    Tonight is kind of a crazy mix of recipes that I have wanted to try and that use ingredients I need to use up....

    So Ina Garten's Indonesian Ginger Chicken (which is in the oven and smells really good).  A Poblano Potato Salad from the show Mexican Made Easy... And, just in case both of those are a total failure.... Corn on the Cob and watermelon!!

    All of this sounded really great 2 days ago when it was almost 80 degrees out... Now that it's barely 60 and raining a big pot of soup sounds better but, what can ya do??

    Should be interesting!

    Lago- I'm so glad you are feeling a bit better.  I hope your healing continues.  It's funny how your mind thinks at times.  Last night I woke up at 2am and couldn't sleep.  Thinking about endless things, then I thought, what should we have for dinner tomorrow?  Then I thought of this thread- and I thought of you.  Hadn't seen you post in a few days and knew how rough things had been and my thoughts rested on you.  Hope you had fun at your wedding!

    Seaside- I echo your frustration with the weather. Most of the things I bought for dinner this week were to be grilled and it has been pouring and cool.  Grrr!

    Tonight my husband made dinner :D  He didn't want to grill in the rain and when I tried to come up with some other ideas he suggested HE make chicken parm.  He really is a great cook, just never does it anymore.  So I had a great dinner with no effort, it was wonderful.

    Hi Ladies!

    So last night I made turkey burgers with pepper jack cheese, guacamole and turkey bacon.  Added lettuce, tomato and red onion and it was very good.

    Tonight may  be fish tacos again, because I have all the stuff to make them.  I also saw a recipe for grilled hearts of romain that sounded good, but haven't tried yet.  Here it is:

    Grilled Romaine Hearts with Caesar Vinegrette

    2 Tbsp extra virgin olive oil

    1 Tbsp fresh lemon juice

    1 small clove garlic, minced

    1/2 tsp Dijon mustard

    1/8 tsp Worcestershire sauce

    1/4 tsp freshly ground black pepper

    2 Tbsp freshly grated Parmesan cheese

    Olive oil spray

    2 hearts of Romaine lettuce

    In small bowl, whisk together the oil, lemon juice, garlic, mustard, Worcestershire sauce and pepper.  Stir in the Parm cheese.  Preheat grill over medium-high heat.  Oil the grill's surface.  Remove any wilted outer leaves from the romaine hearts, then cut the hearts in half length-wise, leaving the end intact so each half holds together.  Spray them lightly with olive oil spray (or just brush with a little olive oil).  Grill until grill marks form and the lettuce wilts slightly, about 6 minutes, turning once or twice.  Serve drizzled with the vinegrette.

    I also have the ingredients to make this, but as previously mentioned, it is rainy and nasty out today...not in the mood to grill outside!

    I've never used yogurt to marinate before!  Does it serve to tenderize the meat?

    I have heard of grilled romaine before but, have never tried it.  I love caesar salads so I bet I would like the grilled romaine!  Definitely up for that if this rain EVER quits.... Just took a peak at the 10-day forecast and no end in sight!

    Chicken Parm sounds really good! And having someone else do the cooking I'm sure was WONDERFUL!!   Did you do the clean-up?  lol

    Hopefully you are not in an area that is affected by them having to open the Morganza spillway... This has been such a bad spring for so many people!

    Dinner last night was a mixed bag... Didn't care for the chicken at all!  It smelled so good when it was cooking but, really had almost no flavor.  I usually like Barefoot Contessa's recipes but, not this one!  I really loved the potato salad!! It was different from what I usually make!  The corn on the cob was tasty but, not as good as last week!  

    Tonight my husband has a meeting so he will eat there.  My son is at a friend's so it's just me, again!  I'm thinking it may be breakfast for dinner night.  Maybe an omelet or some yogurt, strawberries and granola!

    Seaside- How did you make the potato salad?  That is one thing I am not good at, maybe it's because I don't make it often enough.  Yes, I did do the clean up!  (and he is a messy cook)

    Sherrill- I wish I was at your house for dinner!  Your turkey burgers sound amazing and just what I am in the mood for!

    I had my nipple tattoos done this afternoon and just got home.  My husband got out early to watch the boys.  He already cooked chicken to make chicken quesadillas for us and is making it now as I type away.  I'll be honest, I was planning on cooking something else and not in the mood for quesa's.  But I'm not in the mood to make dinner either so I'll eat it and be very grateful.

    Sorry you didn't like your chicken.  I usually like the Barefoot Contessa's recipes too.  I have 3 of her books.  My MIL gave them all to me for different occassions.  I think she is trying to tell me something?! 

    Just finished AC last week and had my first Taxol and Herceptin today.  Long day, didn't get home until almost 5, so a good excuse for a quick meal.  DH sauteed some shrimp and we had gaspacho with it.  Very quick, easy and good!  I think maybe we'll have some chicken quesadillas tomorrow, just the mention of it is making me hungry.  Sorry it wasn't what you were feeling like Laurie.  And Corn on the Cob and Watermelon, I have to fit that in some time this week too.

    Laurie,

    It was a different kind of potato salad than what I usually make! 

    It calls for cut-up small baby potatoes (skins and all), roasted poblano peppers and roasted corn, green onion and cilantro... dressing very light and easy... some mayo and sour cream and a bit of salt and pepper.... The sweetness of the corn, little (not bad, and I am a wimp) spicy-ness from the poblanos and richness of the baby potatoes was really quite good!

    It is from the show Mexican Made Easy on the Food Network.  It is a really good show (shown here at 9:30 on Saturdays)... Everything that she makes seems so good! 

    In fact, a couple of months ago my husband had said... Why is it that Saturdays seem to be Mexican night?  And I think it was because I watched her show in the AM and thought that looks good and bought the stuff and made it that night!   Sometimes we have habits that we are not aware of until pointed out by someone else!

    Congrats on the tatoos!  Hopefully it wasn't too painful... Sending a VERY gentle hug!

    My MIL gives me a cookbook every Christmas!  I'm HOPING that it's just because she knows cooking is something I am interested in and not a "hint"!  But, who knows! LOL

    I managed to actually catch an episode of Barefoot Contessa tonight and she was making a Watermelon, Feta and Arugula salad that really sounded so odd that it would probably be very good!  I think I may try that this week!  I like each of the ingredients individually.  It's just a question of what they will taste like all together!

    Back from a long and fun filled weekend at my dads and his wife house, got there early Saturday, first thing we did was go eat at a place called the wild river co. had great pizza, which fit right in with all your talk about pizza that i just caught up on, then went to a wedding dinner ate a great buffet and drank champange (too much) went back to my dads and drank wine we had brought with us got up early sunday morning and went to my family restaurant and had a champgane brunch then went to a nephews birthday party and i did a zip line they had rigged outside, it was crazy fun i was like 30 feet in the air. what a blast! Then a buch of us went to another pizza place and i ate a delicious pizza with roated garlic and artichoke in a creamy cheese sauce one of the best pizzas i have ever eaten, but im pizza'd out now. Got up early to drive home and stopped at a casino and gambled for about 3 hours and then drove home.

    I wanted to use some leftovers that I had in the fridge when we got home and threw a pasta salad together that was really good, i cooked some curly pasta and rinsed it in cold water, tossed it in a bowl with some greek olives. marinated articokes, thinly sliced red onion, thinly sliced red peppers. sundried tomatoes, sliced american cheese, slices of salami,cut up some romaine lettuce and tossed that all together with a lemon viniagrette and some blue cheese crumbles with some croutons, didnt really take to much time to make it and was really good.

    Laurie- How do you like your tatoos? Im going to see a plastic surgeon in june to talk about options for reconstuction and tatooing.

    Kay-from-philly-  I echo what seaside said, hope your tx go quicky and easy for you.

    Seaside-I have had the watermelon and feta salad before with out the romaine it was good i put a balsamic viniagrette on it with lots of fresh pepper, probably taste great with the romaine as well.

    Sherrill- I have never had grilled romaine before, your salad sounds really yummy.

    Tonight, I just had to cave in to the soup craving... The weather has been just rotten for days and no end to it in sight!  Used some leftover corn on the cob (along with some new) to make a corn and zucchini chowder!!  Here's hoping it's good!

    Seaside- we are having the same run of crappy weather here.  I broke down tonight too.  I have a meatloaf in the oven.  So frustrating!  Middle of May and I wore a sweater and socks today!  Last year we had the pool open and we were swimming by now....ahhhhh New England weather.  Hope your chowder turns out good, it sounds yummy!  If it is you need to share the recipe!

    Seaside - thanks for asking.  I am borrowing my friend's laptop because she doesn't know the security code for her wireless...lol.  The appointment went well, he is a "Hahvahd" guy and I'm sure he is extremely competent.  He seemed friendly enough, we didn't talk too long, and I told him I would finish up with him and we would talk later about whether or not I could have DIEP.  Apparently they use a different type of expanders but they found the fill ports and I am now 60 cc's bigger on each side.  I get to go back in 3 weeks for two more tablespoons...yup, that's the conversion for 60 cc's!  Fits right in with what's for dinner, right?

    My friend's DH Jack is rustling up dinner for us, some kind of pork loin with stuffed with feta and spinach...sounds good and I hear things sizzling.  Today I had a great tuna nicoise salad for lunch near the Brigham & Women's.  What a huge complex that medical complex is!!!

     The weather here is horrid, too. "Cut-off low, weatherman's woe" because everyone complains. Nothing but 50's, gloom, drizzle with occasional downpours, for the rest of the week. Oh well...

    It got  up into the high 60s here, but rain on and off all day.  They're predicting the same for several more days. 

    Thanks for asking about me.  I'm doing well.  I think this Taxol and Herceptin is going to be MUCH easier on me than AC was.  At least that is how it's starting out, and the doctor told me it would be, so I think I can believe her.

    Your trip sounds like a lot of fun Debbie.  I'm glad you had such a good time.

    That soup sounds good SeaSide.  Hope it lived up to expectations.

    We had some good comfort food in this crappy weather.  I did cook three kinds of potatoes because everyone has a different favorite.  And my son came over for dinner and he lives in an apartment, so I had to make his favorite, mashed, and the other two were just easy, baked sweet potatoes and roast beef with roasted carrots and potatoes.  Also had some steamed broccoli and a Caesar salad.  It was some more of the beef from my co-worker's neighbor's cow.  It was so good.  It just seems so much more tender and more flavor than what I would get at the grocery store.  Wish I had a steady supply of it.  Everyone, DH, DS and DD all loved it and raved about it.  I can't ask for more than that.

    Hello all!

    Yes the weather here (NJ) has been crappy too, today, and more of it tomorrow, apparently.  I really want to try the grilled romaine, but I'd rather grill in the sunshine! 

    Tonight for dinner (Hubby was out at a work event) I made scrambled eggs, rye toast, sliced strawberries and orange wedges.  The kids were pleasedSmile

    Oh, and I have to nomimate myself for bonehead of the week...So the other day I bought some rice pudding, and was excited to have some tonight.  I put some in a dish, and, as I always do, I added A LOT of cinnamon.  I love cinnamon, especially a ton of it in rice pudding.  As I am adding it, I think to myself, "Wow this cinnamon is a really rich, deep red color."  When I tasted it, I nearly choked myself...dopey me put chili powder in my rice puddingYell.  OMG, so disgusting!!!

    Seaside- Your zuccini and corn soup sounds so good, i make a corn chowder but never have tryed it with the zuccini before what a great idea especially since zuccini is going to be in abundance here soon.

    Laurie- It is rainy and dreary here too, wore my furry winter boots and a coat today, I cant wait for summer so i can go hang out by the beach which is only 3 minutes away, lucky you, you have a pool.

    Michelle- So glad you are comfortable with your new Dr. Hope your fills go smoothly even 1 tablespoon at a time LOL!  Yumm your pork loin stuffed with spinach and feta sounds devine, my dinner was boring baked pork chops and brussel sprouts.

    Kay- Your such a good sport cooking 3 kinds of potatoes to make every one happy, I would probably say, "this ain't a restruant you get what I give ya" LOL!

    Sherrill-You had me LOL on your chili powder mistake that is halarious (sp)  You must be my twin with me and my kitchen mishaps too LOL!

    Since everyone was talking about the weather I noticed you were all from the east coast or midwest, are any of you getting the terrible flooding there? I hope not and hope you are all safe, I live on the west coast been getting rain but nothing like there. Keep safe everyone!

    Debbie, I thought immediately of you when I made the chili powder/rice pudding mistakeTongue out

    I ended up grilling the romaine on my George Forman grill, since it was another rainy afternoon.  It was pretty good and was sort of like a warm, grilled caesar salad.  Not bad.  I added a little more fresh grated parm cheese after I put the vinegrette on it.

    Ooohh I must have missed Michelle's pork loin stuffed with spinach and feta!  I'll definitely have to page back for that one!  Michelle, did you post a recipe for it?

    I am pages out of touch and wasn't cooking much for awhile but am back at it and wanted to post a simple but wonderful beet salad recipe I made not long ago. Measurements are really to taste but boy oh boy was this a great combo.

    Cook fresh beets; peel, slice or cube. Toss with fresh minced garlic (I used lots) and fresh basil (or basil "paste" from a tube, not as pretty but just as good) (again, lots).  Add a bit of raw cider vinegar (way better than regular cider vinegar; do use it) and olive oil.  S&P to taste.

    YUM if you like beets/garlic/basil.  Way better than I thought it would be. Simple and good.

    PS Sherrill.... my mom made a pumpkin pie one time (back in the 70's).  She made good pies and was especially proud of this one because it turned out magazine-picture perfect.  I mean, she bragged about it all afternoon and was excited to have it sampled.

    My brother and friends were the first to cut slices... 

    After one bite... they realized mom forgot to put sugar in the pie Tongue out

    (one of my brother's friends just sprinkled sugar on top and ate it but everyone else threw it out)

    We all have our moments! We just have to laugh!!

    Had flounder tonight.  Tried broiling it.  Don't know what went wrong, but it didn't come out.  I even tried putting catsup on it, but it was inedible.  Did finally have some corn on the cob though!  That was good.  And some roasted brussel sprouts.  Not my favorite, but DH is a fan.

    We were all still hungry since no one ate the flounder, so we went to Dairy Queen!  That was good too.  The onc told me to eat some ice cream yesterday, so I was just following orders. :)

    Am looking forward to hearing how that soup was Seaside. 

    That is a funny story Nature Girl.  Just when your mom was so proud of herself too.

    Sherrill and Debbie - it was a dinner prepared by my hosts for the past couple of days.  Actually Jack is the chef.  I think he pounded the pork loin, then added spinach and the cheese (he said he also added a bit of sharp cheddar), then rolled it up and roasted it.  He made a marsala sauce as an accompaniment. 

     Had my oncologist appointment at Dana Farber today.  The onco will assign me to an onco at the Londonderry, NH facility and I should have an appointment by early next week.  I might have my first treatment by the end of next week.  It will be DD AC x 4 then Taxol x 4, spaced every two weeks.  Sure hope I can handle that routine.  I will get Neulasta after every treatment.   At least it will be over sooner...

    Tired tonight, gonna go upstairs soon.

    Kay- I can relate to your flounder mishap with my haddock fiasco last week.  You win some, you lose some and as you pointed out, there is always DQ!!!

    Sherrill- LMAO at your spice mix up!  I especially love that you were amazed at the nice rich color as you poured it on, that would be me!

    Tonight I went out with my best friend who I never see enough.  We went to a newer restaurant called O's.  The Caesar salad was fantastic, I order chicken stuffed with goat cheese, tomato and spinach- it was a little disappointing.  But the conversation was great and so was the bottle of wine, so it was a great night!

    NATUREGIRL!!! I was just thinking about you yesterday wondering where ya been. Glad to see you back here again. I didnt like beets up untill about 2 years ago now i just love them and crave them too, your recipe sounds yummy I will try it.

    Michelle- thanks ffor posting the ingredients for the porkloin it sounds really good. (((((((((hugs)))) for your upcoming treatments, I hope everything goes smoothly for you, I had the nuelaets shot after every treatment it wasnt so bad but i did get some bone pain but not every one does hope you are going to sail through it all.

    I made a chicken and dumpling soup today, it was good its actually noodles but DH calls them dumplings, I take a whole chx and put it in a pot of water with rough chopped veggies such as, onions, carrots, celery, garlic, and parsley, bring to a boil and boil for about 2 hours skimming off crud that forms on top, take chx out and run broth through a strainer reserving all the broth put back in same pot let simmer add noodles and let cook in pot for 15 to 20 minutes then add in shredded chicken removing bones and skin cook another half hour or so- It gets thick the next day so you will need extra broth or stock (canned or box) season to taste with salt and pepper and garlic powder

    Easy noodles

    2 cups of flour and just enough milk to form a ball roll out to about 1/4 inch thick and inch wide and drop in simmering stock-

    NatureGirl, your Mom's apple pie story is great!  And how adorable of your brother's friend for being a good sport and trying to eat it anyway!

    Michelle, thanks for the pork loin ingredients.  I may have to attempt that one!  I also wanted to let you know that I had the same treatment (DD A/C then Taxol).  You may want to ask your dr. if you can take claritin right before the Neulasta shots.  It is supposed to ease the bone pain the shot can bring on.  I swear by it.  One time I forgot to take the Claritin, and the bone pain was a bitch!  When I took it about an hour before the shot, I was fine.  It seems really weird that Claritin would ease bone pain.

    Laurie, that sucks that your meal out with your friend was less than spectacular, but it is always nice to catch up with old friends.  Good food on top of that would have been better, thoughSmile

    Tonight is a busy night (daughter's soccer practice, and son's basketball tryouts), so I will make chicken salad for dinner.  I have some leftover breaded chicken from last night, so I'll just cut it up, add diced granny smith apple, some walnuts, a little mayo, and salt and pepper.

    Was going to try that marinated chicken on the skewers, but got a call that DH won't be home, is staying late at work for a meeting.  So had tuna fish sandwich, salad and apple slices instead.  Much bettet than the flounder from last night. 

    I took the Claritan with the Neulasta shots too and never had a problem with bone pain.  I did the 4 DD AC and am now doing the Taxol and Herceptin.  Had the first one on Monday.  So same as you Michelle except for the Herceptin.  I thought Taxol was going to be easier, but am having bone pain.  Did you take Claritan with Taxol too?  Did you get any bone pain?  I am going to go post this question on my March chemo thread.

    Have a great night everyone.  I can relate to the busy schedule Sherrill, but enjoy the time goes very quickly. I have 22 y.o. and 20 y.o. in addition to my 13 y.o.  I really miss all those little league games and everything.

    AAAARRRGGGG... Not loving this weather pattern!! Just when you catch a glimpse of the sun, it all changes and the rain comes!! Been running between the raindrops trying to plant my garden!

    The Corn and Zucchini Chowder was VERY good!  I used a mix of leftover corn on the cob and new raw corn.  Made no difference!  Could see this being a really good recipe to use up some of that summer garden zucchini and leftover sweet corn!! 

    Best part..... We ALL liked it!  THAT doesn't happen very often!!

    I substituted 1/2 and 1/2 for the heavy cream (I'm thinking may even be able to use milk.. haven't tried that yet)....

    Also added just a sprinkle of crushed red pepper!  For the paprika I used a smoked paprika and liked it, however, if you are not a fan of the smokiness, I would use a regular paprika instead!

    Glad to see you back!!!! Just planted my beets in the garden last week and they are starting to sprout now!!! LOVE beets, even canned, BUT if you can get some fresh ones... OH MY... nothing like them!  I am kind of a gardening newbie!! Hope they do well!

    Comfort food seems to be the way to go this week!!  I went from soup to, last night, a ham loaf made with leftover ham from the freezer!!    It really tasted good and helped to get some of my leftovers gone from the freezer Smile!

    Hi everyone, and thank you all for your kind wishes and thoughts.  I did get a call from the Londonderry oncology office and I guess things are really busy.  It turns out my appointment is June 1 at 11:00.  So the good news is that I will get to enjoy my Memorial Day weekend.  I was thinking about going away alone for two days, just me, for a little peace before the storm of starting treatment and moving into our new digs.  But looking at the long-range forecast, it wouldn't be worth spending the money for a hotel at the beach...rain and 60's.  Not different from the last week except it's been rain and 50's...just icky!

    Sherrill - I have heard about the claritin solution and I fully intend to take it.  One hour before the shot- didn't realize it should be within that window, so thanks for the tip.

    Seaside - the chowder recipe sounds really good.  With just DH, I usually buy 2 ears of corn at a time and so there are no leftovers.  But once the NH corn season starts, I'll be thinking about this recipe.   It sounds like something I would enjoy when I am "knee deep" in chemo.

    Laurie - I'd love to meet you after we move in and get settled.  If you're comfortable with doing so, you could PM your number and we can make a plan.

    Today was a crazy day!  I left my friends' house in Milton, MA, then went to pick up my mom, stopped at a furniture store, took her to a pizza party at the apartment complex she lived for 14 years, then took her back home, went back to the furniture store and ordered new living room furniture for our new place, then drove to my daughter's house...all in all 154 miles!!! 


    When I got "home" my daughter was whipping up a pork cutlet creation with broccoli, garlic, and leftover pasta along with some fresh cut veggies.  The kids actually ate it and I got them to eat a little jicama, which one of the kids said was "awesome."  They definitely prefer their veggies raw and crunchy!

    My daughter is out with the girls, I got the kids to bed before 8:00 and now I am sitting down!

    I might need a glass of wine now...LOL!

    It's been a while since I posted a recipe. Just found this one. I used to make something similar but I did use ground pork. I also used black mushrooms which I would recomend instead of the button mushrooms.

    Vegan Dumplings by Robin Burns

    Ingredients
    • 1 package round egg-less dumpling wrappers
    • about 3 tbsp vegetable oil

    Filling
    • 2 cups button mushrooms, chopped
    • 2 cloves garlic, minced
    • ½ red pepper, finely diced
    • ½ orange pepper, finely diced
    • 2 cups spinach, steamed, dried and chopped
    • 1 baby bok choy, steamed dried and chopped
    • 1 tbsp cilantro, chopped
    • ½ tsp fresh ginger, grated
    • 2 tbsp soy sauce
    • black pepper to taste

    Spicy soy dipping sauce
    • 1/3 cup soy sauce
    • ½ hot chili, minced
    • 1 tsp rice vinegar
    • ½ tsp sesame oil
    • 1 green onion, minced

    Preparation

    1. For the filling, quickly sauté the mushrooms and garlic over medium heat until soft. Transfer to a large bowl.

    2. To the bowl, add the remaining filling ingredients and set aside to cool.

    3. Once cool, spoon half a teaspoon of the mixture into the center of each wrapper. For the fried dumplings (or pot stickers), seal in a half moon formation. The steamed ones can be twisted into adorable little pouches.

    4. Steam the half moons for about 45 seconds, while heating some of the vegetable oil in a large skillet, about one tablespoon per batch. Once slightly softened, fry the pot stickers on medium-high heat until golden brown and crispy, about 1-2 minutes per side.

    5. For the purses, simply steam them for 3-4 minutes each until soft to the touch and glossy on the outside.

    6. In a small bowl, combine the soy sauce, chili vinegar, sesame oil and green onion to create the delicious dipping sauce.

    7. Serve with chopsticks and the spicy soy dipping sauce and enjoy!

    Sherril- You sound like you have such a busy schedule, I miss my daughter being that age again, she is grown and lives in georgia with 2 small beautiful little girls that I adore, where does the time go?

    Seaside- Thanks for the link to your zuccini corn chowder, I will have to try it, glad you were spared the flooding, dont like all the rain either.
