Laurie, I'm feeling pretty good 8.5 days out.

Sounds like you had a busy day.  Re: your son's friend - it's amazing (and inspiring) how adaptable kids can be.  Not long ago I saw a human interest story on the news about a young boy who had overcome so many physical problems in order to play football.

For what it's worth - about 15 minutes ago I sent your opening post to my husband because I love the last line so much.  When I see it at the top of the page it makes me smile:

Every night my husband comes home and says "whats for dinner?"  no matter what I say he always says "sounds good!"  even if I say it's a 'fend for yourself night'. :)

Yeah Tazzy - finished is great!

We went to Polcari's in Salem for lunch today.  Tomorrow my daughter is taking me wig shopping.  She wants something like my current hair style so it should be interesting and fun.

She also helped me with getting some paperwork together for my mom's annuity and insurance policies.  I never thought something so easy would be so difficult.  I'll be glad when my brain comes home to roost!

Tazzy, it's great that you've finished rads.  You certainly eat well.  All your meals sound good.

Laurie, hang in there.  I guess most moms with two small boys are busy.

Neomom, sure hope the needle biopsy results are good.

    Hugs to all.

I do eat well.. too well sometimes.  Would love to lose about 20lbs, but I love food.  Even on chemo I ate pretty good.

    Have fun wig shopping Michelle.

Just found out I don't have to cook for the husband tonight, he has a staff meeting, so I'm making myself some alfredo with broccoli which he doesn't like. Just thought you all should know this so you can sleep soundly tonight Tongue Out

Seriously this time of day, when you are a stay at home mom is kind of tortorous. Homework, dinner, bedtime and no other adult around can make a person cuckoo.

Tazzy= a fully loaded baked potato is my fave thing in the whole world.

    Tazzy, Congratulations on finishing!

Treatment day here, so I refuse to cook. We went out to the Independent tonight. This is a local bar/pub right at the bottom of the hill. We have lived here for over 9 years and this is the first time we have been. We split an onion soup which was perfectly fine but not particularly creative. There was WAY too much cheese for the amount of broth, and at $10.00 not a great value. We ordered a burger and a chicken sandwich. Mr. 02143 got 2/3 of the burger and 1/2 of the chicken sandwich. The chicken sandwich was fine, but again, a bit pedestrian. The burger was the winner. Very delicious, and the house ketchup was actually good! So often house ketchups are just nasty.

Can't believe that it took us 9 years to go here. The room was nice. The chairs were comfortable. The noise level was tolerable. And Mr. 02143 was delighted to see his Puerto Rico Invitation basketball game showing on three huge TV's. And it is right in our neighborhood.

Tomorrow night I won't get home until about 6:30 from a client visit so we will have the leftover eggplant. Will just make some fresh pasta and a salad.

My dad's cataract procedure went fine today. We had to get up at 4:30 am to get him there so it will be a miracle if I can make it to the evening news tonight. Last night he took us to a VERY loud beer and burger joint. The place is known for it's cheap food -- 99 cents for a 1/2 pound burger, and large beer selection. My dad's favorite menu item is chick on a stick, a spicy grilled skewer of chicken wings that was very tasty with hand cut fries. All 3 of us ate for $13. Beer was extra :-)

I started a batch of crusty bread for tomorrow to go with French onion soup that I plan to make. I've got quite a few beef bones accumulated in my freezer that I need to make stock with. Right now all I can think about is sleep. Yawn!

LeeA- Love that you passed it along!

Neomom- Hear hear!!  I am an at home mom too...sometimes by the end of the day I am ready to run screaming from the house!  But...I am lucky I can do it... I think ;P

Yeah, I managed to make popcorn tonight...all by myself!  That is a big victory!

We've been making popcorn in paper bags in the microwave for about the last 8 months or so - then we top it with extra virgin olive oil and either pink himalayan salt or sea salt.  I think I might make some later tonight!

Congratulations, Tazzy! Isn't it weird/nice to drop the rigid daily routine?! I totally appreciate your wish to stay at home.

Susan, sounds like dinner was a bit of a serendipity for you and Mr. 02143. Nice! I was convinced by the store butcher today to go with the pork loin roast. We'll see how it turns out on Saturday.

Neomom, good luck with the tests....and results...and redirecting DS's exuberant connections afterwards.

Laurie, good to hear from you!! Remember, even faux moms worry! ;) Sounds like life is busy and full!

Michelle, you making popcorn is definitely a turn towards normalcy! Enjoy the wig shopping excursion! :) We had our coq au vin tonight since we were both home....really good after relaxing in the fridge a couple of days! Had the wild and brown rice as well as a salad.

Nancy, love your choice of onion soup and crusty bread. Enjoy!

    Hugs to all....

Yay Tazzy! That is a very big deal.

Deborye, so glad you're feeling better.

Neomom, good luck on the biopsy. Hope everything comes out clear.

Apple, good to hear from you! That recipe does sound good. I bet my kids would like it.

Carrie, that is nice that you can be there for your sister. When I was going thru tx, I felt badly that I was usually by myself. A lot of the other patients were older and retired and had their spouses or friends or other relatives with them. And there were some younger patients who had their parents with them. My DH and sisters and friends all worked, so I was alone for the most part. I am sure it means a lot to her to have you there.

Auntie, can you share your onion soup recipe? I really want to try to make that.

Hugs for everyone. You're all in my thoughts. Take care.

We are off to Paris tomorrow. AuRevoir ;)

Kay, have a wonderful trip! Maybe you can post some photos when you return....love those cities!

And yes, Carrie, it is wonderful for your sister that you are able to accompany her to rads, especially if she is needing the support now. I do recall seeing most people with relatives waiting for them for the daily sessions, but I didn't let it phase me since I had my rads at the very end of a long, packed work day, and just dealt with it as my new daily routine. It was probably useful that I was preoccupied with work while going through that, and it did help a lot that my rad techs were unbelievably kind, caring and efficient....and tolerated me partially napping on the table many afternoons! I did appreciate DH coming to most of my weekly RO appts....and she was a character, so it was always a good session for us both.

Apple, that recipe sounds like it must sure stick to yer ribs!

Speaking of which I have to say that most mornings I make a vegetable/fruit/walnut smoothie, and find that it is unbelievably sustaining for hours. If I have oatmeal in the morning instead, I find myself really hungry way before lunch time. Interesting.....

Well, I think I might just get myself some sleep now.

Best to all as we approach the holiday week!

Apple good to see you posting here again.

Carole- Oh no!! That's terrible you flushed your gadget thingy down the toilet. I dropped my cell phone and my sun glasses in the toilet before. Hate when that happens.

Lee- I forgot to mention the EVOO on the cauliflower and of course s&P.

Carrie- Sorry your DS is having a hard time w/rads I hope your shopping helped you both!

Moon- I called Lincare today to check on the mini concentrator they told my PP had fax a prescription for it also the ins had to approve it, when I called my PP aid she said she would fax it but since i had the large concentrator and the tanks it might not get approved but hopefully it will. Thanks for letting me know!

Laurie- Thanks and hugs to you too! Hope the surgery and cast for the little guy works for him.

Tazzy- Congrats on finishing Rads Woo-Hoo!

Nancy- Glad your dads surgery went well, and what a great price for the food!

Michelle- Have a good time with wig shopping, I loved alll the different hair styles you wore last time you look great in anything. Your DD is so wonderful!

Kay- Have a wonderful and safe trip, take lots of pictures!

Lacey- G'night hope you sleep well!

Made a really tasty chx dish tonight. I took some Chx breast (boneless & skinless) butterflied them then dipped in some melted butter w'/garlic and dipped in some bread crumbs mixed with parmesan. In the middle i put some cream cheese and jack cheese (recipe called for cheddar but its all I had) then folded over and put some paprika and more of the melted butter over it, baked at 350 for 30 minutes very tasty. You could use evoo instead of the butter but I used the butter instead tonight. Also made some crazy good oatmeal/chocolate chip cookies.

    Hello Eric Thanks for helping.

Susan  I think you should have a job as a food critic....wouldnt it be fun to eat as a job?  ha ha You have such a fine palate and are such a great cook.

My sis and I had a blast and she was able to get her frustrations out with me on the hour drive to get there and then we shopped till we dropped.  Went to the home goods and got some cool stuff to take to my sons this weekend for his new house.

Debbie  ANYTHING with butter is better!

Kay Happy travels  You are off to Paris and I am off to Ohio  hmmmm whats wrong with this picture?

Susan and lacey, I usually brine pork loin. It's been my experience that brining more than a few hours (e.g. overnight) creates a mushy roast. Would a marinade produce a different result?

I read recently that 19% of smart phone users drop them in the toilet at some point. Made me think twice about keeping it in my pocket!

    Popcorn, my favorite food group!

    Carole,

My intention is to post my "house" stir-fry for you. It is based on a Grace Young recipe and without fail, regardless of what I have in the fridge, it is delicious. No cheese required, or additional soy sauce. It does call for a few ingredients you might not have in your pantry, but they are easy to find.

French Onion soup ala Julia Child

Saute 12 cups thinly sliced onions in 3 Tbs butter and 1 Tbs. oil for about 20 minutes, until softened. Stir in 1/2 tsp each salt and sugar and saute 15-20 more minutes over moderate heat, stirring frequently, until golden brown. Sprinkle 3 tablespoons flour over onions and cook slowly, stirring, for 2 minutes. Off heat, whisk in 3 cups hot beef stock and 1/4 cup cognac or brandy. When well blended, stir in 2 quarts more stock and 1/2 cup white wine or dry French vermouth. Simmer loosely covered for 30 minutes. Season to taste.

I modified the original recipe to add more onions because we like more. It really helps to have a mandoline for this.

This freezes very well. I serve it gratinee with crusty toasted bread topped with gruyere and broiled until bubbly and brown.

Oh dear, now I'm worried about creating main course mush. Thanks for the warning. I'll start googling to research my safe options for marinating my pork roast...and happy to hear all opinions.

Carrie, The London Eye, exciting.....The Eiffel Tower, spectacular....meeting up with your son anywhere....even Ohio, PRICELESS! :)

Eric, I can just imagine (or maybe can't!) how busy you must be with the devastation that occurred on parts of Long Island. Take care of yourself, please...and thank you!

With all this talk of tech items going down the toilet, what the heck happens to one's plumbing. That freaks me out......either retrieving it or flushing it! Sorry for the unpleasant images on our foodie thread.

I just received a doorbell surprise of a really beautiful and super fresh edible arrangement from the gal who took my position and who I consult to weekly....so unnecessary, but very thoughtful! Once everyone has enjoyed it as much as possible, I can freeze the rest to throw in my smoothies...so I will appreciate it for some time to come! Sweet!

    Auntie,

That is such a great recipe of hers. I just saw the old "French Chef" series with her doing this soup. What a wacky show that was! My local CREATE channel has been showing lots of old Julia Child shows lately. I haven't made her version in a long time. I should do that after T-Day is behind us.

Last winter I made a Lyon onion soup which uses water instead of stock and no cheese. So different. Both are good, but the Parisian version with stock and cheese is a favorite.

Lacey, I still brine lean pork because it really does make for a moist roast, just not overnight, a few hours seems to be about right. But I truly don't know how a wine marinade would do. It's the salt in the brine that can be too much. I'm not scientist enough to know how acid does for a long period.

Susan my DH gave me the French Chef series on DVD for Christmas one year. She was such a one of a kind! She's the reason I started cooking (along with a lot of others I imagine.)

  • debbie6122
    debbie6122 Member Posts: 2,935

I agree I never brine or marinate longer than a few hours, this is what I got from livestrong before it says, Acidic ingredients such as citrus juices, wine or vinegar break down the protein in pork and cause it toughen if it soaks too long, while enzimes like garlic and pineapple will cause it to be mushy, for pork its best to concentrate more on the seasoning rather than to tenderise. And for fish I never do more than an hour.

Eric- Hope you are Ok and yes thank-you!

Lacey- What a nice surprise you got and edible too!! You deserve it with all the hard work you put in there.

    Eating cookies for lunch!

Edited to add; I love Julia child she was a hoot to watch and loved all her recipes especially her beef bourguignon which is fantastic!
