I am so jealous of the hot air balloons and carrie's boat! Apple, how about a 'slug' day tomorrow?  Nap and read and sit outside and do nothing.  I love those days!

I had breast pain and warmth and inflammation after my pack training,Monday,  but will go back to it.

This is really unlike me. I haven't exercised in decades, don't know what's gotten into me.  I guess I just want to kayak without gettting so tired.

I went to my MD today and she did an US and found no fluid and said, Of course it hurts, it's supposed to, you haven't exercised in 9 months. It's good for you, just don't over do it, So I took my note to my Personal Trainer and will start again with pack training on Saturday am, and for now just do cardiovascular, plus, I got a good high impact bra and she suggested that I put a sock or something in the bottom so I don't bounce and take Ibuprophen.  She did an Ultrasound and said no fluid so maybe I'm just stretching scar tissue, which is good, I guess, So I'm back to the gym!

PS any suggestions for spagetti sauce with mushrooms?  I got 16 oz of them because they were on sale and now don't know what to do with them.  Maybe just saute them in butter and eat them up?

    Thanks

A few years B4 my Mom died, I went with them to the upper state of NY, I think it was Warren, it was an old airport and all the RV's would line up in rows.  Everyone would have cookouts and bring a sorts of food, get up a 5 AM and hear the woosh of the gas for the balloons while they were filling them up to fly in the big field.  It was a beautiful sight so early in the morning cuz it was still dark and the fire from the burners were so bright.  I'll try to find those pics and post them.

The were members of the Good Sam's Club.

We had steak on the grill tonight and I sautéed some mushrooms to go with it, yummy! I started with a little butter and olive oil, chopped garlic and shallots. Then I tossed in the mushrooms and cooked for a couple minutes. I added some Cabernet, a splash of cognac, a couple dashes of worcestershire sauce, a teaspoon of grey poupon, salt and pepper, and a little parsley. Let it reduce then add a bit of butter to finish. Sorry, I didn't measure...lol. I think it's kind of like a steak Diane sauce.

My silly DH just facetime'd me iPad to iPad. We are sitting ten feet from one another...what a goofball!

Lacey - glad your doc suggested some red meat. Despite what people think, it's really god for you, assuming you're not eating it every single day. Let's hear it for mitrochondrial repair!!!

Sally - glad all is good and you can exercise without worry.

Carrie - hope your BP behaves!

Bedo:  I'd just saute those mushrooms w/lots of garlic & maybe a little wine and toss w/pasta.  But I liked Michelle's mushroom "Dianne" idea too.   I also cook corn in the microwave w/wax paper, but I'll try Chabba's method in the husks.  It's hard for me to cook for one after years of recipes for multitudes.  Cakes & Pies don't happen because I'd eat them all.  Cookies might happen if I'm playing bridge or dominos with a group.  I'm trying to get used to more things to the microwave & stir fries.  It's way too hot in Houston to turn on the oven for one potato.

The hot air balloons are lovely.  Carberry - I'm jealous of your boat launch.  Isn't it kind of early for NY?

    Apple (((((hugs)))))

Michelle- LOL at your DH doing facetime :)  And super cool about the hot air balloons.  My mom always wanted to go up in one and my father was afraid of heights.  I worked for a bank doing commercial lending and we sponsored a balloon at a local hot air balloon rally.  My boss came to me and said  do you have anyone who would want to go up?  I swallowed (hard) I DID NOT want to do it and said yes, my mom.  SO I took her up and my dad jumped on last minute (good for him!)  Of course we get in the balloon and my mom says you smell like you had a drink I turned to her and laughed, well yha!!!!  This is your dream not mine, some liquid courage was in order!!  Here is a picture of before we took off- I was about....ummmm...26 I think?

Laurie- Your videos of the boys on FB were so cute can't believe your little one can drive so good such cute boys!

Carrie- Sounds like so much fun on the boat! I have heard of that cookie diet but my problem is I cant just eat one, in fact I have been eating them all day lol!

Lacey- Never heard that word and i wont even try to spell it lol! Hope you liked the marinade, you do have to marinade them for at least 8 hrs or over night i do 24 hrs. I also add extra brown sugar for a little more sweetness.

Bedo- I am glad it wasnt anything serious, but hope the soreness goes away. I like mushrooms in a butter, wine, parsley, garlic sauce sometimes add a little maggi sauce to them which really gives them a burst of flavor but just a bi tit is strong.

Michelle- LOL at your DH! My DH will text me and say whats for dessert. We got some goofy guys dont we? LOL!

I made a good sauce for my haricot verts ( french  green beans) I love these so much better but havnt seen them until this week. The sauce is easy and so delicious and could be put on any veggies or fish or chicken, and even salad.

4 tablespoons of evoo- 2 tablespoons of dijon mustard- 2 tablespoons of rice wine vinegar- 2 shallots finely chopped. wisk all together. very easy, simple and very good. I double this recipe it is still good the next day,

I just had to post a recipe I got in my email tonight I can not even believe it got 4 stars. Its called a twinkie sandwich. You take twinkies and cut a twinkie down the middle then put the cooked hot dog in and pour the can cheese over it. Are you serious?? LOL!

Laurie - that is so cool!  And how wonderful of you to help fulfill your mom's wish!  Liquid courage...LOL!

MinusTwo - I hear you about adjusting down to cooking for one or two.  I learned how to cook for six as a kid, and then there were six of us so I have had to learn to adjust for two.  If it were just me, I think I'd be doing lots of microwaves, frozen entrees, and other easy-peasy stuff.

Laurie After your liquid courage did you end up liking the ride?  I dont think I could do that.

Michelle  I think your DH is flirting with you...wink:)

Last nights chicken cacciatore was delicious...forgot I had some zucchini and threw that in too with all the colored peppers. My DH was not impressed with the spinach noodles but ate them up and took the leftovers to work this morning.

I am off to do some shopping as its my DH birthday tomorrrow and we having an impromtu B-day party for him...it is the big 60 for him!

Laurie, I forgot to explain CSA pickup.  Community Supported Agriculture.  It's great fun to take my green cloth bag, supplied by Covey Rise Farms (they have a web site if you're curious) and fill it with fresh, locally grown veggies.  This week was new small white potatoes, 2 cute small cauliflowers, a bunch of beets (milder variety than the traditional red beets), a bag of salad greens, a bag of tatsoi (braising green like kale), a head of cabbage, parsley and tarragon.  Oh and spring onions, which look like giant green onions.  They're very mild.  I think I could even eat them.

I cooked the beets right away and we've already eaten them on salads.  Tonight I'm cooking the tatsoi with some of the spring onion and some other ingredients following a recipe created by a teaching chef at the store where I pick up the veggies.  This chef is offering a class each week featuring the week's veggies but I probably won't take the class.

Laurie, you also asked if my marinade is spicy.  It doesn't taste spicy to me but I like spicy.  The heat ingredients are the smoked paprika and the hot sauce.  I use Louisiana hot sauce, which has more flavor than fire.  Not Tabasco.  With two small children, a milder marinade is probably a good idea.  I love the way you serve your children much of the same food you and your dh eat.

Our flank steak was delicious last night.  We cut it across the grain in very thin slices.  DH cooked it a bit more rare than he meant to, which was very much to my taste.  I'm the carnivore.  He loves good fresh veggies and ate two helpings of leftover green beans with potatoes.

My PC dr. doubled my bp med and added a diuretic.  I'll have some blood work done and go back to see her in two weeks.  Hoping the bp readings will go down but not too far down!

Today I'm not playing golf but am babysitting with 2 1/2 yr. old Olivia, my greatniece.  Also taking my mother to her afternoon hair apptment.  It's a gorgeous day not to be playing golf but I'm sure I'll enjoy Olivia.

    Happy Friday!

Laurie-Somehow I missed the last page with your pictures of you, your Beautiful mom and dad in a hot air balloon. What a great picture. My mom always wanted to do that too but no one would go with her we were all afraid too. wish now i would of.

Apple- Havnt had fish stick in forever but always loved them.

Got up early today 8am (way early for me) to go to some garage sales today, every third week in april they have The Great Oregon coast garage sales, there is like over 300 in just my town and i think just about every one on my street is having one wish it wasnt raining. Wow i cant remember the last time i got up before noon LOL!

Carol- I hope doubling up on the meds fixes things for your BP.  The CSA sounds awesome!  Hope you had fun with Olivia today!

Carrie- Yes I did like the balloon ride!  I wanted to go about as much as I wanted a hole in my head, but I love my mom so....it is nothing like you would think it would be.  You don't even feel the balloon move, it is the smoothest, lightest peaceful thing you could imagine. We rode in the air for about 45 minutes and the landing was just as smooth.  I was so glad I did it.  My mother and father had been out in Sedona Arizona and my mom had seen a place where they could go on a balloon ride and my dad wouldn't do it.  She came back and kept talking about it, how she wished she would have gone with out him, chance of a lifetime etc.  She was super excited when I called her and told her I had a free balloon ride we could go on.

Debbie- The garage sales sound like fun.  I love that kind of stuff, especially if there were a bunch in one area that you could just walk from one to another.  There is nothing like that around here. Thanks for the compliments on the boys!  It is crazy that the 2 year old has gotten the hang of it and blasts around the yard.  When they aren't fighting it cracks me up how they communicate with each other and help each other out.  In the video the 4 year old is trying to tell the 2 year old how to put it in high gear to go faster.  ( I had purposefully put it in low)

So I woke up this morning with the heart thing going on again and they felt stronger and closer together so I broke down and went to the ER.  They did blood work, chest x rays etc etc and sent me home with a 24 hour monitor on me.  They seem to think it is just PVC's.  But man- if this is going to happen to me all the time I am going to have to figure out a way to work through it.  It makes me anxious and it seems worse if I am busy.  It makes me want to lay down, which is not something I can do whenever I want to say the least.  I get results back on the monitor on Tuesday.

So I am voting for easy dinner tonight- turkey burgers :)

Laurie...what a cool picture of you and your parents fulfilling your mom's wish. Lovely!

I'm glad you decided to go to go to the ER....it would have been awful to be on pins and needles all day, listening to your heartbeat. Hope you can take it a bit easy this weekend after the monitor results are sent in.

Apple, I'm wishing that you can get a nice serene hot air balloon ride in sometime very soon. The thought of you soaring in a beautiful balloon brings a smile to my face. Deb, those balloon pictures are great. Glad you started this, Michelle! :)

    Carole, love the CSA opportunity

you have. Great healthy eating! I hope your BP cooperates after the meds changes.

Debbie, garage sales are so much fun ( tho I no longer collect ANYTHING and will be having my own

purge sales once I retire, to clean out this house....that will take a while:). Hope you had a fun day!

DH picked up some pizza from Trader's so I guess it counts as him cooking. They were pretty dry with minimal cheese, but I guess that makes for less fat calories. :)

Carrie, have a fun celebration for/with DH!

Laurie- That has got to be so scarey for you, I hope it is nothing serious. I have heard and not sure how true this is but i heard that when your heart is beating real fast you should cough?? I should check these things out before i say anything but will do some research and let you know. Said a prayer for you!

Lacey- Wish we had a Trader Joes around here I use to love all there products.

It was a zoo around my streets today people parking in my driveway, all over the roads and walking to all the garage sales. I found a good find and a not so good find. I bought a beautiful king size comforter that was brand new worth about 80$ it was half off and i offered 20$ and she took it. yay me!! Then i went to another one and saw what i thought was a taco press i have wanted one it was brand new regulary $25. but was for $15. offered $10 was so happy to get it and then realized it was a quesadilla maker not a tortilla press at all. Crap! Much easier to put the tortillas in a pan and make quesadillas that way plus now i have to find room for it, wonder if i can take it back tomorrow LOL!

Anyhoo, hope everyone has a good weekend, we are going out, been awhile since i had a drink, im due!!

Edited to add, it ended up being beautiful and 65% today!!

Deb- I LOVE potato leek soup, my recipe is much simpler, but it sounds yummy.  Sunday is supposed to be rainy, good soup day.

Debbie- once again you have me cracking up.  Never even heard of a taco press?  lol that you bought something thinking it was something else.  I would have been the fool still standing there thinking ...hmmmm, I think it is?  Do I buy it?

I think I did boo boo, I ordered on line from Chipoles and ordered a veggie burrito with guacamole, forgot to check off what veggies I wanted in the burrito, started to eat it at work, YUCK all guacamole nothing else. Gooey green guacamole

on the potato and leek soup, do you thing I can add fat free 1/2 & 1/2?

  • Laurie08
    Laurie08 Member Posts: 2,047

For my potato leek soup it is just 6 cups chicken broth, 1 pound leeks sliced and peeled, 6 large baking potatoes cubed, 2 medium onions, salt and pepper.  Cook till done and put in blender and smooth.  It is delish.  No 1/2 and 1/2 or any of the other stuff- but the other stuff sounds good too.

  • Lacey12
    Lacey12 Member Posts: 2,895

Since I hate the work of cleaning fresh leeks, I was excited to see that Trader Joe's carries frozen cleaned, sliced leeks....easy to keep in freezer for when the urge hits to make a soup such as the yummy one you mention, Deb and Laurie. Yes, this coming rainy Sunday will be a good soup day!

Debbie, sounds like you had a fun day....I suppose you can always put the q maker in the next garage sale. :)

Our neighborhood is having a community garage sale this weekend.  Subdivision puts up signs & runs ads in the paper, but everyone sells out of their own driveways.  I'm working with the organization so I only pulled a few things to set out at a friends house.  And since this is a dinner thread....

I'm picking up two dozen Shipley's glazed doughnuts for the lady who will watch my stuff.  I LOVE glazed doughnuts and don't think I've had any in 8 or 9 months - maybe a year.  I plan to eat three (or four) - two for breakfast and two for lunch.  So much for the diet.

Ooops - must confess I played dominos this evening and had a Jr. Whataburger and three (3) brownies for dinner.  Then two lovely Jack Daniels & water.  Scratch reasonable food for the weekend.

Laurie - hope it's going Ok with the monitor.

I agree about Trader Joes.  Rumor is we're supposed to get two in the next 12 months.
