    wow, you all have been busy this morning, i guess i will have to start getting up earlier, with 2 pages i cant keep up LOL!

    minustwo- You can also still make lasagna, just use gluten free noodles, and gluten free tomato sauce, you can still have the cheeses and everything else you put in it- Or a chicken parmesan, they have gluten free flour.

    Watching the pioneer woman make a 9 hour sauted mushrooms- seems a little long just for little ole mushrooms.ha!

    Zumbagirl- So glad to hear from you again and wonderful news on finishing your Rads- Congrats!

    Carrie- Snickerdoodle cookies! Never heard of them either I also would of thought some kind of candy bar,LOL!

    Deb- Do you have butterflies because you are excited or scared about flying? I'm a terrible flyer, one of those white knuckle flyers, i start getting nausuas (sp) and anxious about a week before flying, my DH leg is bruised by the time we land, one time we hit a big air pocket and the plane dropped quit a bit and i was the only one who yelled out 'holy shit" people laughed at me but i was so scared LOL!

    Enchilada Casserole

    Casseroles typically have to be modified in gluten-free cooking, but not this one. I am sure every gluten-free cook has an enchilada casserole recipe. This is the one I use. I like this recipe because it does not rely on store-bought sauce.

    I got this recipe from an excellent cookbook, Pomegranates & Prickly Pears: Flavorful Entertaining from the Junior League of PhoenixEnchilada Casserole I changed the amount of sugar and salt that the original recipe contained. I find that the addition of black olives makes the recipe saltier, so I decrease the sodium content.

    This recipe serves 6-8 well! It is an economical main dish option for casual entertaining. I serve my casserole with a salad and fresh fruit for dessert with white chocolate lime sauce.

    enchilada casserole Enchilada Casserole

    ENCHILADA BAKE

    2 lbs. ground beef, ground turkey, or soy crumbles

    1 onion, chopped

    1 garlic clove, chopped

    2 Tablespoons of chili powder

    2 teaspoons paprika

    2 teaspoons cumin

    3 cups tomato puree or tomato sauce

    1 4 oz. can diced green chiles

    1/2 cup chopped black olives

    1 teaspoon salt

    1/2 teaspoon of sugar

    12 corn tortillas

    Vegetable oil

    2 cups small curd cottage cheese

    1 egg, beaten

    8 oz. Monterey Jack, shredded

    4 oz. Cheddar Cheese, shredded

    Directions:

    Preheat the oven to 350 degrees. Brown the meat in the skillet; drain. Add the onion and the garlic to the ground beef and cook until the onion is tender. Add the chili powder, cumin, and paprika. Stir in the tomato sauce, chiles, olives, salt and sugar. Simmer for 15 minutes.

    Soften the tortillas in a small amount of oil and drain on paper towels. Mix the cottage cheese and egg in a small bowl.

    Layer 1/3 of of the ground beef mixture, 1/2 of the Monterey Jack cheese, 1/2 of the cottage cheese mixture, and 1/2 of the tortillas in a 9×13 baking dish. Top with 1/2 of the remaining ground beef mixture, the remaining Monterey Jack cheese, remaining cottage cheese mixture, remaining tortillas and remaining ground beef mixture. Sprinkle with the Cheddar Cheese and bake for 30 minutes.

    we;; my fam loved the polenta as usual.. My appetite is a bet screwed at the moment.. has been for a while.  I do love grits too tho, with butter, salt and just a bit of pepper.   I can't get my fam to like them too much.

    Had a yummy dinner, mussles and tomatoes and shallots and everything and fresh bread. I'm a pig. And yes, I did invite him back to my place for some tea. and fire. in the fireplace.  I had my cats and dd's poodle and my landlords to protect me.  He is very nice, So stuffed. :) Kiss on the cheek and off you go, till later in the week.

    I had breakfast for supper, omlet and a bowl of Cheerio's.  DH had leftover pizza.  No sense in shopping since we are leaving Tuesday.

    bedo, never tried mussles, I used to like steam clams but for some reason I don't like them anymore.

    Bedo, your date sounds nice. I only recently became a fan of mussels, but I love them now in the red sauce. And ducky was right, the prince dwarf island ones are the best. And I do love fresh bread too. Just got back from the Christmas party. Had some salmon, a nice salad (she made it with Kent's sweet vidalla onion dressing and it was good), a few chocolate covered pretzels (I think they are my favorite food in the whole world) and a blue moon beer. Can you tell I enjoyed myself? It was nice.

    Ok ladies.................stop..........mussels, my favorite, salmon, favorite...........and I ate a 1/2 of a left over hoagie from lunch with my son yesterday...................oh it was good, a tinge "cold", but very tasty after it soaked in the fixins and the oil..........................but not what you gals had........boo hoo, ...............hugs.

    Bedo- Glad you had a nice dinner date, must of went well if there is a second date (woohoo) Not a fan of mussles but love clams in a garlic butter sauce.

    Kay-Sounds like a great party,was the dressing Ken's dressing? I love all of the dressing he has out!

    I made the cheese enchaladas for dinner, they were delicious, topped wiht shredded lettuce, green onions. sour cream and avacados- 

    Im watchng Desperate housewives of beverly hills right now, they are at a chippendales dance, boy i would to do a lap dance on those guys in a minute, LOLLOL! Seriously they are cute!

    I am going to try that enchalada recipe.  I had been making them with the canned Las Pamas sauce.  But this sounds healthier, thanks bedo!  But tonight we had stew.  It was extra yummy, this is a secret from my DH...I put about a teaspoon of tumeric in it, along with some dry red wine...extra black pepper...made it really different, but really yummy...I would have had seconds, but I had broke my plateau this morning and dropped a pound!

    i settle for drained, fancy, whit,e albacore tuna out of the can, on healthy toast, with olive oil, pickles and toast for my seafood indulgence. 

    While we are quite comfortable, 'We' are ever on a budget, struggling to stay afloat while the cost of lighting a room with a light bulb soars.  My DH is a bit of a nut.  He is building a Kemper Arena type building in the back, but can't stand to use electricity, heat the house, or run water.  "Money spent on utility bills is money out the door.. it is not an investment!!!!".    He does indeed keep ME comfortable tho.. I'm just making fun of him.

    The polenta casserole was actually very good.  I used a little less cheese and added a bit more water (inadvertently to the polenta mixture)... it was light, creamy and flavorful, rather than a heavy sodden mass of cheesy, creamy indulgence which is usually what it is.

    There are a ton of polenta casseroles on the internet google.  I really like them.. they can be easy, of any denomination, travel well and get gobbled up.  The godsend for me was microwaving the polenta and here is an explanation.

     I prefer a bit denser polenta for the casserole recipe, so you can actually slice it.  I just let the polenta sit a bit longer and add a bit more grain to the water/cornmeal mixture.  The cornflour with the black woman on the package will not work.. it is way to fine.  you really want to find the real polenta with a course granular feel.  (you can always make it into grits or feed the birds if you don't like it.

    I like Mussels but love clams.  One of my "benchmark" Italian restaurant dishes is clams with red sauce over linguine.  I like it a little spicy.  I also like fried clams, steamed clams, clam chowder, well...just about clam anything except raw. 

    I am not a fan of polenta, strangely enough.  Or maybe not that strange as I don't like grits, oatmeal, or any of those wet grain cereals.  I do like cornbread, so it's not the corn I object to.   I am also not crazy about tamales probably for the same reason.  I guess I know where my kids get their objections to certain food textures!  When I was a young child, my parents tried to force cereal and milk on me, and I just couldn't eat it.  First of all, I don't like milk (that's one thing that has stuck with me throughout my life) and second, I couldn't deal with soggy cereal. 

    Joyce - that's quite a smorgasbord you had last night!  We had popcorn!  DH had brought home subs about 2 p.m. when he returned from shopping and they were just awful.  Neither of us felt like a big dinner so popcorn was the "filler" of choice.  I'll bet shopping yesterday was crazy.  We went out late in the afternoon to the Hallmark store and Christmas Tree shop and both were mobbed.  Then we drove over to the Shaw's in Windham (even though we were next door to another one earlier) because it's never crowded.  I didn't have it in me to stand in any long lines or push my way through a crowd of shoppers.  I'm glad most of my shopping is done, and now my wrapping is all caught up, too.

    Today my DD, SIL and grandkids will be here for dinner.  I'm cooking a standing rib roast, garlic mashed potatoes, green beans with shallots and bacon, and a roasted pear salad. And I will bake some sugar cookies made from refrigerated dough. The kids won't care that I didn't make the dough, and I may wait until they get here and let them help decorate the cookies if I have the rest of dinner under control by the time they get here. My kitchen is so tiny!

    Stage1 - interesting additions to your stew! Could you actually taste the turmeric? If I added that amount to my stew, I would think it would get lost. I do usually add extra pepper because we both like it. And congrats on breaking the plateau!

    Deb - Bon Voyage!!! I hope you have a wonderful time and the weather is gorgeous for you.  The 10 day forecast calls for temps in the upper 60's to low 70's.  I'd gladly take that right about now!

    Yes, typo, it was Ken's sweet vadaia onion dressing.  It was really good.  I am going to go buy a bottle.  She had a bag of spring mix lettuce, some cubed up apple, dried cranberries, feta cheese and walnuts.  I am a salad lover, but it was delicious.  And it looked really pretty too.

    Stage1  that is my question also  what does tumeric taste like.  I take it in a capsule...supposed to ward off cancer recurrence...and it says you can open the capsule and use as a tea?

    Making a big pot of chicken noodle soup today...soup is the only thing that taste good to my mom and my DH will love it as well.  Also making butter cookies, cutouts, for the parents.  My daughter wants me to wait to bake till she gets home to do it with me.

    Deb...got some room in your suitcase?  It was only 10 degrees this morning!!  Sun is out though, so hopefully it will warm up.

    Typed up this recipe for a friend. Thought others might enjoy it. It's one of the cookies in my Christmas cookie tins.

    Oatmeal Chocolate Chip Cranberry Cookies

    1 c (2 sticks butter or margarine - softened)
    1 ¼ c firmly packed brown sugar
    ½ c granulated sugar
    2 eggs
    2 tbls milk
    2 tsp vanilla extract
    1 ¾ c flour
    1 tsp baking soda
    ½ tsp salt
    2 ½ c quick or old fashioned oats
    1 12-ounce package mini chocolate chips
    1 c dried cranberries

    Heat oven to 375

    Beat together butter and sugars until creamy. Add eggs, milk and vanilla; beat well. Combine flour, baking soda and salt and add, stir well. Stir in oats, chocolate chips and dried cranberries. Drop by rounded tablespoonfuls (or use a 1 or 1 ½ in. cookie scoop) onto ungreased cookie sheet. Bake 9-10 minutes. Cool 1 minute on cookie sheet; remove to wire rack. Makes about 5 dozen depending on the size scoop you use.

    Bar cookies: Press dough onto bottom of uncreased 9X13 in. baking pan. Bake 30-35 minutes.

    Yes, the seeded cookies do have sesame seeds on them. The recipe is really simple. I'll post it when I get a chance. You form the dough into little loaf shapes, then roll them in sesame seeds. They look like miniature loaves of Italian bread.You can find these cookies in just about any Italian bakery.

    Deb - Isn't making people jealous one of the 7 deadly sins? Oh - wait a minute - that's envy. Guess a trip to heaven is not in my future. Laughing Have a wonderful time and enjoy every minute of your Bermuda Christmas.

    Having an interesting time here. I was supposed to do an overnighter at my Dad's last night. When I showed up, the housekeeper was wearing her coat and my Dad was all bundled up. There was no heat. She had texted my DB#2, who called the gas company. They were supposed to show up between 6 and 10 p.m. DB#2 ends up coming home after his afternoon at the theater. (He saw La Cage Aux Folles in Boston and said it was fabulous.) We wait around for the gas company and they show up about 7:30. Bad news - the brand new gas furnace needs a part, which they don't keep in stock and will have to order. The office is closed Saturday and Sunday, so they can't order the part until Monday - which means no heat until probably Tuesday. I pack Dad a bag and DB#2, who was supposed to have 2 nights off from Dad duty, takes him to a hotel. I don't have anywhere for him to sleep in my 3 room apt or I would have taken him home with me. I called DB, this morning and told him  that I could take Dad during the day today. I have a heat, a recliner and a tv, which is just about all he needs. Dad was still sleeping. DB said he'll see how things go. Dad has dementia, so being away from home is tough on him. Being with him at home can be tough on us. Staying with him for 3 days in a hotel is going to be really difficult. I told DB to drop him off with me, before he reaches the point of total insanity. Haven't heard back from him yet, so Dad is either still sleeping or things are going better than expected.

    Merilee - welcome. Most of the posts are really about "What's for dinner?" I don't cook dinner very often, but do a lot of baking, especially around the holidays - so most of the recipes I post are for sweets. I recommend eating the cookies as an appetizer - less guilt. Plus, it takes the edge off the hunger and cuts down on having to eat all those veggies.Wink

    Thanks Lynda,  I'm ready to leave DH home.  I told him that I was not going to pack for him, so what does he do?  Just throws things into the suitcase, what a double dumb ASS.  So of course I went and folded everything so there would not be a mass of wrinkles.  Then he starts taking shirts that he has not worn in ages and throws those in.  Of course I took them out to wash them. GRRRRRRRRRRRRRRR

    Then he starts arguing with me about my cell phone.  When we get home I have to call George the owner of the car service to let him know we are off the plane so he can get in the parking spot cause you can't stay in a spot for a certain amount of time.  DH says you don't need your cell they have phones you can call at the airport.  STUPID idiot, I have Georges phone number already programed into my cell, why the hell would I have to use the phone at the airport. OMG!!!

    Deb - I agree with Joyce!!!  My DH learned to pack for himself years ago, tons of business trips taught him to take care of himself on this point.  You really are caught between a rock and a hard place...either let him look like a slob or fix it all before you go.  Ugh!!! 

    The roast is in the oven, the pomegranate vinagrette is made and the pears are roasted.  The potatoes and green beans are ready to cook and the table is set.  I am just a model of efficiency today!  I'm taking a break before I cut up fruit and veggies for the fussy grandkids.  And oh, they are going to decorate the cookies I baked this morning.  This should be fun, I'll take some pictures.  They should be hear in about 30 minutes or so if they left on time.

    Deb- I agree I was laughing all through your post- sorry your DH is being a pain in the butt!  Sometimes men can be shockingly dumb.

    Michelle- your dinner sounds wonderful!  Enjoy the evening!

    I am pooped-we were out well past our bed time last night and had to take a cab home do to lack of control on both my DH's part and mine, lol!  We both decided to drink.  But we stayed safe and had fun and still got our acts together and finished our basement today.  Carpet is laid and tomorrow we move our old living room set down and get a new sectional for the sunroom on Tuesday.  Why we are doing this right before Christmas- I have no idea.  I was planning on doing my shopping on Tuesday but now have to stay home and wait for the couch.  Ohwell- it will all get done at some point.

    I am about to put a ham in the oven and make cheese and rice to go with it and green beans.  We will go to bed happy , full and tired :)

    So funny Deb, I know exactly how you feel.  I refuse to pack for my DH, he does travel for business, but yet he is a lousy packer.  He always forgets something essential, yet packs 3 pairs of shoes for a weekend trip.  It drives me nuts, but it is on him.  One time he forgot underwear, one time he forgot socks, on a cruise, he forgot a tie, the best was when we went to my BIL's for a weekend and he brought two sneakers, both of them for his left foot!  He got lucky that time because his brother loaned him a pair of his sneakers for the weekend.  I agree, try not to kill him.  You're in paradise, soon you'll be enjoying yourselves.
