    Cookies  came out ok, but not exactly as expected. They definitely have a strong ginger flavor, but came out thinner than the picture and took a lot longer to bake. The ingredients on the cookies I got in Bermuda said vegetable oil and sugar. I've never made cookies using vegetable oil. The problem is, I have the list of ingredients, but no amounts. The recipe I had called for butter and brown sugar. I used margarine and brown sugar. Maybe next time, I'll try them with vegetable oil and white sugar.

    Hauntie- No wonder the cookies were hard to make!  I applaud you!  Even with measurements mine usually turn out horrible.

    Kay- I got a recipe from my neighbor for pulled pork.  I have never eaten or like pulled pork- ever- till she made it for us.  It was nice and sweet and not fatty at all.  You just put a pork tenderloin in a crock pot with a can of diced tomatoes, a can of water and some salt pepper and garlic to taste.  Slow cook it all day.  remove from the pot and shred with 2 forks.  Mix in sweet baby rays BBQ sauce (until it looks right to you- depends how you like it and how big the roast is.)  Put on rolls and pop them in the oven to warm/toast.  I top mine with pickles and they are super yummy.  The pulled chicken I did the other night was similar, but much lighter as it used seasonings instead of actual BBQ sauce and was done on the stove top.

    Sweet Baby Ray's is a crowd favorite here as well!! Although my husband is partial to Dinosaur Bar-B-Que's (a restaurant in Syracuse for those not familiar with it) slathering sauce.... It's a bit more spicy and tart that sweet baby's....

    Debbie - (((hugs)))  hoping that everything is OK!   And yup, 42 miles each way into the heart of Boston, it's gonna be a heluva long seven weeks once I get started.  I am going on Tuesday, but I guess it's just a consult.  Now I am wondering if I'll get started before Thanksgiving.

    Laurie , odd that you mentioned the crock pot.  I made the BEST dinner I've had in a long long time

    I put a large arm roast and some beef bones in the crockpot around 10 AM... added garlic powder, thyme, celery seed, pepper and coriander.. small amounts of each.  and maybe 4 cups of water

    When i came home around 6 pm.. i took the meat out, dipped out most of the fat, added 16 oz of sour cream, a pound of sauteed mushrooms, some beef base  and a 1/2 bottle of red wine.  my daughter shredded the meat (smaller than i'd like but I would NEVER tell her sweet self that).   I served this over wide egg noodles.

    The broth was runny and absolutely delish.. the leftovers will not be so 'runny' as the noodles will absorb the liquid.  Seriously.. i ate the 'broth' for about 20 minutes after eating.  It was so so so good.

    i guess it would be beef stroganoff.  I suppose if I were to serve it to guests I'd make the broth into a sauce with some flour water or roux... but maybe that's why it was so good.

    Tonight I am trying to make calzones.  Vegi for me, meat for the hubby and cheese for the kiddos.  We'll see how they turn out...

    The arm comes from the chuck portion of the steer.  This reminds me, I need to make beef burgundy!  DH's birthday is Friday, maybe I'll surprise him.

    I'm making up my grocery list for Thanksgiving. I will have at least 11 guests. I think a 20lb turkey will do.
    I'll do my cranberry sauce a few days ahead.
    I'm going to make a Cornbread & Apple Stuffing
    Rosemary-Sage Roast Turkey
    Yukon Gold Mashed Potatoes
    For a different twist:
    Maple Ginger Roasted Autumn Vegetables from the Food & Wine Magazine.
    Pumpkin Pie and Swedish Apple Pie.
    My DD Rebekah will arrive the day B4 Thanksgiving to help.
    My Aunt and Sister will make other dishes.
    I like setting the table a day or two B4 also, that way I can make sure everything is there.

    Your dinner sounds good. I usually just bake sweet potatoes in the oven and then add a little butter, I like them that way but woul like to do something more special with them for thanksgiving. Does anyone have a good sweet potato recipe for thanksgiving?

    The beef dish sounds so good.... I have made a shredded beef Italian style inthe crockpot but never thought of using the beef for a stoganoff!

    Love your latest pic!! Your hair is coming in so nicely! But, then again... you are beautiful no matter which style you go with! From bald, to a lovely scarf, to a Cher wig and now just your own gorgeous self, you have rocked it! So admire you!



    Ok... Have to admit to doing something absolutely stupid.... Was making a chicken dish that started on the stovetop and finished in the oven.... I took the pan out of the oven, turned to do something else on the other counter, turned back and grabbed the flaming HOT pan by the handle with my bare hand!!! STUPID mistake and ohhhhhhh I am paying for that.... I have blisters on all of my fingers as well as my palm..... At least the pain has stopped but honestly, how stupid!

    Oh that sounds painful seaside. Hope it heals quickly. I've done that, but never got blisters from it.

    My thoughts and prayers are with you that all is well!! I mentioned the fact that my hips and back are hurting quite a bit to my Onc... He basically said it was because I am getting older not due to Tamoxifen or anything.... I wanted to slug him! But, given the alternative, I'll take getting older!

    I have a fairly high threshold of pain but, must admit, this definitely brought some tears to my eyes.... I have my hand wrapped right now in a cold wet towel and that is helping.... Seems I just need to keep the air off it....



    At least the chicken came out good.....lol

    Seaside- I have done that before, and have almost done it a million more times, it HURTS!  So sorry!  Glad the chicken came out good but a burn is one of the worst pains.  Hope you feel better.

    Michelle- thanks for the cow diagram, lol!  I searched to see where eye of the round roast comes from too, thats what my grandmother (and I Often) make- apparently, we like the rear end.  After years of being a vegetarian I had a hard time looking at the chart!  Tonight, there was someone behind our house shooting a gun, not a hunter but a hand gin and we called the police.  It ended up being a discussion with my older son about hunting deer and meat etc.  He looked at me like I was crazy when I was explaining, hamburgers, hot dogs, chicken, turkey etc are all meat and so is a deer.  He said "yha but the police are coming to make them stop right?" I said yes but just because it is too close to people, it's ok to hunt deer.  He did not think it was ok.....

    The kids loved the calzones, DH and I not so much.  It was very simple tasting and didn't hit the spot.  But the boys gobbled it up so I will chalk it up as a win.

    Deborye - your dinner sounds yummy!  We are going to my son's so I'll be making the cranberry sauce (wish Splenda and sugar-free jello so it sets up nicely), and I'll probably make the tortieres.  He mentioned buying them but I always make them so I don't mind.

    Kay - I usually like to keep my sweet potatoes simple because everything in total seems so heavy.  You could add butter, cinnamon, a little sweetener (maybe maple syrup), mash them up, then top with chopped pecans. 

    Seaside - first of all, OMG how painful that must be!!!  I've done that before but not as bad as it sounds like you just did.  When I take a hot pan out of the oven, I now leave a potholder on top of the handle to remind me to be careful.  It's way too easy to get in a hurry and forget.  You may want to take some aspirin or motrin - some kind of anti-inflammatory.  And be careful of infection.  It's so hard to keep your hand really clean.    And thank you so much, you are so kind!  I have been a bit of a chameleon through the whole hair loss thing.  It has made it kinda fun - keep 'em guessing who is showing up today...lol.  I am lucky that my hair is growing very fast.  Good thing, too, because I'm finding I need to wear a hat out in the chilly weather. 

    Laurie - lol...I thought you'd appreciate the diagram!  I tried to copy and paste it into the text box but it wasn't cooperative so you got the link.  Now you know!!!  Yikes, how do you explain shooting Bambi to little ones???  That's a tough concept for a youngster to understand. 

    Debbie - I hope when I get up tomorrow morning that I see a post from you and that everything is OK!  I look for you every morning and I hope you know we are all thinking about you!

    Michelle- I agree- your hair is looking great and I can't believe how fast it is growing....but the scarves and wigs looked great too- you're just a pretty lady :)

    Debbie- I couldn't agree more with Michelle- I look for your post when I get up inthe morning too, I hope your doing ok and I am thinking of you.  A great big hug from me, I hope you can feel it.

    Kay sorry I can't be of help with sweet potatoes, I am not a big fan and didn't grow up eating them so I don't make them (at my Dh's disappointment.)

    Kay, a friend of mine makes special sweet potato dish for the adult table. She mashes them with a little brown sugar, butter and bourbon.  Very good.

    seaside.. i hope those blisters heal quickly.. last week i stumbled and fell (over a toy airplane) on the gravel and caught myself with my palms.. my gosh they look absolutely awful.  Thankfully, they have pretty much healed and my hands have been fully functional.  i liked to 'dry out' burns at nite rther than keeping them covered... they seemed to heal more quickly that way.. as long as your bedding is relatively sterile.

    I've got my pot roast in the crock pot.  No cooking for me tonight :)  I am fighting off this cold for all I am worth.  At the moment it feels as though it's winning.  Just took some more vitamin C, hopefully between that and a nap with the boys this afternoon and I'll be back in the lead...

    Here is a sweet potato recipe my family loves.  None of us ever really cared for sweet potatoes much until this recipe.  It is almost like a dessert, so yummy.  I have used canned sweet potatoes and the dish is still really good, but using fresh makes it even more delicious.

    Praline Sweet Potato Casserole

    6 cups cooked sweet potatoes or yams

    1 tsp vanilla

    2 whole eggs

    1 cup white sugar

    1/2 cup melted butter or margarine

    Mix above ingredients thoroughly with mixer until smooth.  (Can be made ahead and refrigerated until baking)

    1 cup brown sugar

    1/3 cup flour

    1 cup chopped pecans

    1/3 cup softened butter or margarine

    Mix thoroughly and chill.  Sprinkly on top of sweet potatoes just before putting in the oven and bake at 350 30-45 minutes or until bubbly and browned on top.

    It was so nice all day so DH cooked ribeye steaks on the grill tonight.  I made baked sweet potatoes, corn on the cob and sauteed mushrooms with garlic, shallots and red wine.  We actually sat at our bar instead of in our chairs...lol! 

    Seaside - that is a precious picture!  How are your burns doing?  Hope they are healing well and not causing too much pain.

    Laurie - hope that cold gives up on you and you get some rest tonight.  I need to make something in my crockpot...haven't done that in years.  I have used it to keep things hot when I take chili or soup somewhere, but I havent actually cooked something.  Time to dig up a couple of recipes.

    Rib-eyes are my husband's favorite!  So sounds good to me!  I agree... That picture has become a favorite of mine.. I have a soft spot in my heart for children and animals... 

    Things as far as the burn don't look as bleak today... I only have raised blisters on my index finger and thumb... The rest turned into burned patches but, not fluid filled... Thank goodness it was my left hand and I am right handed...  Tonight was leftover chicken!

    Hope the roast was good and that you can nip that cold in the bud!!! Geez, there seems to be so many various illnesses going around!  I hope this isn't reflective of how this winter is going to go!  I know it is a bit of preaching to the choir but... I have heard from many others that pneumonia (both viral and bacterial) is making the rounds!  With your son just having had a bout with it, be sure that, if you feel this is anything more severe than a cold, that you get thee to the doctor, pronto!

    Seaside- I have to ask- how do I know if it's anything more than a cold?  I am a suck it up kind of girl and only tend to go if it becomes unbearable- which is almost never.  Although, I did go last time at Michelles advice and had a sinus infection....looks like you ladies are taking care of me :)
