So...whats for dinner?

Susan - I have a lazy girl recliner (it's smaller than my DH's lazy boy) and an assortment of blankies and afgans to keep me cozy. My DH is keeping close tabs on me and asking me what I'm doing every time I try to get up. He runs a tight ship...lol
And I can look outside from my chair and watch the ducks and geese on the lake. We have a nice assortment of waterfowl including cute little hooded mergansers.

It's an Indian summer day here and instead of doing something productive (like figure out what's for dinner), I'm looking out the window watching my husband pull up the garden. Didn't sleep well so I really feel the need for a nap. The warm sun coming in on me isn't helping. With all this talk about piccata, I really think that's what dinner is going to be.
Eric, really hope you're not called up. Carole, I have eaten kohlrabI raw, but it reminds me very much of raw broccoli, which I don't like as much as slightly cooked. The lemon juice and olive oil sounds good though.
Susan, your lamb sounds like it's going to be a winner. I'm curious as to how much garlic you use in a week. I use nearly a whole head a week, often more when I'm roasting it. I believe you've got me beat :-)0 -
Nancy, I think I, too, like broccoli better blanched than raw. Also cauliflower. As an experiment, I blanched both in preparation for using them in a chopped salad. Previously I'd used the raw veggies. The slightly cooked version is very good.
We are having fish tonight. Walleye fillets out of the freezer, brought home from ND. Also "smothered" okra and tomatoes with garlic and a dash of hot pepper flakes, s & p. I cooked it earlier. And a salad of some kind. Possibly sliced cucumbers w/onions for dh and without onions for me.
Tomorrow we're going to a funeral. My cousin Peggy, 3 years younger than I, died. Very sad case. She had rheumatoid arthritis and other illnesses and lived in pain for quite a few years.
Nice and quiet in the house with dh out playing golf. I'm doing laundry and am about to watch my recorded Saturday PBS cooking shows.

My DH picked up food from the Tuscan Kitchen for supper. We had chicken parm, ziti with pomodoro sauce and ciabbatta bread with dipping oil. We will have a little dutch apple pie later. Yummy!

Michelle,
If you are going to have fatigue from radiation, it sounds as though you have the best possible environment. A laz-y-person with a warm blanket, looking at birds? It doesn't get much better than that.
The lamb here on the Cape smells great. I am also roasting some carrots, potatoes, and the 'famous' Eastham turnip. We have enjoyed some cheese while watching some college football game. Other people in the room are making 'go get 'em" kind of noises.

Michelle, your take out dinner sounds so good! Your rest mode sounds ideal....love that you have a nature scene right outside your window. Happy for you having those experiences!
Carole, Ming Tsai (sp?) always recommends exactly what you did to your broccoli when using it for dipping or in salads. I must try that. It certainly makes the veggies more colorful!
Susan, that lamb sounds wonderful.....please give a full accounting of your dinner....minus the football cheers...tho I am happy that ND is still undefeated.
Went to a neighbor's election celebration party tonight. This couple are both wonderful cooks (and I envy their spacious chef friendly kitchen!)and had lots of nice appetizers (I contributed feta/spinach stuffed mushrooms) and then seafood gumbo and chicken chili with basmati rice for a very large crowd. Delish!0 -
Susan We were also making some of those "go get em" noises! Alabama certainly did not bring their A game yesterday. there is nothing better than being curled up on the couch with my DH watching football. Made a mexican tortilla soup that he loved, I did not eat, as putting food in my stomach is like making the volcano erupt. WTH?
I made some instant pudding last night and that was my dinner.
Supposed to be 70 here today Wahoo! Got a bunch of people showing up for the last boat ride of the season, in the canal, to one of our favorite restaurants for dinner, then pack up the boat for the winter.

Carrie, maybe you should go to your PCP and get some relief for your stomach ailment? You've had that for quite a while.

The lamb dish was absolutely wonderful. Highly recommend this dish, and I think it would work for any large roast:

p.s. Off to the Wicked Oyster for breakfast.

Carrie, are you having burning, nausea or both? Taxotere messed up my stomach (felt like I was drinking molten lava) so that I needed 8 weeks of rx nexium to get it back to normal. And this was 2 months after I finished chemo. It's a great way to lose weight, but not much fun :-(

Carrie, enjoy your season finale on the boat.....how lovely to have 70 degrees to do it in!
It does seem like you've been suffering with this stomach distress for too long, and should have it checked out. Meanwhile, have a great day on the boat!
Susan, thanks for posting the link to that fabulous sounding lamb roast. Lovely weather on the outer Cape today, I'll bet. Wicked Oyster....nice!
I hope everyone is having a good Sunday.....our crazy weather pattern is giving us an unseasonably warm, sunny day. Definitely grilling weather.....0 -
Yep, nice day here too, a bit gray now, but a lovely 60. I may do my 3 minute walk outside!

I've been called up.

good luck, Eric!

Geez Eric, do you have to go far? Good luck from me as well.
Beautiful day here too! Had emeril's jambalaya recipe, but used quinoa instead of rice and just had chicken and shrimp in it, no sausage. Bam! We liked it, but we all like spicy.0 -
Good luck Eric. My husband is an Erik.
I've put some pork spare ribs in the crockpot with a sweet and sour sauce. On the side some sliced fresh pineapple and white rice with cumin seeds and fresh cilantro.
My husband's friend comes over and they play guitar and sing in the garage and then we all eat dinner together.

Good luck Eric and please take care.

Would assume Eric is on his way to NJ/NY. Stay safe!!

Eric, Safe Travels.
Came home after the Patriots game was over. Somehow, we hit the SE Expressway at the same time as the Foxborough traffic. Such a nightmare! For dinner, I had some Chinese noodle soup and husband ate Spicy Chicken with bone-in. Enough leftover for lunch tomorrow.

Good Luck Eric.
Did very little in the eating today, I have some type of Vertigo going on, every time I move my head it would make me sick, barely made the bathroom
Starting to feel a tad better.

Best to you in this endeavor, Eric. I bet it is NJ/NY also...not a nice way to be introduced to those areas...but it sounds like a lot of people are suffering and need help. They will be fortunate to have you there with your work ethic! Take good care....
Joyce, your dinner sounded tasty. Hope you are getting some good relax time.
Went into roast mode today...brussels sprouts, many colored peppers, carrots, sweet potatoes, onions, beets...and of course tomatoes...but they are not half as good as the
tasty ones from the summer. Fortunately, garlic evoo and balsamic help a lot....0 -
Lacey, the roasted veggies sound good. An interesting combination. When do you add the balsamic vinegar?
What's for dinner? Good question.
0 -
Deb, that sounds awful! My dad had the same thing happen this summer. Fortunately it only lasted a couple of days, hope yours is over quickly.
Carole, when I roast with balsamic, I put it on at the beginning, bit I suppose you could use it as a dressing too. I'm interested to hear what Lacey does.
I have no clue what's for dinner.0 -
I throw my cut up veggies (not the tomatoes....they get individual treatment) in a bag with minced garlic, evoo, and balsamic vinegar, and shake to coat them well, then spread on cookie sheets or large casserole dish and roast at 375 until they are tender. The beets take longer, so I put them in a separate pan. Peppers, onions and small carrots are good together, along with potatoes in small chunks. I also do my brussels sprouts in a separate pan. The oven was loaded yesterday!
Deb, hope you are feeling better. Is that from an inner ear issue?0 -
Thanks everyone for thinking of my poor stomach. the onc is aware of my issues but not sure what the problem is. Definitely a lower GI problem , not upper. I still think I just cant tolerate meds of any kind, but if history repeats itself, it will go away and not rear its ugly head for another month or so....very random.
Nancy I got that with the taxotere also, but I have been out of chemo for almost two years now. It presents itself more like an IBS, usually a week of the big D. But, enough of bad tummy talk! On to some good food thoughts!
Deb That vertigo can be very debilitating, hope it resolves quickly.
Tonight my Dh must finish the leftovers from our outing last night. Trying not to cook and add to the refridge mess, as we are going away at the end of the week and next will be Thanksgiving. Gonna keep it simple for awhile.

Today, I began planning my Thanksgiving meal. But, there really isn't much planning to be done. My family takes this whole tradition thing seriously, or at least I think that they do. What would happen if I didn't make the family-recipe baked beans? Would the world stop? Would my mother sulk? Would anyone else actually care? I, for one, would drop the stuffing which isn't actually stuffed. I have never cared for it, but others LOVE LOVE LOVE stuffing. As far as I can tell, it is primarily a gravy delivery device, another holiday food I don't actually eat. My creativity can play with the green beans, and appetizers. With only 11 people this year, maybe I will start with a soup.
Feeling totally uninspired for tonight's dinner, so just pulling out some braised short ribs from the freezer and will serve over a soft polenta.

Here's how uninspired I am. Tonight's dinner = sloppy joes. Why? Because if you ask my husband what he wants for dinner (which I rarely do unless it's his birthday or I have no ideas of my own, because I already know the answer) it is:
1) sloppy joes
2) pizza
3) chili
Does he enjoy all the other things I fix? Absolutely. Would he ever request any of those things? Never.

LOL, Nancy, at least he gives you an answer. All I get is whatever you want. DH does cook once in a while, but I usually have to tell him what to cook. He just doesn't seem to want to make the decision himself. He made the jambalaya yesterday, but I had to suggest it to him. I would love to just be surprised to find out what was for dinner one night.
My DD requested spaghetti tonight, so we will be having Trader Joe's brown rice spaghetti. She just likes some EVOO and parmasan cheese on it. DH and I will put some red sauce on it. And I am excited, my boss gave me some striped bass that he just caught yesterday in Cape May, so we'll have that as well. Not sure how we'll cook that yet, but I am sure it will be delish.
