large whole chicken. Most of the time now I use chicken legs or thighs because it's easier to remove the bones.
Nance, that's so smart to have the basics for easy meals in the freezer.
Maggie, do you have a written rotation of menus? It's amazing that you don't repeat main courses more often.

Burgers and fries.

Gumbo sounds perfect Carole. I’ve had a notion to make some myself.
Eric, wedding report?
Still chilly here so I made vegetable beef soup with a piece of chuck roast. I long for the days when you could get a bone in chuck roast (7 blade).

I don't (yet) have any wedding pictures. I was busy. :-) I did get a picture of DD and DSIL this morning at a family brunch with the parents and the newlyweds. :-) The black dog is Frankie. He's 16 years old and DD is the one who picked him out. The "big dog" is Daisy (DD named her). Daisy showed up at our house after being (very likely) abandoned so I guess she chose us.
DD and SIL are both animal lovers and jumped at the chance to pose with the dogs.
Oh, the camper behind them is what we drove across country to get here. The lady that boards our dogs was at her sister's wedding so we were unable to board them…so we brought them along with us.
There were some funny things at the wedding. The lady performing the ceremony has known SIL since he was born. She, got ahead of things a bit; starting the ceremony before DD showed up. So they could be heard, there was a microphone. DD banged her face against the microphone and somewhat quietly muttered, "S—- Oops". :-)
I managed to keep dry eyes. SIL's dad was dabbing his eyes with the pocket square from his coat. MIL is somewhat "technology challenged" and the live viewing didn't work out, but we did record the ceremony so that she can view it when we get home. We have the video recording saved to SIL's and DD's phones, both sets of parents' phones, an ICloud account, a Google account and an iPad, so it should not get lost. :-)

Carole, I don’t have a written rotation of meals. For years we ate nothing but chicken and eggs since they were provided by DH’s job and I had only stovetop burners to cook on. I had to get creative and discovered making dishes from different cultures was the best way to go. A cookbook, “Great Chicken Dishes of the World,” with several hundred recipes was the start. As a result I have a large spice collection. Beef and fish have been added to the mix now. DH gets migraines from pork but I sometimes replace pork with chicken in certain recipes. I have a nice stove with an oven and a broiler now now but out of habit mostly cook in a covered skillet on a burner.
Eric, Nice to see a photo of the happy couple with your happy dogs. Having to take the dogs with you and traveling in the camper will make the experience more memorable than if you just boarded a flight. It’s good that you have a video of the wedding saved in multiple places for MIL to watch later.
The chilly temps have reached us but at least the sun is out. It’s good gumbo weather.
Dinner tonight was Supremes de Volaille Amondine (chicken with almonds) from the French section of that cookbook. It was served with sautéed spinach and mashed potatoes

Dinner was chicken and sausage gumbo with brown jasmine rice cooked perfectly in the little rice cooker. LOTS of leftover gumbo.
The restoration still hasn't begun and the damage is spreading.

Eric…thanks for sharing 😍
I had chicken thigh and a small salad.

Eric - love the photo
Wally - you're still in my thoughts daily. Glad to see you posting no matter how hard each day is for you right now.
Supper was sauteed mushrooms with leftover brown rice & quinoa and some diced pieces of leftover rotisserie chicken.

Carole, I hope the floor repair happens soon.
Dinner tonight was chicken Veronique with mashed potatoes.

Minus … 😍
I made a chinese chicken salad and had it with canned green beans and a microwaved potato. Made a huge batch of Corona beans with the chicken broth…for tomorrow. Labs are not forthcoming yet and it is quite distressing. I SO miss my DH holding me while I wait. Deep breath and soldiering on….ugh…not a fan.

We had leftover chicken gumbo and rice and a romaine salad with additions.
The work on the kitchen floor is supposed to begin today. The delay has increased the damaged area since the dampness has spread underneath the flooring.

Carole, take before and after pix. I hope it goes quickly and well.

I'm near Williamsburg, KY (near Cumberland Falls). I was hoping to meet my youngest cousin (age 95) and the inly one still alive (as far as I know) but his telephone number is disconnected and he and his wife don't seem to be living at their house... :-(

Eric, That’s too bad about your cousin.
Dinner tonight was a shrimp and veggie stir fry with soba noodles.

Demolition took place yesterday. A crew ripped up the pergo flooring. ALL of it. So much for our fantasies about replacing a section. Fortunately, the water seepage didn't continue under the carpet in the living room or in the master bedroom, where pergo met carpet. Now we have a large dehumidifier and multiple fans. When they're all on, it's a cacophony. I turned everything off yesterday afternoon for the sake of sanity. We were able to sleep with the dehumidifier on last night and the bedroom door closed. The head man of the crew will return on Thursday to test the slab for dryness. Meanwhile, the kitchen and dining area are a hazard course with fans and cords snaking here and there. Quite the challenge. When we both leave, we'll turn everything on and flee.
Lunch was McDonald's eaten out on the porch. DH set up a card table. It was quite enjoyable thanks to nice weather this week. Dinner was leftover pasta dish and a romaine salad. Also quite good.
Today I'm off to senior exercise class and lunch afterwards with gym friends.

Hi All. I read your posts but don't reply a lot. I was over 100 posts behind so I guess I don't read this thread much either LOL. I appreciate the meal ideas. Have no clue what I'll make for tonight. I have an infusion yesterday so today I still feel well and usually cook tonight. We will eat out tomorrow after my MO appointment.
Eric, my DH sure loves being involved in the MARS Ham Radio operation with the Air Force as I know you are aware. Thank you for sending him the info. It is a good hobby for him in his retirement and keeps him home and available. Congratulations on your daughter's wedding. Lovely picture and love the dogs!

Congratulations Eric ! What a journey and love the stories. Wishing all happiness and joy.
Wally hugs and more hugs.
Carole I hope the repairs go smoothly.
Tonight is split pea soup (made with dill, onions and potatoes (no ham) yummy, and fresh baked croutons. Salad on the side with fresh blue cheese from the CSA.0 -
Eric, Mazel Tov to your family. rlschaller, thank you.
I am exhausted and afraid…watching an 8 year old boy and his 11 year old sister, today. I had ZERO idea how active and daredevil boys can be. Note to self. It was a joy to be able to watch them and pick them up from the bus stop. This is DH's dentist's kids and his wife just found a job (nurse)…he did SO much for my husband that it was a privilege to be able to do this.
I have popcorn, playdoh and crayons everywhere. Having wine and popcorn for dinner. And a hot shower. I hope I am better prepared next time.

Carole, I’m sorry the water damage affected the entire kitchen floor but at least it didn’t reach the adjacent rooms. When we had to have our clogged basement drainage system replaced we stayed at a local motel to avoid the jackhammers and the fumes. It’s fortunate that the weather is suitable for dining on the porch.
Intolight, Glad you are feeling well enough to cook dinner tonight. Enjoy your meal out tomorrow.
Rhonda, Yum on the split pea soup. Your CSA has much more food variety than most.
Wally, How kind of you to watch the dentist’s children as a way of thanking him for how he helped your DH. Third grade boys can be rambunctious.
Dinner tonight was Turkish meatballs made from ground lamb on rice.

Wally, how kind of you to look after your dentist's kids. You're braver than I would be.
We had chicken and sausage gumbo AGAIN for dinner. It seems to be getting better and better, but I think I'll freeze the remainder. That large chicken made a lot of gumbo for two people.
My lunch with two friends from the gym was outstanding. We ate at an upscale restaurant that has a great lunch menu. The price is $18. Choice of soup or salad and an entree from a list. I had a Gulf fish fillet (drum) sauteed and served over a bed of green beans. The butter sauce had sliced almonds. Yum. The restaurant wasn't crowded and the service was excellent. There was a time when fish like drum and sheep head were considered trash fish, but now they're on menus of good restaurants. Drum is one of my favorites.
We're hoping the man in charge of the crew from the restoration company comes today to pick up all the fans and the dehumidifier. It will seem luxurious not to have to weave our way around them. Next, we wait for the second stage, installing new flooring.

Carole, I think ignorance is bliss in my case. I never had kids and don't know what I don't know, LOL.
I've never heard of Drum fish. I'll have to google it. I love that there is more nose to tail eating…and lesser known species. I hope your floor isn't any worse than it already sounds…hopeful for a quick replace/repair for you….and lots of good insurance coverage.0
