So...whats for dinner?

Seaside, that was the best part of our last cruise too. I watched the sunrise every morning with a pot of coffee and my "first breakfast" bagel. Then around 9:30 we would go to the dining room for "second breakfast". Loved it.
Debbie, I must say it was a bit of a challenge reading your posts before finishing my first cup of coffee, but very entertaining lol!
Even though I feel worse today then ever (what's up with that?), I ventured out with a friend on a Costco run. I picked up a rotisserie chicken which I will use the carcass for some chicken and homemade noodles. But tonight is comfort food, meatloaf, mashed potatoes and gravy and baby peas. I'm glad I made it ahead of time because by the time I got home, I was wiped out.
Luv, I've also used leftover thin pieces of roasts of various kinds in a sort of "faux" pho. The meat just warms up in the hot broth and doesn't have to cook at all.0 -
Belinda,
We got really wet, heavy snow last night.... Cold, damp and miserable! I agree, a grill cheese sounds really good!
Nancy,
Lol on the first and second breakfast!! We did a lot of the repeat meals, too! We had such a blast!0 -
LOL, Debbie, I hope you didn't end up in the bathroom visiting RALPH!! Or hugging the porcelain bowl talking to RALPH!
I did enjoy your post, LOL
Had Meat Raviolli last night, tonight Chicken Teriaki (sp) with Rice Pilaf.

Debbie, no worries. I was entertained by your post too. I just wish I was there with you, I'd drink some of those $10 Martina's with you
I think pork stir fry sounds delicious . So does beef stew, grilled cheese and meat loaf. I'll eat anything if someone wants to cook it for me. DH made tortellini, Brussel sprouts and a salad for dinner. He made a sauce with white wine, chicken broth, lemon juice and a few other things. I liked the sauce, but didn't really think it was right for tortellini. We're going to have the rest of it with shrimp and linguini soon0 -
debbie: add me in to the group who were amused by your post. Yep, we've all been there. Gave me a chuckle this morning before I went to work - thank you.
Pork tenderloin and veggies with yam roasties... another crock pot special ! (except the yams)

Heading in to see my RO in the AM.....hopefully to say farewell.
I ended up making my favorite lentil soup.......with onions, leeks, ginger, anise, fennel and butternut squash in it. Also baked whole chicken breasts for tonights dinner, and boiled some chicken breasts and thighs for future soup and chicken chili.
Better get some shuteye since the appt is early.0 -
Laughing at how my post were hard to read and everyone getting a chuckle out of them now I'm curious what I said almost wish I didn't delete them before reading the whole thing ha! And Deb did I say something about a Ralph? HaHaha I hope there wasn't a Ralph in my bathroom lol- btw love your new avatar so cute.
Love the stories on the cruise ships that's one thing I have never done. I can see how calming and nice it would be early in the morning out on the lani/balcony with some coffee.
Everyone's dinners sound good we had prime rib sandwiches with fruit and the best guava cake I have ever had in my life it was so very yummy. After dinner we went down stairs to the ice cream shop here at the Sheraton (31 flavors) then came back to our room and watched tv all night.
Lacey- hope tomorrow will be your last visit with your to.
Nancy- did you go to the dr yet? I hear there is a nasty flu going around.0 -
Oh and has any one heard from Michelle? I hope she is having a fun time.

Debbie, I won't go to the doc with this unless it turns into pneumonia or bronchitis or something. There is lots of flu here but I don't have those symptoms, such as fever. It's just a very nasty head cold. I broke down and took Nyquil (nasty stuff!) last night so did manage to get some sleep finally but I still had to sleep with a tissue stuck up my nose because of the constant drip. What a picture that must have been lol!

SpecialK You took the words right outta my mouth. I have that recipe too for the sweet -n-sour pork and my DH loves it. I serve it over white rice.
I kind of did a clean out the cupboards and fridge soup last night with the chicken and canned tomatos, spinach, beans, celery onion and some little dried leftover in the box basil pesto raviolis (tiny) Basically threw in anything that I had just partial bags or peices of. Then my DH had requested a grilled BLT to go with it...used fresh spinach instead of the lettuce, it was yummy.
Debbie Ha Ha I always said you would be fun to party with! We should hit up Vegas!
Nance Hope you get feeling better soon!
Lacey Yay for the last Dr. appt!

Well - I did a version of sweet and sour with the leftover pork. I had some Ponzu sauce (Kikkoman product) lime flavored never used, kinda vinegar/soy based. Added that and to balance added some fig salad dressing from Stonewall kitchen. Cleaned out produce/leftovers: celery, getting soft red pepper, 3/4 onion, handfulf of snow peas, few cooked brusssel sprouts sliced in half, some baby Portabella mushrooms. It was edible over rice. Thickened it with a corntarch slurry. Turned out the can of chinese vegies was way out of date. I desperately need to clean out canned stuff. Slowly trying to use it up. The last 5 years when I was working I cooked not so much but continued buying stuff. Don't even want to dig in the back of cabinet but fear I must soon.
Lacey - 2nd the yah for the last RO appt. Hope your window project is turning out as you wanted. My RO turned me loose 2 weeks after I finished unless I thought I had problems. Get to go on Monday for mammo. I've had one on leftie in July but this is both. Not anticipating any problems but mine was found on mammo. And yes it will be about $500 out of pocket. Nice way to start on deduc. in January. Not sure why they are billing diagnostic for both unless since I've had it on one side they will look closer at other side. I made sure to book on the day the radiologist is there this time. Love the place but my BS never got a copy of the July report but I sat with radiologist and looked at the films so had "it from the horse's mouth" that it was neg. Also have had at least 2 reminders from them for January appt.
Nancy and Susan - Hope you both are feeling better. Nyquil does the trick for me with colds.
Yes - anyone heard from Michelle?

Carberry, the clean the cupboards soup sounds kind like the final exam stew! :-)
Michelle??

Everyone is making me nervous where Michelle hasn't posted since the 12th, but I looked and she last logged in on the 16th. I am thinking she is just having a fabulous time on her Florida vacation

On Tuesday Michelle posted on Facebook that she is loving Marco Island Beach. She did say just before she left that it would probably be tough to post while she was away. Hope you're having a great time Michelle.

Kay you are so smart- I forgot she had been posting on facebook:) Silly me.
Nancey- Hope you feel better
Making a ham steak and cheese and rice for dinner tonight. Today was kind of a boring day. I never came up with anything fun to do and got sucked into the random boredom of everyday life At least the boys did not nap which means early bed time tonight= more me time.

Thanks Laurie. I am convinced that chicken and homemade noodles will cure what ails me. Well that and a little Nyquil ;-)

No worries everyone. We are having a good time - spent 3 days with JoyceK and her DH, then moved over to Marco Island and spent 3 glorious days on the beach, then drove to Lutz, Fl and are visiting our friends from Milton. DH told me I was spending too much time online so I have cut back for now. We actually spent 6 hours on the beach one day (a record for my DH).ha
We've had perfect weather until today, where it's been rainy and cool all day. Ann and I met up with my blogger friend from my diabetes board and with SpecialK for lunch. It was great and there is a picture that I need to get my hands on. Weather will be better tomorrow but still too cool for swimming so we may head to the casino in Tampa. We'll drive back to Fort Myers on the 19th and stay in a hotel. Our flight leaves Sunday morning.
Hope everyone is doing well!
Michelle

Michelle- So glad you are having a great time and that the weather has cooperated for the most part. I agree, the computer can suck you in and is hard to leave behind 100%. Good for you for doing it. Once this past summer when we went camping I had no cell/Internet for 4 days. I had serious withdrawals. Everything from checking weather, facebook, e mail, BCO, texting- but it was probably good for me. Dh laughed at me the whole weekend as I would take out my phone and continue to see no service and put it back in my pocket:)

Glad you are having a great time Michelle.
Chicken Souvlaki, steamed veggies & toasted pita bread for dinner.

So... last night I made probably the biggest 'fail' that I've made for dinner in a very long time... It was boneless spare ribs that were supposed to braise in the oven. You weren't supposed to lift the lid so as not to let the steam escape.... Well all of the liquid evaporated at some time during the cooking leaving me with some pretty dry boneless ribs and zero sauce of any kind... uggghhhh!
Need to look up some possible rescue solutions, if any.... Tonight was cream of broccoli soup and that came out good, thank goodness!
To all on vacation, I hope you are having a blast... To those feeling under the weather, Zi hope you feel better soon!
A BCO friend sent me an email that I thought was very funny (thanks Karen) that I thought some might enjoy.... The story is fictitious but I think those of us who spend maybe a little too much time on the computer and maybe don't mind a drink now and then will find it humorous!
My Living Will
Last night, my kids stopped by and were sitting in the living room and I said to them, 'I never want to live in a vegetative state, dependent on some machine and fluids from a bottle. If that ever happens, just pull the plug.'
They got up, unplugged the Computer, and threw out my wine.
They are SO on my shit list ...
Hope you all are having a good night!0 -
Here is a pic of Michelle and I today after lunch - check out her tan! Sorry, my Blackberry does not take good pictures!

I cropped out a smaller pic of me with my Fasinator, I love that little hat. My DH said it looked like something he stepped on out in the yard. What a DH.

laurie - I think we are the same height (I have heels on) but I am pretty sure I wear a bigger size, but you are sweet! We had a nice lunch and I got to meet Michelle's lovely friends - and we had a stroll around the mall - very nice!

Glad to hear the vacation is going well, Michelle. That will be great to see a photo of you and the girls at lunch. You will be returning just in time to watch the big game!
RO appt went well today and she gave me some ideas to fight this sleep problem...for one thing I will change the time of day I take the Tamoxifen to AM or noon. Not sure why I got stuck on taking it at night anyway. So, that experiment starts tomorrow.:) Dr. RO and I parted ways with the understanding that she is available for any questions or concerns I ever have. I'll miss her...we got to know each other well, and I appreciated her wonderful sense of humor and attunement to DH's and my well being in our real lives outside of the treatment center.
After the appt, I went to a fabric store to replace the fabric I got before Xmas which I CANNOT FIND, and I know that I will probably find it now....anyway, they were having some good sales, so I'm glad I went. I might spend tomorrow sewing taggies and nursing covers (aka "hooter hiders" ) for the young moms and babies I know, while the builders finish the window project. Thanks all for your "window wishes" ....yes, I am eager for that project to be complete!
Tonight we had eggplant parm that was actually more like a lasagna with a mix of ricotta, mozzarella and parmesan cheese between the layers of baked eggplant and sauce. Also had vermicelli with it, and a garden salad.0 -
lacey - I changed my Arimidex from night to morning and it made a world of difference in my sleep pattern. Of course, I got up at 5:15 this morning and I am typing this at almost 1:00 a.m., but disregard that, lol!

Lacey, when I had my surgery, my surgeon gave me a pillow that the hospital women's auxiliary made for breast cancer patients. It was a nifty little thing, a very small soft pillow that had a strap on it so you could put it over your shoulder like a (short handled) handbag. You could then hold it against your chest cushioning it. It was great right after surgery and when I slept. They made them in all sorts of soft and pretty fabrics and I was taken by what a good idea it was.
More comfort food tonight. Swiss steak with leftover mashed potatoes and broccoli. A fairly mindless dinner suitable for my condition. This cold definitely has me off my game. I must be getting better though. Night before last I went through 14 Kleenex overnight, last night I only used six. Yay!0
