Instead of bread crumbs, I use "everything" bagel thins with shrdded parmesan, some garlic powder, salt, pepper and fresh parsley. Give it a swirl in the food processor then use it to coat your chicken breasts. Really, really yummy!
The trip is going well, we are closing in on West Virginia heading to Pittsburgh. I am getting really hungry, so we're going to be making a lunch stop here any minute now!
I love being able to tether my netbook to my Android phone! Being connected to the internet makes the trip less boring!

Hi all! I hope everyone had a nice Mother's Day!
We had a nice time w the family in DC this weekend. The best thing we did was rent bikes to ride around the city to see the monuments, etc. Otherwise my 6 year old would have pooped out very quickly walking from place to place
We had some good meals while away, but I'm looking forward to making dinner tonight. It's going to be wraps: mix horseradish with Greek yogurt (recipe calls for sour cream but I wanted to make it a tad healthier). Spread on whole grain wrap. Fill wrap with roast beef, thinly sliced granny smith apple, crumbled blue cheese and romain and baby spinach (recipe uses watercress, but I'm using the greens I have)0 -

BTW if you are looking for a low cal, no sugar, high grain flat bread try Flatout Light. They are a bit high in salt though. I've even made personal pizza out of this.

lago those wraps you posted about sound similar to the ones I've been using lately. They are low-carb-low fat and they are pliable so they don't crack and tear. The brand is Toufayan Bakeries. But as you said sodium content is high (23% of daily value)0 -
Those look good too although the light flatout are lower in calories. Around 90 calories is not bad for all the bread.

Been so busy lately haven't had too much time to post!!
Trying to get my garden in for the summer! I have done flowers for years on our back deck but, the year I was diagnosed, I had planned on putting in a vegetable garden. Well... life intervened that year and I spent all summer in treatment! So last year, I decided, come hell or high water, I was going to have a vegetable garden! We put one in and, even thought I had not a clue what I was doing, it did pretty well! We're expanding a bit this year and I'm hoping for continued success!!

My husband cooked a pork shoulder on the grill yesterday and we were expecting to have barbequed pulled pork sandwiches for dinner....
Time got away from us and it was just going to be too late to have it... so, while it finished cooking we defrosted some sandwich steaks, grilled them and served with onions, peppers and cheese on a roll! That and our very first corn on the cob of the season made for a great meal! Strawberry shortcake as dessert!
Tonight dinner was the pulled pork and, WOW, was it good! DH even made his own Bar-B-Que Sauce based on the sauce served at the Dinosaur Bar-B-Q in Syracuse.... DELICIOUS!!

I was born at Haverford Community Hospital in Havertown!! My parents lived in the Drexel Brook Apartments. We moved when I was just 3 so I don't remember too much about it!

Haverford Community Hospital is no longer a community hospital.......it was taken over several years ago by a group of Dr.'s and is an outpatient Surgical Center.
Drexelbrook Apts. is still there, in fact Drexelbrook used to be called the Drexelbrook Country Club..................Now it is just the Drexelbrook........It has banquet rooms thourghout, very nice...........and my daughter works there.........she trains all the incoming new Wait staff,.
They have a lovely set up there........my grandaughter was married there last year, and another grandaughter is getting married there this Sept.

Have any of you all ever made homemade pizza dough? I tried some already done from the store which you roll out and bake and it was dreadful. My ex. had a wonderful recipe for grilled Pizza dough which you rolled out thin and when you put it on the grill it poofed up and sunk once you got it off the heat and it was amazing but neither of us have seen that one in years. Anyway, thought I'd ask.
Tougherthanithought - did your D eat the wraps? they sound wonderful but I don't think my kids would have eaten them.

We have a lot of really good Italian places where I live and many of them sell their pizza dough in the local grocery stores so I haven't made my own dough in years!
BUT, we HAVE done grilled pizza, using their dough!!!! Soooooo Goooood!!!
One of the Italian restaurants we go to often has the grilled pizza on their menu! We use their toppings as a beginning and add our own touches as we see fit!

I made the ginger lemon scones today and have to say I wasn't happy with the results. They taste delicious but didn't rise as much as I thought they should have. Just don't look billowy. And I like billowy in a scone.
I was careful. I opened a new can of baking powder especially for the occasion. A disappointment and not worth sharing until I get them right.
I garden, Seaside. But only herbs and flowers. I used to grow veggies also but when they come into season there are always enough people begging others to take them off their hands. And we have a good farmer's market as well.
How much of a gardener am I? Learned by experimentation, reading and tips from others. I think it's a replacement for taking care of children. I really kicked into high gear during those empty nest couple of years.
In our yard it's a sink-or-swim proposition. I do my part to the best of my limited knowledge and Mom Nature has to do the rest.
Now I'm not experimenting much anymore. My focus is on establishing perrenials for the day when I'll be spending less time on my plants.
Stanzie, I rarely make my own crust these days but I do have a recipe that I used for years. It has yeast in it and poofs in the oven. Haven't ever tried it on the grill. I cut it out of a women's magazine. And I think I still have one for a quick and simple beer batter crust.

Stanzie, to answer your question, my kids didn't eat the wraps. I didn't think they would, so I made them pastina with parmasean cheese. Unfortunately, there are few things I can make that the whole family likes. I despise making multiple things for dinner (something I vowed NEVER to do before I became a Mom), and I obviously failed miserably with this

Amazing Whole Wheat Pizza Crust
--------------------------------------------------Prep Time: 25 Minutes
Cook Time: 20 Minutes
Ready In: 2 Hours 45 Minutes
Servings: 10Ingredients:
• 1 teaspoon white sugar
• 1 1/2 cups warm water (110 degrees F/45 degrees C)
• 1 tablespoon active dry yeast
• 1 tablespoon olive oil
• 1 teaspoon salt
• 2 cups whole wheat flour
• 1 1/2 cups all-purpose flourDirections:
1. In a large bowl, dissolve sugar in warm water. Sprinkle yeast over the top, and let stand for about 10 minutes, until foamy.2. Stir the olive oil and salt into the yeast mixture, then mix in the whole wheat flour and 1 cup of the all-purpose flour until dough starts to come together. Tip dough out onto a surface floured with the remaining all-purpose flour, and knead until all of the flour has been absorbed, and the ball of dough becomes smooth, about 10 minutes. Place dough in an oiled bowl, and turn to coat the surface. Cover loosely with a towel, and let stand in a warm place until doubled in size, about 1 hour.
3. When the dough is doubled, tip the dough out onto a lightly floured surface, and divide into 2 pieces for 2 thin crust, or leave whole to make one thick crust. Form into a tight ball. Let rise for about 45 minutes, until doubled.
4. Preheat the oven to 425 degrees F (220 degrees C). Roll a ball of dough with a rolling pin until it will not stretch any further. Then, drape it over both of your fists, and gently pull the edges outward, while rotating the crust. When the circle has reached the desired size, place on a well oiled pizza pan. Top pizza with your favorite toppings, such as sauce, cheese, meats, or vegetables.
5. Bake for 16 to 20 minutes (depending on thickness) in the preheated oven, until the crust is crisp and golden at the edges, and cheese is melted on the top.

tougherthanithought- I too vowed I'd not make multiple meals either, but I have one who is an almost vegetarian, one who is a true carnivore and hates vegetables and the third is special needs and doesn't chew well and loves fried foods (which I do try and avoid unless desperate)!

I haven't cooked pizza since the longago days when I lived with my parents and we bought some kind of make-your-own pizza in a box at the grocery store. It must have been awful but we liked it. The "kit" included the dough, a little can of sauce and a packet of cheese to sprinkle on the top. Probably every bit as good as mac and cheese in a box!
Last night I had a yearning for fried chicken. DH and I drove to a Popeye's and bought a small box of drumsticks and thighs. We had to wait a few minutes so it was freshly cooked. Then we had to inhale the aroma on the way home. It hit the spot. Crusty and delicious. And terribly unhealthy, high fat, hi calorie.
Our side dish was leftover red beans and brown rice, home-cooked, heated together in a skillet. Needless to say, the scales weren't kind this morning. So I'll go for my 3-mile walk and repent!

Carole - I do believe you are describing Chef-Boy-R-Dee pizza! We ate that as kids! I haven't made a pizza in more than a decade. We had a place in Kansaa City called "Papa Murphy's". They assembled the pizza, then you brought it home and baked it in your own oven. And we had another favorite place called "Tim's" that made a great very thin crust pizza. I'm diabetic, so pizza is nothing more than an occasional treat for me. I think Pillsbury has a refrigerated pizza dough that rolls out to a rectangle. It's not bad and a lot less work than making your own.

Everyday I try to come up with something everyone will eat for dinner, it's not easy. Mine are still little enough that they are fairly agreeable. But I don't get to always eat what I want because of them.

Michelle, thanks for refreshing my memory! That's what the pizza kit was--Chef Boy-ar-dee. I'm in the "beginner" diabetic stage myself. I need to educate myself and start being more mindful of good food choices. Pizza is a rare treat for DH and me, on that list of seldom eaten foods.
Tonight's meal is home-made meat sauce with linguine and a garden salad.

We had scrambled eggs and omelettes for dinner tonight. My 13 y.o. just got her bottom braces on and could only eat soft food, and I'm in the middle of chemo and really don;t want anything with much taste or smells. And we had to get to the middle school chorus concert at 6:45. Looking forward to trying some of your recipes soon though. Such a nice, happy thread.

Kay from philly- Welcome! I smiled when I read your post. The only time I ever had my mom cook me a separate dinner was when I had my braces tightened. Then she made me eggs:) Thanks for the memory trigger! Not of the braces- which sucked- but the eggs!
Tonight I made the pork chops in white gravy. But it was a small package of chops and the kids were eating well, so was my husband so I didn't get much. I may just sneak half a peanut butter and banana sandwich while I read an unwind tonight!

So...I am going to try to be creative tonight and make my own recipe. I do this sometimes, sometimes it works, sometimes not. I am going to saute some garlic, onion and capers, add some diced and stewed tomato's and simmer haddock in it to cook through. Sounds good, hope it will be! I just feel like trying it different, and totally spaced the mango salsa I should be making that Sherrill gave us the recipe for. Told my husband my plan when he called this afternoon, he said "lets just fry it!" ummmmm....." NO."

Tonight I'm doing really easy: dice up chicken, cook in pan, add jar of salsa, throw in a wrap, add some cheddar, wholly quacamole, diced grape tomatoes, and some greek yogurt. Similar to what I add to fish tacos, too. Very easy since the salsa and guac were already made for me

Sherrill- that sounds so good! I need to show my ignorance and ask, whats the difference between Greek yogurt and regular plain yogurt? I would use sour cream but am game for something healthier, I think the kids would get a kick out of wraps, well- at least the older one would. And it's right up my ally!
