So...whats for dinner?

Devine - did you like the Raos ?? My BFF thinks it's too "sweet", but it is definitely my 'go to ' sauce.
Eric - I appreciate the "gloveless" in these temperatures.
I cooked Lacey's Cod dish with onions, mushrooms, green & red peppers & asparagus. One of the neighbors (late 60s) was finally cleaning his house after his 93 years old mother moved to a nursing home last spring. He doesn't drink so he came by to bring me most of a case of wine that his Mom had ordered on line- and since I had cooked two Cod Fillets, he stayed for dinner. Sad to say that most of the wine is Chardonnay (definitely not my favorite), but there are at least a few bottles of Cab.

One of my neighbors had to put his Mom in a 'nursing home' last year. He called me yesterday to see if I wanted a case of wine that she had ordered from the Columbia Valley since none of his family drinks (including the aforesaid Mom). Well why not? Unfortunately most bottles were Chardonnay - definitely not my favorite - but there were 3 bottles of a very drinkable Cab. I'll share the Chard wealth with some other neighbors. Because it was 7pm on NY Eve, he hadn't eaten and I was sitting down, he stayed and ate one of the cod fillets. Glad I'd cooked two!! And the asparagus worked REALLY well in that dish.
I'm not a child of the South, but I've been here more 3/4 of my life and can use all the luck that's out there. So Black Eyes Peas are simmering. I decided to go vegetarian with no meat and threw in extra onion, hatch green chilies, Campari tomatoes & garlic. Luckily I have some left-over cabbage from my experiment last week. Salted caramel brownies just came out of the oven. Since it's the New Year - sheets in the wash, thank you notes are written and now I plan to just sit & read - which likely means taking a nap.
HAPPY NEW YEAR to everyone. Looking forward to hearing about all the good NY eats.

I *was* going to go outside and get some of the yard cleaned up. But, it's raining and the wind is blowing 20-25mph. Apparently it's just a bit too warm to snow. I guess I'm a fair weather "cleaner-upper". :-)
Happy New Year to everyone. I hope 2023 is a good year for everyone.
Sharon and I went to the gym last night. The place gives members a key-card so it's available anytime. There was just one other person in there. I'm sure after today it will be a bit more crowded for the next month. That reminds me of the joke about a gym, named Resolutions. It opens January 1, and on February 1, it turns into a wine bar.
Tonight will be the last of a batch of black-bean vege burgers and tomorrow will likely be some pumpkin soup.
I remember watching my grandfather make sauerkraut in a huge crock. He'd shred a few heads of cabbage, add some salt, shred some more cabbage and add more salt, until he had shredded 30-40 heads of cabbage. He'd then use a large wooden stick (looked like a baseball bat) to pound the cabbage. He'd spend about an hour doing all of this. I used to not like sauerkraut, which mystified my grandfather. Fast forward to around age 35 and I suddenly liked it. I use my grandfather's method, but I only make batches using 2 or three heads of cabbage. I used to keep some around, but since we've moved, we have run out of it.

Minustwo, I thought the Rao’s was pretty good, definitely a thumbs up and am glad I tried it. However, altho I didn’t mind paying the higher price to see what it’s like, I’m so used to the taste of the sauce I usually buy that, since it’s a lot cheaper, it’ll remain my go-to.
I made the cranraspberry-champagne punch today and it was good. We watched the Nashville New Year’s Eve show last night which I thought was great and I forgot all about Miley Cyrus. Taking it easy today. I read not to do laundry on the 1st of the year so saving that for tomorrow! We’ll watch the Steelers play tonight; I think the game comes on around 8-ish. My pork and sauerkraut smells great; will be eating soon.

Happy New Year, Aussie; may 2023 bring you healing and renewed appetite!
At Regalia last night, finally got to meet Judy (our own Keywestfan) and her DH Gil. She is tall, slim and utterly gorgeous!
Regalia decided to add specials, rather than do a prix fixe menu. There were 8 of us, so I'm not going to list everything (especially since I couldn't hear what those at the far end of the table ordered). So Bob & I shared apps of house salad plus wild boar over polenta. My entree was the special bison filet mignon over purple mashed potatoes, with aspargus and bone marrow. The chef knows how much I love truffles, so he shaved a bit over my filet! I ate half of mine, but the busboy apparently didn't understand my request to pack the rest (I also said "to take home"). So when our server came back to the table to take our dessert orders I asked where my leftovers were--she went back to the kitchen and the chef prepared a whole entree for me to take home (we'll share it tonight). Dessert was the chef's special of an entire poached pear on vanilla foam with fig gelato.
When we walked back home, everyone was too full to even consider nibbles until after we toasted the new year--at which time we had some pita and baba ghannouj. (Sonny & Joe's, from the kosher section of the grocery--made in Williamsburg, Brooklyn--even better than the stuff made at Middle East Grocery).
Today for brunch we had what Bob brought home yesterday for the party. We started with osetra, whitefish roe and salmon roe (I had mine straight up, while Bob had his on blini and water crackers). Next was shrimp cocktail, followed by a large Greek salad. Still too full to consider what to make to "pad out" the leftover bison/spuds/asparagus/bone marrow--logically, make more asparagus for both of us and give Bob the spuds. For one last "cheat," I will reheat the remaining 1/3 of the L.Woods phyllo-dough apple pie roll as dessert.

Large dinner early afternoon. DDIL made a pear cranberry crisp for dessert which we served with vanilla ice cream. Delicious! She also brought a large container of her delicious dried cherry scones. DDIL makes the BEST scones. Lucky us!
Dinner will be light - canned cream of tomato soup and grilled cheese sandwiches.
Happy New Year my friends

Last night was a lovely petite filet topped with grilled shrimp at our local Ruth's Chris steakhouse. They had a prix fix menu for New Years Eve along with other choices so the amount was " just right."
Today was low key, with Church, lunch, nap, then a simple dinner - my crockpot sloppy Joe's ( from the freezer) and a large green salad with lots of vegetables chopped in.

The New Year's Day dinner went uncooked. DH started running a fever on New Year's Eve day and this has been a house of illness. He tested negative this morning for Covid. I suspect either flu or a return of his urinary tract infection. We will try to get some medical attention today.

Oh Carole - so sorry to hear that your DH is under the weather again. Good luck getting into a doc today.

Do keep us updated on your DH, Carole. I'm sorry you are dealing with this.
We had the shrimp with gigante beans that turned out great. Tonight, we'll finish the lamb.

Carole...I. too, hope your husband can get seen today.

Hi all - Happy New Year to everyone! I have enjoyed reading up on all the posts I have missed, and my NY resolution may have to be that I get it together and post here more often! I don't know what has been up with my prolonged absences - naughty!
NY Eve was a non-event at my house, I watched pre-recorded cooking and HGTV shows on one TV, and DH watched football on the other. I often watch football as well but I had enough at that point. Neither of us watched the ball drop or any NY Eve shows, which is unusual for us. We also had no champagne, but as is traditional here in FL - there was gunfire and fireworks, but not by us! I will never get used to that! DD and her beau came by for a little bit early in the evening - she had been out to the barn to apply a dressing to her horse's hoof trying to leach out an infection. So far, seems to be working.
divine - my MIL always made pork and sauerkraut for the New Year, she was from Lancaster PA - definitely a thing there. My FIL was from S. Connellsville, just outside of Pittsburgh. Independently of that geographic connection, I have been a Steeler fan since high school - the days of Terry Bradshaw, Frenchy Fuqua, John Stallworth, Mean Joe Green, and the recently late, great Franco Harris. I like several jarred sauces - usually buy Rao's only when it is on sale, but I do like the sausage and mushroom one particularly. I like to augment with additional sausage and mushrooms. I also like Paul Newman's marinara because it has less grams of sugar, but also tastes good to me. I have a recipe for Florentine manicotti crepes and always used it for that.
DH made a pork butt in the Traeger yesterday, it was a large one and we will have pulled pork until the end of time. We wisely put a bunch in the freezer for later, but there is still quite a bit. I think we will have cauliflower crust pizza tonight, but the pulled pork tomorrow night - I have to take the dog to the vet and manage to get a urine sample from him beforehand. Picture me chasing him around the front lawn with a red solo cup first thing tomorrow morning... I have to do a few other errands tomorrow also, so I will be up for an easy dinner tomorrow night. I made some baked potato salad as well - dressing is mayo and sour cream, salt & pepper, scallion, and bacon, and the potatoes are baked instead of boiled.
minus - when I have those small whole salami I like to cube up some of the salami and make a salad with greens, tomatoes, olives, cubed mozzarella, the salami, and garbanzo beans - basically like a traditional Italian chopped salad - with a vinaigrette.
carole - hope your DH is feeling better asap!
aussie - hope you are feeling/eating better soon as well!
chisandy - how fun that you got to meet a fellow BCO member! I cherish the opportunities I have had to do that!
May 2023 be good to all of us!

Oh Carole, your poor DH can’t catch a break. Hope it can be resolved quickly. Sending healing wishes to you.
Tonight is a rerun of yesterday’s dinner.

Great to hear from everyone. Happy New Year again!!!
Special - I'll try the Paul Newman's marinara - however I usually do stock up on Rao's when it's on sale. The Italian salad sounds good but I'll probably end up giving the salami to my ex-DH since it's one of his favorite things.
I froze the leftover veggie enhanced marinara from Lacey's Cod dish since my unexpected guest ate the extra Cod fillet. I'll have that later in the week. Also froze the brown rice w/ 7 ancient grains. Later this week with a chicken breast from the freezer. Still trying diligently to eat what's already in the house. So instead of my original plans, tonight I had leftover sauteed cabbage & carrots with bacon. Just as good as originally & more than enough for an entire meal. Probably black eyed peas tomorrow since I don't think they'll freeze well. Then finally, I can get to the french toast with REAL San Francisco Sourdough bread.

Carole, bummer that your DH is sick again. Negative test notwithstanding, re-testing in 24 hrs might be a good idea.
We went out to L.Woods tonight because Bob wanted the Monday special turkey dinner. I really didn't feel like going out, but I wasn't going to let him drive to Lincolnwood alone because he'd be drinking with dinner. (I stuck with club soda). I had the "simply broiled" whitefish with a side of steamed broccoli. Finished the fish (which was excellent) but took half the veg. home. Bob cleaned his plate.
Not doing anything remotely carb-y for the time being--just too depressing to have my clothes not fit right.

Pork roasts were on sale again (half the price of chicken) so I'm roasting another pork roast.
I also am battling a pantry moth infestation. I got some food grade buckets with lids and have put the rice and flour in them. It's quite a bit below freezing and I'm hoping the cold will kill the critters until I can get rid of the $*$&&&$)$*$ things.
Snow this morning at 7am but all gone by 10am. Sharon went skiing and she said there was a enough snow on the road to "make it interesting". And this is from someone that grew up north of Syracuse, NY.

We are having all the leftovers we can. I think tomorrow I'll use up the last of the gigante beans and make a sort of "shakshuka" with eggs for the protein.
I'm already getting depressed that winter is pretty much done here. Pollen will hit us soon, sun will be out more...waaaaaaaaaaaaaa . I sure hope we get at least a few more weeks of cold temps.

Dinner was simple tonight. Baked cod with just EVOO and salt/pepper, green beans and mashed potatoes. 😋

No dinner tonight--no appetite. PCR-tested positive today and Tylenol is barely making a dent in my fever. It's all I can do just to force myself to hydrate. ("Stuff a cold, starve a fever" is the maxim we were taught back in the day). This is the worst I've felt since my parapertussis back in 2019, perhaps even before that. At least the cats can eat (but Happy keeps doing the ol' "scarf & barf" thing, which is a challenge since I won't have any household help till Monday--and that's if my HK doesn't come down with this. Ugh. On Paxlovid now--hope it kicks in soon, like it did last year. NP says this is definitely XBB.1.5--cases are exploding.

Yesterday was Taco Tuesday, yummy! I did also smother some sausage with leftover cabbage, trying to use up New Year's Day dinner leftovers! We also have some black eyed peas leftover as well.

chisandy - oh no! Hoping the meds kick in soon, so sorry you're feeling rough.
I took our elderly dog to the vet yesterday - meeting DD there - for his semi-annual check. The process took longer than I thought it would, and it was right at noon, so I ate a late lunch. I wasn't hungry for dinner but did feed DH a wedge of the leftover cauliflower crust pizza that had pulled pork and BBQ sauce, as well as a bowl of black bean soup. I ended up eating a handful of butter snap pretzels later on while chatting on the phone with BFF.
DH has already started the countdown to retirement even though it is 12 months away, lol! Last night when he got home he said "this is the last January 3rd I have to go to work" which is hilarious, he is going to do that for the whole year, lol! A few years ago we had a conversation about the fact that he didn't take enough vacation time and I made him take some each month and we went somewhere, sometimes near and sometimes far. I need to figure out some ways to do that again - like short out of town local trips in contactless Airbnb places - to get through the year. We put an offer in on some land in the mountains in CO and plan to build so we have a summer escape from the relentless heat here in FL, and so we can spend time with our DS there in retirement. Getting that started will likely involve some travel to work on those plans.
This morning will involve some grocery shopping, but I am lacking any specific inspiration regarding dinner. I feel like we need to have a big main dish salad, so maybe a chicken Caesar...

Reading back, over many many pages! But only a few comments to add. I'm still in MI, flying out tomorrow. I'll spend the night, as I don't want/like to drive in the dark, and head home Friday morning.
Eric, how ironic about your DD getting off the plane I was about to board. I think we left between 12:30-1:00.
I had to look up Hoppin John, never heard of it. Sounds good tho.
Divine, no burgers? I think you are the first person I've ever heard say that! I used to do brisket in the crock pot. Last year I pressure cooked it in my Ninja. OMG was it tender. Love your New Year tradition of opening and closing the doors!
Wishing you all a good 2023!

Oh Sandy, so sorry you're looking at this again. Hope the paxlovid does it's job quickly.
Carole - how is your DH doing?
Tonight is tikka masala from a jar (Trader Joe's) with leftover brown rice, leftover rotisserie chicken and added veggies. And of course naan - the main reason DH likes the meal. I'm in low-effort meal prep for a while.
Goldie - I normally cook a brisket in the pressure cooker but this was a whole one, albeit trimmed, and wouldn't fit. The most superior results I've found however, is with the sous vide followed by smoking on the grill. It takes a very long time though so not for if you're in a hurry.

Goldie - great to see you here. Hope your trip back is without any problems. I agree - a night in PHX makes sense.
Special - I never thought about pulled pork on pizza. I bet it would be good on Naan bread too. Funny about your DH's retirement expectations. Congrats about the CO plans.
Two more things to use in the fridge before pulling more stuff out of the cupboards & the freezer. French toast tonight with REAL San Francisco sourdough that I carried back on the plane so it's nicely 'stale'.

Feeling a lot better today but still sort of crummy (like last January's bout of Omicron). The Paxlovid is kicking in, and i did get a full night's sleep last night. Cats running me ragged but at least I'm regaining some energy to deal with them. I'm not looking forward to having to dump out and wash the litterboxes--yesterday I couldn't even make it down to the basement and bend down to do "scooping" duty. We're getting a bit of snow tomorrow, but as long as I don't interact with others I can take the garbage out to the alley. Bob is getting re-tested at 8am tomorrow when work begins--we're both hoping for a normal-length workday, if you get my drift.
I finally ate today. (Yesterday did not feel like a fast). Soft-boiled egg & half a pita for breakfast, an instant keto bone-broth cup of Thai coconut bone broth soup for lunch, and half the order of linguine aglio e olio Bob brought home. Yeah, lots of carbs, but at least I'm not falling asleep in front of the TV during the daytime.

Sandy, good to hear you are feeling better. Carole, I hope the same for your DH.
Mac and cheese with a side of broccoli.

Leftover linguine aglio e olio with broccoli...baaad idea. Delicious, but it didn't play well with my recently-mostly-fasting system. Nonetheless, I took my evening dose of Paxlovid, and discovered Montezuma's Revenge is a common side effect (which I didn't get last year). Couldn't reach my primary tonight, but the on-call doc with NS Immediate Care said to stop it and "call a provider in the morning." I have 2 days left on it and would prefer to tough it out, as most of my symptoms (especially aches, sore throat, fever) are gone. I really fear a rebound because both times I started it on the same day as my PCR test--but though last year that was day 4 of symptoms this time it was just shy of day 2. (I didn't trust the two negative rapid-antigen tests 36 hr. apart).
On the bright side, the kitties seem to be loving the Kirkland wet cat food Bob brought home from Costco. (They stopped carrying the 12-pack of Friskies assorted paté-style).

According to a licensed medical doctor, registered with the US Dept of Transportation to conduct commercial driver medical exams, I am alive. What a relief! This is not something I would have guessed. :-)
Sandy, I'm glad to hear you're feeling better.
Carole, how is DH?
0 -
Thanks for a chuckle for the day Eric. Glad to hear you're alive!!! Are you going to start driving a bus in the mountains as a post-retirement job?
0 -
Thanks for the inquiries about dh. He is showing some gradual improvement and has started to eat very small portions of food. This has been an ordeal for both of us. Remind me not to whine about answering the What's for Dinner? question in the future.
Yesterday I made a beef vegetable soup that tasted wonderful to me. He ate a small bowl of it.
We have an appointment with the urologist NP on Tuesday afternoon. I strongly suspect that the urinary tract infection spread to dh's kidneys because he had severe shakes. These have stopped after a couple of days on the antibiotics.
