    I need to go and visit Princessa.  She lives on a small farm with her husband and his 3 kids.  Sadly he is a stage 4 patient.  sigh.  I bet they have bear skin rugs everywhere.

    I note that reindeer are the cutest animals ever.  I watch Scandinavian and Norwegian cooking shows during my daily nap. .. absolutely fascinating and gorgeous, the countryside and fiords.

    Hello :)



    The reindeer stew it typical for the northern parts of Norway. I live on the south west coast, but my husband is from the north of Norway.



    The reindeer stew is quite simple, we use very fine cut meat, like small thin flakes, i cant find an english word for it. First I fry the meat with mushrooms and onion. Then I ad 2, 5 dl of broth and 3 dl of sour cream, we have one called creme fraiche witch I use. Then it boils for like half and hour. I use 1/2 kilo of meat for two grownups and two children. One big onion, and four big mushrooms. I use juniper as spice in the stew. I put it in from the beginning. I also use dried thyme, parsley and rosemary. And of course salt an pepper if needed.



    Appel; I must say I am impressed by your CIL wow, shooting a bear with a bow and arrow, holy cow! I tasted bear meat once we were visiting my inlaws. It was quite special. It is not common to eat bear meat in Norway.. They bought it in Sweden. :))







    I serve with home made mashed poatoes and boiled broccoli, carrots and cauliflower.

    LuvRVing: I have not strarted chemo yet. The Her2 test was inconclusive and they had to do the FISH test. I`m waithing now to see an onc. Hopefully this week... I don`t wanna waith any longer..

    Rava - don't worry too much.  You had the MX so I'm guessing they got most if not all of the cancer out.  If it takes a couple months before you start, it will be ok.  I had my bmx on 4/7 and started chemo on 6/15.  Once they know the HER status, they can start you pretty quickly.  My KI-67 was also high - 90% - so I understand your desire for things to go quickly!

    I'm going to color my hair now, then I'm going to whip up some chicken parmesan so we can eat at home after my rads treatment.  One of my boys is taking me tonight, giving DH a break.

    Chabba- Thanks, I thought raindeer was the same as deer but called raindeer in other parts of the country. LOL!

    Kay- Oh my, Yes, I would be a little upset too, Kids are more grown-up these days than I was at that age Its the boys you have to worry about LOL!

    Michelle- Speaking of hair, i noticed yours is growing in quite fast, it looks beautiful as do you ;-)))

    Debbie - thanks, I said I was going to set the new Guiness Book of World's Records for fastest hair growth...lol.  It is coming in fast and now that I colored it again, it looks a lot thicker.  I'll put up a new picture tomorrow.  Doing the color out of the box reminds me, again, why I paid to have it done in a salon.  It makes such a mess!  Good thing I changed to an old t-shirt!  This time it came out a darker brownish red, even though I used the same exact brand and color as the last time.  I'm definitely liking the red, though.  I have two nieces that are redheads, so it's in the family palette and goes with my green eyes. 

    Well, chicken parm isn't happening because I would have had to make marinara along with everything else.  I thought for sure I had a can of my favorite Hunt's sauce, but nope.  So chili won out today and I'll make the chicken parm tomorrow. 

    My DS should be here in about 30 minutes to take me to Boston.  He'll be happy there is chili, I'll send a few containers home with him. If only he'd bring back the empties...lol!

    OMG apple!  I wonder what polar-brown bear tastes like?  They are beginning to mate due to warming.  Laurie, I hope you are feeling better.  Rava good luck with  chemo, the ladies here will walk you through it. ,I had to have that test too and it turned out negative/OK.  I wish that I could visit your country!   I have missed a lot of posts and feel like I can never catch up so sorry if I missed anyone!  I am having Tomato Bulger Soup from the Moosewood Restaurant cookbook.  Soup Soup Soup!  Geez, I may be taking a 4-6 month job in SD to make some money, as there is no money in RI, that's for sure. :O

    Michelle- My Grand-daugter has red hair, so did my Grandmothers must be the irish in us. Do you have a wee bit of irish in ya? LOL!  Glad your son is helping out, I'm sure your Dh appreciates it too ha!

    Bedo- Yumm tomato bulger soup sounds good, I love to crush up lots of crackers in my tomatoe soup so yummy! Sorry things are so slow there in RI. Can't wait for the economy to get better!

    Welcome Lifelover and Rava.  I am with Michelle, would love to learn some international dishes.

    Today was stressfull...took my 77 yr old mom for an angiogram at one of the lg hospitals in rochester, and the cardiac surgeon said her aortic valve was severly diseased and needed to be replaced ASAP.  My mom being the stubborn person she is was pleading with the Dr. to let her go home and wait till after Christmas. I said that since I was the driver of the car, I was not taking her home, that she had to stay and get it done.  I know how scared she is, but I am more scared to have her walking around like that, where she could just collapse and die.  So surgery it is tomorrow at 6:30 in the morning.  Her birthday is the 13th, so I told her that her present was a new heart.

    I had the best pizza soup at a restaurant last week...really got to investigate to get a recipe...yummm.

    Carrie- My dad had his aortic valved replaced about 3 years ago, he decided on the tissue valve which is animal tissue,instead of the mechcanical one. Although it took him some time to recover he is doing wonderful now and looks and feels better than he has in ages. Your mom is in my prayers for a safe a speedy recovery.

    Carrie - good thing you were in the "driver's seat" with that decision.  Will be thinking about you and your mom tomorrow. 

    Today's trip took the whole 3 hours, there was a bit more traffic on the way home than we were encountering with the later time.  It didn't help that it was raining.  Apparently there might be some ugly weather tomorrow evening which could make for some fun.  I saw the RO today (that's an every Tuesday thing) and they took some interim xrays to be sure everything is still properly lined up.  So far, so good. No skin reactions, no nothing yet. Five down, 25 to go.   And my DS showed up right on schedule to take me, so DH didn't have to cut short his workday.   He'll drive tomorrow and my other DS is on tap for Thursday.

    Joyce - supper sounds yummy, I need to cook a roast pork next week.

    lifelover and Rava- Welcome!!  I agree with the other ladies, it will be fun to make this thread international, I am excited to see you both here.  I think you will have fun with us, we talk about food alot, obviously, but we also support each other in any other way that anyone may need.  Rava- I hope you get your results soon and that they are good news, we're here for you.

    Kay - Surprised  I would be a little nervous with that too!  Sexy?  Females have such pressure in society to be it all and the girls I think feel that pressure earlier and earlier in life.  I am sure she's fine as you are har mom.

    Carrie- Wow that is a rough day, I hope Debbie's post helps give you confidence that all will be well.  Yet it must have been hard today to hear the news and then get your mom to do it.  I hope all goes well and your mom ends up feeling like a million bucks inthe end.  ((((hugs))))  And pizza soup- that sounds interesting, you should investigate!

    Apple- great picture!  I have a girlfriend who just took up bow hunting, she hasn't gotten anything yet, but loves it. 

    Bedo- what is tomato bulger soup?

    Michelle- I hope rads went well for you tonight again, despite the drive in the rain.  You are so ambitious trying to make dinner for when you get back!  You remind me of my mom in those ways :) Love the red hair idea- it looks great on you and I am happy it is coming in so fast!

    My day was....well it was a day. I worked this morning for a couple of hours, hit the grocery store, picked up the kids and went to settle them in for nap and my oldest started coughing and his breathing became really poor. I called the Dr and they told me to bring him to the ER. So- I brought my youngest to my in laws and headed to the ER, I didn't know if the ER was necessary but I wasn't going to question it either. So we spent three hours at the ER, he has pneumonia again and a double ear infection.  He behaved awesome the whole time we were there and made things so much easier. He was so silly and not acting sick at all, it was kind of weird. So we get out of there and head to the pharmacy where they don't have the liquid steroid they prescribed for his breathing problems. I have them call the other pharmacey's- nope. I have them call three that are not chains of theirs- they don't have it either. They said they would have it by 9 am tomorrow. Great. Went and picked up my youngest and headed home. We got back after 6, fed them chicken nuggets and fries from the freezer, got the warm mist vaporizers going in both rooms, ( the youngest is sick too) and dosed them with some benedryl to help with all the drips down their throats and runny noses and coughs. Did I mention DH was in a meeting all day and had to work late? I still haven't eaten dinner. But it is now quiet in the house.  Time to pick up and get organized and figure out food for me.  Back to the Dr for the boys 2/4 year old check ups at 10.  Thankful everyone is ok, I am ignoring my sore throat and stuffy nose and pouring a glass of wine Tongue out

    Carrie, thoughts and prayers for your mom. That is certainly scary, but I'm sure she will feel much better once she has recovered.



    Laurie, I am so sorry your guys are sick again. I hope they are feeling better soon (and you too). I don't know how your son was coping with a double ear infection. That had to be painful.



    Michelle, hope the weather isn't that bad for you tomorrow. It is wonderful that everyone is pinching in to drive you.



    Joyce, your dinner sounds good. You're lucky that your DH is a good cook. Mine is, but he gets home too late from work to cook.



    I think my DD's line is more a comment on what she hears on tv than what she really feels. She has a crush on Justin Beiber. None of her group of friends has a boyfriend yet, thank God. She has a winter semi formal dance next month, but all the girls are going together. Gotta take her shopping for a dress and high heels for that soon. She does wear makeup though as of this year, and she is much better with it than I am. I think she is going to take 20 years off my life this year.



    We had rib roast for dinner with sweet potatoes, broccoli and salad. The meat was a little chewy, but had good flavor.

    Welcome to newbies.  Great to have you join us.  I ate bear steaks a long time ago.  DH and I were wintering in Vermont and working at Bolton Valley Ski Lodge near Waterbury.  We lived in a rented mobile home located in a lovely little spot with three other mobile homes.  Our dining room window looked out on a small waterfall, frozen solid in the winter.  One neighbor killed a bear and hung it up in a tree.  Outdoor freezer at that time of year.  When he butchered the bear, he gave us bear steaks.  We cooked them and ate them.  All I remember is that they were a little chewy. 

    Tonight was a layered one-pot dish with pork country-style ribs on the bottom.  Next a layer of sliced potatoes.  Top layer was sauerkraut mixed with chopped celery and caraway seeds.  Seasonings were onion powder, garlic powder, s & p.  Cooked in the oven in a dutch oven.  Pork was tender and delicious.

    Laurie - Jeez - you and your boys have had way more than your fair share of  illnesses recently. Hope the little guys and you are feeling better soon and the nasty little germies get tired of hanging around your house.

    Laurie- Sorry your little one has pnemonia again, Sounds like the antibiotics they used before didn't help, did they change the antibiotics this time? Just wondering I know when my DD had pnemonia at a young age they changed her antibiotics and it helped. Take care of yourself too!

    I found the chocovine at Bi-Mart of all places, went there to buy distilled drinking water and happen to see it while walking by, It taste just like bailey/s put some in my coffee and it was very good. They were out of the raspberry but will buy that next. 

    Carol-That pork ribs with saurkraut sounds really good, how long did you cook it for?

     This recipe is from Belguim, thought it might be fun to try differnt foods from different countires, dosn't sound too different from what i have made, but sounds good, havn't tryed it yet.

     BELGUIAN CHICKEN

    Belgian home cooks make many hearty one-dish meals using beer as the cooking liquid. Use Belgian beer if it is available in your area, otherwise use a full-flavored beer of your choice.

    Belgian Chicken Braised in Beer (Kip en Bier, Poulet a la Biere)

    4 to 5 lbs (1.8 - 2 Kg) chicken pieces
    Salt and freshly ground pepper to taste
    1 Tbs (15 ml) vegetable oil
    1 Tbs (15 ml) butter
    8 whole shallots, peeled
    12 - 18 large mushrooms, trimmed and quartered
    3 cloves garlic, finely minced
    1 tsp (5 ml) sugar
    4 carrots, cut into 1 inch (2 cm) pieces
    2 Tbs (30 ml) all-purpose flour
    1 - 12 oz (340 ml) bottle Belgian beer
    1 cup (250 ml) beef stock
    1 tsp (5 ml) dried thyme
    2 bay (laurel) leaves
    Finely chopped fresh parsley for garnish

    Season the chicken pieces generously with salt and pepper. Heat the oil and butter in a large, heavy pot over moderate heat, and brown the chicken pieces on all sides. Set the chicken pieces aside, and to the same pot add the shallots and mushrooms. Saute for about 5 minutes, until lightly browned, and add the garlic and sugar. Cook for 1 minute, stirring constantly. Add the carrots, and sprinkle the flour over the vegetables. Stir to incorporate the flour with the butter, making sure there are no lumps. Add the beer and the stock, stirring to dissolve the flour and to scrape the bottom of the pan. Add the chicken pieces, thyme, and bay leaves, and simmer covered over low heat for 30 to 40 minutes, until the chicken is tender. Remove the cover for the last 10 minutes, allowing the sauce to reduce by about one third. Serve sprinkled with chopped parsley. Serves 4 to 6.

    Laurie - hope you all slept well and your son is feeling better soon!  Like Hauntie said, you guys have paid your "sickness" dues so I hope you catch a break!

    Debbie - that chicken recipe looks quite yummy!  I've never seen a recipe with 8 whole shallots, very interesting.  Is this a bit more like a stew?  It sure seems like it, and would be a nice dish for reheating after we get home from rads.  I think I'm going to make this early next week.

     yesterday I made sweet potatoe casserole to go with a pork roast - which will be turned into a burrito thingy tonite.

    ..  give me a star, i rarely fix sweet potatoes and they are so good for you.

    Debbie : I dont make much of the traditional norwegian food. The traditional food is for Christmas.

    But there is one dish I really love. It is lamb and cabbage.. Very simple. The meat used is the shoulder of the lamb as chops. The cabbage is cut in boats. Then it is all put in an big pot starting with one layer of meat, salt and hole peppercorns, then a layer of cabbage, salt and peppercorns. Is use quite a lot of pepper. And so it goes until the pot is full :) then add 5 dl of boiling water. Boil for at least 3 hours under lid. When I make this I make a lot :) served with boiled poatoes.



    For Christmas we eat dried salted ribs of lamb. It is cut into chops. It has to lie in water for 12 hours to take out some of the salt. Then it is slowly bolid in a pot with birch sticks in the bottom of the pot. The meat should not come in contact with the water. It boils for at least 3 hours or until the meat comes of the bones. Then it is put in the owen for a quick grill. Served with a mash made of carrots and kohlrabi and boiled potatoes. In other parts of the country ribs of pig is the most popular dish on christmas. Big ribs are roasted in the oven. Served with traditional sausages and meatballs made from pigs meat. Poatoes and sauerkraut .



    In the northern parts of Norway there are many traditions with dried and salted fish. Mostly cod and pollock. Many different types of herring dishes are also popular among the older generations.

    Rava- My husband loves lamb, maybe I'll give it a go next time it's on sale, thanks for sharing!

    I have no idea what's for dinner- I have chicken...salsa chicken?  Chicken and stuffing?  I am not feeling too creative.

    ginger, sesame oil, soy sauce, garlic, then add sliced oriental cabbage, mushrooms and cilantro.. serve with lime and chilis

    The reindeer steak sounds lovely :) we do eat steaks from reindeer, deer and moose. But it is very very expensive...
