    Bedo- you had me laughing with the shaving comment!  Glad your daughter is doing better. 

    Debbie- great recipe, thanks for sharing!  How are you feeling?

    Michelle- Your day in Boston sounded fantastic!!  I love going to Boston and don't do it near often enough.  SO glad you had a great time!  and yay for camp Grandma!!

    Carol- All the dental stuff sounds so painful:(  Hope your chicken turned out wonderful.

    Apple- thinking of you and hope you are well.

    The kids had a blast at the birthday party yesterday.  However, apparently DS#2 ate too much junk and vomited in his car seat on the way home Yell  Disgusting.  At least he felt much better after he was cleaned up etc. 

    Today is my brothers birthday and he and his girlfriend are coming over for dinner tonight.  He has requested chicken cor do bleu the un healthy way :) corn and mashed potatoes. He asked for chocolate cake.  Oh My Goodness.  I made his cake and it looks like a three year old made it.  I was actually laughing as I was doing it.  Someday I will learn to just buy a cake.  It will taste good, just not be very pretty, lol!

    Laurie, my lemony grilled chicken did not turn out as good as I hoped.  It was my fault for not following the cooking instructions.  Next time I will.  I was pleased that butterflying the whole chicken was fairly easy and so was seasoning the chicken under the skin, even the legs.  I had never done that before even though I've seen chefs do it on tv shows.

    DH thought that placing the chicken over a burner turned on low while the other burners were turned higher wasn't a good idea.  He said the fat would cause flames to flare up and burn the bird.  So we used the grill as an oven without any fire under the chicken.  It came time to eat and the bird was undercooked.   The recipe called for cooking whole lemons that had been cut in half.  You place the cut side of the lemons face down on the hot grill and let them sear for about 5 to 8 min.  Later you use the lemon juice to make a delicious vinaigrette that is served over the chicken for more lemony taste.  I really liked this vinaigrette and will use the recipe again.

    Tomorrow DH will be cooking red beans with a ham bone.  Monday is traditionally beans and rice day in south Louisiana.  You can order it in many restaurants.  He bought a 2 lb bag of dried kidney beans so we'll have a big pot and can share with neighbors.

    Hope everyone had a great Sunday.  It was gorgeous here but the muggies are back, the muggies being high humidity.

    Also, if anyone has any doubt about me possibly exagerating how bad of a baker I am- here is the absolutly UGLY cake I made my brother tonight.  Who- bless his heart still loved it:D

    Laurie, you are too funny! I'll bet you had very little left, however. That chocolate icing looks so delish! This sweet cake needs a title...."smiling chocolate birthday cake with hair aflame!." I always say a prayer or two when I try to assemble and ice a layer cake.... easier to make a square or rectangular one layer cake....more forgiving to ice. Glad your brother's birthday was fun.



    At Newfound now and was stunned at the huge amount of pinecones that totally blanketed our property. Apparently the winds have been super strong recently. I'm glad that pinecones were all that came down! We've been collecting them ....hundreds and hundreds....lots of crafting in my future. :)



    Am concerned about Apple and the others in the plains area. Hope you are safe and that we hear from you soon.

    Seaside- Makes me glad I dont live in the midwest or east coast at times like these I hope everyone is safe!

    Laurie- Oh my gosh that cake looks good to me, You should of seen the cake my made my daughter when she was younger I tried to make a raggedy ann cake and it looked like a frog! LOL! I could just eat the whole thing! Happy birthday to your DB- I am feeling better now I wasn't earlier but slept most the day. How are you feeling I know you were running a little fever?

    Carol- Ah sorry your chx didn't turn out the way you wanted, I was going to ask for the recipe but I guess I shouldnt? Maybe that same vineagrette would be good on just chx breast? 

    Lacey- I bet there are a lot of fun ideas to come up with. with pinecones should keep you busy for awhile!!

    Laurie- Thank you for the reminder, I would of forgot, There are so many good shows on Sunday and I recorded them while I slept, love that I can just go to ON Demand and watch this in fact Im gonna turn it on right now, thanks again!!!

    So Laurie, I'm no great baker but I think your cake looks just fine!. And I am sure it tasted great!   Here's a tip to keep the plate "neat" while you are icing it.  Just put strips of waxed paper around and slightly under the outside of the cake layer to catch any crumbs and excess frosting while you finish your masterpiece.  Then just remove them and "voila" your cake plate is nice and neat.  Or bake it in a 13x9 sheet pan - so much easier - unless you're trying to make a fun smiley face cake!   

     Another tip I just read from "Real Simple" magazine - use regular lifesavers (the kind that comes in the roll, not the ones in a bag) to be your candleholders.  I thought that was a great idea.

    Camp Grandma will be in full session today. The kids are on vacation for the week, DD is not feeling well, and they should arrive around 10:30. It's going to be 90 so I'm sure they'll be enjoying our little lake beach.  Too bad the kids next door are in school, NH's school vacation is next week.  I have frozen fruit bars and ice cream sandwiches, Chex Party Mix and plenty of popcorn.  I think that covers the basic food groups...LOL!

    Laurie  I think that cake looks marvelous!  Doesnt matter what chocolate looks like, it all taste great.

    Debbie the chicken was superb!  but the rice mixture called "ruby rice pilaf"  was horrible!!! Was like a refried bean mixture....very dense, I wont be buying that again.  The veges were good also so made for a very light, lo cal dinner...LOL

    tonight my DH has requested chicken ceaser salad..his favorite. Says he could eat this every day if he had to....I reallly dont think that is true, he would miss his pasta and pizza.Salad is ok with me though because today is going to be very warm and I need to mow the lawn...got rained out yesterday and the dandelions have taken over.

    I think I will make eggplant parmesan for dinner tonight and spegghitti for DH and, can't forget the garlic bread yummm! I guess I got a little of my appetite back haha!

    We had a spectacular day sitting on the boat dock watching the kids play in the sand and water.  They were here for lunch and dinner.  My fridge is now empty of all kinds of "leftovers" and I am in my recliner for the rest of the night!

    I might have chicken caesar tomorrow - already have pre-cooked chicken breasts in the freezer and fresh romaine begging to be used.

    Apple, I don't know what is going on, I'm sometimes hesitant to go over the the stage 1V thread, because it is for stage 1V/  I hope that you are OK. I will be thinking of you.

    I will eat crow for dinner.

    I went to my "pack group" training tonight. I thought I would do "pretty good'  There was a 20 something, a lady about 70 and me.  The 20 something and I kept saying, "I can't dooooooooo this!"  (Shades of your kids, Laurie ?)While the 70 year old was flinging 50 pound weights all over the place. I'm waiting for Peapod to arrive and then I will have yogurt with my crow.

    Apple thinking of you again.  You have no idea how much joy your posts have brought to me.  I love someone who thinks and has been different places. and look forward to them so much.  I hope you are OK

    PS, I used to live in the country and this is the funniest thing I have seen in a while. I used to bring the cows a big bowl of salt.  This is "Jazz for Cows"   Maybe you had to have lived in the country.

    My eggplant parm was really good. When that and the spegghitti is gone I think I will make a chicken recipe I saw in a magazine today at the dr office. It was a coconut chicken with mango salsa- 4-6 boneless, skinless chicken breast- 2 eggs- 1/2 cups of shredded unsweetned coconut salt and pepper. mix the eggs with a little water dip the chx in the eggs then in the coconut- saute in a pan 3 minutes each side in some veg oil. put in baking dish at 350% for 12 minutes.  for the salsa- 1/2 pd of fresh or frozen mangos (thawed) and chopped. 1/2 cup each of chopped red onion and red bell pepper chopped. 3 tablespoons of rice wine vineagar. 2 tablespoons of chopped cilantro  mix together and top the chicken with the salsa. Would be good on fish too.

    I'm fine.. I've off and on in the midwest most of my life and have never even seen a tornado.  I don't like destruction but i would love to see one.

    i got the 'very grave' talk from my onc.  I had radiation for brain mets and will find out May 10th or so if it was effective in shrinking them.  My radiologist is hopeful.. my onc. is not, which is very unusual for her.  my husband chose to make that app't his first.  Felt kind of bad for him.. Even tho I've tried to truthfull convey the seriousness of my disease, I'm sure it was hard for him to hear someone else say things could be 'very grave'.  ... like less than months if radiation did not work.. my poor kiddies.  i don't know what to think but am kind of bummed.

    I'm cleaning and planting some more stuff today.  I've been banned from driving mostly (i drove my daughter to school this AM), because of the possibility of a seizure.. My sons can drive me to my weekend jobs for a bit of a while.    I've been shopping like an addict recently preparing for this time.

    I could think of no better place to be sequestered  than my property with all its peace, birds and now soon to bloom planted plants.  I have a pair of reddish (around the neck) finches that have built a nest in the Christmas wreath I still have hanging by the front door.   If i open the door slowly they won't fly off.

    Thinking of you, Apple, and sending caring thoughts and hugs. Your attitude and courage throughout this unkind and unwanted journey has touched me (and I'm sure others) greatly. I just saw your recent post, and hope the RO is right! Am glad for you that you have such a peaceful property with nature literally at your door.....love the little finches.




    Yesterday we spent some time at the beach and lots of the kids were playing in the water... a rarity for April 16th. They admitted it was pretty cold... but the sun and 80's air was great. Got my deck planters ready for planting in June and collected yet more pinecones! That and our short walk around the neighborhood wiped me out. Carrie, I'm impressed with your stamina!

    Having blood work done when I get home to try to figure out this fatigue. MO mentioned possible thyroid changes from the rads.

    We had just finished watching a movie last night and the power went out in this area....not a rare occurrence (sp?)... and it only just returned.



    Had leftovers last night....Debbie, that chicken recipe sounds great. I'm allergic to mango, but could make it with peaches. You do some creative cooking!

     Apple  Prayers for you a million times over!  Although we appreciate the truth from our onc, someitmes I wish they would keep the negative comments in their heads.  i am going with the radiation onc and praying for reduction. Glad you are enjoying your yard and plants, mine is my own personal sanctuary as well, hoping if we ever sell this house someone will appreciate all my hard work.

    lacey Dont be too impressed with my stamina....compared to what I was like pre BC, I now fade fast. I get so discouraged when I look back at what I used to be able to do.  Also fighting this weight gain, but staying home and not working is killing me. I will be done with schooling in July and cant wait to get back into the work world.

    Yesterday was so hot mowing the lawn ( 3 hours on the riding mower. we have 31/2 acres to mow) My arms and forehead got very sunburned! Today is nice and cool, which I like for working outside.

    Michelle  I love that it was warm to play by and in the lake, that was the perfect thing to do on such a hot day....instead of mowing LOL  but what the saying?  "you gotta make hay while the sun shines"

    Lacey- You could even use papaya's which I love, when I go to hawaii I eat a papaya and yogurt with granola every morning there. I wish I would eat that healthy every morning here at home but it is hard to get good papaya here.

    Dinner is salmon fillet .  I don't really know how to cook it because I started eating fish about 1 1/2 years ago, I think I'll just put  Dijon mustard on it and broil it That sounds about right, ?

    PS I always knew my cat had major issues.  My neighbor just informed me that she left 2 toy catnip mice on his doorstep and asked if they were mine.  Yes they are.
