    Oh Susan, I envy you, fish was really what I wanted last night. The only thing not in my freezer. I'm missing the fresh fish of the gulf shore about now.

    Luvmygoats and all you other north Texans out there, hope you escaped harm from last nights devastating storms. Grapefruit sized hail, Yike!



    After hearing about Susan's fish fiesta, we're having fish and chips tonight along with salted cucumbers and onions in seasoned rice wine vinegar. No fresh fish in my little town, so flash frozen will have to do. Now where's my malt vinegar?

    Thanks Nancy for thinking of us. The hail pics on the news were impressive. We actually had no hail and very little rain and really not much lightening. I never unplugged modem or computer or shut off AC, all things I do in intense lightening. But I did have my storm shelter bag all packed, house locked up and ready to go. Storms went north and south. Granbury where 6 people were killed - EF4 tornado - is 40 miles south. Cleburne where 600 houses damaged was where I graduated high school, but know few left there. DH was lucky to get dinner at all. We had canned crescent rolls, scrambled eggs, bacon. Tonight is deli chicken and roasted vegies, lots of diff. kinds. Tomorrow who knows???

    English muffins rings coming next week from Amazon.

    Nancy - my local grocer does have a fish counter but it is usually frozen, thawed. Do just as well to buy it in the frozen state. I buy salmon that way. Wish I could afford mahi-mahi.

    Nancy, et al,

    You would love the Courthouse Seafood spot. They own a fish market next door, so the fish you are eating in their restaurant came off the boat THAT morning.

    Tonight I cooked some of the merguez sausage that I made a few weeks back. Sides were a spicy chickpea with spices dish and a simple bulgar. Both of these recipes are from Roden's The New Book of Middle Eastern Food. Like travelling to Morocco for dinner without the jetlag.

    Enough leftover for lunch tomorrow, which makes me very happy.

    DH is in rehab but not doing well, amonia levels are up and down, they give him lactose which gives him diarrihea to flush out the levels of amonia, he is very weak and I just can't take care of him at home.  He is not able to come home unless it is very near his time and I can take a short term leave from work.  One day at a time the nurses keep saying to me.  I am in the process of getting him on Medicaid/Mass Health.  I'm pretty sure he will qualify. I just have to gather the list of things they require.  

    Rebekah is still here till the end of the month, then she has to go back for a wedding and they are going on a short vacation.  I will miss her while she is gone but she will be back.  We are still packing up his collectable shop, DD is doing most of the work cuz I had to go back to work.

    Thank you for all your thoughts and prayers, this is tearing us a part.

    Wendy Whiner tonight....I came down with a virus on top of hellish allergies, so had to skip the celebratory dinner we'd planned for our friend and his graduating daughter. DH went by himself. I really tried to heal in one day....but it wasn't going to happen. At least I won't feel badly for passing on my germs. :/



    So while DH enjoyed a lovely meal, I had leftovers steak and spinach pie, grapes and watermelon. It was all great since I hadn't eaten all day and was starved. All's well that ends well. ;)



    I feel for inlanders who don't have access to fresh fish....I hated that at my midwestern college,..... but they sure had beef!

    Lacey... What can be said? Sometimes life sucks, plain & simple! Would have been nice to attend celebration (period).



    For me, DH and I had heated talk yesterday but decided to play nice today, only today, not thinking of tomorrow. For all the years anniversary gets f*@ked up, I did my part to not be a biotch today. And it worked. After PS visit, DH called to invite me to his new work (he's been there since beginning of Feb but didn't want me to see, until today). Dr visit was half-way there. DH wanted to go to fancy, schmancy place, not what I wanted today. Just a nice steak house, and service was great! The last nice dinner out was about a year and a half ago, this was perfect! Had steak & ribs, salad, sweet potato and so much brought home for tomorrow! So grateful I didn't sabotage today.

    Good job, 2nd! So glad to hear the day you smartly managed went well and that the meal was great! Maybe that good energy will float right into tomorrow, along with your leftovers. :)

    Lacey... I can only hope! 6 months of bc and all it's pain, discomfort, sleepless nights, worry, ... well, you get the point. Having one good day finally feels strange (and the leftover cheesecake was yummy!)

    Deb, comforting hugs for you.  So glad you have your daughter to help you through this difficult time in your life. 

    2nd, here's hoping you have many more good days. 

    Playing golf this morning, then coming home to do some quick house cleaning and dinner prep for tonight.  Another couple is coming over for dinner.  We're having baby back ribs finished on the grill, green beans, cabbage slaw and sweet potato casserole.  A good menu for doing things ahead of time.

    Deb - so sorry for the difficulties you are experiencing.  Take as much good care of yourself as you can muster.

    2nd - glad that you had a good dinner.  Not sabotaging yourself is a good step :)  sometimes really hard to do, though (speaking from experience, mind you....).  Keep up the good work!  and enjoy those leftovers.

    Missed a few weeks. Just tired. Must be low magnesium again. Deb, hugs. 2nd, glad you managed a good evening. Those are sometimes hard to come by. I'll be married 40 years later this year. , yep, 20 happy years! LOL it is what it is. My DH surprised me by being there for me during tx. I ate a salad for supper, even though raw veggies give me problems still. It tasted so good though.

    option 2: homemade froozen lasanga and rolls. (maybe Sat)

    One will be Saturday and one will be Sunday depending on my mood.

    Last night was a perfectly grilled burger on an English muffin with a HUGE salad. The preparation for tomorrow's party begins today. I will make some of the dressings for the salads, whip up the butter and make the potato salad. Potato salad is always so much better on the second day. Yesterday, I washed all the serving dishes and lined them up. They will just barely fit on the buffet table [i.e. my husband's client table.] Who knows what we will eat today. When you spend the day chopping and dicing, food isn't actually very appealing to eat. So, we shall see.

    Was home by myself last night since I'm still recouping from this virus, (feels a bit better this morning)and decided not to go with DH to his board meeting in the Berkshires. He facetimed with me and took me through a tour of the new kitchen I will be cooking in this September. Yikes! Did I actually promise to do that?!



    So for my solo dinner I sautéed some mushrooms and onions with garlic and topped a store bought (not frozen) cheese pizza with those veggies and some extra parmesan. Turned out pretty good along with an easy cuke/scallion salad. DH will enjoy the leftovers when he returns.



    Hopefully, tomorrow I will rejoin the human race and attend our friends' graduation party at a French restaurant in Back Bay. These friends are from Paris, so I'm suspecting that this restaurant should be close to authentic.

    Jen, I second the hurray for a good bone scan!  It's not fair that you should be worrying about such things at your young age.

    Susan, take a picture of your buffet table with the food and share it with us.  Your guests are in for a tasty celebratory meal.

    Moon, it's good to hear from you. 

    I'm feeling a little tired this morning.  Our dinner guests stayed later than my usual bedtime.  I didn't even get all the cleanup done.  Tonight's dinner may be hot dogs at the Abita Opry, the last performance of the short season.

    Last nights dinner was dan dan noodles with stir fried veggies. It was quite spicy, my mouth is still tingling. We're leaving town for a few days Monday, so I need to use up stuff. I think tonight I'll use up the leftover poblano and Anaheim peppers and make a pork and green chile stew over rice.



    Lacey, I hope you get over your virus soon. Susan, good luck with your party, I'm sure the food will be awesome. Jen, congrats on your clear scan! Monica, hope you get your energy back soon. Here's an extra ((hug)) for everyone I missed!

    Bobo, an "opry" is a countrified version of "opera."  You've heard of the Grand Ole Opry in Nashville.  Abita Springs is a tiny village on the northshore (of Lake Pontchartrain).  It has the Abita Opry, held in the Abita Springs town hall.  Four different performers or groups of performers are on the program and each gets 30 min. to entertain the gathering. 

    The performances are sold out.  The master of ceremonies is a past mayor of Abita Springs.  There's a food concession with limited offerings.  Home-made chicken gumbo and rice, homemade bread pudding, hot dogs with chili, and cookies and cake made by some of the local women.  The profits go to various local organizations or school clubs.  It's all very small town and fun.  The average age of those attending is at least in the 60's.  Some of the musicians are from New Orleans and are quite good.  Others not as good. 

    I watched Martha Stewart and her guest make pasta today.  I will have to look into a pasta attachment for my Kitchen Aid mixer.

    Bobo, how are you liking your VitaMix?  Is it worth the cost?  I'm still undecided about spending that much money for a blender.

    I'm missing all the folks who aren't checking in.  Hope you're all doing ok.

    Kids had the quesadilla's and I ended up eating cereal with strawberries.  The hour of biking wore my butt out!

    Bobo, the noodles themselves (udon) came from an Asian market. I made the dan dan.



    Carole, I would love to have the pasta attachments for my kitchenaid, but I think they're way too expensive. My stand alone maker was a fraction of the cost.

    Okay, I'm going to need the Dan Dan recipe.  I don't even know what it is, but I feel I need it.

    Carole, I thought that might be an Opry!  Wow.  It's worth it just for the food!  I love my Vitamix so much; it is a wonder.  It comes with a fantastic cookbook.  I never say that about appliance cookbooks.  And if you like smoothies at all, or milkshakes, or Starbucks Frappuccinos... you've got to have one.  In fact, Starbucks actually uses the Vitamix!

    Best thing: you put ingredients for soup in, put it on for 6.5 minutes,  and... the soup comes out hot!  The Vitamix -- the action of the Vitamix -- heats it up!

    Nancy, it makes the best easy pasta sauces -- with fresh tomatoes, or pesto, or cheese sauce that you could pour (hot) onto macaroni, then top with buttered bread crumbs and just whoosh it in the oven!

    Jen, clear scans...that's almost the best news...To me, the best would be finding out the cancer stuff was just a bad dream that really didn't happen.....

    Bobo.  I saw your comment about running.  I used to run, quit, gained almost 70 pounds and started to run again.  I've managed to lose about 40 pounds.  My pants went from 40 inch waist being tight to 36 inch waist being comfortable.  In college, I wore 32s or 34s, depending on the pants.  

     All the talk of less than supportive husbands makes me wonder about myself sometimes.   I wonder if I'm just like "them".  I hope not and I try not to be.  I guess that I think about it is a good sign.

    Last year we didn't go camping...something about BC, surgery, chemo, radiation, etc.....  This year we're all planning to get out into the "boondocks".  So, I pulled down the lanterns and stoves (Coleman).  I knew one stove worked..I had used it to cook the waffles.  The other stove and two lanterns fell victim to stale gas.  I hadn't emptied the tanks out and after two years, the gas went stale and turned into a nasty goo that clogged things up.   I spent the afternoon cleaning and rebuilding the stove and two lanterns.  Most of the stuff is about 30 years old and is still going strong...despite my screwup.

    Hugs to everyone I missed....  Off to cook some ground buffalo.  I'm trying to get the grilling in before it gets too hot.  Later in the summer, it's almost hot enough to grill without firing up the grill.... :-)

    Just sayin Eric, your being on here for Sharon kinda precludes your not being there for her! LOL that's one thing you don't have to worry about. How do your clean your stove out? I think mine might have the same problem. I wasn't the one who put it away last year! Can you pm me?
