You sound like my husband and I when the really good corn comes in... We can sit down, have nothing but corn-on-the-cob and be perfectly content.... Few things better than fresh corn and good ripe tomatoes!! Ahhhhhhh Summertime!

I actually Can cook, I think I'm just trying to do too much. Getting ready for my daughter's 13th birthday party and wanted to go ahead and make waffles so I can just reheat in the am. Well between the doorbell, and phone calls, I put in extra baking soda!! Well, they taste good but they are sort of airy and crunchy?? Wonder if they will eat them. LOL! What else can you do?

The salt could very well be the problem especially since it sounds like you made your own stock it wouldn't have as much salt as store bought.
I can't tell you how many cooking/baking mishaps I've had especially when it feels like you are doing 50 things at once!

once again my husband is out tonight, this time having some fun. He deserves it! So I made some pancakes and added a little of the quiche that I make for the weekends and some fruit- blueberries, watermelon, cantaloupe, melon, red and green grapes. Easy and fast- pretty good too! We all ate it up, now for an early bed time;)

Had some sole tonight. The recipe is from the Joy of Cooking. Add some salt to milk and dip the fish in the mixture. Then coat with bread crumbs (I used whole wheat bread crumbs). Drizzle two tablespoons of butter over the fish. Bake at 550 until done. Since the sole was really thin, it only took 8 minutes. It was good. Even my daughter likes fish this way. Clean up is really easy too, which is a big plus for me. We had it with sea bass (which someone in work had just caught in the Chesapeake and gave me) last week, and with talipia a couple weeks ago. I liked the other two better. This was good, but the other two were better IMO. First time I ever had sole, I'm not sure if I don't like sole as much as the other. Also first time I used whole wheat bread crumbs, maybe it was that. Had some steamed broccoli and sour dough bread with it. I can't wait to get some corn, haven't had that yet this year and your posts are making me really want some. Had some great watermelon for dessert.

Also, added some Italian seasoning to the bread crumbs just to give it a little more flavor. I do this with everything I coat in bread crumbs.

The sole sounds wonderful. Seaside - you know I'm betting you are right my Mom was a salt fiend so I'm betting her chicken stock was a lot saltier than mine. can't wait to go try and see!
I salvaged the waffles by making another batch without baking soda and made some cupcakes, I watches a show on how to make the frosting look like roses and it actually worked and they are pretty! it was really easy too using a star tip and just go fast in a circle!
The sole sounds wonderful! Wonder what the milk does besides give the bread crumbs something to attach to, wonder if it also makes it more moist?

Tonight was golf night for my husband and my son is at his girlfriend's house so it's just little ol' me tonight!

I LOVE sea bass but can't seem to get it where I live which is odd because we aren't that far from the coast!
We are getting some really good corn in the grocery stores right now out of Florida but that will be short lived... then we have a big wait until July... We are getting and eating it "while the getting's good" lol
Watermelon is another one of those foods that I just can't get enough of in the summer!!

Hi everyone,
My appointments start the 17th - the plastic surgeon at Brigham&Women's, then the 18th - the oncologist at Dana Farber.
Today we got my mom moved into her new assisted living faciity. It was tough, she is struggling with the idea that we have moved her back to her "home" state and she'll be able to see family. She seems to think we have taken her away from family. It will take a few weeks for things to sink in, plus I'll take her to visit her siblings - she hasn't seen them in a year. Then I think it will register with her.
In any case, I am completely exhausted and just want 24 hours of not making any major decisions for anyone...lol!
And I got my hair cut really short this week...getting ready for the big "fallout" that will come once treatment begins. I'm ready to get this show on the road!
We all had dinner tonight at a little place called Halfway Cafe in Maynard. I had a Sicilian Seafood Stew that was really yummy - full of mussels, shrimp and fish, with a Manhatten clam chowder stock. And two beers

Stanzie- I love watercress I eat it in my salads its suppose to be really good for you, at least thats what Dr. Oz says, I have nerver cooked it though and i think that SEASIDE is right that it may need salt just like when you are baking you add salt to bring out the sweetness.
Sherrill- Who knows you or your daughter may become the next american idol LOL!
Laurie- I have been craving pancakes and waffles lately that sounds good for dinner.
Kayfromphilly- I make my sole a little different than my other fish i make, i dip it in flour and then dip in egg yolks then straight in a hot pan with a little butter after it is cooked i take it out and keep warm on a plate with foil, in same pan i put a little white wine (optional) and some more butter and some lemon juice.
Luvring-Im sorry your mom is having s tough time, like you said, im sure she will adjust especially after she sees the rest of her family soon. Will be thinking about you and keeping you in my prayers when you start your treatments again. You have been through so much especially after moving and taking care of every one else, you need to take some time for yourself. Remind every one where the kitchen is and show them where the vacuum cleaner is LOL!

So, remember my little fiasco in the kitchen for easter? The eggs exploding and my tiramisu came out sour because of the marscapone cheese, well...
Today was worse, I swear i shouldnt bake anymore, we are driving down to see my family tomorrow it is about a 4 hour drive, but my dad loves my pumkin cheesecake so i decided to make it today and take it to him for tomorrow. So first i put some butter in the microwave to melt it and i left it too long and it boiled over the bowl and all over the microwave plate, i needed 12 tablespoons of butter and only had enough left for about 7 tablespoons, so ran to the store started making my batter eneded up being 1/2 cup short of sugar, ran to the store again, then reread my recipe realized it was 2 pounds of cream cheese, i thought it was 2 packages so had to run to the store again, i was pretty tired and ticked by this time, got it together finally, and put the springform pan in the big roasting pan, went to put the boiling water around the cheesecake pan and spilled it on my hand it blistered and hurt like hell. Truned on my kitchen timer that is on my microwave which is large and above my stove set irt for an hour and 45 minutes, i must of turned on something other than the kitchen timer because about a half hour later my house started smelling like burned wires and noticed the microwave wasnt on anymore so i must of burned it our or something, now it is broke and wont go on at all the light wont even come on, Im usually pretty good in the kitchen but i guess i should give up baking, Plus now i cant make my microwave popcorn anymore which sucks bug time!!

I broke my microwave last year too. I put a couple of frozen meatballs in and tried using the autodefrost. Big mistake. When I smelled the smoke the meatballs were stones and the microwave was toast. I do have a new one now though.
I know this isn't dinner, but I tried to make a smoothie for the first time today. It came out sour. I put a cup of Greek yogurt in it. I am sure that was the culprit. I never had Greek yogurt before maybe it is an acquired taste. Or I just put too much in. Can anyone give me a good smoothie recipe? Hopefully using up some of that tub of Greek yogurt I bought.

Debbie- What an awful day! I will say your perseverance amazes me, I applaud you!!! I would never have gone to the store that many times- well maybe I would if it was for someone else and I really wanted to do something nice for them. But wow!! Hope things are going better!
The boys are having a sleep over at their grandparents tonight, YAY!! My husband and I have been doing yard work all day and trying to get lots done without them here with us. I am thinking grilled chicken with the avocado, cucumber salsa for dinner. Easy, fast and light. But I have a couple more hours to go before then, have to make use of this time.

kay-from-philly: here's how I make my smoothies... use about 1/2 - 2/3 cup orange juice, throw in 1/2 cup or so of plain yogurt (I use organic, but not greek), a cup or more of frozen berries/bananas/other fruit (I use approx 1 small banana plus 6-7 blackberries and 5-6 mango chunks, or whatever I have decided to freeze). I also sometimes add in a handful of spinach and you would never know it was there! I love my blender, it is an inexpensive Hamilton Beach one but has really good "wave" action to get everything stirred up. I don't ever seem to need to sweeten, but you can always add a bit of agave or honey or sweetener.
As far as using up the yogurt, I find it works really well to marinate chicken for 2-4 hours before baking. Sometimes I add some cilantro leaves into the yogurt, and then pull them off along with most of the yogurt, and bake in parchment. The moistest chicken ever!

Kay, I make smoothies by blending frozen berries (strawberries, raspberries, blueberries), frozen bananas, and vanilla almond milk. Also good (but more fattening) is frozen bananas, dark chocolate almond milk and a blob of peanut butter. Delicious!

Everyone on this board is so nice. Thank you for the smoothie recipes. I will try again minus the Greek yogurt. I will have to try as a marinade for chicken and I think I can also try using instead of sour cream? I don't use much of that though. Saturn, can you let me know how to cook the chicken after you marinate it? I have a habit of burning/overcooking if I guess on my own.
Had an easy dinner tonight. Grilled cheese (organic cheddar on wheat). It was really good! I was nervous because I have to kind of force myself to try to eat healthier, but this had a bit of a different flavor and I didn't miss my white bread since it was toasted. Made some broccoli salad (used turkey bacon and agave instead of sugar) and that tasted as good as the other as well. Also had some Gazpacho and there is plenty of that leftover and some broccoli salad too. I love meals that you don't have to get the kitchen hot in the summer, even though it is rainy and kind of cold here today.

So- too pooped to cook, hubby and I are going to get take out from a local restaurant, best roast beef sandwiches any where and onion rings. We'll find a movie to watch and hunker down with some couples time, although I bet we're both asleep early. We got a lot done today!

Tonight it's grilled hamburgers with tomatoes, Mayan Sweet onions, homemade french fries and melon ball salad.
DH has been grilling and smoking ribs, burgers and chicken during our down time so that we can enjoy them this spring and still have time to play in the nice weather.
Now all we need is nice weather.

We're grandkid-sitting tonight. So dinner was one of those grocery store roasted chickens with brown rice and gravy, and salad. These kids are picky eaters but at least one of them ate the rice with soy sauce and didn't care that it wasn't sticky Chinese food rice. They've all had baths/showers today, the dishes are done, and they are watching Garfield and eating popcorn. I guess I've still got what it takes

I can't even imagine how hectic this whole thing has been for you but, I can't help but think, once things get rolling, you will find that, you are exactly where you were meant to be! Your grandparent sitting brought a smile to my face! Not there yet but I think it's a bit like parenthood, without all the down sides!

I make green smoothies - greens (chard, kale, or spinach), cucumber, ginger, avocado if I've got it. Also greens, cucumber, mango, avocado is good. Avocado keeps the greens from getting foamy. Green smoothie revolution is a good resource . . . book, blog, website, on green smoothies for healing and overall health. I froze a bunch of greens and cucumber that were going to go bad and they are great in smoothies. Getting hit with BC became my excuse for splurging on a blendtec. I'm not sure its worth the money, but I love it.
Tonight's dinner was greek flatbread pizzas; used some of ducky's gravy and meatballs and sausage to make a meatlovers, pepperoni & meatball and made white sauce with roasted garlic & sauteed a chicken breast for white chicken pizzas with pepperoncini, feta, and mozzerella. Super hot oven with pizza stone - they turned out really good! Wish I'd had fresh spinach and sunflower seeds to add to the white ones.
Debbie - you have been having some crazy cooking adventures!
Michelle - that had to be hard leaving your Mom when she was feeling like that -- I'm sure she will settle and make new friends; seeing her sib's should help. You have had a lot on your plate! I'm amazed that you have the energy to hang with the grandkids!

Oh laurie so sweet of you to ask. I'm still hurting/itchy but doing much much better. Today is the start of week 4 so hopefully by next Sunday the pain will be gone. The rash itself keeps fading. Still doing ibuprofen. I'm off to a friends wedding tonight. I can't believe it's 45, wet and windy when a few dasy ago it was almost 90! Mother nature got mixed up on the M month. It's May honey, not March.
I'm going to freeze in my dress. Considering wearing my light long puffy coat.

Lago, the host on America's Test Kitchen visited a Lou Malnati's Pizzeria in Chicago on this weekend's edition of the PBS show. Not surprisingly, Lou didn't reveal his recipe for his pizza crust so the chefs on the show tried to duplicate it. When DH and return home from our summer travels, I plan to try to make ATK's version of Chicago deep dish pizza. Have you eaten at a Lou Malnati restaurant? Is the pizza as good as it looked on tv?
I cooked black beans with a ham bone yesterday because I needed to do something with the hambone. Did the quick soak by boiling the beans in water and letting them sit an hour. In addition to the hambone, threw in diced onions, celery and red bell pepper, also garlic. Added black pepper and a little salt after the beans were cooked. I wasn't sure how much salt the ham would contribute. The beans are Camellia brand and the recipe on the package calls for these ingredients to be added: 4 whole cloves, worcestershire sauce, pinch sugar, 4 tsp. lemon juice, 2 T sherry. It also calls for the beans to be sieved or put in a blender. The beans taste so good cooked with the aromatics and hambone that I don't know whether to follow the recipe. I definitely won't blend them because I like the texture of the tender beans.
Tonight I'll cook rice that is in a packet and contains saffron. We'll spoon the beans over a scoop of rice.

We used to have Lou's delivered all the time but this winter something changed. A couple of times the pizza was under cooked and the last time the crust was just mushy. I think they changed the sauce recipe. I love the chunky tomatoes but for some reason they are now making the pie too wet. Maybe in a few months I will give them one more try. The thin pizza is OK. It might just be a problem with the restaurant near me. Guess it's back to Gino or Unos.
Lous does deliver all over the country though.

Lago, that's interesting that the pizza was too wet. According to the interview with Lou on America's Test Kitchen, the sauce is put on the top to keep it from soaking into the crust. The order of ingredients was crust, cheese, sausage (raw), thick, chunky tomato sauce, and a sprinkling of cheese on top. Very different from the pizza I'm familiar with.

Yes that is typical Chicago style but if the tomatoes are wet they can still soak down the sides then into the rest of the pizza… especially if it's undercooked. I have a feeling maybe the oven isn't hot enough.

carole-those beans sound delectable! I just had a black bean taco salad at our favorite restaurant, and I am still trying to figure out how they make the black beans taste so good!
kay - regarding the chicken, after marinating in the yogurt (with cilantro or just garlic powder), there are two ways I do it: 1) I pull out the chicken and place on parchment paper large enough to fold over your chicken and make a packet (I usually put both pieces in one large packet). Before enclosing add spices like pepper and garlic powder and anything else that sounds good. I like a spice blend from Trader Joe's I've had forever). Bake at 425 for about 20 minutes, I check for doneness with a thermometer. OR... 2) Preheat broiler and raise rack near heat. Takes about 12-15 min total to cook, depending on thickness (flip halfway through). Again check temperature for doneness. I have a Chicken Kabob recipe that I'll post shortly.

This is where I got the broiled chicken idea...
Yogurt Marinated Chicken Kabobs
1 lb boneless, skinless chicken breasts (I use 1/2 boneless thighs, half breasts)
1 T minced garlic or garlic minced to a paste
1/4 cup finely chopped garlic chives, regular chives or scallions
1 1/4 tsp salt
1/2 tsp. freshly ground black pepper
2 T vegetable oil
1/2 cup cup plain yogurt
1 - 2 limes or lemons, cut into wedgesCut chicken into 1 inch chunks and put into wide shallow bowl.
Mix garlic, greens, salt, pepper and oil into the yogurt.
Add to chicken and stirl, cover and marinate for 1-2 hours - turn over once.
Place on lightly oiled or foil lined pan and broil 12 - 15 minutes, turning once, until cooked through. You are supposed to do them on skewers, but you can just put the pieces "loose" on the foil and turn with tongs. Serve with lemon/lime wedges.0 -

We had Chicago style pizza when we were passing through many years ago when we moved to Minnesota! Was really quite good but, so very different from the NY Style we are used to! I remember commenting that I swear the thing weighed 10 pounds!! lol!
