    Kay- Oh kay, im sorry you have to go back on herceptin, and saying prayers for you that your heart will return to normal.

    Joyce- What a sweetheart of a DH you have, bringing you coffee in the morning, when i use to be a pepsiholic and it had to be with lots of ice, he ran to the store and bought me one, thats been years though when he was still in lust LOL!

    Michelle- I was afraid that was going to happen once you started further along in your rads, i hope it dosnt get worse. Your DD sounds like an amazing person, i can see why you are so proud of her. I checked out that mac/squash recipe it looks good if that is the same one it will give it a try sometime.

    Seaside- I love phyilly cheese steaks, i would of put peppers on mine normally but was out of them, plus put it on ciabatta rolls instead of hougie rolls so i guess it would just be steak sandwich LOL! I love the recipes, they look so easy and good to make, i use to make pretzle sticks dipped in choc on one end and white choc on the other end they were good but messy these look so much easier and the kttly on the first one is soooo cute.

    Ducky- I would love the marinara sauce or (gravy) recipe, there have been some good ones on here but i always like to try new ones. 

    Bedo- I missed the bear story, how scary, We went to a wild life safari place in winston, oregon a few years back where you drive through in your car. all the wild life roam around freely, we drove through a bear area, my DH had been fishing a few days before so the back of his pickup smelled like fish, about 4 bears were trying to get in the back of our pickup, the safari guys had to come chase them away, they were huge i was almost crying LOL!

    Im going to make the belguim chicken tomorrow after hearing it was good, couldnt find belguim beer but bought somthing that sounded germain, couldnt understand what it said but it was dark, hope it will taste ok.

    Okay - so I haven't been back to this thread to post!  Surgery, 11/28, BMX with SNB and TE went well.  Tinal pathology = clear margins, clear nodes.  No rads, no chemo YIPEE!!!

    I did not get signed up for the cooking class, but I have been experimenting.

    FIRST:  4 7 lbs of fudge.  Started at 30, but there was an ingredient mix up (bought too much), store would not take return, so I made more.  Ha...it's all gone. Packagaed in 1 lb gift tins and distributed to my 22 employees, a few friends and some very lucky family members.  Nothing special, just off the label of the Jett Puff marshallow cream jar.  AWESOME!

    SECOND:  Fondue.  We ate at the Melting Pot a few years back and bought their recipe book.  I have produced about 5 different fondue's since surgery.  All but one was a smashing hit.

    TONIGHT: Creamy Bacon Pasta with Coffee Spice Rubbed Scallops, courtesy of justapinch.com OMG .....so good.

    Toss 1 tsp ground coffee, 1 tsp salt, 1/2 teaspoon brown sugar, 1/4 tsp garlic powder, 1/4 tsp onion powder, 1/8 tsp coarse ground black pepper and 1 pinch corrander.  Pat dry and roll scallops in mix.  Cook 1 lb bacon until crisp and crumble.  Cook scallops 2 minutes each side in the bacon grease and set aside.  SAUCE: 1 1/2 c heavy cream, 3/4 c paremesan cheese.  Simmer milk, add parmesan. 

    Toss  al dente angel hair pasta in cream sauce, add bacon crumbles and stir. Plate pasta and top with scallops, garnish with parsley.

    Serve with warm garlic toast and your favorite wine....

    OMG - hubby says "you don't need cooking classes, just access to great recipes!"  This was a good one.

    Shechirple- So glad you are back and wonderful news you dont have to have chemo or rads, that is just awesome!!

    I checked out that site and it has fabulous recipes on there, i have tons of recipe links and have not seen this one before, i found the pasta/scallop recipe and it looks so yummy, i copy/pasted it. It made my mouth water.

    I Make a fantasy fudge with the marshmellow puff, also a peanut butter fudge the same way only i use peanut butter chips and a few xtra spoonfulls of peanut butter, I get so many compliment on both.

    Shechirple, wonderful news!  Congrats on being done tx! I have a fondue pot, but never use it because I just don't know what to do with it.  Can you post your favorite fondue and what you dip in it.  I would love to do something chocolate for Christmas, because I can always have cheese and crackers too.  (I am showing where my taste buds gravitate, aren't I?)

    SheChirple - woohoo!  So glad the surgery went well and there were no nasty surprises!  And while I understand why you might want to attend cooking classes, I agree with your DH that you know your way around the kitchen.  OMG - 47 pounds of fudge???  My dad used to make the cocoa fudge recipe that was on the back of the Hershey's cocoa tin.  Being diabetic, I don't make that stuff anymore.  I used to make pralines at Christmas and they were oh, so good. 

    I had a recipe (if only I could find my notebook full of newspaper clippings - it's probably in an unpacked box!) for a fondue that used a lemony chicken broth to cook an assortment - beef, shrimp, meatballs, chicken, mushrooms, cherry tomatoes, etc.  I made this a few times back in the early 70s when fondue pots were all the rage.  I don't even have a pot anymore, but I've been to the Melting Pot a few times and enjoyed it.  I think it's a great way to have a "conversational" dinner party for just another couple or two.  You get everything ready in advance and then you can just sit down and enjoy the meal.  Maybe I'll buy one after Christmas.

    Debbie - yup, my DD is amazing, to have gone back to school fulltime and finish her degree at the age of 31. I think it took this long for her to figure out what she really, truly wanted to do. She got a fantastic job offer (about $6k over the average offer for new grads in her field) with a CPA firm and she will proceed with getting her CPA after a short break from school. Maintaining that 4.0 GPA really paid off for her!

    I used to have a fondue pot years ago, when i did i made mostly chocolate (duh) and a beer cheese one. they are fun like Michelle said if you have a couple or two to share with. The only problem i had was when people doubled dipped- Ewwwe that kind me me nausaus.(I have a weak stomach) LOL!

    Made a tuna salad for lunch today, using lettuce leaves instead of bread.

    SheChirple  congrats on the good news, sounds like you did awesome after surgery.  that pasta recipe with scallops sounds amazing, will give it a try.  and thats a LOT of fudge, ny sister always makes that same recipe.

    Michelle, you must be so proud of your daughter, glad she figured it out and can now live her dream.  It makes me feel good to see my kids succeed, not to mention the fact that they can support themselves.

    The thread has been so busy I am having a hard time keeping up lately!  Between trying to finish our basement, moving old furniture around, getting new stuff, Christmas agh!!  I am having a hard time keeping up with everything.  But the basement is 95% set, I just need to buy some more kid bins.  New couch came today and I washed all the area rugs and rearranged everything.  Did about half of my Christmas shopping this morning after I worked for a couple of hours.  Phew-  almost there!!

    I think tonight is left over ham and cheese and rice.

    Tomorrow is food shopping for Christmas!  I am looking forward to Christmas but also kind of looking forward to when it is done and we get into the quiet hibernation of winter and nothing going on.

    oh- fondue!  When I was kid chocolate fondue was a special treat.  On my birthday when I would have a couple of girlfriends sleepover my mom would do a chocolate fondue for us with strawberries and bananas and I don't remember what else?  I just remember I loved it and thought my mom was super cool to do it.

    Laurie- You are so busy all the time, i dont know how you keep up! I bet your house is starting to look amazing Now after what you went through. Are you and the kids feeling better?

    I did my christmas shopping Last night we will have a Glazed ham, fruit salad, scallop potatoes, yams, broccoli casserole, coconut cream pie. Everything will be small portions this time (not like Thanksgiving) Dh will work part of the morning on christams, then off we go to the community center and will serve the homeless and the needy,DH is in charge of all the food this year, the casino is donating all of the food as well as some of the food vendors my DH deals with. We still have to buy some blankets and coats to take down there for those who need it, I also clean out my closets and take those there too. Then we will come back and have a quite dinner, just the two of us, we do get invites but prefer this year since family is busy working we let our friends have there family time.

    Laurie, you do always sound busy.  We would never be able to do the basement ourselves, even with no little ones.  I am sure you will have many years of enjoyment down there. 

    Debbie, you impressed me again.  What a wonderful thing to do on Christmas.  It will bring you many blessings.  And your quiet dinner at home sounds wonderful too.

    Having a cup of Chai Latte from the Kuerig we bought last week.  It is supposed to be a Christmas present, but we have been using it since we got it. I never had Chai before.  It is very good.  Going out to dinner in a couple of hours with some old friends from high school.  It's always a great time when we get together.  Have a nice evening everyone.  Thanks for the tips on the fondue.  Is it special chocolate you have to use?  Where do you buy it at?  The strawberries and bananas sound good, and maybe some pretzel rods.

    anyone who actually eats beets is a super star.  they freak me out, they taste so awful to me.  I remember my beets as a child.. taken in cubes from a can and boiled for 2- minutes.  ick.

    Carrie - you're right, I am very proud and happy that she can support herself much better than ever before.

    Joyce - so is your DH practicing for Iron Chef or Chopped???  He's really cooking up a storm!

    We had tacos tonight after getting back from rads #15.  Yes, halfway done!  Today the RO showed us a diagram that had all the different tangents and how they are hitting my different areas (supra-clav, chest wall and mammary nodes).  I get 12 different zaps and it's interesting to see how they worked it out to miss my organs.  The skin in the mammary nodes area is going to take a bit of a beating, but that was the trade-off to miss the organs.  I'm a little itchy and using cortisone cream.  He also wants me to take benadryl before bed so I don't scratch in the middle of the night.  He is so nice, I just love him!

    Apple - have you ever eaten at Jess'n Jim's in Martin City? They give beets to everyone...yuck!

    Hi All, I never posted in here before but I cried the other day.... During the holidays I always make turkey pot pie with veggies.. Until now, I used to use Campbell's Cream of Chicken and Cream of Mushroom soup for the sauce... I looked at the label Cry It is full of soy protein and soy protein isolate!!!! Bummer... the nutritionist was appalled when I told her... she said make the cream of chicken soup from scratch... that way you know what is in it.. She also said she was going to tell Campbells what she thought of their ingredients..  Just an FYI... I used alfredo sauce instead LOL.

    Hi GMAFoley- Welcome, Glad you could join us, you will have a great time here, and get some good recipes, ohhh i just noticed you are from Roseburg, im not to far from you about 2 hrs. Hmmm that is a shame on the  campbells soup products, maybe a call with help- I bet the alfredo sauce was good thought LOL!

    Kay- We did that last year too, but my grand-daughter was staying with us for 2 weeks and we took her, she really enjoyed it, now that she is home in Georgia with her mom and dad, this year she said she bought a bunch of toys for kids and took it too the firehouse/ Im proud of her. Have a fun night out the your old friends, sounds like fun.

    Joyce-What a great place for that big beautiful tree to be, i bet it is so happy to be in full view showing off LOL!  Wonderful idea!

    Michelle- Aweee Oreo is so cute!! adorable. I had to laugh at you and Apple on the beets statement, i hated the as a kid but love them now, but not boiled i eat them cold right out of the can.

    Kay..............................have had a Keurig for 2 years.....................love it, love it, love it..................have never had Chai, will surely have to try it..........................whose brand do you buy ................I get all my coffee from Bed, Bath, and Beyond...............they are the cheapest...................$11.99, but then you get the 20% off..................I love the Khalua

    I almost forgot to mention the chicken braised in beer- OMG! It was so good, not kidding i loved it so did DH! Such good flavors and the carrots and shallots brought out a little sweetness to it. I thought the 8 shallots would be too much but it was not at all, Put in extra carrots. What i used was 3 large skinless, boneless chicken breast and 4 chicken thighs, One thing i added to the recipe was a can of peeled whole tomatoes and a little extra flour to thicken- cooked for an hour and took the lid off and cooked for another 40 minutes. I def recommend this, would be good over rice or noodles too as laurie said, will do that next time when were are off our diets.

    Oh and i liked the thighs better because the boneless, skinless chx although was still good was a little more stringyer.

    Gma, thanks for letting me know about the cream soups, I just read a recipe that you can substitute this mixture and add to any recipe that calls for cream soup.  It is:

    2 tbsp. butter, 2 tbsp. flour, half tsp. salt and 1 1/2 cups of light cream.

    I am making the famous green bean casserole.

    stage1 - I use a sauce like that for casseroles all the time.  I often add garlic and onions, chopped or sliced mushrooms, a bit of soup base (a paste like bullion but less salty)

    The chocolate fondue is easy peasy.  A couple of cups of semi-sweet choloate chips (or mix with peanut butter chips), and 1/2 - 1 cup of sweet cream.  melt in the fondue pot.  Cut up marshmallows or use mini marshmallows, bananas, strawberries, angel food cake cut into small squares.

    I have a whole book of recipes for fondue.

    LuvRVing - what an adorable pci of the dog with Santa.

    Tonight was chicken cordeon blue (cheat) : Large full chicken breast, boned.  it has a natural slit to stuff with sliced deli ham, rolled with swiss cheese.  Tuck it in the slit.  Hold in place with toothpicks.  Roll the chicken "ball" in italian seasoned bread crumbs and bake at 350 for about 35-40 minutes.  Lay another slice of swiss ontop and bake for 3-5 min more, just to melt the cheese, but not brown it.  Serve with honey mustard mayo for dipping, and baked potatoe with sour cream and chives.

    Apple, you should give beets another chance. First of all, get fresh ones, not the canned kind. You can boil and peel them, then dress them with a sharp mustard vinaigrette and top with lots of parsley and some toasted pine nuts. But you can also peel them and grate them and add them to a grated carrot salad. They are also good roasted in the oven with other root veggies. Greeks eat them just boiled and peeled and with skordalia (garlic dip) on the side. That is also good.

    GmaFoley, as someone else posted just make a plain white sauce. It is not hard and it can be made with milk insteadof cream as well and even with part broth and part milk.

    i make my kids eat beets.. offer them to them and they love them.  I pretend to like them as i swallow them.  i think that's a pretty good sacrifice to the food gods.

    Ducky, I am still trying a lot of different coffees. I liked the two wolf gang puck ones I tried. I think one was Hawaiian blend or something and one was breakfast blend. I had the chai latte again this morning, but now I think it's a little too sweet. There is sugar already in it. I will try the khalua. Let me know if you have any other suggestions. I got mine at the bed bath and beyond on Baltimore pike in Springfield. I am guessing you go to the same one. I was there yesterday. I am baking some cookies again today and taking veggie chilli out of the freezer for dinner.

    Apple  funny on the beets...my mom always served them and I think I ate them but now havent had them since being on my own...guess they didint make that big of an impression.

    Going to Syracuse to pick up my daughter from the bus station.  coming home from NYC for the holidays.  then my son arrives on Friday from Ohio and life will be good!!

    Never tried to make a chicken pot pie...my DS made me one when i was going through chemo...mostly so my DH had food, and he loved it and wants me to get the recipe and make it for him, but I just cant get past the smell of it since chemo...one of those flashback memories.

    Going to a "hump night" Christmas party tonight...it will be an appetizer dinner.  Must stock up on the groceries with the kids being here.  We bought a prime rib roast for Christmas dinner.
