    Ah Debbie, I thought I answered you but maybe it didn't post right.  I made the salad once as written, then once with spring greens and it was just fine.  You could also use arugula.  The endive was hard to find and very expensive.  As for the pomegranites, I think you might find the seeds in containers in the produce department, if they don't have the whole fruit.  The pom juice is easy to find in bottles, also in the produce dept.

    Sorry to hear about your dental problems. (((Hugs))) and I hope things turn out ok.

     Laurie - hope yours are better soon, too.  And I hope the antibiotic is easy on your tummy.

    MinusTwo - here's a picture of dinner last night with the eye round roast.  I cooked it for 16 minutes - it was just under 2 1/2 pounds.  It turned out absolutely perfect...you have to trust the recipe, as bizarre as it seems.  And no peeking!

    By the way, for Christmas this year I received three small nonstick saute/omelet pans that are coated with ceramic and no teflon.  They are awesome, but I would never have bought them for myself.  Eggs just slide around inside them.  I have cast iron pans that are great, but they are so very heavy.  It's funny how we hesitate to spend money on kitchen tools we use every day.  My DH will buy a power tool under any excuse!!!

    I love good kitchen stuff and am forever grateful to the dear friend who bought us a set of good cuisinart pots and pans for our wedding. 20 years later, they are still going strong.

    Thanks Michelle, I love pomegrantite juice and always have it on hand. I wanted to make dinner special for my friends I think they will love this. Everytime I go to the Kitchen Connection in town I look at the ceramic pans and wondered how good they are. I will have to buy one now that I know they are good. Your dinner looks so yummy!

    I was going to go out tonight for dinner but starting to feel really sick again and my lungs hurt with a lot of congestion going on. think I will stay home.

    Debbie- I am so sorry about your teeth :(  I have been a little congested too?  I hope you get some rest and feel better.

    Michelle- Your roast looks amazing!  I do mine the same way but mine always come3s out more well done than that and I wish it wouldn't.  I wonder why?

    Speaking of good kitchen stuff. I love my knives.  I used to buy my mom a really nice knife every Christmas.  When she started not doing well I would go over her house and make dinner for her and my father.  I used her knives and was like WOW!  She said what?  I told her I couldn't believe how nice they were- she laughed at me and said why do you think I asked for them?  lol!  After that my brother has bought me a nice knife every year for Christmas.  It is much more fun to cook with a nice sharp knife that goes through everything effortlessly.  Although I have cut myself kind of badly a couple of times, oops!

    Going to have steak on the grill tonight.  I finally found quinona and might try to make that with it.  I am also going to look back and see if I can find your marinade recipe Debbie.  Somehow I forgot to copy and paste it to my recipes file!

     Laurie- Is this the one? I made this for my flank steak but have another one too I use but this is delicious on all meat. I copy/pasted it from April 5th

     Tonight is flank steak and roasted asperagus. I started marinating them yesterday. I love this marinade i use, its- 1/3 cup of veg oil-  3 cloves of garlic, chopped- 2 tbls of red wine vinegar-  3 tbls of ginger, chopped- 1/3 cup of soy sauce- 1/4 cup each of honey and brown sugar. score the meat (dont go all the way through) put in zip lock bag and pour sauce over it and marinade over night or 24 hours. I put it on my grill cast iron pan let it get really hot and cook for no more than 3-4 minutes on each side. let rest and cut on a diagonal - Against the grain, this is important in weather your meat is tough or not.

    Actufally I did go lay down Laurie, and the phone rang then I layed back down and DH came home to use the bathroom WTH!! He never does that so I guess I am not suppose to lay down today LOL! I took some antibiotics and prednisone , hope that will help. Hope you feel better too!

    Hi Debbie and everyone!

    Debbie, I have a tooth in front that was cracked in an MVA a long time ago and had a crown root canal and then an apecoectomy? (sp)  They said bridge or implant.becasue it was infected and there was bone loss  so I went with the implant.  They put donor bone in and when it heals they will put a screw thingy and then a permanent "tooth" in.  It's super expensive, but I treated  myself because the infection started during radiation

    I have 2 black cats.. They cross my paths all the time.  I'm not afraid of Friday the 13th, I'm afraid of full moons!  People seem to go psycho!

    I hope you feel better, and all who are having troubles too.  I've discovered "foodler"  It lists all the delivery places near you and *presto! chango!*  dinner is served. 

    I am sorry that I haven't had time to read all the posts.                                                                 I am trying to exercise more.

    Bedo- I thinkI thought he said that I had too much bone loss for a bridge or toot canal but not sure about the implants, but I was so nervous that I may of misunderstood him, I will have to ask him about it when I go back at the end of the month, was that painful?

    That is so funny about the full moon LOL! And you are right people seem to get nuts on a full moon!! I hope your daughter is doing well.'-)))

    I feel somewhat better since I layed down but evertime I take a nap I have nightmares, never have them at night just at naptime. LOL! Does anyone else have that too.

    Hi Debbie, It was not painful, He sprinkled donor bone dust in there and then covered it up and it will heal for about 2 months or more and then all set to go .I have a temporary cap in there that looks just fine.  But it is expensive. 

    I've been having vivid dreams too! I dreamed last night that I was at my HS reunion and a classmate came up to me and said, " You used to be so beautiful, but you're not now"  and I thought, " Is he all there ?  Who would say that? What does he expect after all this time?  I look Ok I think? Then the alarm went off and I went to work, lol

    Debbie- So glad you are feeling better.  But, insomnia can be no fun, hope you worked your way through it.

    I just finished making the boys pancakes and am letting DH sleep in a  little.  On the agenda for today is soccer this morning followed by a birthday party for a friend of the boys at an indoor play center this afternoon.  I am even going to let DS#2 skip nap and go.  Should be early to bed for the boys tonight.

    The weather is supposed to be beautiful today!  Enjoy the day everyone!

    Debbie  Rest and get better fast....you have guest to feed tomorrow! Glad Laurie asked for a repeat of that marinade, will try it this weekend. Supposed to have great weather and should use the grill.

    Going to the menonite store this morning to stock up on chicken and cheeses and hopefully some good veges. I may even treat my DH to some of the best bacon on the planet, made by the local menonite family.

    Apple    Take cover and be safe!  I have a cousin in Oklahoma City that I am worried about also.

    Laurie   My kids both played soccer and I become such a huge soccer mom....ha ha   miss those days  Hope the weather is great for you and you can use the time to soak up some sun!

    Yes, yes!  It's the start of some very summer-like weather here in NH.  They are talking about 90 on Monday!  That won't make the Boston Marathon runners happy, but it sure will be nice for the rest of us.  The kiddies are on spring break, so I suspect Camp Grandma will be in full session early in the week!

    We are looking forward to spending the afternoon and evening with JoyceK and her DH along with our friends from Milton, MA.  We'll have an early dinner in East Boston, then head to Faneuil Hall and the North End for exploring, dessert and cappucchino.  It will be perfect!

    Debbie - hope you are getting some nice rest!

    I'm in the process (lengthy) of  having two implants.  The first stage was removing a chunk of bone from my bottom left jaw (underneath a permanent bridge) and placing the bone in the area of top right jaw where one of the implants will be.  I have an apptment next week to go to the dentist and see how well this has worked.

    The next process is stage one of implants.  Then six months later the final stage when crowns will be put in place.  The two implants and the bone transplant cost about $9000.  Then the expense of the crowns.  Haven't gotten a price on that.  It's a big drain on retirement savings but I'm trying to avoid dentures. 

    Dinner last night was DELICIOUS but not calorie wise.  I made Oysters Mosca again, using the recipe from Cooking up a Storm.  Instead of using the Italian breadcrumbs I substituted home-made wheat breadcrumbs I'd made from left over homemade bread and panko crumbs.  I read the ingredients list in the bought Italian breadcrumbs and was aghast at all the mystery ingredients and the high sodium.

    If you have access to fresh oysters, here's the recipe.  This dish was served at Elmwood Plantation in the New Orleans area before the old plantation burned down.  The chef was named Mosca.  His father owns a restaurant named Mosca's on the west bank of NO.  Supposedly it is/was a favorite of the local mafia.

    4 T butter and 1/4 c. olive oil.  Heat in skillet and cook 1/4 cup chopped green onions (I used 1/2 c), 1 T minced garlic and 2 T chopped parsley.  Add 1/2 c. Italian bread crumbs, 1/4 cup parmesan cheese, 1/2 tsp salt, 1/4 tsp black pepper, 1/8 tsp cayenne pepper, 1/2 tsp dried basil leaves, 1/2 tsp dried oregano leaves.  Place 8 large fresh oysters in baking dish--I used half of a quart of fresh oysters, which was more.  Spoon mixture on top.  Cook uncovered in a preheated 425 over for 15 min. or until browned.  Serve and eat with crusty bread of your choice.

    While I was putting the oysters together, DH made a delicious green salad with spring lettuce, tomato, cucumber, avocado and vinaigrette.   Sweet onions on his and calamata olives on mine. 

    The recipe for the oysters would be good on fresh fish or on old wood out of the woodpile!  I remember years ago I cooked stuffed eggplants using a dressing with shrimp and bread crumbs and seasonings and that's what my father said.  That the dressing would be good served on anything.

    Tonight's dinner will feature a whole chicken I got out of the freezer.  I'm thinking I will try the lemony baked chicken recipe I saw on America's test Kitchen last weekend.  The chef butterflied the whole chicken by cutting out the backbone and grilled it flat.

    I've been gone a while, but it's good to be back on here. I have missed you all. Issues with my teen son, disappearing into the hunger game series, among other things kept me sane.

    I am trying to eat less sugar and more veggies. I have been making alot of veggie omelets for dinner, and topping them with sour cream and salsa, its our new favorite.

    Michelle, sounds like a really fun time...it will be gorgeous out and you'll have the opportunity to extend your sympathy to those poor marathoners who will suffer in 90 degrees on Monday. They are usualy crawling from pasta spot to pasta spot all through the North End.....a festive weekend.



    Carole, I am awed at what you are going through with the implants, I so dread dental work, even though I know they can do all sorts of new things to help people avoid dentures. Of course the cost of these procedures is so prohibitive. Maybe I'd better check with my dentist to see if I can afford to retire! :)

    Am relaxing in the sunshine after a morning full of errands. are we supposed to be avoiding the sun after radiation? I'm out over two months so hope it is okay.

    Having brunch tomorrow at The Lakehouse at Church Landing in Meredith before heading over to Newfound for a couple of days. With no dog we can enjoy this freedom of doing things en route....the secondary gain of losing the last pet!

    Thanks everyone! I feel worse though today feel like its pnemonia setting in and achey bones and fever. I cancelled my dinner for tomorrow I just dont have the energy to clean and go shopping today Im just glad I didnt get all the stuff early I wanted everything to taste fresh, Oh well we will do it another time. Now its hubbies turn to baby me LOL!

    Carrie-That marinade is good for a lot of stuff you could use it as a stir fry sauce stir for veggies. I taste as i go for sweetness I like it a little bit sweet so sometimes will add more brown sugar or some honey.

    Michelle- Camp grandma LOL! Thats cute!! Lucky you with the nice weather have a great time with Joyce and her DH tonight sounds like fun.

    Carol- Oh wow sounds like a lot of long drawn out work are you in pain after all these procedures and do they put you out? I guess $9.000 isnt that bad if you want to avoid dentures I know I would pay that to of kept my teeth. Ive had bottom detnures for a couple of years now I use to be so imbarrased to tell anyone I felt it made me sound old hehe! They say the bottoms are the hardest to get used to than the top and I really havnt had a hard time with the bottoms at all other than the occasional sore gums after eating some meats so I am hoping the uppers wont be hard to get used to but still not happy about it at all.- Your oyster mosca sounds really good I just started likeing oysters in the past year so will have to try that, it sounds sorta like the clams casino I make.

    Zumbagirl- Hi its good to see you back I have miss ya! Omlet veggies sounds really good I love breakfast for dinner. Hope things get better on the homefront for you.

     Lacey- Have a great day tomorrow with your brunch and travels. Thats why DH does not want to get a dog just to much responsibilites especially when you want to travel. Have fun!

    Yipppee!  DD is on 2 medications after starting treatment yesterday and looks so much better today. She went to work today and I picked her up.  She actually wanted to have a weak margarita to celebrate so we had one each.  I am sooo lazy.  I need to buy groceries for the next week,for us but am tired.  Any suggestions for a something easy that I can take to work or cook for a lazy slug with a blender, a crock pot and a microwave?  I'm vegetarian, but eat eggs and dairy if they are from a local farm I've checked out.  PS, you are all the best.  I don't know how I could have made it through the last 8 months without you. <W OK, I don't know how to do that heart thing.  :)  Sally

    PS, I started with my personal trainer today. It's really 2-4 people/session. He measured my calves.  I haven't shaved or painted my toenails in ....Ok, since winter started...! :O ! so embarrassing!

     Bedo- Here is a Cold Noodle salad I have made for my dad when he comes to visit I add chicken when I make it for me and DH. I also had snap peas and instead of peanuts I use seasame seeds but it is a good salad to take to work and taste great cold.  Another thing you could make is sweet potatoes and black beans and take some flour tortillas and make a wrap with them thats also good.


    • 15 ounces dried soba noodles
    • 1 1/2 teaspoons dark sesame oil
    • 1/3 cup rice vinegar
    • 1/3 cup soy sauce
    • juice from one lime
    • zest of one lime
    • 2 tablespoons brown sugar
    • 2 cloves garlic, minced
    • 2 teaspoons red pepper flakes, or to taste (optional)
    • 1 cup finely grated carrot
    • 1/4 cup coarsely chopped salted peanuts
    • 1/2 cup chopped fresh cilantro

    Directions

    1. In a large pot, cook soba noodles according to package directions. Drain, rinse noodles with cold water, and set aside.(Dont over cook noodles)
    2. Pour into a large bowl the sesame oil, rice vinegar, soy sauce, and lime juice. Mix in lime zest, brown sugar, garlic, and red pepper flakes; stir until sugar dissolves. Toss in carrots, peanuts, and cilantro.
    3. Cut noodles into 3-inch lengths. Stir into dressing mixture. Cover, and refrigerate at least 1 hour.
    4. Toss salad again before serving. If dry, splash with soy sauce and vinegar. Serve cold.

    Bedo - great news about your DD!  Hope she continues to improve.  LOL about the shaving and toenails!

    We had a beautiful afternoon in Boston with JoyceK, her DH, and our friends from Milton, MA.  We got right in to the Italian restaurant where we had waited three hours last month, thanks to our friends arriving 30 minutes before the restaurant opened.  The food was plentiful and fabulous, we all took home leftovers.  Then we walked around Faneuil Hall and the North End, stopping at the Modern Pastry Shop for coffee/cappucchinos and dessert.  My fridge is full of Italian leftovers and dessert.  DH is playing golf tomorrow, and I don't think there will be any cooking going on here.  I'll force myself to eat my leftover lobster ravioli and the fruit tart.  Tough duty but someone's got to do it!  And I'll enjoy the 80 degree weather that has been promised.  My Kindle and I will be out in the sun getting massive doses of vitamin D.

    I have no idea why that paragraph decided to change font size, but it's too late for me to try and figure it out...lol!

    Debbie  I like the sound of that noodle salad  Love cold pasta....also leftover chicken made into a waldorf salad or just chicken salad for sandwiches.  When I grill chicken breast I always do up a ton and we eat it all week long, chicken ceaser salad also. Rest and get better.

    Bedo  so glad your daughter is improving. So cool about your personal trainer, I need one...either chemo or surgery or radiation or all 3 have left me so stiff and achy.  Worked in the yard for 3 hours yesterday, trimming with my hedge trimmers, raking, and just general cleanup and by dinner I could barely move. I also have a lot of inherited arthritis though.

    Hope Apple checks in soon so we know she is all right.

    Zumbagirl  Glad your back...those teen years are tough, but they do eventually grow up......then you get some hair dye to cover all the grays they caused you!
