Tonight I have a Quesadilla Casserole in the oven. Smells good. If it tastes decent, I'll post the recipe.... Just made some homemade guacamole to go with it.... Love avocados!0 -

Pur pulled chicken was really easy and good. I think I prefer pulled pork inthe slow cooker but I still ate two of these sandwiches....the rolls were small...

i love swordfish and haven't had it for 18 years (don't ask me how i know this).,
last nite's mostly vegetarian dinner was a hit..
I boiled some beef bones for broth and made vegetable soup. made a spinach cheese and egg loaf type thing, put some smoked salmon, cream cheese and capers on a plate and served some weird rye loaf (very dense) that i had made a while back.. i sliced it thin and toasted it in the oven... also a fennel salad.. not bad at all. my kids liked it so all is good.. my friend liked it.
i adore lima beans.. the way to get good ones is to grow them.

Here is the pulled chicken recipe I tried last night. We will definitely do it again.
BBQ Pulled Chicken
1/4 cup light brown sugar
1 tablespoon chili powder
2 teaspoons ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
1 pound boneless skinless chicken breast
2 teaspoons olive oil
1 cup thinly sliced onion
1 cup chicken broth
1 tablespoon balsamic vinegar
Put your first 6 ingredients in a bag and coat chicken with mixture. Warm oil in good not stick pan and cook chicken to brown, 2 minutes per side at medium heat. Remove chicken and add onion and cook for two minutes. Add chicken to pan pour in the chicken broth bring to boil then reduce heat and cook covered for about a 1/2 hour. Remove chicken and shred with fork return to pan and cook uncovered for 15 minutes serve on rolls.

Here's the recipe for the Quesadilla Casserole. I actually got it from the back of a McCormick spice packet.
I pretty much followed the recipe but I did substitute a clove of real garlic for the McCormick dried minced garlic. I also upped the ground beef to 1 1/2 lbs and used Canned Corn with no added sodium because you add the corn, undrained..... Held off adding the cheese on top until it had baked for a bit and looked like it was hot all the way through because I didn't want the cheese to get brown.... Used more like 8 tortillas but mine were on the small side. I just used some whole and ripped others as needed to fit my pan.
Well shoot! I did a copy and paste of the recipe and it doesn't list what's in the spice packets... If you don't want to buy the kit, Here are the spices that are included... 2 tsp Chili Powder, 1 tsp Ground Cumin, 1 tsp Minced Garlic, 1/2 tsp Oregano and 1/2 tsp Crushed Red Pepper (optional)
Quesadilla Casserole

1 package McCormick® Recipe Inspirations Quesadilla Casserole Spice Kit
1 pound ground beef
1/2 cup chopped onion
2 cans (8 ounces each) tomato sauce
1 can (15 ounces) black beans, drained and rinsed
1 can (8 3/4 ounces) whole kernel corn, undrained
1 can (4 1/2 ounces) chopped green chiles, undrained
6 flour tortillas (8-inch)
2 cups shredded Cheddar cheese
1. Preheat oven to 350°F. Brown beef and onion in large skillet on medium-high heat; drain. Add tomato sauce, beans, corn and green chiles; mix well. Stir in all of the Spices except Red Pepper. Bring to boil. Reduce heat to low; simmer 5 minutes. Add Red Pepper to taste, if desired.
2. Spread 1/2 cup of the beef mixture on bottom of 13x9x2-inch baking dish sprayed with no stick cooking spray. Top with 3 of the tortillas, overlapping as needed. Layer with 1/2 of the remaining beef mixture and 1/2 of the cheese. Repeat with remaining tortillas, beef mixture and cheese.
3. Bake 15 minutes or until heated through. Let stand 5 minutes before serving.0 -
All these recipes sound great. Now that I am finished rads I will have the energy to start cooking some new things and am anxious to try them.
I rang the bell at rads today. My DH came up with the idea of a pretzel tray to bring. It was very nice, had 192 soft pretzel nuggets, a couple kinds of mustard and some nacho cheese to dip them in. (I'm in Philly and fortunately or unfortunately what it is known for here are cheese steaks and soft pretzels.) The techs were very appreciative of it. 2 of the techs who have been there for almost all my treatments weren't there today. A little disappointing, but they took me almost 45 minutes before my 11:15 appointment, and I think they were coming in at 11, so will get to partake. It's been such a crazy day (in a good way). I was brushing my teeth this morning and the radio was on. I wasn't paying any attention at all. But I hear them announce my DH's full name on the radio and some how that got my attention. He was down stairs, but I called him up. He had e-mailed the station and asked them to play a set for me for the last day of radiation. What a shock it was to me. They played Sheryl Crow Make it Go Away (a song about radiation), Adele Someone Like You (my current favorite song) and KT Tunstall Black Horse on a Cherry Tree (because DH calls me Katie and I loved when Kat McPhee sang that song on American Idol). I was talking a mile a minute at radiation and am usually a very quiet person. I was not expecting today to really hit me like it did. After I was still kind of giddy and high, but when I was in the changing room, tears just started streaming down my face. And it totally hit me as I was leaving and a blind gentleman was entering with someone helping him for his first tx. I showed them how the gowns were all set up in the changing rooms and wished him luck and told him I just finished txs. Went out, met DH and rang the bell as I was leaving. Got a round of applause from the people there. I hope it helped someone. Then went out to lunch with my sister and DH, and the partying is continuing tonight as we're going to a Black Thorn concert and going out to dinner on Sunday with DH, DS and DD. DS has to work tonight and tomorrow night. This almost rival's my DD's week long b-day celebrations.
This was so long winded, thanks for letting me get it all out. I think because I still have to go back to cancer center through May every three weeks for Herceptin, it wasn't going to feel like a very big deal to me, but I was surprised by all the emotion that came out. And I choose to believe I was leaving just at 11:11 on 11/11/11. That has to be a good omen. I'll share the good luck with all of you.

Finishing Rads was unexpectedly emotional for me to! I thought I would be skipping out of there but, cried my whole way home in the car.... I think it was the beginning of everything that I had gone through starting to sink in!

Wow...........mussles are the best....................always try to get Prince Edward Island mussles......they are the best..........I make my own, and I love them.............and good crusty italian bread for dipping...............yum

I used to think I didn't like them but, turns out what I didn't like was mussels prepared badly!!
Had some in an Italian place here last year and they were to DIE for..... My husband played around with recreating it and I think his recipe is pretty darn close.... I don't know what all he puts in but, the broth is slightly creamy, garlicky and with a touch of spice...
The crusty bread is a MUST to get all that good sauce. Mmmmmm! I think I just drooled a bit....lol0 -
Agree, the best part is the crusty bread dipped in a garlicy butter wine sauce- Never could aquire a taste for mussles for some reason, I love clams though.

I, too, love Prince Edward Island mussels, the only mussels I've ever eaten. DH and I visited PEI in 2007 in our rv. We were in a campground and a neighboring camper was a man who "farms" mussels. He was cooking them and brought us a big bowl. They were delicious and I had them several more times while we were on the island. I also sampled the PEI oysters, but they were very pricey.
I see mussels occasionally in the supermarket but haven't bought any to try cooking them myself. Maybe I will!
We had eggplant casserole out of the freezer for dinner with a delicious green salad.

I have been having severe bone pain for the last few months mostly in my femur and surrounding areas finally got into my onco yesterday and had scans today, funny, because even though i have always been the emotional type, ( I cry at commercial) LOL! I have been even more emotional than usual lately,l, dont know if this is connected, but I cry at the drop of a hat lately, I'am sure it is nothing, but still, it makes me nervous. Would appreciate the prayers or good thoughts. ))
Tomorrow we are driving down to see my Dad for his 77th BD,. It was Wednesday but getting together with the family this week-end. With doteing over my dad ( As I always do) It should take some of my anxiety away and hopefully get results by tuesday.

congrats Kay.. i don't want to cook tonite.. i've had it with cooking all the time and have a busy day. I'd be sooooooooo okay with not eating anything but the forces need sustenance and of course dining out is out of the question since we are on the endless budget.

Thank you everyone for all the kind words about finishing rads. Still surprised how emotional it was since I'm still doing Herceptin for 6 months. I cry at movies and sometimes even commercials but I'm usually stoic about these treatments.
Debbie, sorry you're having anxiety. I am sure that the overwhelming majority of the time it's not cancer related. But anyone in our situations would get scared. I am sending you all good thoughts and prayers and keeping fingers and toes and even eyes crossed. (((((hugs))))). We'll all be waiting on the results with you.
Will be thinking of everyone doing rads. Best advice I got was to apply lots of lotions and bring it with you to tx to apply right after before getting dressed. I got burnt but with my fair skin I count myself lucky it wasn't worse. I think that people who say fair skin isn't more likely to burn are just trying to make you feel better. Half the doctors told me that and half told me the opposite.

After I finished rads, traveling from Westford, MA to Winchester, MA every day 31 times, I felt lost, it was a strange feeling. I did get a Certificate. I loved those people. I found out a while ago my RO was dx with ALS.

Laurie08: Okra is kid of tasteless...a fibrous vegetable with little seeds, and it tends to get slimy if not cooked properly which is why a lot of people hate it. If you bread it and fry, or if you combine with sauces to add flavor it's quite good. It is also used in gumbo dishes in the south, and served over rice. Personally, I can eat it cooked with a little butter and lemon, but not many can.

Kay - congrats, my surgery sister, on finishing rads. Phase 2 of treatment is over. Get through the hercpetin and you are DONE.
Debbie - Hang in there. I know how thoughts always go to the worst outcome possible, which usually is not the case. Sending lots of positive thoughts your way for a good outcome.
For my Pickety Place pals - I just made an awesome grilled cheese sandwich using my handy, dandy bacon press. Every time I use it, I think of you gals and how you all waited so patiently while I waited in line to buy it.
I'm in a baking mood today. Trying out a recipe for triple ginger cookies. It's my first attempt to replicate ginger cookies, I brought back from Bermuda, a couple of years ago for DB#2 - a real ginger afficionado. I bought the cookies at a little gift shop in the Bermuda Craft Market near the Royal Navy Dockyard. They came 6 to a pack and had a label with the baker's name and phone number. My brother loved the cookies so much, he actually called her to see if she would ship them to the US. She said she couldn't. I had a friend pick up a dozen packages, when she went on a cruise, at the end of August. I froze them and have been doling them out to him 1 or 2 packages at a time. I'm down to my last 2, which I'm saving for taste testing comparison against the ones I make. DB2 is the best brother in the world. He does so much for me. If I can figure out how to make these cookies, he would be thrilled.

Made the upside down pizza casserole tonight. It got a thunb's up from everyone. Now I have to decide the next recipe here to try. If DD wasn't so picky, it would be a lot easier.
