    Carol- We love the new camper!  Bigger shower, queen bed for us instead of a full size and I bought a tempurpedic (sp?) cover for it that is super comfy, bigger fridge plus the twelve foot slide out.  We are very happy with the purchase and it is big enough that we should not have to upgrade for a long time, if ever.  Our next trip is in July.  Where we have friends with a cottage lake side a half hour away we have that to enjoy as well. We don't want to over book our camping trips and make it stressful.  Our next trip we will stay on the Saco River.

    Yikes, so what is with our bleeding DHs! Poor motor planning....old timers vision??

    But that snake story takes the cake, Nancy. I would be hard pressed to enter into a snake untangling scene with a bitten, bleeding DH! I'd be calling 911 and the animal control guy...in all my wimpyness. You are brave! And I'm not even phobic about snakes.



    My DH got his head gash to stop bleeding, put on a baseball cap and proceeded to get a lot more yard work done. Yay! I joined in for several hours, and we are both bushed tonight. I just do not have great stamina for such work, even with my daily exercise regimen. I looked hysterical today with my surgical mask on so I could avoid breathing in pollen, but I noticed by the end of the day that the air was relatively clear, which is such a relief after a miserable few weeks of sneezing and wanting to scratch my eyes out. Fingers crossed that we are finally done with the major pollen!



    I could go for a piece of that carrot cake right now, Carole. I'm actually looking forward to your trip, since I enjoyed following it last summer. Very cool. You are such a good planner.

    Had to improvise for our late dinner since I was too tired to hit the store for something to grill. So...made a fritata with caramelized onion, (Traders Italian flavored chicken) sausage and broccoli rabe and Italian cheese. It was really tasty....enough so that I wrote down what I did so I can remember! Had a cuke, onion, red pepper, kalamata olive salad with the fritatta.

    You guys with bleeding DHs! Wth? LOL. If you look.on the net in camping or hunting areas, there is a bleeding bandage you can get to keep on hand. It's meant for when you are out of Dr care, but no reason you couldn't use it in an emergency to get to the hospital! Much love.

    Wow Tonight I have planned to make okkra and roti, with gram dal and rice. Okra is my daughters favorite veg. With tomamto soup With BAsil leaves.

    I have to admit when DH came in the house my first thought was not "oh my God, he's bleeding", but "why the hell is he bringing a snake in the house?!!"

    Nance  Funny story. My poor DH would never do anything that dangerous.  Not sure what kind of childhood he had...but is so cautious about everything that he would not even walk outside without shoes on.  I am the one who is always bumping into something or getting caught on the tree limb.

    Had a ziti dinner from the fundraiser at 4 in the afternoon with DH out on the boat. So dinner at 9 was strawberry shortcake.  Fundraiser was so well planned and very well attended.  Her ca had given her a brain tumor that she is having extreme pain from and decided to forgo any more treatments. Sad, Sad day, but she held up well and greeted the hndreds of people that showed up.  All the kids were outside with signs that read "honk if you hate cancer" and the town was was crazy with honking horns.

    Ah, Carrie....tearing up. :( But glad the fundraiser went so well.



    Moving on from bloody DHs to mini wildlife...We've had this little family of bunnies living somewhere in our backyard and they have been showing up near my planters, but eating (I thought) the leaves of the (too many) violets that grow everywhere, and sparing my herbs, kale and arugula....so far. And the chipmunks have yet to destroy anything. They live under the ground level deck. Well today DH goes out to discover a larger guy chomping on the violets, and DH, being an urban guy, thinks it is a woodchuck, but is really unsure. It scooted under the shed, and we thought the bunnies lived there. Could they co-habitate? And I now know why the neighborhood cat camps out there.



    When we had our last shed razed, the worker told us it was a veritable pet cemetary under there. Guess we'll have the same thing in the future. I'll happily share the yard as long as I have some plants left alone. We really appreciate how Lacey (deceased miniature schnauzer, not me;) kept these critters at bay while she was alive.



    Carole, I have never made my own baked macaroni and cheese....but I bet I would love Mark Bittman's. We never eat it since I can't rationalize the high calories and fat (since I would probably eat every last noodle!) I had to chuckle at Mark Bittman's note that it is fine to use low fat milk when he uses 4 T butter and about two cups of cheeses. It must be amazing!

    Carole and Lacey, love mac & cheese, have never heard of Mark Bittman one. Just searched pinterest (my source for so many recipes) and there's one pin for that.

    Lacy, the latest thing for mac and cheese is to sub at least half of the noodles with cauliflower. Still cheesy, but not as many noodles.

    Lacey, that's exactly why making mac and cheese is a rarity for me.  The fat and calories.  But dh loves it and about once a year I make it.  Or he makes it.  So far neither of us has been satisfied with our recipe.  He burned one of my pots with the white sauce on his last attempt and I had to use oven cleaner to get the char out of the bottom of the sauce pan!  I wasn't happy.

    I just thought Bittman's method was interesting, pouring the hot milk over the assembled layers and letting the sauce develop during the oven cooking.

    I plan to cook a very un-gourmetish dish tonight, the southern squash casserole.  I have fresh yellow squash and a box of reduced sodium dressing mix and a package of Jimmy Dean breakfast sausage.  Oh, and home-made chicken broth.  I looked up several recipes.  Some use mayo,  Others sour cream.  Canned soups.  Grated cheese.  Onion.  I have only 1/2 an onion, so I'll use it.  And some grated cheese.  A couple of eggs.  The casserole cooks up kind of like a souffle. 

    I'm cleaning out my chest freezer and had to throw away some different types of flour.  I hated to do it but running the freezer for three months to save flour doesn't seem too smart.  It's too risky to leave food in either the chest freezer or the refrigerator freezer because of power outages during hurricanes.

    Stick a fork in me because I am done.  Dinner tonight is pizza from a local restaurant.  I need to go shopping and am not up for it as of yet.

    Nancy - is that Martha Stewart mac & cheese also known as crack & cheese?  I made that recipe a couple years ago and it was ridiculously good, and expensive.

    We had mac & cheese tonight from a quick restaurant called Mr. Mac.  Every variety you can think of.  I kept mine plain, the guys had the cheeseburger version.  To be honest, I like the Kraft kiddie version.  I know, crazy.  But these days, if it tastes good to me, I'm going with it.

    Yes, Moon, I saw a faux mac and cheese (made with cauliflower) dish on (I think) the Today Show this AM. I used to prepare the Kraft Mac and cheese when that's about all DS2 would eat as a little boy.



    Oh, I did have a luscious lobster mac and cheese right after my second surgery shortly after my dx. My next door neighbor was visiting her son who attended college in Maine and picked this speciality dish up for me on her way home. I'm curious about all the varieties that the restaurant you went to carries, Michelle.



    Tonight I retired the rest of the broccoli rabe by using it in a marinated flank steak dish done in the caste iron skillet with orzo and onions. I could actually eat broccoli rabe every night!

    Michelle:  Have you tried the Kraft mac & cheese in the individual cup container?  Good for an emergency when you don't want to make a whole box.  I'm sticking w/Staufers or Kraft for the duration of treatment.

    Lacey, Lacey - Lobster Mac & Cheese?  Oh my goodness.

    My brain is really enjoying all your recipes but no taste buds are working with the chemo.  Dinner was Campbell's Chicken noodle soup, Kozy Shack rice pudding & a lemonade frozen ice bar.  Maybe tomorrow I'll branch out to PF Changs frozen Lo Mein.

    MinusTwo - Your dinner sounds pretty good and something like I would eat. Love Kozy Shack. I like their flan too. Slides down so easy.

    UMM - Mac 'n cheese. Nancy, I'll have to look for Big Martha's recipe.

    Finishing the last of the crockpot Thai pork stew. Will have to cook tomorrow and it's supposed to be 95. Got to 98 today. Don't know what we will have. Betting on more of frozen chicken breasts. I need to get disciplined and cook in the mornings.

    Yep, that's the one! It makes a huge amount so I either fix a half recipe or freeze half. Unless of course, I'm feeding others, then there's never anything left lol.



    Btw, trader joe's frozen mac and cheese is pretty darn good. And so is Costco's store made fresh. It also freezes well.

    I agree- will have to llok up the Martha Stuart recipe.  I have a few different versions of mac n cheese that I do.  I still always prefer cheese and rice!

    My back is a little better today.  I can do a little more, no more than 15 minutes at a time or so.  I worked this morning and ran some errands, picked up the house and had lunch than had to lay down.  But that is more than I could do yesterday so I will take it!  Taking advantage of the cool rainy temps and having home made chicken pot pie tonight.  I am hoping I am feeling strong enough to do the grocery shopping tomorrow.  The boys have been great with me struggling with my back issues and have been helpful and patient with everything.  So thankful to them.

    Martha's recipe is pretty standard mac and cheese except for the gruyere.  And maybe the amt. of cheese.  The recipe dh used from America's Test Kitchen is similar. 

    Laurie, cheese and rice sounds good.  So does your home-made chicken pot pie.  I have never made a chicken pot pie. 

    We're having leftover squash/pork sausage casserole and salad.  AND probably... a slice of carrot cake! 

    I have a beef roast I need to cook.  I looked up Laurie's and Michelle's hot oven recipe and plan to try it.  The roast is eye of round.  I also have packages of blanched broccoli in the freezer that I need to use up so I'll be making another broccoli/rice casserole.

    The best Mac n cheese I have ate was at Dave's Barbeque in Portland, Oregon we eat there almost every time we go to Porland which is all the time. It is made with Jalapeno's and I think it is creamed corn because the kernals are pretty small. But it is delicious!

    Here's what I made for dinner tonight, it was pretty good!

    Sweet and Sour Citrus Chicken

    ngredients:

    Sauce
    2/3 cup orange juice
    Juice and grated rind of 1 lime (about 2 tablespoons juice)
    2 tablespoons rice vinegar
    2 tablespoons brown sugar (I used Splenda brown sugar substitute)
    3 tablespoons soy sauce
    5 cloves garlic, minced
    2 teaspoons fresh ginger, minced or grated
    Stir-Fry
    1 pound boneless skinless chicken breasts, cut into 1″ chunks
    Salt and pepper to taste
    3 tablespoons corn starch
    1 1/2 cups broccoli florets (fresh or frozen; if frozen, pull them out when you begin cooking) (I steamed my veggies, then added to pan and sauted them a little bit more)
    1 1/2 cups green beans (fresh or frozen; pull these out of the freezer with the broccoli)
    1 red, orange, or yellow bell pepper, seeded and sliced
    1 small or medium red onion, halved and cut into 1/4″ slices
    Instructions:
    In a large skillet, whisk together the sauce ingredients. Bring to a boil over medium-high heat and cook for 5 minutes. Remove from heat and pour into a heat-safe bowl. Rinse out the skillet and wipe it dry.
    Season the chicken with salt and pepper, then sprinkle with corn starch and rub the corn starch into the chicken.
    Add about 1 tablespoon oil to the skillet and heat over medium-high heat. Swirl the pan to coat it. Add the seasoned chicken and stir-fry for 4-5 minutes or until the chicken is cooked through. Add the onions and other veggies and stir-fry until the beans and broccoli are tender-crisp. Add the sauce, a few tablespoons at a time, allowing the sauce to bubble up after each addition. Serve immediately over hot rice. (I used brown rice)

    Last night I attended a retirement party of a school friend. It was at a Chinese restaurant.

    I have not eaten such dishes in a very long time. Off to the treadmill!

    Lacey I love your stories about the wildlife. LOL. We have crows and squirrels and are constantly trying to keep them out of the garden. I have two little dogs I adopted from the shelter- one is blind so cant really help with the garden (but is great at comforting me after chemo and surgeries) but the other one is trained to the command "go get 'em" and gleefully erupts from the doggie door to chase away squirrels and birds.

    But I do not think he would take on a woodchuck! Never seen one of those thank goodness. Good luck with that fellow.



    Speaking of the garden, last night we had fresh tomatos and basil from it, with some mozarella slices and a drizzle of olive oil and balsamic vinegar- delish!

    Debbie so glad to see you posting recipes!  You make some really good stuff and your ideas were missed while you were gone!
