    Carol, chicken can be vegetarian using "chix" (soy) but I've heard to not use much of it due to my 95%+er status

    I made really good vegan Shepard's pie with potatoes, soy "hamberger" crumbles, carrots, mushroom gravy (no meat) margerine and soymilk for the mashed potatoes once, but I can't find the recipe

    Kay congratulations on the new bundle of joy! (I know that is a cliche, but it IS true!)

    I'm having shrimp cocktail again left over from the Oscar party.  ( I pooped out and went home at 10:00pm)

    I also would like everyone to know that the picture of the Otavolo market in my office is to brighten up a dark space. And that I would cut that down to a month if I ever were to consider such a crazy things.  Yikes! that's big! How do I get rid of that picture?

    Rain, rain, rain.  We had thunderstorms most of last night and about 3 in. in our rain gauge this morning.  This afternoon it started raining again.  But once this system moves out, we're supposed to have dry weather through next weekend.  MAYBE by Fri. it will be dry enough for me to play golf, the sport I used to enjoy.

    Dinner tonight is stuffed green peppers.  Stuffing is diced onion, green onion, yellow and red bell pepper, garlic, s & p, ground turkey, cooked brown rice, canned diced tomato, grated 2 per cent Mexican cheese blend.  Parmesan and fine bread crumb combination sprinkled on top. 

    Side will be left-over roasted sweet potatoes.  Cabbage slaw salad.

    Lamb shanks and polenta are a great combination. 

    Those cheese-stuffed shells sound delicious but I do better limiting myself to small portions with foods that require more chewing!  Laurie, do you use some of your mother's recipes?

    Hey Carol:

    I just call it that... the recipe is from Veganomicon.  It's excellent.  She calls for cannellini beans in hers, but I leave them out, the baby doesn't like them.  You could put some kind of soy protein in there, but I don't, just as bedo says.  You could do seitan.. that's wheat protein.  Anyway, they're delicious.  I just don't eat anything the kids eat because I am sick of the sight of it!  :)

    Bedo, I love vegan shepherd's pie!  I love a good mushroom gravy.  I put turnips in the mashed potatoes.

    As planned, made the pork tenderloin but decided to make a potato latke or pancake instead of spaetzle. Simple salad, and dinner was served. The mustard sauce is what makes the dish since let's face it, even after brining, pork tenderloin isn't going to win any flavor competitions.

    Long and hard day tomorrow. May just have someone else make my food.

    I found a cast iron dutch oven that my Mom had, I cleaned it up and seasoned it.  Now I'm gonna search for recipes.

    deb, just think of your Dutch oven as the original crock pot with the advantage of being able to sear the food in the pot.

    That is a beautiful pot. May I suggest short-ribs? With bacon fat.... served as a taco or over polenta.

    Laurie, love that photo! It is too bad that you (like many other folks) don't prefer that lamb taste. Our lamb shank dinner was a wonderful winter meal. Here's the recipe I used....a very forgiving one for a first time lamb shank cooker! I could have used a nice caste iron dutch oven for this. Envying you, Deb....nice pot! :) Enjoy it!

    Thought of you Carole when I saw the national weather report today. Hope things dry out enough for you to get back to golfing.



    We expect more snow....a storm lasting over the next few days. Unfortunately this is the week in which I have several early morning doc appts...mostly mine, but am also taking DS2 to his lasix (sp?) procedure early Thursday. Hope the forecast changes!



    Susan, hope someone makes you a lovely meal tomorrow evening.



    Carrie, so many of our friends report the same problem for their daughters...not just in NYC...also in Boston. It seems that there might be more high achieving girls than guys, in that age group? Our single son can't seem to get serious with anyone since his breakup with his long term girlfriend a few years ago. He says he's "addicted to his social life" for the time being....also really busy in a demanding job. So we have learned to keep our mouths shut about our wish that he'd settle down soon. ;)

    Laurie - they are just too cute, and they did a fabulous job with the snowman!

    I have that dutch oven but I don't use it very often because it's so darn heavy even when it's empty!  Maybe I need to have Rick execute a recipe under my tutelage...lol  I think I made beef stew in it once.

    I'm hoping the snow holds off until later tomorrow, I have chemo in the morning and it would be nice if the roads were clear.

    Laurie. Great picture. I've made 2 snowmen...one at age 7 and one at age 18. I don't know if I've missed much, or not. :-). DD has made a few while skiing.



    Deb.... I've been amazed at how much I use my dutch oven. It looks like you got a good one... :-)







    I'm in the airport again.....sigh..... another work trip to Las Vegas....3 days this time....

    We don't talk about beverages very much, but I thought I'd throw this out there...I have been a Diet Coke drinker since it hit the market.  And I generally don't drink anything with sugar in it - being diabetic and all.  Well, Diet Coke hasn't been tasting good to me and I figured out last night that nothing made with Nutrasweet tastes OK.  I have tried other flavors of soft drinks, hot spiced cider mix, V8-Splash, etc and it occurred to me that I am noticing the bitter aftertaste of Nutrasweet.  What a bummer!  I think splenda is ok so I'll have to try a few options to see if I can find a carbonated drink that I like.  For the moment, I'm relegated to plain iced tea and water.

    Michelle- That must be so frustrating.  I hope you can find something that you enjoy.  I have never liked the taste of diet anything, but I don't drink soda either. 

    Eric- Have a safe trip!

    Carol- I do make a lot of the same recipes my mom made.  I am glad I hung out with her in the kitchen and learned how by watching.

    Tonight is grilled chicken with balsamic tomatoes and fresh mozzarella with a salad.  I figured I should get some grilling in before the snow hits tomorrow. 

    So the last few days my back has been bothering me.  Ever since the BMX the muscles in my chest and back are always really tight.  My DH keeps saying I should stretch more etc.  So I sat down today and did light stretching for about 10 minutes and put icey hot on my back and laid down for about 45 minutes with a book and a heating pad....now I can barley walk!!!  WTH?  I am hoping a good night sleep tonight will fix things.

    Went to the gym early this morning with dh, about 7:30.   My first time to this gym, where dh goes twice a week on a cardiac exercise regimen.  We were finished about 9.  And I said, "How about pancakes for breakfast?"  So off to IHOP where I ordered the whole grain pancakes that have nuts in them.  And I also had bacon.  Everything tasted really good.  I haven't eaten pancakes since we returned home from our summer trip the 1st of Oct.  Nor have we eaten breakfast out during those months.

    That's all I've eaten today except for an apple.  We'll have an early dinner since dh has a woodworkers' guild meeting tonight.  Warmed up stuffed peppers and butternut squash.

    I had planned to experiment with making pasta this afternoon but got busy doing other things.  Maybe tomorrow.

    My mother had a big iron pot about the size of Deb's but it had a handle like a skillet and a lid.  She used it a lot making meals for our large family.  Later on, that pot became the outdoor fishfry skillet.  I think one of my brothers still has it.

    I love this story!  I don't know why... but pancakes could have something to do with it... :)

    Don't know what I'm having for dinner yet -- teaching until 7, Denise will cook -- but I know I am going to have a beer with it.  You can take that to the bank, as my grandpa would say!

    DH is making pan-sauteed boneless pork chops, cole slaw and waldorf salad for dinner.  He's getting more adventurous every day!

    Laurie - I like the Trop50 drinks so I'm going to get the lemonade and see how that goes down. I had a problem with acid reflux while on carboplatin but so far I haven't had that problem with gemzar.

    Michelle have you tried flavored selzer water?  I finally gave up my addiction to ginger ale.

    Have a day off tomorrow yipee!, but have doctors apt.

    Work "may " have agreed to 3-4 weeks in Ecuador in 10 months.

    Bobo, I think we may be twins.  I have a real one.  Maybe we're triplets.  Hehe

    Tonights dinner was cooked in -- grilled red snapper with wine butter sauce, grilled smoked sausages (one garlic and one pecan wood smoked), oven roasted potatoes and onions, steamed broccoli with butter

    and parmesan, salad with vinaigrette and jalapeno cornbread. It was quite delicious I must say. This was a group effort and I was only responsible for the potatoes, wine butter sauce and vinaigrette.



    A beautiful sunny day today, but a chilly wind still. Tomorrow promises warmer temps in the 70s. Hopeful!

    No one made me dinner. Instead, I made a vegetable-noodle soup. It was the perfect supper for me tonight. Never done sodas so I don't know what splenda versions there might be out there. Does a bit of juice with seltzer water appeal or the sugar content of juice too high?

    It's chilly in Las Vegas...probably in the 40s, plus the "always there" wind. If a place could use wind power..this place is it. The wind is always blowing.



    Dinner was "out" at 5 Guys burgers.



    Laurie, I hope you feel better tomorrow....maybe a soak in a hot tub would help...



    Michelle, do Diet Coke and Coke Zero both have the same sweetener? Maybe one would taste better.





    Sharon is kind of frustrated tonight. I'm up here and she's down there....and the Internet connection died...so I talked here through using one of the cellular wireless modems I have laying around. She got it running, but she was hoping to be done already instead of spending "forever" getting a cell connection.



    I'll be glad to get home...I always am.....

    Got snow and freezing rain last night...so I am stuck at home...groceries are low so I will have to be creative for dinner tonight. Got some frozen shrimp and frozen raviolis maybe in a wine sauce?  I always have wine! LOL

    Auntienance  that dinner sounds yummy.  Not sure I have ever had grilled snapper.  I am kinda on a fish kick, so will have to look into that when I get out.

    Laurie I have to stretch every day (nothing formal) or my arm and back shoulder blade areas get really tight, sometimes the stiffness goes all the way up my neck...very uncomfortable. Hope you get the kinks worked out. My PT always did heat, then movement, stretching, then ice to finish.

    Michelle  I love the trop50 juice also, husband balks at it, so we have separate juices in the fridge, but I dont really see the difference.  Hope it agrees with your tummy.  I am trying to train myself to drink more water, but sometimes you just gotta have some flavor.

    I drank diet coke, with caffeine and without caffeine, for many years.  Decided to stop drinking them about 3 yrs ago when I heard a report on tv of some study done about negative effects.  Don't even remember the report now but it did have something to do with cancer.  It just occurred to me that it was silly (for me) to pay money for a liquid with no health benefits and a lot of mystery ingredients.  Also good for cleaning motor oil off the garage floor!  I now drink water, which I happen to like, and a lot of home-brewed tea, cold and hot.  I squeeze a wedge of lemon into the cold tea and it's delicious.  We sweeten the hot tea with splenda and the batches of cold tea with Sweet'n Low.  Some of my health-conscious friends do not use any artificial sweeteners.

    Of course, I also drink wine, vodka martinis and bourbon old-fashioneds!  Occasionally a good brandy.  Poof!  There goes my virtuousness in abstaining from carbonated drinks or soda.  Vodka and bourbon may be good for cleaning the garage floor, too, but who would waste them?!

    Michelle, I hope you find a refreshing drink that you enjoy.  It sounds like your dh is turning into a good cook.

    Tonight's dinner idea began with having some ripe avocados on hand.  Also some corn tortillas in the refrigerator.  I took out a chunk of pork loin and a package of cooked black beans from the freezer.  We'll have pork fajitas.  I'll cook the pork, cut into smallish pieces with a sliced onion.  That will make dh the onion eater happy.  Quacamole, sour cream, a little shredded cheese, shredded lettuce, black beans.   It will be an easy build your own dinner.
