So...whats for dinner?
Comments

Dinner was Nathan's hot dogs cooked in leftover chili. I spooned my portion over a slice of neighbor Mary's homemade sour dough bread. She gifted me the bread in her freezer when she departed. Our side was a good coleslaw made with thin-sliced cabbage. It was crunchy and tasty.
Today I will be cooking a small pork roast in the slow cooker. The side will be sweet potatoes that look too fresh for baking, but I will bake them anyway. We haven't had sweet potatoes all summer.

Carole, How were the sweet potatoes? I haven’t had much luck cooking them until they have cured for a couple of weeks. How nice to have Mary’s homemade sour dough bread.
Dinner tonight was oven fried chicken, zucchini sautéed with cherry tomatoes, and mashed potatoes..

The sweet potatoes were edible but not as sweet as when ready for baking. The pork roast had a good flavor from green onions and garlic seasoning but, as expected, didn't brown in the slow cooker. A good cool weather meal.

Crock pot tex mex dish. Surprisingly good and easy so I could attend afternoon book club. A friend gave us the little pasta in it. She got it at the Bethesda Women's Farm Cooperative, for those who have ever lived in the DC area, and the vendor gets olive oils and pastas from Italy to sell. Perfect!

Reader, I love the different pasta shapes. There are over 500 varieties in Italy but only 30 to 50 available in the US.
Dinner tonight was chicken parmigiana on penne.

Ribeye, black beans and cauliflower.
My neighbors (amongst the good ones; bad ones = idiots) picked me up to do the title change and buy DH's truck. SO much emotion….ugh…took me out for brunch afterwards. They are planning to help me with yard work, along with other neighbors. I'm beyond moved. A huge sobfest from sunday (cleaning out the truck) till today…and all the emotions that encompass selling a part of DH 😭. DH's daughter called this evening…it was lovely and sad and etc….
back to ugly yard work, which I know a lot of you love. I'm an "indoor kitty," so this is all new to me.

Hugs, Wally. You're doing well meeting challenges in the midst of grief.
It's in the 40's this morning. The sun is out. The predicted high is 62 degrees. I agreed to play 9 holes of golf at 11. Time enough to cancel. LOL.
Dinner last night was oven-fried chicken thighs, small boiled new potatoes, and sliced tomatoes with blue cheese. I had olive oil and white balsamic vinegar as my dressing and dh had bottled vidalia onion dressing.
Dinner tonight may be a frozen pizza. I'm out of ideas.

Chicken, broccoli, pasta and Alfredo sauce

Wally…I agree with Carole…you are doing well at all the "stuff"….
I've been cleaning weeds out of the garden. For a couple of weeks it twas too muddy to get in there to pull the weeds and now that it's dried out some, I'm dealing with a "weed forest". I've spent about 3 hours on this, and it's maybe half done. The weeds all have deep roots and most often include lots of spines.

I wish DH loved rock gardens…but I suspect weeds would find their way. I hacked down 6 Yucca, one more Oregon Grape, trimmed branches by the driveway, cut back some grasses so the septic people can see the tubes. I even fixed my own chainsaw! I'm sobbing my way through and don't care who hears me.
Eric, I'm impressed you go out there to do it. DH spoiled me, never having to deal with a yard. Carole, hope your weather holds up for enjoyable golf.
Leftover ribeye tonight.

Wally, I’m impressed that you fixed your own chainsaw.
I do as little yard work as possible. Weeds with thorns and spines are the worst.
m0mmy, I would love to be able to make that dish but DH won’t eat broccoli.
Dinner tonight was pan fried tilapia, tater tots for DH and green beans for me. DH even ate about three of them.

Dinner didn't happen last night. We went to pick up the repaired golf cart about 3:30. The repair shop owner had lost the key. He failed to "jump" the engine. DH drove back to the campground, where I stayed while he took a spare key back to the repair shop. By the time he returned with the cart, it was later than usual for our cocktail. We decided to "eat something of our choice" and have the pizza another night. We weren't disgruntled because it's so good to have the golf cart again. DH will be using it today. The men's golf league is continuing to play as long as the weather allows.
Dh bought corn on the cob yesterday with a plan to make corn soup with leeks and potatoes. I will look for some sort of seasoning meat today when I go to Hugo's supermarket with a list. It's definitely soup weather.

Going to make hamburgers for dinner.

Carole me how often you and I are on the same page about dinner. Last night I fixed corn chowder.
Maggie, to answer your question about the pasta fagioli, it was spicy because I used a can of rotel. DH says he it that way. If I make it again, I’ll probably use the mild instead with hot sausage.
It’s in the 60s here today too, a. welcome relief from the 90s.Wally, I’m glad you have some kind neighbors to help you out . I too admire your ability to fix a chainsaw.
tonight is Kung pao chicken from Trader Joe’s and fried rice.2 -
My neighbors (that are new to me) invited me for dinner. I think I will pass. They have a lot going on (family coming) and I brought over a lot of kitchen stuff I know I won't use (all-clad huge slow-cooker, le creuset pans and ceramic, some fancy knives…) and it is just too emotional for me. I went out and chainsawed a bit and will probably hve something easy at home.

Carole, It’s good the golf cart is fixed but what a time consuming pickup. Due to winter temperatures during spring this is the year of no local corn for humans. Farmers are cutting the underdeveloped stalks for animal feed but have lost money on the crop.
Teka, It’s great you have a good local diner. We used to have one owned by a man who was still working there when he was 96. His will stipulated that it had to be demolished and the land sold when he died. I miss the Belgian waffles.
Today we drove across the state to order new glasses for DH at a recently opened Warby Parker store. It was a three hour round trip but much easier than going to Boston. There was a Trader Joe’s nearby but I didn’t know about it and hadn’t brought a cooler. I got some apple sourdough bread and dark chocolate peanut butter cups, I was sad to find out the chocolate nonpareils had been discontinued four years after the fact.
Dinner tonight was stuffed peppers and mashed potatoes.

My dinner plan was born during my shopping at Hugo's yesterday. The walleye looked freshly caught. I bought two fillets and cut it into smaller pieces for pan frying. The breading was a cornmeal mixture. It was DE-licious. The side was a box mac and cheese with smoked gouda cheese that came in a packet. The best fish I've eaten all summer. It was good to enjoy a meal. DH was very pleased with his home-made tartar sauce, made with fresh horseradish he bought at the farmers market.
It rained all night and is still raining this morning.

Turkey sandwich. I did not go to my invite with new neighbors….they have a lot of moving parts going on now.
Carole, I'm green with envy…walleye…drool.

Leftovers from the other night.

Carole, I often buy what looks good or is good value and then plan my meals based on what is in the fridge. It’s great that you found good walleye since that is one of your favorites as I recall.
Dinner tonight was Angus strip steak, green beans and tater tots for DH.

Tonight was ham steak baked with pineapple, a modified Greek Suddenly Salad - added tomato, cucumber and olives - and deferring to DH, added baked beans. We've had healthier, but it did the job.

We had a late lunch in East Grand Forks, MN, yesterday at the Blue Moose Bar & Grill. We both had an oversized burger and fries. The meal served as lunch and dinner.
The back story is a day trip to Grand Forks, ND, to tour the Ralph Engelstad Arena, the ice hockey arena for the NDSU. Apparently, this arena is famous among ice hockey fans. It has marble floors in the corridors and the seats in the arena are upholstered with leather. The handrests are cherry wood. I am not an ice hockey fan, but dh was a fan when he lived in the Chicago area. He went to hockey games in the days when the players didn't wear helmets, and the games were free-for-alls.
It's looking like another gray day, but it isn't cold. The temperature is in the 50's. I keep thinking it's time to go home to Louisiana. DH doesn't seem to be picking up on this message. LOL.

Reader, I had never heard of Greek Suddenly Salad. I looked it up and will have to try it.
Carole, What an unusually elegant hockey arena. When I was young I played pond hockey at the local park when girls were needed because there weren’t enough boys. Girls couldn’t play on the large pond designated for general skating or the beginner’s pond.
It was cloudy and windy today but the rain isn’t supposed to start until tomorrow morning. We’re far enough inland that we’ll just have several stormy days.
Dinner tonight was stir fried mango chicken on rice.

Carole, I agree that hockey arena sounds great. Very interesting. My dad used to say "my problem is I played football when the helmets were leather..." i.e., why he was hard-headed or stubborn. I'm sure it didn't help 😕
Maggie, the salad mix is a good shortcut when adding additional vegetables. A little meh without the extras.
We met my brother and DW for Indian food tonight. Good as usual. I can handle NO spice so I always tell them to make it " baby mild." And always order korma.

DH made his corn chowder yesterday. We had it for dinner with crackers. Lots of leftovers.
A gray, rainy day today.

Today is, right now, sunny. However, the clouds tend to move from southwest to northeast and looking toward the southwest…the clouds are dark. Despite the gooey mud, it's nice getting lots of rain (recharge the underground aquifers) and I'm sure the ranchers are happy about the lush fields.
Dinner last night was individual pizzas. Sharon uses some pita bread as the crust, adds a homemade tomato/basil sauce topping, some sauteed vegetables and a bit of cheese. Two of these easily fit into the toaster-oven.
1 -
Reader, I sometimes make authentic Indian food with all the different spices but don’t put the full amount of the hot ones in. Often I take the shortcut of using curry powder which results in a takeoff on the real thing but is quicker.
Carole, Yum on the corn chowder.
Eric, Pita bread is just the right size for individual pizzas.
Dinner tonight was Kung Pao chicken on rice. Nance, I thought of you as I made it.
1 -
Great minds Maggie! We had that too as we ended up not having it previously.
2 -
Dinner last night was cheddar jalapeno brats and a skillet dish of cabbage and potato.
1 -
Turkey sandwich with a roasted red pepper and melted cheese, last night.
I may take out some ground pork and make a pasta dish…maybe tomato based or peanut-noodle type.
I'm starting month 4 of DH being gone and I honestly thought it would get better; it isn't. My other neighbor is taking me to Costco on the 7th for my "maiden voyage" without DH. She doesn't think I should drive or be alone. I appreciated it and am accepting. I guess 33+ years is hard to erase in a few months. I miss him so.
