I am on weight watchers, but I do try to eat healthy--tonight it was baked cod, lima beans, green beans with almonds, a raw veggie plate and vegetable pasta-. My 30 yr old son lives with me--he is real skinny but I don't think eating healthy hurts anyone.

I just have enough time to pop in.  I have been in conference for work since Tues and this hotel food is gross. All fried mushrooms, fried chicken ,beef tips fried onions and Sprite.  I would get reimbursed for it but I am vegetarian and don't eat fried stuff and don't want it, so I went out and bought fruit, yogurt, bread, cheese avocados and put them all in my hotel fridge. (No microwave)  Am meeting someone from BCO tonight. Talk to you all Fri.  Hope you are all having fun!  It's raining!

No teenage boys or girls here, my baby is 36.  She did have a lot of sleep overs when we lived in Townsend.  It has been so long ago I don't remember what I made them to eat.

Sloppy Joes for supper tonight.  DH doesn't know yet and he better like them.

Last week I made Italian sausage cacciatore with rice, DH didn't want any part of it, so I had it for lunch all last week.  He is starting to get on my nerves, I work M-F 8 to 5:30, he goes to his office, he does E-bay stuff and gets there when he wants, he has the nerve to be picky with what I cook.  Last night he didn't want grill cheese sandwich so I told him, "You're on your own."  I visited my Dad and did not get home until after 8.

LOL, Deb!!!  I have a friend and when she got married, she and her DH had a contest to see who could go the longest before giving in on cooking dinner.  She won...and she now only cooks when SHE wants to!  Talk about a battle of wills!  I think it's perfectly OK to tell your "DH" that he's on his own for dinner!

Our chicken cacciatore was good, but a couple of the chicken thighs weren't quite done.  Surprising because I cooked it for probably 45 minutes, which was twice the time called for in the recipe.  Some of the thigh pieces were pretty big so that might explain it.  The only other things I changed in the recipe were to add 10 ounces of fresh mushrooms because I had them on hand and I knew they would go well in the dish, and I didn't add the chicken broth - there was enough liquid without it.  I served it over brown rice.

Deb, I sympathize. It is so frustrating to cook a nice dinner only to have people complain about it. DH is good, but not so much DD and DS. And I totally agree it's okay to tell him he's on his own. Wednesday's are now my DD's day to make dinner. But I haven't really pushed it too much yet. I hope that if she sees the work and care that goes into planning and cooking, she'll be more appreciative of it when I am doing the cooking. DS doesn't complain, but he doesn't eat much when he doesn't like something, so I can always tell.

Dinner was delicious last night! Had pizza tonight. Ugh. I started back to work part time and with driving DD to dance classes and such, there is no time to make dinner. I have to learn to use that crock pot.

letting your kids cook has its drawbacks.. just saying.

LOL, we'll see, first she actually has to cook. I cooked with her one week and DH cooked with her one. I am anxious to see her do it a little more independently. I don't mind if she makes tunafish. It gets me off the hook one day. But DH said he wants her to actually cook something. We'll see how it goes, but out of curiosity, what are the drawbacks?

I actuallly cooked dinner for myself tonight. I had a couple of lamb chops in the freezer that I broiled, a baked white sweet potato and a salad. A simple meal, but homemade.

I had my pre-op physical for my knee surgery. I WANT MY REAL DOCTOR BACK!!!Cry This doctor was ok, she's been there a long time, but I don't think we click. I found out, from the med asst, that my doctor really did not want to leave, but I guess she couldn't stand the changes they were making to a department she was director of for 20 years. She wasn't the only one who left - a NP and 3 other MDs left as well.

The MD took a look at my burn and gave me some burn cream to put on it. The blister is still there. It hasn't reduced in size at all. I'm just putting on the cream and a bandaid a couple of times a day and keeping an eye on it.

I thought the Sloppy Joes were delish, I asked DH (dick head) if he like them, he said not yet.  You don't want to know what I said!!!  What an @hole.  AND he turns it around like it is my fault, the SOB.  I HATE MEN!!!

Michelle, thanks for posting the site for the chicken cacciatore recipe. Picked up some chicken breasts last night and now that I avoid soy (teriyaki sauces), we'll enjoy a nice Italian meal tomorrow nite. I am too tired tonight to start plowing through all the chicken recipes on the internet, so your post was a gift! Will ask DH whether he prefers brown rice or brown pasta with it. Green leaf lettuce and kale salad will round out the picture. Since I've become a big kale fan, I really enjoy popping some into our regular garden salads.

Apple, you made me nostalgic for the days of having our family room full of 15 year old boys on weekend nights ....so many years ago!

Deb- I am sorry Dh is being a dick head, but I am LMAO!  Seriously, I have not had the best day/night and you just had me laughing out loud, lol will not do!

DS #1 now has the stomach bug and vomited all over the new couch- it has been a long 4 days with this sickness in the house.

Carrie- I am thinking of you, hope you get the BP under control.  I am so sorry for your friend, this cancer crap is just a heartless beast that I hate.

Hauntie- I hope your burn heals well and I am sorry you don't like your new Dr, hang in there and we are here for you.

Kay great idea having your DH cook- though Apple may have a point, I personally haven't crossed that bridge yet.  You'll have to keep us posted!

oh- dinner was nothing- DH just said he had to eat something and order a large cheese pizza.  Apparently in my house the stomach bug equals take out for us, which we NEVER do.  Going to get him to watch Idol with me while we eat it :)

Deb, if you would like either of my two former husbands, they are both available and always ate anything put in front of them. Hogs.  Whoops!  Did I type that?? I honestly didn't mean to. Oh so sorry.  Of course, I will speak to you personally about references.good and bad points.

I can't wait to get home to my little place tomorrow and make soup.  So tired of this hotel. :(

Michelle- glass of wine is in hand!  DS #2 has decided he isn't done yet, both have vomited in their beds twice in the last hour and a half.  There can't be much left in them.

Hell does not consist of fire and brim stone but vomit.  Bleck!

Carberry- I'm so sorry about your friend, god will it ever end- Find a cure now! I use to get headaches on tamoxifin too, i had to quit taking it because of that and severe bone pain, same with all the other hormone pills too.

Bedo- Enjoy your time away, too bad the food sucks, i admire your will power i would of ate all of it, LOL!

Deb- Too funny, yeah, make him crap cakes and bat leaves, that will show him, LOL!

Sflow- Eating healthy can be delicious too, i cant get enough of my cod and veggies some nights thats all i eat.

Kay- I tryed that with my daughter when she was living at home but it was always somthing out of a box, like stroggonoff or somthing terrible so i had to take it away from her.

Hauntie- Maybe you can keep looking until you find one you like, i went through 3 onoc's since i have lived here, not quite 2 years. both first and second ones left to go back to california, i think they didnt like the way things were run, now the one i have now i dont really care for, he dosnt seen up on all the new data, like he dosnt believe in taking a vit D test or tumor markers, he is from the old school, but have no other choices now.

laurie- wow, you sure have had your share of illness to deal with lately, but having small kids that does happen, did when my daughter was little too. Im sure this dosnt apply to you but wanted to mention it anyway. i had a friend who her and her family were always sick, to make a long story short they found out they had black mold in there house and moved, they very rarely got sick after that. Its that time of season so im sure thats what it is but wanted to pass it along just in case...

Yay, i did it, i finally was able to post a picture along with the recipe. Here is a recipe i saw and thought it sounded good, it got 5 stars and great reviews think i will try it this weekend

    Rice and Turkey Casserole

Nutty wild rice gives interesting depth to this simple casserole of cooked turkey, summer peppers, and shredded cheese.

    Prep Time: 15 Min

Total Time: 1 Hr 15 Min

    Makes: 6 servings

    RECIPE TOOLBOX

    INGREDIENTS

    1
     cup cooked white rice
    1
     cup cooked wild rice
    2
cups diced (1/4 to 1/2 inch) cooked turkey breast
    2
cups shredded Monterey Jack or mozzarella cheese (8 oz)
    1
     can (12 oz) evaporated milk
    1/2
cup finely chopped red bell pepper
    1/2
cup finely chopped green bell pepper
    2
     eggs, slightly beaten
    1/2
     teaspoon salt
    1/4
     teaspoon pepper
    1
tablespoon chopped fresh parsley, if desired

    DIRECTIONS

1 Heat oven to 350°F. Spray 12x8- or 11x7-inch (2-quart) glass baking dish with cooking spray. In baking dish, mix white rice and wild rice; spread evenly over bottom. 2 In large bowl, mix turkey, cheese, milk, bell peppers, eggs, salt and pepper. Spoon over rice. 3 Bake 45 to 55 minutes or until knife inserted in center comes out clean and top is lightly browned. Sprinkle with parsley. Let stand 5 minutes before serving.
Look for frozen or canned cooked wild rice at the grocery store.
Cubed cooked chicken can be used in place of the turkey.

Debbie - that looks pretty good.  Canned cooked rice...who knew?  We had Chinese earlier this week and I ended up freezing all the white rice that they included.  I usually toss it, but my grandkids will eat it so I figured it may come in handy.

I have a turkey in the freezer, it's going to have to come out and become dinner pretty soon.  It's taking up too much room!

Laurie - I see from Facebook that the puke fest continued on...hope everyone is better this morning and you were able to get some sleep.

Yesterday I made the slow-cooked beef minestrone.  It is supposed to be a soup but because it has lg chuncks of the beef it is more like a stew.  the recipe is from the wegmans magazine and can be found at Wegmans.com  It was delicious....calls for garbanzo beens but I dont like them so added green beens.  I t made a huge crockpot full, enough for a lg family, all we had was a slice of italian bread with it.

Deb  I like the substitute words for dear husband...I knew I liked you!

Laurie  I forgot and missed idol this week....it wont happen though when they get down to the nitty gritty.  Hope everyone gets better fast.

I am slow cooking a corned beef and will turn it into corned beef hash this evening, by adding diced potatoes and onions.  and cooking it all the corned beef fat... omgosh.. delish but super unhealthy.

Deb- that turkey dish looks pretty good, I have most of it in the house to make too. I might give it a try!

Apple- My DH would be in heaven at your house, he LOVES corned beef hash.  Enjoy!

Carrie- We never got to watch tv last night, but I did record it so maybe I'll get to watch it tonight.  You are right though, not too big of a deal to miss it now in the beginning.

It was a round robin puke fest here last night- insane!  Both boys took turns throwing up until about 2 am.  My 4 year old was a champ though, he never missed the bucket after the couch incident.  The two year old isn't able to do that.  I was changing laundry over at 1 am, it was nuts.  Reminded me why I don't have 3 kids!!

We are all hunkered down for the day and staying in our pjs.  The weather is nasty out there.

Debbie- Thanks for the suggestion about allergies or molds.  I think there is just a lot of sickness going around in our area.  The stomach bug has been going around and just about everything else.  Thats one thing about Facebook, it lets  you know who is sick and what they have at times.  Our house and the sickness has been about the norm- the only thing we have managed to dodge is strep which has been rampant as well...knock wood...

  • LuvRVing
    LuvRVing Member Posts: 2,409

Both strep and the puking fests have made their way through my grandkids, their cousins and all the parents.  They've been sick constantly - at least one of them - since Thanksgiving, I think.  I don't know how I've managed to avoid it all!

Same here everyone is sick, DH said a lot of ppl are calling in sick at work, make him wash his hands the minute he gets home after being in such a busy inviroment, i hate it when someone walks past you in the grocery store and sneezes or coughs and they fail to cover there mouth, argh!!

Soup sounds good in this cold weather i have all the stuff for my "Wedding soup" recipe might try that tonight, i put spinach and kale in mine.

Funny story: I called my Girlfriend in hawaii this morning, Had a conversation with her for about 2 minutes and i said nancy do you have a cold, your voice sounds different, she said, ya know i thought you sounded different too, my name is not nancy and i dont think you are who i thought you were either, she said is this Susan? I said umm i think i have the wrong number but it was nice chatting with you anyway, we both laughed, (in imbarrassment) and hung up!  LOL!

Just got a call from my daughter.  We are babysitting tomorrow night.  Grandkid #2 has strep...LOL!    I told her we'd still come - he'll be on an antibiotic for about 24 hours.  That's probably about as safe as it ever is in that house!!!
