I think we could do the five questions if we want, no one has a copywrite on that idea! Start us off, Bedo! Maybe we should make a rule that one question has to involve food, eating, recipes, etc.
We went out to dinner with JoyceK and her DH. As usual, we had a fabulous time! We drank a whole big pitcher of Sangria...after we had each ordered an individual drink The food was tapas-style, so we had about 10 different dishes, ranging from naughty pesto cheese fries to beautifully sauteed scallops, a veggie dish for good measure, and one shared dessert. We so enjoy their company! The guys are playing in a golf tournament tomorrow. It will be an early wake-up call!

Deb - that's a great idea. And I'll even add my mom's high school grad picture. I have them all scanned in and I'm going to try to put them together so you can see the similarities. But I need to do it in the morning. It's late and I've got two glasses of Sangria and a grapefruity martini sloshing around!

And DRugs? who me? no I never have done drugs. well ok, maybe there was a time or two in the 70's and maybe the 80's I smoked some pot but I was so paronoid and thought every one was talking and laughing about me so I gave it up hehe! Glad I did my DH is so straight he... well can't think of any thing good to go with that after having some drinks tonight so I guess I won't finish that sentence lol
Thanks Tazzy- We have to wait for 72 hours for it to straightne out and get the smell out but should be great once we get to use it.

I haven't been here for so long.. i check in, but have been super busy with office work.. lot's going on. I envy all you who get to eat such nice seafood. The midwest has it's advantages, but seafood is not one of them.

Bedo funny story I guess the boss had absolutely no sense of humor!
Last night I had blackened mahi mahi...simply delicious. Had a great time with friends and danced all night long. Celebrating 2 of the guys birthdays. I think we are continuing the celebration tonight also at a different location, different band playing and probably more dancing.

Moonflower & Apple - I buy the bags of salmon fillets at WalMart. Granted not fresh but with a little roll in olive oil, sprinkle of dried dill, tiny bit of salt and bake in oven I can do OK with that. DH won't eat it so more for me. Might just thaw a couple out for late lunch. Carrie - I lived in Hawaii as a child. Love Mahi Mahi. When they had it for school lunch (1962) Mom let me buy 2nd helping.
I have a dilema. Have 1.5 lbs thick sliced bacon just out of date. It's OK; used some in recipe earlier in week. Anyone have a cook in oven recipe and then I can freeze it. I just hate to waste it and just don't want to spend time cooking on stove. I do have some cookie racks I can drape it over to bake. The thick sliced (HA HA) just seems to mean more fat on it. Can you say Splatter!! I may save the bacon fat in freezer for future use. Know it's going to make a bunch.
Used the bacon earlier this week in "Reunion Black Eyed Peas". Saute 1/2 c chopped onion and 3 slices bacon diced for about 5 min. in heavy ovenproof casserole. Drain drippings (I didn't); when dish is hot don't notice it. Stir in 15 oz can blackeyed peas, 1/2 tsp salt, dash coarse pepper, 1/2 tsp dry mustard, 1/2 tsp ground ginger, 3/4 c brown sugar. Bake covered 325 degrees 45 minutes. Very unusual. This might be good cold but the bacon/bacon fat does get a little weird cold.

Lived in North Dakota until the Summer I turned 7, no fish there. Lived in Spokane until I graduated from college.
There was some fish available there but to expensive for our budget. I can still remember my first taste of crab, I loved it! I was 4 when we made the trip from ND to WA and Or to explore the idea of moving out here. Mom's brother lived on the Oregon coast. We went down to the docks and bought fresh crab right from the boat. They cooked it right there and we went home and ate it still hot and with what I now know was clarified butter. Heaven.
Since I moved to this side of the state I can never seem to get too much seafood.

I have received an awful lot of PM's about my cooking, so guess I will be a bit more active. This weekend is all about preparing the end of this year's summer vegetables for the winter and stocking the pantry.
Last week's Calabrian bread is being turning into breadcrumbs. According to this book, Calabrian women keep two cannisters of breadcrumbs, very fine and fine. I tried the traditional grating of the dried bread and that is NOT going to fly, so I am using her backup, the blender. You then put them through a sieve removing the very fine, and then re-process to get the fine.
24 lbs of tomatoes, onions, garlic, and lots of herbs is in the oven. This roasted tomato sauce is a favorite of ours over ravioli. It is a very dense sauce, but freezes very well in zip-lock bags.
Next up is making a roasted tomatillo sauce. This is the first year that our local farms are growing this item, so the prices at the end of the season have been very low. Again this freezes beautifully.
Since the husband has requested chicken enchilladas, I will poach a whole chicken, and then use the poaching liquid and chicken bones to create a rich stock.
None of this actually adds up a meal, so I might make the ricotta today and serve that with some Italian sausage and pasta. I think I will use boxed pasta though. Or perhaps use the last of the corn harvest for a corn soufflé. I am never hungry on these big cooking days.

Monday I have a follow up with BS to check on my cellulitus. There is still some tissue thickening towards the bottom and some weird looking pitting. She will see Monday. Once in awhile the area will feel warm and have a slight pinkish color then it will be gone, comes and goes.

Susan - that's an ambitious list! The roasted tomato sauce sounds delish! Do you blanch the tomatoes and peel them before roasting? Or can you leave the skins on?

It's been a busy week..4am to 10pm every day. And joy of joys, on Monday I get to attend a coronation....at the dentist's office...for one of my teeth. The dentist is good with the local anesthetic, so at least only my wallet will feel anything. :-)
Tuesday through the following Monday will be the same schedule...so it too will be busy for us.

Eric- Was wondering where you have been, now I know.. 4am to 10pm? Wow how do you do it! that is some really long days you are working. Would love to see a pic of you since you are kind of our manly man around here (lol) who fixes everything, bakes, cooks, cleans, does canning and does so much for others-
I have pigged out all day and really over did it. Dh works until midnight on Saturdays and was bored I guess. I made bacon and eggs with hasbrowns and toast for breakfast, for lunch I had a BLt- For dinner I had a cheese burger and just finished chocolate ice cream Ughh! My stomach hurts...

I think one of my friends has a scanner but neither she nor I have working cameras and even though my trac phone takes pictures I can't figure out how to upload them or even if it is capable of doing so. I'll keep trying to figure something out.

I am going to make a ton of pesto this afternoon. I went to the market and bought 8 bunches of basil (i'll stop by the store and by a big bunch of parsley or two.. The 2 8 yr. old sons charged me full price (1.00 a bunch (the mom usually gives me a couple of somethings for free), and they had a little argument about that. I gave them each an extra dollar to shut them up.
As I deteriorate (a bit) i am happy to see my husband and kids step up to the plate. They don't really care tho if the dishes and laundry are not finished.
I went to a fall festival last nite, and by the time i caught up with my boyscout hubby - jumping around and carrying glasses and plates for everyone I was almost crying. Someone must have said something to him because he has been very attentive since Friday evening. He means well (he just has an inner boyscout inside).
Maybe I'll find a camera and take pics of the pesto process. I grind the basil, then nuts and garlic, add olive oil and parmesan, salt and that's about it. Thank goodness for food processors. By the time I'm finished, I have a HUGE bowl.. good for gifts and the boys eat it like it's peanut butter (I might have said that already earlier). We have enough leftovers so that I don't have to do any cooking whatsoever. I'm driving 45 minutes to Baldwin KS to play my Sunday service (S). The priest was in a head on wreck with a truck so he has been recuperating from a concussion.. it was pretty bad. I bet he comes back to day. I hope so. 7 cars were involved in this wreck caused by a drunk driver in the country up in Utah. idiot. Except for his consussion, I don't think anyone else was really hurt. He's been out for about 4 weeks.

Wowza kidsandlabs, wish I was there! Last nights dinner was sausage and peppers, the last from the garden, with fried potatoes leftover from Friday night's salted potatoes. You were absolutely right about them Michele. We had a light frost last night, but my biggest most protected basil plant survived. I think I'll follow apple's lead and make pesto before it gets zapped. Since I'm in leftover mode, tonight's dinner will be chicken and leeks with the leftover roast chicken. I love using up leftovers. Hope everyone is having a beautiful Sunday.
