    momine - the leekfeta  quiche sounds delish!

    luvrving - Welcome home! Sorry you have to have a biopsy right after returning.  I have used mustard (usually Dijon) in an easy dish - take a pork tenderloin and make 1/2 inch slices.  Pound the pieces thin between two pieces of plastic wrap or waxed paper so you have medallions.  Salt and pepper them and saute them quickly in a pan.  Remove and keep the medallions warm, and deglaze the pan with white wine vinegar, reduce a bit then add some half and half or heavy cream and a tablespoon or so of the mustard.  Reduce again for a few minutes and add some dried tarragon (or fresh if you have it).  Spoon the sauce over the pork and serve.

    Here is the Carrot Cake recipe:1 1/4 c. veg oil, 1 c. br. sugar, 1 c. sugar, 4 eggs, 1 c. flour, 1 c. - less 2 T. whole wheat flour, 1 t. salt, 2 t. baking soda & powder, 2t. cinnamon, 3 c. shredded carrots, 1 8.5 oz. can crushed pineapple - drained, 1/2 c. chopped nuts (optional)

    Blend oil and sugars, add eggs one at a time.  Mix dry ingred. in a separate bowl.  Add to wet ingred. 1/3 at a time.  Fold in carrots, pineapple and nuts.  Pour into greased and floured 9" cake pans - or 13x9 or bundt.  Bake 35-40 minutes at 350 degrees, or until toothpick comes out clean.  Cool in pans for 10 minutes then turn out to cool. 

     Frost with following:  1 8 oz. cream cheese, 4 T. unsalted butter, 2 c. powdered sugar, 1 1/2 t. vanilla, 1T. grated lemon rind.  Beat until fluffy. 

    You can freeze this unfrosted.  Better one day after baked - refrigerate.

    Also - there was a chocolate cake recipe a page or two back - I have the same recipe but substitute Kahlua for the water.  Gives the cake a mocha flavor.  I melt choc. chips with a bit of veg oil in the microwave and drizzle over the cake - pretty and yummy!

    Laurie - I like the chicken with gravy over mashed potatoes idea!  I want some too!  You could also do a quick chicken soup with rotisserie chicken, some frozen vegs, chicken stock and noodles or rice.

    I skipped lunch today so all this talk about food is making me very hungry.  I'm making a turkey meatloaf with sweet potato and a green salad for dinner tonight.  I put dried cranberries in the meatloaf and cover it with a turkey gravy.  It's delicious and for those who eat white potatoes, it's good with mashed ones.

    Michelle...the biopsy and seroma draining sounds painful..sorry you had to go through that.

    Laurie...so sorry about the loss of your friend...somewhere I missed that earlier.

    There are so many great food ideas here... I am sure I am putting weight on just reading them.... and the eggplant recipe... and I love fried green toms.... wait a minute, I think it would be easier to say what I DONT like !!

    Dinner for me and DH tonight will be a chorizo, spinach pasta: 

    3 large chorizo sausages - chopped into bite size pieces
    1 can (28 fl oz/796 mL) no-salt-added diced tomatoes, undrained
    1 tsp dried oregano leaves
    1 tsp basil
    3 cups multi-grain penne pasta, uncooked 
    1 cup water
    6 cups baby spinach leaves
    1 cup Part Skim Mozzarella Shredded Cheese 

    Spray heavy bottomed pan with spray oil and genty cook chorizo.  When cooked remove from pan and keep to one side in a dish.
    In same pan add canned toms, herbs, pasta and water (start with only 3/4 cup of water and add to 1 cup if required) bring to boil in large saucepan, stirring occasionally. Simmer on
    medium-low heat 10 to 12 min. or just until pasta is tender, stirring occasionally.  Add sausages at this point. Stir in half the spinach; cover. Simmer 2 min. or just until spinach is wilted. Repeat with remaining spinach.   Serve topped with the mozza cheese and a nice baguette.

    I have also added olives to this recipe and also used shrimp instead of the sausage - or use both.  Also enough left over for lunch too. 

    Enjoy whatever culinary delights you are conjuring up and look forward to hearing all about them.

    For the chocolate cake, I like to melt chocklate chips in heavy cream and use for a glaze--about 1/2 cup of each for a bundt cake.

    Tazzy - we absolutely do share recipes!  You may post one here any time you like.  Sometimes we just say what we're having, sometimes we share the recipe for our dinner or for something we've run across that looks interesting.  It's pretty much anything goes on this thread, and apologies are never necessary!

    to me, it is amazing how many calories i must include for my growing teenage boys and hardworking husband.. i eat like a fairy compared to those three.

    Tazzy, we definitely share recipes.  That pasta recipe looks really good.  It's interesting that you don't cook the pasta separately.  Here's a regional note.  I've never eaten chorizo, even though I've heard of it and read about it.  We have lots of smoked sausages that are made in south Louisiana and I usually use one of those or the Italian sausage that is made locally.  Chorizo is probably available in the supermarkets.  I'll have to look for it and give it a try. 

    Laurie, glad you're once again "with oven." 

    The carrot cake recipe definitely looks good.

    Funny thing, I have both a son and a daughter and, back in elementary school when we had the sleepovers and visits, it was the 'girls' that ate us out of house and home... We couldn't get the boys to sit still long enough to eat!!



    Boy, did that ever change around come high school!! Those boys... they are like locusts... devouring everything in their path! But, secretly, I prefer that to cooking and no one eating what I made!



    So sorry that your brother (and you) had to go through all that! Sounds to me that, even though he was dealt a rough hand, he was such a kind-hearted person!!

    OK.. good to know on the recipes.  And chocolate cake... drool !  

    Dunno about any of you ladies, but since being on chemo I have definitely developed a sweet tooth.

    i need to start making desserts.. real ones.  i almost made cream puffs.. but didn't quite have the gumption to go out and buy butter and whipping cream.. maybe tomorrow.. cream puffs are so good.

    let's see tomorrow is Thursday June 7th.. i have such a trouble remembering dates.  ... cream puffs might be what is for dinner.  leftover sausage on the side.  sounds good to me. .. with a salad of course.  maybe brownies for salad.

    on a good note, my oldest son is home for dinner these days.. he was always working this last year.  he is such a dear.  omg.. i can't tell you what a good kid he is.

    Nick has surgery first thing tomorrow so he has to be at the hospital for 6:30 am.

    There is a potential complication with the stone that has got out and is blocking the bile duct. They can't necessarily address that with the surgery tomorrow. The doctor is going to try and flush it out but it might not work, he'll know more after the surgery and when they've done blood tests afterwards.

    If they cannot get the stone out, we will have to go to Boston! So there is a chance that we may have to fly out on Friday or over the weekend. Its not a major op but just something they don't do on island - they essentially go in through the mouth and round into the stomach and pull it through into the intestine! He said you are usually in and out within the day. Won't know if its necessary until after the op tomorrow.

    Apple - I have 2 actual teen boys and one that just eats like one.  He can down a triple cheeseburger, large fries and drink and I struggle to finish a happy meal!  But I am fat, I admit it, but it's not because of what I eat, it's because of no exercise and my danged dead thyroid.  But yeah, teenage boys are not good on the pocketbook!

    For dinner, I am making a roast in my friend, the Crockpot!  I put Lowry's Teryaki sauce all over it, then some Garlic Salt, then for some reason, I decided to pour a can of crushed Pineapple over that.  I sure hope it turns out ok!

    Kaara, I am so sorry about your sister  Apple, thank you for telling us about your love for your brother.  It's funny how sometimes someone in our family will touch ius. 

    I have a sibling story, being a twin ( she is 6 minutes older) No one has ever been able to get to me like that woman. Not ex-husbands, friends, parents, nobody.  When we are getting along we are super close, when we are not, we don't speak. I still remember remnants of our "language" when we were young, and she still calls me by a name that she did when we were about 1-2 years old  Here is an example:

    When our kids were about 2-3 (born within months, of course) We weren't getting along.  She knew that I always hated French and was really bad at it, even though I took it from 4th -12th grade. If you speak to me in French, I will have no idea what you are saying, so for Christmas, she was working in France and sent my toddler a game that had to be put together with instructions, you guessed it in French  Can you imagine a 3 hour tantrum as I tried unsuccessfully to put it together? Soooo... I decided to get her back

    She is somewhat OCD and hates dirt and insects, so, the perfect gift!!! I sent her son Uncle Earnie's Ant Farm!  He was so excited!  And the best part was that it came with a card that said the ants would be arriving separately in 4-6 weeks!  Let her think about that for awhile.  Hehe

    We get along now, for the time being ....:)  We also have an older brother.  Our parents died when we were 6 and 26, so I think that my friends are going through things with their parents that we went through when we were younger.  I think that it may be easier when you are young because  you are too dumb and naive  and have the outlook of youth that you may not have when you are older, so I sympathize with my friends and am sad for their sadness

    Oh Bedo - thanks for the laugh about exchanging gifts with your twin.  Needed that tonight.  And some chocolate.  Guess I'll have to settle for a couple pieces of Dove candy since I just got home from water aerobics and it's too late to eat much else.  How about popcorn & chocolate with a glass of red wine?

    I agree Bedo- Love the story!!  For the ants to come later- oh my!!  The kid must have driven her nuts?!

    Chirrazo- I ate it at a friends house and loved it I have never looked for it in a store but now think I should.  Thanks for sharing the recipe Tazzy.

    As far as teenage boys and their appetite, I am already nervous at how much it will cost to feed my boys and their friends when the time comes.  At 2 and 4 years I already go through 2 loaves of bread a week.  What will it be 5 by then?

    Seaside- I remember being in Jr high and we used to pride ourselves on how much we could eat and how skinny we were.  Too bad those days are loooong gone : /

    Thanks for the dinner ideas.  I actually suggested the chicken/gravy/potato dinner the other night and was met with a wrinkled nose in return.  We decided on breakfast for dinner.  DS#1 ate his first fried egg ever!  I made the kids pancakes by request and fried a couple of eggs and made an english muffin for me.  DS#2 stole my food and the first says he wanted some too....he has always hated eggs.  He loved them!  Not to mention for the last week he has been so polite and helpful, I am thinking when they took out his tonsils they removed his negative attitude too.  I only have to ask once for him to do anything lately.  DH and I just stare in awe as he does stuff we ask, lol!

    On a total side note- Apple-from the way you look in your picture I bet you have the best laugh.  You appear petite and very feminine, but I bet it rolls out of you.  Random I know, but had to throw it out there :)

    Laurie.. you mention about being in high school and eating whatever you wanted with no worries of putting weight on.   I can totally relate to that...but have, what I think is quite a funny tale I'd like to share.

    When I was in my 20's.. 5 foot five, size 0 and likely 100lb when wet.  2 years ago I decided I needed to get fit and lose weight (was now approx 175lb).    There I was with the personal trainer and he measured me... when he measured my thigh and told me the size.... I looked at him and said "Geesh! 30 odd years ago that was the size of my waist".

    Bedo- What a funny story on your twin as always you make me laugh. Sorry you lost your parents so young.

    Laurie- I was amazed that your sons never had a fried egg, but glad they enjoyed them. I like fried, DH does not so i have to do 2 different pans. 

    SpecialK i do my pork tenderloins the same way only i use white wine instead of the vinegar. or use brandy either way its very good.

    Minustwo- Thats what i had was popcorn, chocolate chips. minus the wine but that sounds good.

    Debbie son #1 is fussy-no eggs till today.  Son #2 will eat three at a time!  (and he is only 2 yrs old)

    Tazzy- I think we are kindred spirits!  At the age of 21 I weighed about 100 pounds soaking wet and wore a size zero.  I met my husband and well....I got a little hefty.  I am 5'6'' and maxed out at a size 14 and weighed about 180.  I am now a size 10,or 8 if I am lucky, and weigh 150.  I still have hopes to see a size 6 again and hit 130.  I wouldn't want to be what I was.  But also, back then I was a vegetarian and smoked pot.  Now I eat meat and like wine :P  (hope I didn't offend anyone!)

    DS just woke up freaking out and took an hour to calm down and take meds.  It is 1 and I am wide awake...

I dont think you offened anyone.  Im a laugher so when i tryed pot a long time ago it just made me laugh all the more and got really paranoid on it.     ps Carol- love a good dirty martini!  As I am sure you know a martini made with olives and olive juice is called a dirty martini.  I would order mine extra dirty,  On cue Dh would tell the bartender I was a "dirty girl".  LOL!  It has been years since I ordered one of those.  I will have to fix that!

    Couldn't agree more Laurie... and if, when I was 20, somehow managed to put on a pound or 2...then I just wouldn't eat for a couple of days... smokes and alcohol only.   Now I love my food too much - and wine !!

    Hope your DS is finally settled and you can settle too.

    Debbie I am with you!  I am too old for that crap anymore!  Give me a nice beverage and I am happy.  I told DH he made me fat.  For the first 2 years we dated all he ever said was lets go get an ap and a cocktail.  I didn't drink or eat meat, so I drank a lot of white russians and mudslides and ate mozzarella sticks and potato skins.  Hello- is that the third roll of fat filling in??  Ha!

    Luckily he actually liked me for me and never cared that I gained weight, but it's still all his fault.  It's my story and I am sticking ot it!  All...his .....fault :D
