So...whats for dinner?

Deb, I am so sorry for your loss. He must have been so proud of you. I bet you gave him as much joy in his life as he gave you. I am wishing for some comfort for you in your sadness in any way that you can find it.
Michelle, your doctor sound nice. I am sorry he said that. I'm hoping that NED pays you a looong visit. Your vacations sound so great! I have never been to Hawaii.

Thank you ALL.

Hugs and love to you Deb - thoughts with you.

Deb, I'm so sorry. My dad has been gone since April, 1995, and I still miss him. He's a strong presence in our family.
Eric, a big hug for you. And for Michelle's DH, too. Both of you are wonderful examples of supportive husbands.
Laurie, it's great that your son can get back to normal. I wish I could share my latest supply of eggplant with you. Today's CSA veggies included some long slender lavender eggplants and some long slender purple ones, both Asian varieties I would guess I forget the names. There was also a bag of young small okra which I will give to my mother, who loves okra boiled on top of cooked field peas. Another country dish. There was also ripe red tomatoes, purple cherry tomatoes, onions, potatoes, carrots, chard, and Thai basil.
I'm roasting a small turkey, the last large food item in my chest freezer. Both freezers will be empty when we depart for the summer next Friday. We learned the hard way when Katrina made her appearance not to leave any food in the freezers. I had shrimp in the chest freezer along with other food and my kind neighbor and her son came into our house and cleaned out both freezers. Thereby saving them. Once food has rotted in a freezer, the freezer has to be thrown away. The electricity was off about 3 wks after Katrina.
Today I had lunch at a lovely little Italian restaurant with a dear friend. We had an appetizer of cannelini bean and artichoke puree with Greek olives and toasted bread. It was so good. I could only eat half of my panini with restaurant-made mozzarella, tomatoes and garlic aioli. Next time I'll just order the appetizer and a small salad!

My Mom lost her battle with BC 16 years ago, my Dad is with her now.0

(((Deb))) - my heart goes out to you and your family. It's so hard to lose a parent. I know you have lots of happy memories to help get you through this tough time.
I had my appointment with my medical oncologist today. It was pretty similar to yesterday's experience. She is going to have the FSH test run on my biopsy sample, even though it came back as negative. If there is just one +, I might be able to get Herceptin after we finish with Xeloda. She did say that I might be able to have reconstruction if I can get to NED...make that...when I get to NED.
Carole - I am jealous, I want to be going off in an RV for a few months! Maybe next year... Where are you going this year? And your appetizer sounds really good, like something you could whip up in a food processor. I'm not that fond of hummus, but this combination sounds really yummy.
I made a teriyaki beef stirfry with peppers, mushrooms, peapods, scallions, and garlic. I don't know why I haven't made it in a while, we both love it. I would have preferred chicken but DH loves his beef. And I do like to add pineapple but I didn't think about it when we were at the store getting ingredients. I'll be following this meal with a Xeloda chaser...lol.
Laurie - I've made brussel sprouts just a couple times...my DH doesn't like anything cooked that smells like cabbage. I did make them with bacon the last time I cooked them. I don't think you need to cut the ends off unless they look funky!
My DH is amazing, the poor man is getting way more than he expected with that "in sickness and in health" vow! Eric - you, too!

Carole... when you talk about food, it takes me back to my Naw'lins visit 2 years ago.... oh! the food, the food.
Tonight I am going out with DH to our local pub for wings and a beer.
I did make cinnamon buns yesterday...and I have to stop making sweet stuff and eating ice cream. I lost 12 pound on chemo.....slowly but surely it is being packed on again. Oh! well I will worry about it when buns are gone and the ice cream is no more

Deb: So very sorry to hear of the loss of your father. My prayers to you and your family.
Michelle: You will get to NED...keep the faith!
Laurie: You can make a cross cut on the stems of the brussel sprouts..that is the suggestion in recipes I've followed...don't know why. Sometimes if I'm roasting them I cut them in halves or quarters and they brown better.
Carole: Sounds like you're getting closer to that RV trip...it should be fun! You'll have to keep us filled in.
Tazzy: Cinnamon buns....yummy! I'm glad I don't know how to bake!
I made chicken breasts with artichokes, onions and capers with some sliced lemon sauteed in, on a side of gluten free pasta and heirloom tomatoes stacked with broccoli sprouts and freshly shaved parm, drizzled with homemade italian dressing. Also had some more of our fresh white corn.

Deborye,
I wish there was something that I could say to ease your pain but there just isn't.... Losing a parent is just so hard! Please know that I am thinking of you and your family....
Laurie,
Glad your little guy got the OK to return to being a kid!!! I'm sure whatever he eats now is going to be the 'best ever'..... That could spell trouble on the Fruit Loops vs Cheerios front...lol0 -
Michelle,
I am sorry that these last two appointments have been less than encouraging but.... remember.... while these people have the title of 'doctor' they are still human and as such cannot predict any person's path... At best it's a guess....
This was something that I read and saved... I think of it everytime that I think of all of us on this board....
I Hear You, Doctor:
"I clearly understand what you are saying to me and what you think will happen to me. At the same time, your prognosis is not a sentence. YOU DO NOT DICTATE WHAT WILL HAPPEN IN MY LIFE. Everything you say could eventually happen, and nothing you say may happen. You are just a mortal, just like me, and your opinion is just that. An opinion. You are not my co-pilot. Only God knows what my future will be. Only I know what my body may be capable of. Only I control my spirit and my attitude. I have found strength and humor and grace from this crisis, the likes of which I hope YOU never have to endure. You are not capable of taking away my hope. So thank you for your opinion; I respect it and I may even take some of your advice. I also know that God may have a shopping cart full of miracles in store for me. That's not your decision to make; God & I will work it out together to whatever end result it will be. So thank you again; I hear you." Written by: Rebecca Wolfe
The part about 'spirit and attitude' and 'strength, humor and grace' reminded me especially of you......
Thinking of you tonight.....0 -
To the ladies with the Green Tomato recipes.... Short of growing your own and picking them green, is there someplace that you buy them? I haven't ever seen them in the grocery stores here....

I cut the stem end off the brussel sprouts and peel off several leaves. The best way I've ever had them is roasted. Cut them in half, toss with EVOO and s & p. Single layer on a sheet pan. Hot oven, at least 400. Toss after 15 min. Shortly before they're done, you can sprinkle finely minced garlic and a good grated Italian cheese.
Michelle, we're trying to economize this summer since my dental bills are astronomical. We're going to northern MN up around Lake Superior and will not be on the move like we were last summer when we travelled all over Alaska. Our 1 ton tow truck has two fuel tanks with a total of 75 gals. At almost $4 a gallon, we have to take out a mortgage when we fill up! I hope we can find some cool weather. We'll take our bicycles, golf clubs and tennis racquets.
Seaside, do you have a farmer's market? You could probably buy green tomatoes from a farmer at the market. This is the first time I've cooked them and the reason I did is that they were one of the veggies last week that the CSA farm harvested and brought for pickup. I enjoy the CSA (Community Supported Agriculture. Cost is $30 a week, paid in advance) but sometime I start to feel like it's an uphill battle making use of all the produce. I should probably share a membership with another couple, since you're supposed to get enough veggies for a family of four. One good aspect has been being introduced to new veggies (for me) like napa cabbage and Swiss chard and other greens.

Thanks Carole... We do have farmer's markets here but much later in the season as we are just getting going up here in NY.... I will be sure to check it out in search of green tomatoes (and other goodies).....
Northern MN and around Lake Superior.... I'm going to go out on a limb and say somewhere around the Duluth area.... Spent 5 years in Rochester, MN and have a friend that lives in Ely, MN way up by the Canadian border (for the weather channel fans... that's near International Falls... quite often the coldest place in the US during winter months).... Beautiful state (with ll of it's natural beauty) but definitely at opposite ends of the spectrum.... Crazy cold in Winter but really hot in Summer!!!
Have a safe trip and enjoy!!0 -
To all, hello again. (((Deb))) it is hard to lose a parent. Michelle, you will be NED again. Sooner I hope.
I had KFC mac and cheese today for supper. I had a really bad day. I lityetally flushed $300 down the toilet. In other words, my new key fob for my car went down, called a plumber, but they were gone to the big sewer, he couldn't find them. Of course, I had the big D from my last chemo and that was why they fell in. So mac and cheese was my comfort food today. Will probably pay for it tomorrow. I would rather have had a stir fry, but no go for my big d. All your dinners sound better than mine.0 -
Seaside, you're right on target! In fact, we plan to spend a week or two in Ely. Also in Grand Marais, which is a gorgeous little town. Also Two Harbors. The summer we were there, 2010, it was quite cool. I have a bc.org friend in Thunder Bay, Ontario, and we'll probably visit her and her dh.
We spent a couple of weeks in Rochester, or just outside the city, in 2010. We were there for the 4th of July and had some work done on the Ford 350 truck at the Ford dealership. We found Rochester to be a very nice small city. We also like Duluth where we stayed at an rv park in a marina looking out on the 100 yr. old bridge that raises to allow the passage of ships. It was really neat sitting outside our rv and watching the ships pass.

Wow ladies - more than 5 pages in 2 days. I can't keep up now that I'm in the full time working season. I thought I was making progress earlier this evening, then took a break for water aerobics. When I came back I was even further behind.
Happy B-day to the June girls. Michelle - you always find a way to sound positive. Thanks for sharing your spirit. You're in my prayers. Deborye - sorry about your Dad. Mine died in 2007 and I still miss him all the time. Carole - when do you leave? Hope you have a great trip. Laurie - hooray for the DS recovery. I second Carole's brussel sprout recipe. Many people add bacon and "fry" in a skillet, then cover & cook until tender. Seaside - thanks for the great quote. I forwarded to several friends. Kaara - your chicken breasts sound wonderful. I too am jealous about the white corn. Sorry I've missed responding to so many posts but I really like this site & read even when I'm unable to post.

Mimustwo- I am with you, this thread has gotten so busy, which I LOVE, I read throughout the day and feel I miss people when I post. But, I think the good thing about this thread is it is a great bunch of people and no one is offended if they get missed.
Now,I have to be honest- I am questioning why I bought those brussel sprouts? I have no found memories of them : / But I WILL try them before they rot.
Carol- I was telling DH I would love to go camping without kids, it would be so relaxing! Have a great trip.

Spaghetti squash tonight....with a homemade with what is on hand spaghetti sauce. Then we all went shooting at the gun range and now we're all at the pool.. A quarter million gallons of water should moderate Sharon's chemo spuer hot flashes.....
I got to work from home today, so I didn't have the the 2-1/2 hour round trip commute... :-)

Deb, I am so very sorry for your loss.
Michelle, your husband is not the least bit poor, since he has you
Laurie, roasting sounds good. I have started roasting all kinds of veggies and I really like it. It is easy and they taste good.
Another option with the brussels is to heat a large saute pan with some olive oil, add the brussels and saute until they are lightly browned here and there, then add a minced clove of garlic (or two) a grate of lemon zest and either a good splash of white wine or a little chicken stock (half cube of knorrs and 1/2 cup water is fine), freshly ground pepper, let boil up a sec to scrape any browned stuff from bottom of pan, lower heat, put on a lid and simmer till veggies are tender and there is just a smidge of liquid left. You can also add some strips of pancetta or proscioutto or regular bacon during the saute phase.
This method also works really well for wedges of savoy cabbage or even just carrots.

Laurie - brussels sprouts are one of my husbands favorite vegies. I trim the ends and a couple leaves, then cut them in half. I put them in a pan (one that is fairly flat and has a lid that fits) melt a little butter and add the brussel sprouts as much in a single layer as possible. saute them on one side, then cover for about five minutes, turn them over and cover again. The heat should be low to medium and be careful not to burn them, as burnt brussel sprouts are truly disgusting! I have also added bacon, but when I do, I use bacon that has been pre-fried, so that I'm cooking the sprouts in butter, not bacon fat.

(((((((Deb)))))) I have been thinking about you all day since i saw your post of Facebook. Again, im so very sorry about the loss of your dear dad. I know you loved him so, you always shared cute stories with us about him and he looked like such a sweet man. You are in my thoughts and prayers. much love to you.

Michelle- You are also in my prayers. I agree with the others there are no words but hoping for NED for you as well. (((hugs))) Your dinner out sounds so good, glad you finally got to go there. I have been to the iron man triathalon in Kona several times and it is a blast and so thrilling to watch, im so happy you are going again in October.
So many post, and hard to keep up, but did want to tell you Kaara if the perfume is the same let me know i want to buy some lol!
I had a great time last night for dinner we went to a place called EL Gaucho in portland it sounds like a mexican resturant but it's not, Its is fine dinning at its best. When we arrived they had atable waiting for us with a $150,oo bottle of red wine breathing in a beautiful decanter that Sara the vendor had brought in for us. There was rose pedals on the table. The place was dark and romantic. DH had escargo and i had the best crab cakes i have ever tasted in my life. I ordered a petite filot mignon with bering seas crab legs, You didnt have to crack them they just peeled right off and the meat was so sweet and delicious. DH had filet with lobster. For sides we ordered mashed potatoes with large peices of lobster that was excellent. and a side of asperagus. Then after dinner they brought out this big plattter with nuts, grapes, apples and a side plate with roquefurt cheese and dates with crackers, as full as i was i ate all the cheese and dates. Then we both had a peice of a chocotle cake with ice cream that had a hard topping of chocolate on it. OMG i never ate so much in my life. They had to wheel us out in a wheel barrel. LOL! Then back to the hotel and had some more coctails and played the slot machines in another little room there. We got to bed late and couldnt sleep after all the food i ate, but got a little nap in today after we got back. Sorry for the long post!!

Wow, Debbie. The Romans had nothing on you and your dh. What a feast! Years ago DH and I were invited to dinner at Louis XVI restaurant in the French Quarter in New Orleans. The meal started with two bottles of Dom Perignon champagne shared by the 5 of us. For every course our host consulted with the wine steward for a choice wine. It was so much fun dining in style and knowing we didn't have to pay!
Back to reality here and a mundane question. Any good ideas of recipes using cooked turkey? Why do I buy these small turkeys when I'm not a turkey fan?
Gardengumby, I like your brussel sprouts recipe. Love cooking with my saute pan. With brussel sprouts like any veggie, the freshness is a big factor. The longer the sprouts are off the plant, probably the more bitter they become.
Eric, how do you cook the spaghetti squash? I tried it once or twice and wasn't impressed with my results.

Thanks, everyone! And thanks Seaside for the reminder that no one really knows... I plan to get to NED so I can have my damn reconstruction surgery!!! So take that, damn cancer! Feeling feisty this morning...lol...and relieved that after four doses of Xeloda, I don't seem to be having any SEs. I know the effects can accumulate, but right now I'm going with the "feeling pretty darn good" SE!
Eric - I love spaghetti squash, and I haven't had it in quite a while. Time to put that one on the list for the near term.
Carole - we drove up to Lake Superior from Kansas City one long weekend a few years ago. We took a ferry over to an island that had a bar that I think had been partially burned (arson, if I recall correctly) and was using tarps to provide cover. It was a fun place as I recall. Will you be able to check in with us, or are you going "dark" while on the road?
I have family in Rochester - a sister-in-law, niece and nephew. I haven't been there in several years. We lived in Pulaski, NY (north of Syracuse) for ten years and I remember summers on Lake Ontario and 360 inches of snow in the winter.
Debbie - your eating escapades are outrageous in an oh so good kind of way!!! And oh, I'll bet the wine was divine!!! I love generous vendors!
Laurie - give those brussel sprouts a chance. I didn't like them as a kid, either. Then I tried them because they were on a buffet (nice way to try things you're not sure about) and they were roasted with bacon and who knows what else, but I was surprised that I liked them, especially the texture. I think growing up I didn't like a lot of veggies because they were cooked to death (yellow green canned peas and asparagus, you know what I'm talking about). I'll eat almost any veggie now that's tender-crisp.

Deb So sorry about your Dad (((hugs)))
Seaside How come I didnt know you were from NY? Are we close? Was just thinking that I need to check with the local farmers market to see when they open, they always have stuff way before mine are ready.
Debbie That meal sounds amazing...what a great birthday celebration.
Moonflwr So sorry about the day you had...sounds dreadful. those are the days to just crawl back in bed and forget the whole day ever happened. Are you almost finished with the chemo?
Last night we took the boat through the canal as the lake was rough, and stopped at a canalside restaurant I had the waterfront rueben, which had 3 meats on it, turkey, roastbeef and corned beef, all made fresh, not processed meat...yummy I could only eat half.
0 -
Moonflwr - I forgot to mention this...I once dropped my Palm smartphone in a toilet at work. Well, actually, it fell out of my blazer pocket. Automatic flushers and I worked in Real Estate and didn't want to completely clog the toilet and have everyone know, so I had no choice...I quickly reached into the toilet and grabbed it before it vanished, then ran to the sink and flooded it and me with soap and water. I came out of the bathroom laughing hysterically, as the situation was rather funny, so everyone knew anyways. Of course, that phone was finished and I had to buy a new one. So sorry you had such a bad day, and I hope today is much better.
0 -
I've never dropped my phone in the toilet, but my glasses have slipped off my shirt many times and have taken the dive! What else can you do...you reach in and get them and head for the sink;)
I'm headed for the nail salon to get this gel polish taken off my nails...this is called job security for the nail technicians...can't do this from home. I like it that the polish lasts a long time and my nails stay strong, but I don't like being tied to an every three week app't. They held up through all of my gardening though;) Tonight we're eating out and then going to see a concert at the local playhouse. An enactment of the Bee Gees in concert...it should be really good...it was a sellout...think we got the last two tickets!
Hope everyone has a wonderful day!

Kaara - I got the gel polish for the first time before we went to Paris, and it's been 3 weeks. I was told I could soak it off with pure acetone polish remover. I was thinking of doing it, but I have to admit I love that I had a French manicure that lasted all this time - one small chip, no broken nails. I can't decide if I'll try it on my own and give them a coat of clear gel or if I'll just get them done. If I am going, I need to do it soon - low blood counts might make it a bad idea next week.

Microwave magic for the spaghetti squash.
Poke some holes in the thing with a fork, "nuke" it on high for about 10 minutes, let it cool, cut it in half, scoop out the seeds, then scoop out the good stuff and finally shred the good stuff with a couple of forks.0 -
Debbie - I LOVE El Gaucho!! I took my husband there (except to the one in Tacoma, WA) for his 55th birthday, and it's been one of the few restaurants we go to for special occasions since then. My favorite is their flamed brochette of tenderloin with ceasar salad, though their chauteubriand for 2 is extravagantly excellent as well. For dessert, we have key lime pie - the best I've ever had. The only trouble is how expensive it is - so when we want a treat without spending a gazillion dollars we go to their happy hour.
For spaghetti squash, I cut it in half, scoop out the seeds, put it cut side down on parchment paper and bake at 375 until I can stick a fork in it. Then I scoop it out and either just add some butter, salt and pepper, or sometimes I really do use it as spaghetti, and add spaghetti sauce. I love the stuff.
oh yeah - the phone in the toilet thing - I dropped one in the toilet and ran one through the washing machine . The main thing you need to do is immediately take it apart and get the battery out of it and let it THOROUGHLY dry before trying to use it again. Believe it or not, both of my waterworld phones recovered - even the one I ran through an entire wash and rinse cycle....(when I figured out where the phone was, we were about 30 miles away...).
